Help Santa. Santa’s Hide A Way Hollow,
a non-profit organization founded in 1981,
is dedicated to working with seriously and
terminally ill children and their families to
provide comfort and support. All volunteers
are welcome, but service hours are available
for students who can help by wrapping
presents, visiting Hospitals, making home
visits to children, singing Christmas carols,

can volunteer in a very important way. They
also offer unique volunteer opportunities
for entire families so children can be taught,
firsthand, the importance of giving.
Sponsor a Family. “Sponsor-a-Family”
is a holiday program providing food and
gifts to low-income families and seniors
in Geauga County for more than 40 years.
It is supported solely through donations
and would not be possible without the
generosity of community members.
Volunteers are essential to the success of
the program by sorting food and gifts that
will be delivered Dec.19. To donate, sponsor

accepted with checks made payable to

Stuff a bus. East Geauga Kiwanis is
sponsoring a “Stuff the Bus” event to benefit
Geauga County Job and Family Services.
The Cardinal school bus will be in the WalMart parking lot in Middlefield on Saturday,
Nov. 29 from 9 a.m. to 4 p.m. Some items
to consider donating are toys, clothing, gift
cards, books and packaged food.

toys, books, games, puzzles, crafts, sports
equipment, non-perishable food and
clothing for all ages through Dec. 10. Items
will be passed out to needy families on Dec.

needs creative volunteers year round to
help with educational programs, set design,

Visit a senior. Volunteers are needed
to organize, pack and deliver meals during
the upcoming holiday season to seniors
who are alone for the holidays. This is a
great way to make someone’s Thanksgiving
and Christmas a little brighter yet still have
plenty of time to get to your own festivities.
Preparation and organizational assistance
is needed from 11 a.m. to noon. Volunteers
pick up the holiday meal (one per route) at
11 a.m. at the Multi-Purpose Senior Center,
12555 Ravenwood Drive in Chardon, drive
it to the senior’s home and spend some
time visiting. Volunteers are needed on
Thanksgiving Day, Thursday Nov. 27 and
Christmas Day, Thursday Dec. 25. But
remember that meal preparation and
delivery visits to seniors are needed year
round. To volunteer, or if you are a senior
who needs meals delivered, call the Geauga
County Department on Aging at 440-2792130 or 440-834-1586 ext. 2130.

Burton Celebrates the Holidays
The Burton Chamber of Commerce will host Country Hearth Christmas Nov. 28, 29, 30,
and Dec. 6 and 7. Burton Village will be decked out to welcome everyone to visit for a unique
and old-fashioned holiday experience and the Log Cabin will be the hub of activity. Snuggle
up to the roaring fireplace when you bring the youngsters in with their gift requests for
Santa each day from noon to 4 p.m. While in the Cabin, check out the maple products that
make excellent and tasty gifts.
Friday Nov. 28, there will be a lighted holiday parade at 6 p.m. Everyone is invited to
participate, as a marcher or watcher. The parade will assemble in the Berkshire High School
parking lot at 5:45 p.m. All marchers, floats and participants must have some sort of lighting.
After the parade the holiday lights will be turned on in Burton Village Park. Hot chocolate
and cookies will be available in the gazebo and carolers will sing all around town.
The shops on Main Street will offer special events and activities. All shops are locally
owned and different. Hand-blown glass items, Amish made rugs, flowers, vintage furniture
and unique, one-of-a-kind gifts are waiting to be discovered in Burton Village year round.

you to spend
most of your Christmas
budget on “Made in
foreign country” goods.
The American worker
is hoping you don’t.
There are a number of ways to spend your
money where it will stay in this country and
help your neighbor, in your town, state and
the USA.
Gift certificates for local merchants are
just one way; a gift certificate for a car wash,
car detailing, oil change or some winter
tires for your loved one. Give a certificate to
a local spa where that lady in your life can
get pampered or a nail salon and possibly
a pedicure. Think about purchasing a new
insulated garage door or storm door for
someone that really needs one. A few
years ago I insulated three family members’
attics and this is a gift that keeps giving
every year, winter and summer. Giving an
elderly neighbor a spring yard cleanup or
a certificate for a lawn mowing service may
help both; the local service company and
your neighbor.
If you can’t afford to buy a gift, hand
print a certificate and have everyone in the
family pitch in for some project to help an
elderly person who may not be capable of
doing it alone. For the kids in the family;
Christmas is not just about getting gifts, it’s
about giving. Print up some certificates for
your parents that they can redeem for your
help; a car wash or wax, cleaning the garage
or basement. It can be as simple as doing
the dishes or helping to take down the tree
after Christmas. Get creative!
How about sending a hand written
letter to someone expressing your
appreciation for his or her help or a past
kindness shown to you or your family? If
some store clerk was extremely helpful or if
a waitress did a great job, send their boss
a letter praising them. When you stop for
lunch while Christmas shopping, pick up
the tab for someone you don’t know. An act
of random kindness will warm your heart
more than you can ever imagine.

Middlefield Holiday Events
Holiday Lighting Contest
The Middlefield Village Holiday Lighting contest has begun and will be judged
Dec. 11. Residents and business within Middlefield Village do not need to register. Have
decorations up and turned on by 6 p.m. on Dec. 11 when the judges will tour the Village
to find the best decorated houses or businesses. Winners will be announced Dec.15.
Middlefield Christmas Tree Lighting
The Middlefield Activities Committee (MAC) invites the community to join them at
7 p.m. for the Middlefield Christmas Tree Lighting on Friday, Nov. 28 in the downtown
mini-park, corner of Routes 87 and 608. Have some hot chocolate, donated by
University Hospitals, as you enjoy the Cardinaires singing joyful holiday tunes.
Snacks With Santa
Bring your children and enjoy breakfast, crafts and photos with Santa on Dec. 6

Festival of Trees
The Middlefield Historical will hold its Festival of Trees Dec. 5, 6 and 7 in the Society’s
underloft, 14979 S. State Ave. in Middlefield (44062). This family friendly free event
will be held Friday noon to 2 p.m. and 4 to 8 p.m., Saturday 4 to 8 p.m. and Sunday
noon to 2 p.m. and 4 to 8 p.m. Donations are welcome and appreciated. There will be
giveaways, merchant handouts and a lot of fun activities to get you in the holiday spirit,
including a coloring contest for children ages 3 through 10. Pictures can be picked up
at the Middlefield Banking Company’s downtown office, the Middlefield Library and the
Bookmobile. Tickets for the merchant’s tree raffle are $1 each or six for $5.
All commercial businesses, industries, civic and school organizations, churches
and individuals are urged to participate by bringing in a decorated holiday tree and/
or display. Response is needed as soon as possible so set-up schedules can be planned.
The Historical society is always seeking volunteers for this event, so please consider
offering your participation as a pre-holiday gift to the community. To get involved or

Amish Historical Library
Grand Opening
A first in Geauga County! All are welcome to stop by and view the Amish book collection
at 15960 East High Street (next to Karl’s Jewelry) in the heart of Middlefield. The Amish
Library will showcase Bibles, Testaments, hymnals and prayer books significant to Amish and
Mennonite history, some dating back to the 1500’s. The library will also have many Amish
genealogy books, so that people, whether Amish or of Amish background, can explore their
family history. Books by and about the Amish will be on sale. A Grand Opening with coffee
and donuts will be held Nov. 29 from 9 a.m. to 3 p.m. Normal hours will be Saturdays from 9
a.m. to 3 p.m. and during December and January, Fridays from 10 a.m. to 2 p.m.

The Power of Encouragement
Join us for our
annual

Who have you encouraged today? Has
anyone encouraged you? Everyone thrives
on encouragement! Children and young
people are “starving” for words of support.
Too often they get criticized, belittled or
just ignored. Parents would do well to find
ways to encourage their kids each and every
day. Husbands and wives often overlook
this powerful “elixir” for the health of their
marriage. Words of appreciation, gratitude,
kindness, and praise would be “fresh air” to
many a relationship. Teachers in the schools
need to tap into the power of encouraging
their students. Transformation is possible.
Even strangers we meet for the first time
need and respond to encouragement.
The Bible tells us to “encourage one
another daily” and “to consider how to
spur one another on toward love and good
deeds” (Hebrews 3:13a, 10:24). It is the
people who encourage us the most that are
the most welcome people in our lives. While
studying at university, I was mentored by a
campus chaplain named Bob. He changed
my life forever with his ongoing love and
encouragement. I wonder who has touched
your life in this way?
As a longtime coach of athletes here
at home and a trainer of leaders around
the world, I have observed the power of
encouragement. Often I see myself as a
“cheerleader,” always on the lookout for
ways to build up those I seek to empower.
In the Bible we read the story of
Barnabas, whose name actually meant
“son of encouragement.” No one was used
more significant than he was in the life of
the great apostle Paul. Barnabas displayed
wisdom, courage, humility and self-sacrifice
as he often came alongside Paul to nurture,
guide and encourage him. As a result, Paul’s
life and ministry has touched the entire
world. Everyone needs a Barnabas!
Who will you encourage today? Ask
God to teach you how to become an
Encourager. It’s a fun way to live. Soon you
will find encouragement coming back your
way as well. God says that you will reap
what you sow!
As a 19 year old young man, Roger
Kruse discovered the power of love and
encouragement through faith in Jesus.
Forty-three years later, he is still Christ’s

In Memoriam
Gloria B. Baldwin (nee Shaw) 79, of Burton, passed away peacefully Nov. 13, 2014 at
Heather Hill Care Communities in Chardon. She was born Feb. 6, 1935 and is now reunited
with her loving husband of 54 years, Lewis J. Baldwin. Gloria was a compassionate and loving
mother, devoted to her husband and children. She enjoyed baking and spending time with
her family.
She will be missed by: children, David J. (Rebecca) Baldwin, Joseph L. (Pamela) Baldwin,
Penny Seaman, Tina Marie (Mark F.) Kimmy; 10 grandchildren; 19 great-grandchildren;
sister, Liz; and many friends. Gloria is preceded in death by: her husband, Lewis; son, Lewis
J. Baldwin Jr.; and three sisters. Gloria’s final resting place is in Welton Cemetery in Burton.

Robert “Bob” C. Kopp Sr., 70, of Champion, entered eternal rest Nov.16, 2014 at Trumbull
Memorial Hospital in Warren. He was born in Elyria Dec. 5, 1943 to the late Robert O.
and Catherine (Fisher) Kopp. Bob was a former employee of Sajar Plastics, the Village of
Middlefield, Cardinal Local Schools, and most recently as an Amish Taxi driver. He played and
coached several men’s slow pitch softball teams. He also bowled for many years and was a
member of The Fraternal Order of Eagles Aerie #2261 in Chardon.
He will be missed by his loving wife of 42 years, Sheilah Lynn (Mullen) Kopp; children,
Debbie (Lenard) Woolsey, Robert C. (Sherry) Kopp Jr., Kenneth (Tangi) Kopp; sister, Sandy
Pereces; grandchildren, Matthew Kopp, Rebecca Woolsey, Tyler Kopp, Joanna Woolsey;

Picturesque Burton Village will be decked out in its finest
holiday wear and welcoming everyone to visit for a unique
and old-fashioned holiday experience.
The Log Cabin in the Park will be the hub of activity over the five day
event. Come snuggle up to the roaring fire in the fireplace and enjoy a
holiday tradition when you bring the youngsters in with their gifts
requests for Santa. Santa will be assembling his list each day from noon
to 4. While in the Log Cabin, be sure to check out the maple products
that make excellent and tasty gifts.
Friday November 28, there will be a lighted holiday parade at 6 P.M.
Everyone is invited to participate, as a marcher in the parade or by
watching throughout town. The parade will assemble in the Berkshire
High School parking lot at 5:45 P.M. All marchers, floats and participants
must have some sort of lighting.
At the completion of the parade the holiday lights will be turned on in
Burton Village Park. Hot chocolate will be available in the gazebo during
the lighting. Hot chocolate and cookies will be available at the Burton
Congregational Church after the lighting. Carolers will be singing in the
gazebo. On Dec. 6 carolers from Agape Christian School will be caroling
around the town.
The shops on Main Street will be hosting various special events and
activities along with one of a kind holiday gift ideas. All shops are
locally owned and different. Hand-blown glass items, Amish made rugs,
flowers, vintage furniture and unique, one-of-a-kind gifts are just a few
of the many things waiting to be discovered in Burton Village year round.
Picturesque and historic Burton Village is a wonderful place to visit in
any season. The holiday time brings out the very New England feel of the
town and area. Just a peaceful walk through the Village Green
relaxes and refreshes. For those who wish to extend their
visit, the Red Maple Inn is ready to welcome you. And there
are three different restaurants for your dining needs.

Pumpkin Ribbon Bread

This recipe uses less fat, sugar and salt
Filling
6 oz. cream cheese
¼ cup sugar
1 Tablespoon all purpose flour
2 egg whites
Batter
1 cup canned pumpkin
½ cup unsweetened applesauce
1 egg
2 egg whites
1 Tablespoon canola oil
1 2/3 cup flour
1 ¼ cup sugar
1 tsp. baking soda
½ tsp. salt
½ tsp. cinnamon
½ tsp. ground cloves
1/3 cup chopped walnuts
For filling, combine cream cheese, sugar,
flour and egg whites in a bowl. Set aside. In
a mixing bowl, beat pumpkin, applesauce,
egg, egg whites and oil. Combine flour, soda,
salt, cinnamon and cloves. Add to pumpkin
mixture. Stir in walnuts. Divide batter between
two 8” x 4” x 2” bread pans coated with
cooking spray. Spread each with filling. Top
with remaining batter. Bake at 350 degrees for
40 to 45 minutes or until toothpick inserted
near the center comes out clean. Cool for 10
minutes before removing from pans to wire
racks to cool completely. Makes two loaves.
Baked Sweet Corn Casserole

1 can (16 oz) cream corn
1 can (16oz) kernal corn, drained
1/2 cup sour cream
1 cup melted butter
2 eggs
1 package (12 oz) corn bread mix
Mix all ingredients together and pour into
a greased 9x13 pan. Bake 45 mins at 350
degrees or until cooked all the way through.
Optional: drizzle with honey.

Mix together
1 pound hamburger
1 egg, beaten
¾ cup milk
½ cup quick oats
¼ cup chopped onion
1 tsp. salt
½ tsp. nature’s seas
Stir in 1 cup shredded cheddar cheese
Shape into 8 mini loaves. Place on baking pan.
Combine 2/3 cup ketchup
½ cup brown sugar
1 ½ tsp. mustard
Spread on loaves. Bake uncovered at 375
degrees for 45 minutes.
“Bob Evans” Stuffed Pancakes

Pancake batter
2 eggs, beaten
¼ cup melted butter
½ tsp. salt
4 Tablespoons baking powder
2 cups milk
2 cups flour
Cinnamon mixture
¾ cup brown sugar
1 tsp. cinnamon
½ cup mini cinnamon chips
Pour small amount of pancake batter onto
hot skillet. Sprinkle with crumbs. When almost
ready to flip, cover crumbs with more batter,
then flip. Cook until done. Put on a baking
sheet in a single layer. Top with cream cheese
filling. Keep in a warm oven until all pancakes
have been made. Serve with hot maple syrup
and cream cheese filling.
Note: mini cinnamon chips and cream cheese
filling can be found at bulk food stores.
Garlic Bubble Loaf

1 package dry yeast
¼ cup warm water
2 cups milk
2 Tablespoons sugar
1 Tablespoon shortening
2 tsp. salt
2 cups flour
½ cup butter
1 Tablespoon parsley flakes
2 tsp. garlic powder
Dissolve yeast in warm water. Let set for 5
minutes, then add milk, sugar, shortening, salt
and flour. Beat until smooth and stir in enough
flour to form a soft dough.
Turn out on a floured surface and knead until
smooth and elastic, about 6 to 8 minutes.
Place in a greased bowl, turning once to
grease top. Cover. Let rise until double.
Melt butter. Add parsley flakes and garlic
powder.
When punched down, divide dough into
4 parts and then divide each part into 12
pieces. Roll into balls, dip each one into butter
mixture. Place balls into 2 bread pans. Pour
remaining butter mixture over dough. Let rise
until double.
Bake at 375 degrees for 35 to 40 minutes.
Serve warm.
Cheesy Taters

Melt together 1 stick butter and 1 small onion
Pour into roaster and add:
2 cans cheddar cheese soup
2 cans cream of chicken soup
1 cup sour cream
1 to 2 packages of dry ranch powder
Cubed ham or chicken
2 bags Tater Tots
Stir together and bake at 350 degrees until
hot. Top with mozzarella and/or cheddar
cheese.
(Editor’s Note: This recipe is reprinted because we
omitted the 1 to 2 packages of dry ranch powder
from the list of ingredients in the last issue.)
Bacon Tater Bake

2 cans cream of mushroom soup
1 1/3 cups sour cream
1 pound bacon, cooked and crumbled
1 package Tater Tots (32 oz.)
1 Tablespoon chopped onion
Combine soup, sour cream and onion. Add
bacon and Tater Tots. Stir until combined.
Transfer to greased 9”x13”x2” pan. Cover and
bake at 350 degrees for 50 minutes. Uncover
and bake 10 minutes longer or until golden
brown.
Taco Pizza Salad

2 packages crescent rolls
1 cup sour cream
4 ounces cream cheese
1 can pizza sauce
1 ½ pounds hamburger
1 package taco seasoning
Doritos, crushed
Shredded cheese
Toppings of choice
Roll out crescent rolls on cookie sheet (deep
dish works best)
Bake at 350 degrees until done and cool
Layer ingredients. Layer one - mixed sour
cream and cream cheese. Layer two – pizza
sauce. Layer three – fried hamburger with
taco seasoning. Layer four - toppings such
as lettuce, tomato, green pepper, broccoli,
cauliflower. Top veggies with crushed Doritos
and a layer of shredded cheese. Cut into
squares.

Sloppy Joe Sandwiches

1 pound ground beef
1/3 cup chopped onion
¼ tsp. pepper
1 tsp. celery salt
1 tsp. chili powder
2 tsp. Worchester sauce
1 tsp. mustard
1 ½ Tablespoons vinegar
3 Tablespoons brown sugar
1/3 cup water
1 cup Ketchup
1/3 cup quick oats
Brown beef, onion, pepper and celery salt in
skillet.
Mix remaining ingredients together, add to
ground beef mixture and stir. Simmer covered
20 to 30 minutes.
Cream Cheese Chicken Soup

1 small onion chopped
1 Tablespoon butter
3 cups chicken broth
3 medium carrots, sliced
3 medium potatoes, peeled, cubed and
cooked
2 cups cubed cooked chicken
2 Tablespoons parsley
Salt and pepper to taste
¼ cup flour
1 cup milk
1 package cream cheese (8 oz.), cubed
In a large saucepan sauté onion in butter.
Add broth, carrots and potatoes. Bring to
a boil. Reduce heat, cover and simmer for
15 minutes or until vegetables are tender.
Add chicken, salt and pepper, heat through.
Combine flour and milk until smooth, add to
vegetable mixture, bring to boil. Cook and
stir until thickened. Reduce heat. Add cream
cheese and stir until melted.
Chicken Tater Tot Casserole

6 boneless chicken breasts, cooked
2 bags frozen mixed vegetables
2 bags Tater Tots
¾ cup milk
4 cans cream of chicken soup
Velveeta
Salt and pepper to taste
Cook chicken breasts until tender. Cut in small
pieces and put on bottom of large roaster that
has been sprayed with Pam. Crumble ¾ of a
bag of Tater Tots in roaster, mix together with
chicken. Add salt and pepper to taste. Mix milk
and soup together and pour over mixture.
Layer sliced Velveeta, arrange Tater Tots on
top of cheese. Cover with foil and bake at 350
degrees for 1 to 1 ½ hours.
Cranberry Salad

2 boxes cherry Jell-o (3 oz. each)
2 cups boiling water
2 ½ cups sugar
1 cup crushed pineapple
1 cup chopped celery
1 cup raw cranberries, ground
1 or 2 oranges, ground rind and pulp, add
some chopped apples with peelings on. Mix
together and refrigerate.
Chicken Cordon Bleu Casserole

1 pound red potatoes cut into 1-inch chunks
1pound chicken breast tenders
12-ounce bag of broccoli florets
1 can cream of chicken soup
1 cup ham cut into ½ inch chunks
1 cup shredded Swiss cheese
1/3 cup milk
2 Tablespoons parsley
I tsp. minced garlic
Cook potatoes until just tender. Drain.
Add chicken and remaining ingredients to
potatoes. Toss to mix. Transfer to 13 inch
by 9 inch sprayed pan. Bake at 350 degrees
uncovered for 50 minutes or until done.
(3 batches will fill a large roaster.)
Chicken Pot Pie

Crust
1 ½ cup flour
½ cup shortening
1/8 tsp. salt
¼ cup milk
Mix flour, salt, shortening. Add milk. Roll out
thin between waxed paper like 2 crust pie
dough, one bottom and one top crust.
Filling
6 Tablespoons butter
6 Tablespoons flour
½Tablespoon salt
¼ tsp. pepper
1 Tablespoon chicken base
1 ¾ cup chicken broth
2/3 cup milk
2 cups cooked chicken
½ cup mixed vegetables
Melt butter. Add flour, salt, pepper and
chicken base. Add liquids, stirring often. Cook
until thick. Add meat and vegetables. Pour
into pastry lined baking dish. Top with second
crust. Make a few small slits on top. Bake at
425 degrees for 20 to 25 minutes or until
golden brown.

Sweet Potato Oven Fries

1 tsp. coriander seeds
½ tsp. fennel seeds
½ tsp. dried oregano
½ tsp. crushed red pepper
½ tsp. salt
2 lbs. sweet potatoes (4 medium), peeled and
cut in wedges
2 Tablespoons oil
Dipping sauce:
½ c. mayo
½ c. sour cream
1Tablespoon lime juice
1Tablespoon minced cilantro
½ tsp. ground mustard
Dash cayenne
Dash salt
Grind coriander, fennel, oregano and red
pepper to a powder, add salt. In a large bowl,
combine potato wedges, oil and ground
spices. Toss to coat. Place on greased 10”x15”
baking sheet. Bake at 400° for 30 minutes
until golden brown, turning occasionally.
Dipping sauce is optional. Serves 5.
Fried Mashed Potato Balls

2 cups cold mashed potatoes
1 egg lightly beaten
¾ cup shredded cheddar cheese
½ cup chopped green onions (optional)
¼ cup real bacon bits
½ cup dry breadcrumbs
Oil for frying
Place mashed potatoes in bowl and let stand
at room temperature for 30 minutes. Stir in
egg, cheese, onion and bacon bits. Shape
into 1” balls, roll in breadcrumbs. Let set for
15 minutes. In a skillet heat 1” of oil to 375

½ to 3 minutes or until golden brown. Remove
with a slotted spoon to paper towels to drain.

Cheddar Chowder

2 cups water
2 cups potatoes, cubed
1 cup carrots
1 cup cubed ham or chicken
¼ cup chopped onion
1 tsp. salt
¼ tsp. pepper
White Sauce
¼ cup butter
¼ cup flour
2 cups milk
2 cups grated cheese (cheddar or Velveeta)
Cook first 7 ingredients until tender. Cook
all sauce ingredients except cheese. When
thickened, add cheese. Add to vegetable
mixture. Heat until almost boiling. (Do not
boil.) Serve with fresh homemade bread for a
delicious meal.

½ cup butter
3 squares (1 oz. each) unsweetened chocolate
2 eggs
1 cup sugar
1 tsp. vanilla
2/3 cup flour
¼ tsp. baking soda
Filling
2 Tablespoons heavy whipping cream
2 tsp. instant coffee granules
4 Tablespoons butter, softened
2 cups confectioner’s sugar
Glaze
1 cup semisweet chocolate chips
1/3 cup heavy whipping cream
In a saucepan over low heat, melt butter and
chocolate. Cool slightly. In a small mixing
bowl, beat eggs, sugar and vanilla. Stir in
chocolate mixture. Add flour and baking soda.
Spread in a greased 13” x 9” pan. Bake at 350
degrees for 25 to 30 minutes. Cool. For filling,
combine cream and coffee in small bowl. Stir
until coffee is dissolved. In a small bowl, beat
butter and sugar. Add coffee mixture. (Add
more cream if needed, until creamy.) Spread
over brownies. In a small saucepan combine
chips and cream. Cook and stir over low
heat until chocolate is melted and mixture is
thickened. Cool slightly. Spread over filling.
Store in refrigerator.
Mocha Pudding Mrs. Byler Brownies

Brownies
1 chocolate cake mix
1 box chocolate instant pudding
2 cups milk
Bake until toothpick inserted in center comes
out clean.
Pudding
2 blocks cream cheese
1 cup oleo, softened
2 cans Eagle brand milk
1 tsp. vanilla
3 tsp. instant coffee dissolved in a little hot
water
½ cup chocolate syrup
Mix together until creamy. Add three 8 oz.
tubs of Cool Whip. Take ½ the mixture and
add a 1 cup mixture of the chocolate syrup
and coffee. Let cool. Layer with brownie bites,
white pudding and chocolate pudding until
all used up. Top with Cool Whip.

1 package yellow cake mix
1 can pumpkin (15 oz.)
2 eggs
1 tsp. cinnamon
1 tsp. pumpkin pie spice
1/3 cup water
1 cup chocolate chips
Preheat oven to 350 degrees. Grease and
flour a 10” Bundt cake pan. Combine cake
mix, pumpkin, eggs, spices and water. Stir in
chocolate chips. Bake 35 to 40 minutes. Cool
in pan 10 minutes. Invert and cool completely.
Dust with powdered sugar or drizzle with
melted chocolate.
Cream Cheese Filled Cookies

1/3 cup butter, softened
¾ cup white sugar
1 egg
1 tsp. baking powder
1/3 cup Crisco
1 tsp. vanilla flavoring
1 ¾ cup flour
½ tsp. salt
Filling
6 oz. cream cheese
1 ½ cup powdered sugar
1 tsp. vanilla flavoring
2 Tablespoons flour
Food coloring (optional)
Bake at 375 degrees for 10 to 12 minutes or
until lightly browned. Remove from oven.
Take cookie scoop and make a dent in each
cookie. Let set.
Topping
3 Tablespoons butter
¾ cup semisweet chocolate chips
Melt chips and butter over low heat. Stir until
smooth. Drizzle over cookies. Makes about 2
1/2 dozen.
Chocolate Sundae Crunch

Crust
1 cup flour
¼ cup brown sugar
½ cup butter
½ cup nuts
Combine flour and brown sugar, cut in butter
until crumbly, stir in nuts.
Spread in ungreased 9 inch square pan,
reserving ½ cup for topping.
Bake at 350 degrees for 25 minutes or until
lightly browned. Cool.
Filling
1 package vanilla pudding mix (3 ¼ oz.)
2 cups vanilla ice cream, softened
1 cup milk
Combine pudding mix with milk. Beat, add
softened ice cream, blend until smooth. Pour
over crumb crust, sprinkle with remaining
crumbs.
Topping
3 Tablespoons evaporated or whole milk
½ cup chocolate chips
½ cup small marshmallows
Combine. Cook over medium heat, stirring
until mixture is melted. Drizzle over filling
and crumbs. Refrigerate 2 hours. May also be
frozen.
Saltine Toffee

37 saltine cracker squares
1 cup butter, cubed
¾ cup sugar
2 cups semisweet chocolate chips (12 oz.)
1 square white baking chocolate (1 oz.)
1 tsp. shortening
Place crackers in a single layer in a foil-lined 15
inch by 10 inch by 1 inch baking pan.
In a saucepan, bring butter and sugar to a boil.
Reduce heat, simmer uncovered for 5 to 6
minutes or until mixture is thickened and
sugar is completely dissolved. Spread over
crackers.
Bake at 350 degrees for 7 to 8 minutes or
until bubbly. Sprinkle with chips, bake 3 to 5
minutes longer or until chips begin to melt.
Spread chocolate evenly over top.
Melt white chocolate and shortening, drizzle
over toffee. Chill 15 to 20 minutes or until set.
Break into pieces. Store in refrigerator.
Makes about 1 ¾ pounds.
Carmel Toffee Bars

1 cup plus 2 Tablespoons butter
1 cup sugar
2 ½ cups flour
Bake 20 minutes at 350 degrees, Don’t
overbake.
Filling
1 cup butter (not oleo)
1 cup packed brown sugar
1/4 cup white Karo syrup
1 can Eagle brand milk
Boil 5 minutes over low heat
Topping
Melt 1 pack chocolate chips or wafers. Spread
over top
Whoopie Pies

4 cups flour
2 cups sugar
1 cup cocoa
1 cup sour cream
2 eggs
3 tsp. baking soda
pinch of salt
1 tsp. vanilla
I cup hot water
1 cup shortening
Mix ingredients together and drop by
teaspoons on greased cookie sheet.
(Parchment paper works better than greasing
cookie sheet) Batter may be thin. Bake 8 to 10
minutes at 400 degrees.
Filling
2 egg whites, beaten
2 Tablespoons vanilla
4 Tablespoons flour
4 Tablespoons cream
¾ cup oleo
4 cup powdered sugar
Mix all ingredients together and put between
two cookies.

Walnut Streusel Pumpkin Pie

Pastry for single crust 9” pie
1 can pure pumpkin (15 oz.) or 1 3/4 cup fresh
pumpkin puree
I can sweetened condensed milk (14 oz.)
½ cup sugar
½ cup packed dark brown sugar
2 eggs
1 tsp. flour
½ tsp. salt
1 ½tsp. ground cinnamon
½ tsp. ground nutmeg
¼tsp. ground ginger
Cream Cheese Filling
1 package cream cheese, softened (8 oz.)
¼ cup sugar
½ tsp. vanilla extract
1 egg, lightly beaten
Topping
¼ cup old fashioned oats
¼ cup packed dark brown sugar
2 Tablespoons flour
¼ tsp. cinnamon
¼ tsp. nutmeg
2 Tablespoons cold butter, cubed
¼ cup chopped walnuts
Line 9” deep dish pie plate with pastry, trim
and flute edges. In large bowl beat pumpkin,
milk, sugars, eggs, flour, salt and spices until
blended. Transfer to crust. In another bowl
beat cream cheese, sugar and vanilla until
smooth. Add eggs. Beat on low speed just
until combined. Spoon evenly over pumpkin
layer. In a small bowl combine first 5 topping
ingredients. Cut in butter until crumbly. Stir
in walnuts. Sprinkle over filling. Cover edge
with foil to prevent overbrowning. Bake at 400
degrees for 15 minutes. Reduce heat to 350
degrees. Bake 50 to 60 minutes longer or until
a knife inserted near the center comes out
clean. Remove foil. Cool on wire rack. Serve
within 2 hours or refrigerate, covered, until cold.
Pumpkin Streusel Loaf

1 cup butter, softened
1 cup brown sugar
1 cup white sugar
1 tsp. vanilla
4 large eggs
1 can pumpkin (15 oz.)
2 cup flour
1 ½ tsp. baking powder
1 ½ tsp. soda
1 tsp. cinnamon
¾ tsp. salt
¾ cup buttermilk or vanilla yogurt
Streusel
½ cup butter
2/3 cup sugar
1 cup flour
Beat butter and next 3 ingredients until fluffy.
Add eggs one at a time, beating well. Stir in
pumpkin. In another bowl mix flour and next 4
ingredients. Add to butter, mixing alternately
with buttermilk, beating just until combined.
Spoon in greased pan. Spread crumbs over
the top, bake at 350 degrees 30 minutes or
until done.
Chocolate Mocha Pudding

Oreo cookies, crushed, or brownies, cubed
1 package cream cheese, softened
1 can Eagle brand milk
16 oz. Cool Whip
Mix together. Pour half the pudding over half
the cookies. Add 1/2 cup chocolate syrup
and 1 1/2 to 2 tsp. instant coffee dissolved in
1 Tablespoon hot water to rest of pudding.
Layer again. Spread rest of cookies on top.
Also good frozen.
Soft Pretzels

Mix 1½ cup warm water and 2 Tablespoons
yeast. Let set 10 minutes.
Add 1/3 cup brown sugar and 4 cups occident
flour (found at bulk food stores). Let rise a half
hour.
Using 1/3 cup dough per pretzel, shape
dough and dip into mixture of 4 cups boiling
water and 8 tsp. soda which has been slightly
cooled. Place pretzels on baking sheet lined
with parchment paper. Sprinkle with coarse
salt. Bake in 400 degree oven for 10 to 15
minutes or until golden. Dip in melted butter
and sprinkle with more salt if desired.
Caramel Apple Crisp

Filling
4 to 6 large apples, peeled, cored and sliced
2 Tablespoons flour
½ cup white sugar
¼ cup brown sugar
2 tsp. cinnamon
¼ cup caramel topping
Preheat oven to 375 degrees. Spray 8” square
baking dish with cooking spray. Set aside. In
a large bowl mix white sugar, brown sugar,
cinnamon and flour. Add apple slices and toss
with hands to coat well. Pour mixture into
prepared baking dish. Drizzle top of apples
with the caramel. Set aside and make topping.
Topping
¼ cup quick cooking oats
½ cup brown sugar
½ cup flour
½ stick (¼ cup) cold margarine, cut in slices
Optional ¼ cup chopped pecans
In a medium bowl mix together oats, brown
sugar, flour and pecans. Cut in cold margarine
until mixture becomes coarse crumbs.
Sprinkle topping evenly over apples. Bake
for about 45 minutes or until apples are fork
tender and topping is golden brown. Cool 30
minutes. Serve with ice cream or whipped cream.
“Cabelas” Tiger Butter Fudge

2 cups white sugar
1 stick butter
2/3 cups whipping cream
½ cup peanut butter
1 package Toll House white chocolate chips
1 cup marshmallow cream
Vanilla
1 cup melted chocolate chips
Boil first 3 ingredients for 5 minutes. Remove
from heat. Stir in marshmallow cream, white
chocolate chips and vanilla. Pour into 8”x8”
pan. Dab with peanut butter and swirl into
fudge. Melt chocolate drizzle over top and swirl.
Pumpkin Torte

1 package yellow cake mix
1 can (15 oz.) solid packed pumpkin, divided
½ cup milk
1/3 cup vegetable oil
4 eggs
1 1/2 tsp. pumpkin pie spice, divided
1 package cream cheese (8 oz.)
1 cup powdered sugar
1 carton Cool Whip (16 oz.)
¼cup caramel ice cream topping
1/3 cups chopped pecans, toasted
In large mixing bowl combine dry cake mix,
1 cup pumpkin, milk, oil, eggs and 1 tsp.
pumpkin pie spice. Pour into 2 greased and
floured 9” round baking pans. Bake at 350
degrees for 25 to 30 minutes. Cool 10 minutes
before removing from pans. Cool completely.
Beat cream cheese, sugar and remaining
pumpkin pie spice until smooth. Fold in Cool
Whip. Split each cake horizontally. Place a
layer on a plate. Spread with 1/4 of filling.
Repeat layers 3 more times. Top with caramel
ice cream topping and pecans. Chill.
Simple Sugar Glaze

1 ½ cups confectioners' sugar, sifted
3 to 4 tablespoons milk or water
2 tsp. vanilla extract (optional)
Place the sugar in medium mixing bowl and
slowly stir in the milk and vanilla, a little at a
time until smooth.
Pineapple Nut Cake

1 can crushed pineapple (15 oz.)

In a large mixing bowl stir flour with sugar,
pineapple, eggs, vanilla and nuts until well
blended. Bake in greased 9”x13” pan for 40 to
45 minutes at 325 degrees. Remove from oven
and spread with frosting when cool

1 package cream cheese, softened (8 oz.)
1 1/2 cup XX sugar
1/2 cup oleo or butter
1 tsp. vanilla

Praline Topped Apple Bread

2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup sugar
1 cup sour cream
2 eggs
3 tsp. vanilla extract
1 1/2 cup peeled, chopped apples
Topping
1 1/4 cup chopped pecans, divided
1/2 cup butter
1/2 cup packed brown sugar
Mix first 4 ingredients. In another bowl beat
sugar, sour cream, eggs and vanilla extract.
Stir into flour mixture just until moistened.
Fold in apples and 1 cup pecans. Transfer to
a greased 9”x5” loaf pan. Bake at 250 degrees
or until toothpick comes out clean. Cool in
pan 10 minutes. Remove to wire rack to cool.
In saucepan bring butter and brown sugar
to boil. Cook and stir 1 minute. Spoon over
bread. Sprinkle with remaining pecans.
Chocolate Pretzel Cookies

½ cup butter or margarine
2/3 cup sugar
1 egg
2 squares (1 oz. each) unsweetened chocolate,
melted and cooled
2 tsp. vanilla
1 ¾ cup flour
½ tsp. salt
In a mixing bowl cream butter and sugar. Add
egg, chocolate, vanilla, mix well. Combine
flour and salt, gradually add to creamed
mixture and mix well. Cover and chill for 1 hour
or until firm. Divide dough into fourths. Form
each portion into a 6” log. Divide each log into
12 pieces. Roll each piece into a 9” rope. Place
ropes on greased baking sheets. Form into
pretzel shapes and space 2” apart. Bake at 400
degrees for 5 to 7 minutes or until firm. Cool 1
minute before removing to wire racks.
Mocha Glaze
1 cup (6 oz.) semisweet chocolate chips
1 tsp. light corn syrup
1 tsp. shortening
1 cup powdered sugar
4 to 5 Tablespoons hot coffee
2 squares (1 oz. each) white chocolate, melted
Heat chocolate chips, corn syrup and shortening
in a small saucepan over low heat until melted.
Stir in sugar and enough coffee to make a smooth
glaze. Dip pretzels, place on waxed paper or wire
racks to harden. Drizzle with white chocolate. Let
stand until chocolate is completely set. Store in an
airtight container. Makes 4 dozen.
Drumstick Pudding

Crust for pudding
1 stick butter, melted
½ cup cocoa
1 ¼ cup powdered sugar
1 cup flour with ¼ tsp. salt
Press into 13”x9” pan. Bake at 350 degrees 10
to 15 minutes. Let cool.
Pudding mixture
1 package cream cheese, softened (8 oz.)
½ cup peanut butter
1 cup powdered sugar
2 cups Cool Whip
Mix together, spread on cooled crust.
Mix 2 or 3 small boxes instant cream cheese
pudding mix with 2 to 3 cups sold milk. Spread
on cream cheese mixture. Top with Cool Whip.
Mocha Truffle Brownies

Brownie
1 ¼ cup semi-sweet chocolate chips
1 tsp. instant coffee
2 eggs
¾ cup packed brown sugar
½ cup butter
1 Tablespoon hot water
¾ cup flour
½ tsp. baking powder
In heavy saucepan melt chips and butter. Stir
well until smooth. Cool 5 minutes. Dissolve
coffee in hot water, set aside. Beat eggs and
brown sugar for 1 minute. Stir in chocolate
mixture and coffee. Combine flour and baking
powder, gradually add to chocolate mixture.
Transfer to greased 9” square pan. Bake at 350
degrees for 30 to 35 minutes or until toothpick
inserted near center comes out with moist
crumbs. Cool completely
Filling
1 Tablespoon instant coffee
1 Tablespoon hot water
1 package cream cheese (8oz.)
1/3 cup powdered sugar
1 cup semi-sweet chocolate chips, melted
Dissolve coffee in hot water. Set aside. Beat
cream cheese until smooth. Beat in powdered
sugar, melted chocolate and coffee. Spread
over brownies.
Glaze
¼ cup semi-sweet chocolate chips
1 tsp. shortening
Melt chips and shortening. Stir until smooth.
Drizzle over filling. Refrigerate at least 2 hours
before cutting.
Granola

Mix together
1 cup melted butter
1/3 cup vegetable oil
½ cup maple syrup
1 tsp. vanilla with maple flavor
½ tsp. soda and salt
Add to dry ingredients.
Dry ingredients
7 cups oatmeal
1 ½ cup coconut
1 cup brown sugar
1 cup raisins
1 package cinnamon graham crackers, crushed
Pour on a large baking sheet or pan and bake
at 350 degrees for 15 to 30 minutes. Do not
overbake. Remove from oven and add 3 cups
Grapenuts. Cool. Store in air tight container.
Pumpkin Apple Streusel Muffins

½ cup vegetable oil
2 cups peeled, chopped apples
Combine flour, sugar, spice, soda and salt. In
another bowl beat eggs, pumpkin and oil. Add
to dry ingredients and stir until moistened. Stir
in apples. Fill greased muffin tins about ¾ full.
Combine topping ingredients and sprinkle on
top. Bake at 350 degrees for 35 to 40 minutes.
Makes 36 muffins.
