The Jambalaya Festival Association, chartered
in 1967, invites you to mark your calendar for
the 47th Annual Jambalaya Festival to be held
in Gonzales, Louisiana on Memorial Day
Weekend, May 23 - 25, 2014. Your whole family
will enjoy the vast variety of food, fun, music
and activities that have made the Jambalaya
Festival the can't miss highlight of the year.
The festival features World Champion
Jambalaya served daily, live music and
entertainment, carnival rides, cooking
contests, a variety of food and so much fun it
takes four days to get it all in.

What is
Jambalaya?
Similar in many ways to
Spanish paella, the term
"jambalaya" is derived from
the Spanish jamon for ham.
It's pronounced "jahm-buhLIE-uh" or "jum-buh-LIEuh". Jambalaya found its
way into Creole cookery in
the late 1700's where it
soon took on the flavor of
added local ingredients.
There are other stories of
the jambalaya "myth," but
the favorite comes from the
Webster's dictionary which
defines the word as French
Louisiana for a mixture of
diverse elements.
What is Jambalaya?
Today it is a Cajun/Creole
dish made from a mixture of
meats, rice and seasonings
complete without
Jambalaya cooking.

made (separately or all
together) with ham, chicken,
sausage, fresh pork, shrimp
and oysters, to which is
added shortening, rice,
onion, garlic, pepper and
other seasonings.
Starting with church fairs,
which were the largest
public gatherings at the turn
of the century, Jambalaya

emerged from small
quantity indoor cooking to
become the ideal dish for
outdoor cooking over
hardwood fires. Big black
cast iron pots made
preparation so easy and
economical for church use
that Jambalaya was rapidly
adapted for political
rallies, weddings, family
reunions and other affairs.

Louisiana. Jambalaya is
economical to prepare and
can be cooked in a one
quart pot indoors or in a
30 gallon black pot.
Jambalaya cooking is an
art that must be perfected
to acquire a superb blend
of flavor with proper
consistency. Area cooks
practice continually to
perfect Jambalaya that
will win the title "World
Champion." As you might
imagine, competition is key
as many cooks vie for this
prestigious title. Many
champions have cooked at
other festivals and for
foreign leaders, as well
as presidents of the
United States.

COOKING CONTEST RULES
1. Cooking ingredients must
include:
Preliminary:
30 lbs chicken; 10 lbs rice
Semi-Finals:
45 lbs chicken; 15 lbs rice
Finals: 60 lbs chicken;
20 lbs rice
Other ingredients and
Seasonings to be chosen
from the following:
• Yellow Onions
• Green Onions
• Red Hot Sauce
• Celery
• Black Pepper
• Garlic (Fresh & Granulated)
• Red Pepper
• Bell Peppers
• Salt
• Cooking Oil
ticket and keep it in your
possession. It is your
responsibility to safeguard
this ticket. No cook will be
allowed to move into the
semi-final or final rounds
unless you can produce a
valid/legible ticket for
inspection when the top
scores are announced for
each of these categories.
You will place the other
half of your ticket on the
styrofoam container,
placing it in the ice
chest and bringing the ice
chest to the trailer promptly
at the end of your
designated heat time.
7. At the end of your heat
you must remove your pot
away from the fire. You will
then have 15 minutes to
prepare your ice chest for
judging and get it loaded
onto the trailer.
8. Cooks will be allowed to
back-up to cooking booths
and leave your vehicle there
while cooking in your
assigned booths only.
When your heat is finished,

the Cooking Area.
9. Only cooks and helpers
are allowed in the cooking
area. This has been a
problem and will be strictly
enforced. There will be
places on the other side of
the barricades for tents
and chairs.
10. No cooks or helpers will
be allowed in the vicinity of
the Judging area.
11. Trash barrels are
provided to dispose of all
trash. It is your responsibility to leave your cooking
area clean and free of trash
for the next contestant.
12. Grease containers
will be provided for used
cooking oil. Absolutely no
cooking oil is to be poured
on the ground or in drains.
Only Ingredients Provided
by the JFA Will be Used.
Ingredients will be delivered
to the cooking area thirty
(30) minutes prior to start
time of your heat.
13. No hand sampling
from pots.
14. Maintenance of the JFA
trailer is the responsibility of
the cook using it. Payment
to the champ for cooking
jobs will not be rendered
until the trailer has been
inspected for cleanliness.
2. Cooks must furnish black
iron pot with metal lid and
paddle.
3. Jambalaya must be
cooked on wood furnished
by JFA.
15. Champion cook is
required to cook three
(3) times during his reigning
year for free. Thereafter,
he/she will be paid the
appropriate cook fee and
propane allowance,
based on approved JFA
allowances.
4. No former champion can
be a helper.
5. Cooks will be furnished
two (2) hinged plates for
their own sample.
6. Cooks will be furnished
a double sided ticket,
attached to a small
styrofoam container. You
will remove your half of the

16. Cooking contest format
will be as follows:
a. There will be eight (8)
Preliminary Heats which
will consist of no more than
17 cooks each. Heats 1
thru 4 will be held on Friday
and Heats 5 – 8 will be held
on Saturday. **The thirty
two (32) top scoring cooks
from the eight (8) preliminary heats will be picked to
compete in two (2) semifinal heats. The announcing
of Semi-finalists will take
place on Saturday evening
after the conclusion of the
last preliminary heat.
b. The two (2) semi-final
heats will be held Sunday
morning with 16 cooks in
each heat. The top twelve
(12) scoring cooks from the
semi-final heats will be
picked to compete in the
final heat. The announcing
of Finalists will take place
immediately following the
last semi-final heat (once
judging is completed).
c. Twelve (12) finalists will
compete Sunday afternoon
to obtain the title of
WORLD CHAMPION
JAMBALAYA COOK.
**In the event of inclement
weather on either Friday
or Saturday, the JFA
Executive Board will meet
with the Judging Panel and
make a determination as to
if the inclement weather
was/is severe enough to
place those at a competitive disadvantage, who
were cooking at the time
the inclement weather was
present. In the event that it
is determined that the
weather caused competitive disadvantage, then
instead of taking the top
thirty two (32) scores out of
eight (8) heats, the semi-finalist will be picked by
taking the top (4) scores
from the Heat(s) that were
deemed to have been at a
disadvantage due to
weather, and then the
remaining semi-finalist will
be taken from the rest of
the field as described
above.

If it is determined that the
weather did not cause a
competitive disadvantage,
then the selection of
Semi-finalists will take
place as described in
section (a.) above. In either
case Semi-finalists will be
announced on Saturday
evening after the
conclusion of the last
preliminary heat.
SCENARIO 1:
Heat 3 on Friday experiences severe weather
which is deemed to have
put those cooks at a
disadvantage.
Semi-finalists will be
picked as follows:
Top four (4) cooks from
Heat 3.
Top twenty-eight (28) cooks
from all remaining heats.

Association proudly crowned
the 2014 Royalty who will
reign over the 47th
Jambalaya Festival,
slated for May 23 – 25.
Selected as the 2014 Miss
Gonzales Jambalaya Queen
out of five beautiful ladies
was Lauren Victoria Blouin of
Prairieville. Lauren is the
21-year-old daughter of Leon
and D’Andre Blouin. She is a
2011 graduate of Dutchtown
High School. While attending
Dutchtown, Lauren served
on the Griffin Girl Dance
team where she was
selected as captain her
senior year. She was also an
active member of Student
Council serving as Class
President for her sophomore,
junior, and senior years.
Lauren is currently a senior
at Louisiana State University,
pursuing a degree in
Marketing. She is an active
member of Delta Sigma Pi
Professional Fraternity and
enjoys volunteering at the
Pet Adoption House in her
spare time. Lauren will spend
her reign attending events in
the parish as well as across
the state. She will also travel
to Washington, D.C. in
February of 2015 representing the JFA at the Mystick
Krewe of Louisianians Mardi
Gras Ball. She is honored to
have the chance to serve the
wonderful city of Gonzales
and the Jambalaya Festival
Association as their
ambassador to the state.

May 4th, the Jambalaya
Festival Junior Royalty was
selected. The Junior royalty
will be presented on stage
during the festival festivities
on Saturday, May 24th. They
will also have the opportunity
to represent the festival in
the annual Gonzales
Christmas Parade.
The 2014 Junior Royalty is
as follows:
Baby King: Jean Paul Martinez
Junior King: Cooper Price
Parent. She is a sophomore
at Dutchtown High School
and a member of the Griffin
Girls dance team and Allied
Health. She also was a
two-year varsity letterman
for the swim team. She has
earned 3rd place two years
in a row in the mini-pot
division at the Jambalaya
Festival. Berkley is very
active in the youth group at
St. John the Evangelist
Church in Prairieville and is
very excited
about traveling to
Honduras on a
mission trip this
summer. She aspires
to attend LSU and
major in computer
engineering with a
minor in Spanish.
She is a proud older
sister to two active
brothers, Cohen and
Pierson.

History of the Jambalaya Festival
Gonzales is the
"Jambalaya Capital of the
World." In 1967, this term
was only an inspiration in
the mind of Steve Juneau
to promote the City of
Gonzales. Juneau, a native
of Avoyelles, was very
impressed with the
Jambalaya prepared by
area cooks. He thought this
would be a great method to
promote the city. The idea
was presented to the
Gonzales Lions Club and
the annual Jambalaya
Festival was born. As the
idea spread across
Ascension Parish, many
non-profit civic groups and
fraternal organizations were
invited to get involved. The
festival would be used as a
vehicle to raise money for
community projects
supported by them.
By this time, what began as
an inspiration was already
too big for any one group to
take on independently. An
executive committee was
formed consisting of Steve
Juneau, John D. Gonzales,
Clarance Berteau, Sidney
Amedee, Jr., McGuffy Fife,
C.R. "Pete" Bourque, Melvin
Hebert, Harvey Dupuy and
M.J. Decoux. They met at
the Fiesta Grill in Gonzales.
Steve Juneau was elected
as the first president of the
newly formed Jambalaya
Festival Association. They
agreed that the sole
purpose of the festival
would be to promote the city
of Gonzales. On June 10,
1968, John J. McKeithen,
then Governor of Louisiana,
proclaimed Gonzales,
Louisiana as the "Jambalaya Capital of the World."

The father and son team brought it home.
In mid-June of 1968, the
first festival was held.
Thirteen cooks vied to be
crowned "World Jambalaya
Cooking Champion."

Mire. This year the
competition is greater than
ever. At least 69 cooks have
put their name on the line to
out cook the others for the
world title.
By 1971, the festival was
drawing crowds of nearly
50,000. Sixteen cooks
stirred their paddle in the
pot, trying to win the silver
trophy. That year, the
Jambalaya race for
quarter-horses emerged at
the Dutchtown racetrack.
The Jambalaya Art show
attracted over 500 participants which made it one of
the major art shows in the
south. 1972 introduced the
"Mini Pot" jambalaya
cooking contest. In this
case, the chefs had more
fun cooking it than eating it.
The dish was cooked in the
"World's Smallest
Jambalaya Pot," a tradition
which continues to this day.
This year, over 40 will
participate in this event.
Many innovations have
been tried throughout the
years, including a car show,
boxing contest, 5K and 1
mile Fun Run, craft show,
story telling, sky diving
exhibition, hot air balloonists, model airplane exhibition, Jambalaya Singers,
bike races, bed races, cloggers, dancers, can-can girls,
Jambalaya Beauty Pagent,
Crowning of a Jambalaya
King & Queen, Champ of
Champs Cooking Contest,
baseball, tennis and golf
tournaments and many
more activities. By now, you
are probably wondering
what will be taking place at
this year's festival. Hint see the Schedule page.
But as my ole friend Justin
Wilson would say, "Don't
worry your little head about
dat, just come on out.
