Secrets...
the
...of the Orchard House Cookies
If you’ve walked through the Orchard House in the past year, you’ve encountered the table in the Gathering Room
that may just be the most popular place in all of The Reserve. It’s the table that seems to be perpetually garnished
with a plate of fresh, warm and absolutely delicious cookies. They began appearing with the arrival of
Chef Andreas Sellner in April. Plate after plate, day after day. There for the taking…no cost involved.
How many cookies in all have been served? More than 20,000 since last April, by our accounting.
We stopped by the kitchen to talk to Chef Sellner and Sous Chef Isaac Garrett to see what we could learn.
And while we weren’t able to pry the recipes from them, we were able to learn a thing or two about the cookies.
When did you start putting the cookies out and why?
Isaac: I put them out because Chef told me to. I think he wants to be like Santa Claus all year long.
Sellner: It's a nice touch to have available for the Members. They seem to like them.
What kind of cookies do you put out?
Andreas Sellner
Executive Chef
Isaac: Chocolate Chunk, White Chocolate Macadamia Nut, and Peanut Butter.
Sellner: During the holidays we made Vanilla Kipferln, one of my mother's recipes.
How many cookies do you put out every day?
Isaac: Anywhere from 75 to 100, maybe more on the weekends
What is the most popular cookie?
Isaac: Definitely the Chocolate Chunk.
How many pounds have Orchard House staff put on
since you started putting the cookies out?
Isaac: I'd say, at least five pounds per person.
Isaac Garrett
Sous Chef
Will you give us the recipe for your
mother’s Vanilla Kipferlns?

Getting Better:
One Day, One Event at a Time
As I mentioned last month, one of our goals this year is to “Create
& Promote Member Informational Programs on Rules, Policies and
Procedures.” Along with this we will be scheduling meetings
throughout the year to get your input on Club Events. We began
this process on Saturday, January 19th with a meeting at Founder's
Hall. At that meeting we discussed your ideas and suggestions for
our Annual Men's Member Guest Weekend. I want to thank all of
you that attended. Your comments were appreciated and will be
taken into consideration while planning this year's weekend. It is
our goal to become better at what we do every year. This is done
one day at a time, one event at a time. Again, thank you to those
of you that took the time out of their Saturday morning to help us
achieve our goals.
An eager and enthusiastic Advisory Committee
Your Advisory Committee also met on January 24th. To say this
new committee is enthusiastic would be an understatement. In
their first meeting they voted to meet every other month rather
than quarterly. They are eager to hear from you, so please take
a moment to review their names and e-mail addresses.
A year full of activities
The Foundation, Property Owners Association and Club have
collaborated on this year's “Calendar of Events”. Soon you will
be receiving (if you haven't already) the tri-fold calendar for your
wallet or purse along with the beautiful wall calendar. Please refer
to these calendars often when planning your families’ activities.
While these calendars list all the preplanned events for the year,
they are not all inclusive. We continue to create activities all year.
Your newsletter and e-mails are the best way to stay current with
all information and all the events at The Reserve at Lake Keowee.
Again, thank you for your participation and information.
As always, I can be contacted at the Orchard House (864) 869-2100
or via e-mail: [email protected].
Sincerely,
Frank Santoro, C.H.A.
Welcome New Members!
“Neither rain, nor sleet, nor gloom
of night will keep me from my
appointed rounds.”
—Postman's Motto
That well-known motto could have been the golfer's motto
this past month as we experienced a roller coaster ride of
mixed weather. We saw everything from long frost delays
and rain to 60 degree or better days. Through it all, we still
managed to get outside and enjoy golf almost every day on
our beautiful course.
Congratulations!
— Let's hear it for the winners of our
January 6th Nine and Dine event.
With a score of 36, the team of Mr. Gene Propper,
Dr. Ralph Schatz, Mrs. Barbara Evans and Mrs. Shirley
Widmer “graciously defeated” the team of Mr. Pat Widmer,
Mr. Kevin Godfrey, Mrs. Tina Propper, and Mrs. Mary Schatz.
After a missing scorecard, all was forgotten after Bo's
Hershey Kiss gold and silver medal awards were handed out.
We thank you all for playing and invite everyone to come
and play at our next Nine and Dine February 3rd.
Other Kudos:
Not only did Mr. Propper win in the Nine and Dine event,
he also deserves congratulations for shooting 76, his
career-low score. Mr. Propper shot a 36 on the front and
a 40 on the back.
Mr. Harry Ahlfeldt made an eagle on #5, while Mr. Doug
Barker eagled #6. Although these eagles were made at different times, congratulations go out to both for terrific play!

2008 USGA Rule Change
The USGA and R&A have decided to change
a few rules in 2008. One of those rule changes is:
A golfer will be allowed to lift a ball for identification in
a bunker or water hazard. However, because of this new
identification rule, there now will be a two-stroke penalty
for playing the wrong golf ball from a hazard. During a
match play event, breaking this new rule will incur loss
of the hole.

Our new home on the hill
The Community Foundation is in our new home, located in the
building formerly occupied by the sales office. The building has
received a fresh coat of paint and new carpet and enjoys wonderful
long-range views. This new and improved venue will not only be
my office, but also a beautiful setting for a variety of Foundation
programs. The Foundation Board and I invite you to come see the
transformation for yourself during our official Open House on
February 23. Please stop by any time between 5 and 6:30 p.m.

It's time to cast your vote for your favorite charity
By early February you will receive an email asking you to help select the
recipients of the 2008 Community Outreach donation. As you may be
aware, The Community Foundation has four pillars that reflect its philosophy: culture, environment, education, and outreach. Each year the
Foundation makes a charitable contribution of at least 10% of the previous year's income. The Outreach Committee, comprised of Reserve property owners, has created a short list of organizations that meet our criteria.
All of the organizations are private, non-profit groups that serve the
greater Pickens County area. Your input is important — after all, it is the
property owners that make the final recommendation to the Board!
Property owners raise money
to keep troubled boys warm
I would also like to thank the property owners who participated in raising
money for the Fairplay Wilderness Camp for Boys in December. The donation was taken to the camp and given to
Paul Graber, a member of the
staff. Donations for this
camp for troubled boys
were used to purchase
gloves, hats, and warm
coats for the boys who
actually live in primitive
shelters year round.

Winter Work.
Enhancing your experience on the golf course.
This is the time of the year that we do several projects that
would be difficult during other months. These projects
range from improving drainage and landscaping to repairing cart paths and irrigation. All are done to enhance your
experience and increase your enjoyment on the course.
Hiking in the Hills kicks off new lifelong
learning partnership
I am very excited to announce our partnership with The Osher
Lifelong Learning Institute (OLLI) Program at Clemson University
and The Community Foundation. OLLI has expanded their spring
2008 semester by offering courses at the Foundation office. As part
of this joint venture, The Community Foundation will offer its facilities where the classes will be held. There is a minimal cost for each
of these classes. The first offerings include Hiking in the Hills, a
five-session course that will meet on Wednesday afternoons, beginning April 2nd, and will explore wildflowers along the Foothills
Trail and other scenic venues in the Upstate and into North
Carolina. OLLI will also host two Lunch & Learn programs: Humor
in Your Life on March 25th and Nepal – On the Everest Route
on April 29th. If the first hiking course doesn't fit into your schedule, a four-session Maymester version of Hiking in the Hills will
be offered on Tuesday afternoons during May. A Lunch & Learn,
titled Alaskan Wildlife is planned for May 27th. Remember these
are Clemson classes; registration will be done through the university, not the Concierge or Foundation office, although we will be glad
to give you information. If you would like to sign up for any of the
classes or get an OLLI catalog, please go to the OLLI website at
www.clemson.edu/OLLI or call the OLLI office at 864-6565-6912.
Rainy days will wash away the blues.
The golf course will also be sprayed this winter to eliminate unwanted weeds.
During the spraying process we will use a dye that is mixed into our tanks to allow
our applicators to determine where they have applied their solution. This dye
will color the dormant bermudagrass blue and will remain until rain washes it
off the grass.
A fan for every green.
We are also installing the power needed to operate fans on the remaining
12 greens of the golf course. The use of fans proved very helpful to the
health of six greens this past summer and we are fortunate that the other
greens will receive fans this year. Aided by a representative of the fan
manufacturer, all fan locations were specially chosen; maximizing benefits
for greens, while minimally impacting play for golfers.
I am excited about what these projects will do for our golf course this year and
if you have any questions on any of these areas or other parts of the golf course,
please give me a call. See you on the course.
