ROBERTET NATURAL EXPERTISE GREEN DNA
Robertet has developed a brand new range of citrus keys and fortifiers. This
line,
is an evolving collection of key ingredients to be used in
emulsion or in flavour compounds to release specific citrus note.
They are the results of Robertet expertise in sourcing, identification and
separation techniques. Multiple samples of different origins, producers and
seasons have been collected and analyzed.
The input of our sensory team has been a key factor to identify, essential oils
providing specific profiles (I.e. juicy, zesty, sweet, bitter, mature,…).
Analytical works have enabled us to determine which components were
responsible of the specific character.
Separation techniques such as high efficiency fractional distillation have
been used to isolate fractions of interest.
Citrus flavours specialists have been then combining these different
ingredients to create the fortifiers.
