Hills is mainly a livestock area with a rich heritage in meat production and
Ludlow has an unrivalled reputation as a centre for local produce.
The area is also developing a strong creative sector, with wood, crafts and
a wide variety of non-food products.

Autumn Recipe
Nettle and Wild Garlic Soup Serves 4
Ingredients
Ingredients

1kg crab apples (or Bramleys)
•
110g young nettles
•
250g blackberries
•
110g wild garlic leaves
•
250g damsons or bullaces
•
1 onion
•
110g rose hips
•
1 medium potato
•
110g wild cherries
•
25g butter
•
110g elderberries
•
1 litre vegetable stock
•
About 2l water
•
1 tsp ground coriander
•
Up to 2kg sugar
•
Pinch chilli powder (optional)
Method
Spring Recipe
Hedgerow Jelly Makes 5-6 jars
Method
1. Rinse and half the crab apples (or cut up the Bramleys).
Remove stalks from the other fruits and rinse. Place all fruits in a
preserving pan and add enough water to cover.
1. Wearing rubber gloves, cut the young shoots off the nettles.
2. Boil and simmer until the fruit is soft. Strain the juice through a
jelly bag. Do not press through, the juice should be clear.
3. Chop the onion and saute in the butter.
Add the coriander and chilli. Blend in.
3. Measure the juice before returning to the pan. For every 500ml of
juice add 500g of sugar. Stir over a low heat until sugar dissolves.
4. Add the stock and peeled, chopped potato. Boil and simmer until
potato is soft.
4. Bring to the boil. Skim off any white foam. Lower the heat and
simmer until setting point is reached.
5. Add the nettles and wild garlic leaves, leave for a few minutes
until wilted.
5. Test: put a little of the jelly on a cold saucer, leave it to cool
and push with a finger until it wrinkles.
6. Remove from the heat and liquidise.
2. Wash the nettles and wild garlic leaves, and chop up the wild garlic.
7. Reheat and serve.
6. Once ready, pot in sterilised jars.
Recipe by Ruth Mapes. If you’re a true forager, you should be able to
collect all of these fruits from the hedgerows in the autumn, and make a
much cheaper version!
