SPECIAL THANKS FOR STAFF WHO MADE A SPECIAL EFFORT!
The “Blizzard of 2016” created extraordinary challenges for millions of people. Many people were
fortunate to stay home and avoid the treacherous conditions outside. But for individuals responsible
for insuring the care and safety of others, it meant braving the elements and embarking on a
hazardous journey to work. And for people already working when the storm began, it meant spending
a night – or two – at their place of employment. Well that’s exactly what happened for forty members
of Countryside’s staff who were either scheduled to work or volunteered to work during this
memorable weekend. Countryside is particularly grateful to the following individuals who worked
between Friday night and Sunday night to help maintain care and services for our residents.

THE PROMISE OF GOODNESS
The promise of goodness is a wonderful treasure from God. There are over a thousand references in the
Bible which state directly of goodness or allude to goodness. It is a word that includes many adjectives to
try and explain what it is. Words such as beautiful, beneficial, pleasing, life, kindness, strong, courageous,
recompense, honor, pleasant, desirable and just are some words used to understand goodness. It is a word
that is used of God. James says, “Every good and perfect gift is from above, coming down from the Father
of the heavenly lights, who does not change like shifting shadows.” (James 1:17) The Psalmist says, “You
are good and what you do is good.” (Ps. 119:68)
In Genesis 1, after creating each new aspect of the creation God said, “It is good.” Then after creating
humanity He said, “It is very good”. Again in Ps. 135:2 it is written, “Praise the Lord, for the Lord is
good.” Goodness is part of the character of God. And God cannot go against his character. So the desire
of God is that He wants the best for his children. His goodness flows from his heart in our behalf. We are
rich in the Lord. We are created and redeemed to possess and exhibit the wonderful goodness of God in
all his holiness. Let me show you a few references of “Goodness” we can express.
“He that doeth good is of God.” III John 11
“He fills the hungry soul with goodness.” Ps. 107:9
“With good will I do service.” 1 Peter 2:12
“Be followers of that which is good.” Rom. 13:3
“I rejoice over them that do good.” Jer. 32:41
“Do good to them that hate you.” Mt 5:44
“Do good works and deeds.” James 3:13
“Make you perfect in every good work.” Heb. 13:21
“He which has begun a good work in you will carry it to completion.” Phil. 1:6
“I follow the thing that is good.” Ps. 38:20
All these deeds of goodness are of the Lord. God desires we share them with the world we live in today.
As we share we also continue to grow. I like what Thomas Carlyle says about goodness, “How
indestructibly the good grows and propagates itself even among the weedy entanglements of evil.
Mysteriously does a Holy of Holies build itself into visibility in the mysterious deep?”
To be good is more than pious words and actions. It is the very nature of God expressing itself in our lives
daily.

Easter occurs late in March this year but it’s not too early to start planning your Easter Dinner
menu. If you are looking for something light and refreshing, this easy fruit salad is perfect. Not
too sweet, it complements a baked ham so perfectly. The Tater Tot casserole is also simple to
make but the rich creaminess is special enough for a holiday meal.
Orange Cottage Fruit Salad
1 cup cottage cheese
2 tsp. regular orange Jell-O (or 1 tsp. sugar-free orange Jell-O)
1 cup mandarin oranges, drained
2 cups whipped topping
Combine cottage cheese and Jell-O and mix well. Fold in whipped topping and mandarin
oranges. Chill. Serves 8
Cheddar Tater Tot Casserole
1¼ cups cream of chicken soup
1½ cups evaporated milk
1 cup sour cream
½ cup butter, melted
1 tsp. garlic powder
1 tsp. onion powder
2 lbs. tater tots, frozen
1½ cups shredded cheddar cheese
In a large bowl, combine first 6 ingredients. Gently stir in the tater tots. Transfer to a
greased baking pan. Sprinkle with cheese. Bake uncovered at 350° for 30 to 35 minutes
or until bubbly and 170° in center. Serves 10

CCC Resident Turns "100"
Woodrow “Woody” Felty, who became part of the CCC family in 2013, celebrated his 100th
birthday on February 11, 2016. Woody has had many experiences throughout his lifetime. He
lived through the depression, graduated from Lebanon High School, married his wife Violet in
1936 (who passed away in 2009), served in the Army Air Corps, flew missions for the Berlin Air
Lift and served in the Air Force Reserves. After the war he rejoined the
U.S. Postal Service.
After retiring he and his wife moved to Las Vegas where they lived for 20
years before returning to the Lebanon area. While in Las Vegas he studied
geology in hopes of finding gold in “them thar hills”.

Anyone visiting Countryside is
familiar with seeing Wally, the
lovable
golden
retriever
belonging to our Director of
Nursing Maureen Kelly. Well,
Oscar has recently joined
Maureen’s household and he
too tags along with Wally and
Maureen whenever she comes to work. Though only
13 weeks old, he’s in training to become a therapy
dog. He’s learning fast and getting bigger even
faster! Both Wally and Oscar are important
members of our staff, bringing a lot of joy to
residents, visitors and staff.

Tips for Seniors
March is National Nutrition Month. During this month the Academy of Nutrition and Dietetics offers
smart snacking ideas that help everyone "Bite into a Healthy Lifestyle”. Snacks can be a fun and
valuable part of a person's healthful eating plan – but they can also add unneeded calories, sugar,
sodium and fat. If you choose carefully, and plan ahead, sensible snacks can be part of any healthful
eating plan. Snacks can prevent overeating at mealtimes and throughout the day and can supply foods
and nutrients that we might miss in meals. Snacks especially offer a great way to eat more fruits,
vegetables, whole-grains and low-fat dairy. For adults, a healthy snack can provide an energy boost
and satisfy your mid-day hunger. If you haven't eaten for three or more hours, a snack can help bring
up your blood sugar level for optimal energy. For older adults with smaller appetites or limited energy,
several small meals including snacks may be easier for their bodies to handle.
Here are a few ideas for biting into healthy snacks:
•
Plan your snacks. Keep a variety of tasty, nutrient-rich, ready-to-eat foods nearby, for when
you need a bite to take the edge off hunger. Then, you won't be so tempted by less-healthy
options from vending machines, convenience stores or the contents of your own kitchen."
Snack ideas include fresh fruit, air-popped popcorn, whole-wheat crackers, dried fruit and nut
mixes, almonds and fat-free yogurt.
•
Make snack calories count. Snack on foods that fill the nutrient gaps in your day's eating
plan. Think of snacks as mini-meals to help you eat more fruits, vegetables, whole grains and
low-fat dairy – foods we often don’t eat enough.
•
Go easy on high-calorie snacks such as chips, candy and soft drinks. They often contain
solid fats, and added sugars. Make these occasional choices that fit your day's plan.
•
Snack when you're hungry – not because you’re bored, stressed or frustrated. Exercise
can actually be a great way to feed those emotional urges.
•
Snack on sensible portions. Choose single-serve containers, or put a small helping in a bowl
rather than eating directly from the package.
•
Quench your thirst. Water, low-fat or fat-free milk and 100-percent juice are just a few
options. Flavored waters might be high in added sugars, so check the label."
Making the right food and nutrition choices is a necessary part of "Bite into a Healthy Lifestyle”.

17 - St. Johns ECC will be sharing their Easter Cantata with us entitled “Written in Red” at 7:00pm

31 - Joy Choir, a senior adult choir from the local area, will be presenting a program of sacred music at
1:45pm in the Chapel.

11 - Abigail Bomgardner will be sharing a slide program of her recent trip to Israel at 1:45pm in the Chapel.
14 - The Participants of Hope Spring Farms of Hershey will be joining us for an afternoon program of
bingo at 1:30pm in the Multi-Purpose Room.
19 - Our Annual Egg Hunt for employee’s children/grandchildren is scheduled for 1:45pm in the
Multi-Purpose Room.
22 - Dolly Murrey will be performing a Bible Drama on Pilates Wife at 1:45pm in the Multi-Purpose Room
