The Hen House Eatery came together with a vision of three friends. The
concept of our urban farm house is to use locally sourced ingredients and
to provide a dining experience that is both welcoming and vibrant. A place
that you can call home. Our vision and over 60 years of experience serving
breakfast is what sets us apart from other eateries. ENJOY!
Maribel Cuadros Perrault
Maribel is originally from Beas de Segura—a town in the province of Jaén located in south-central
Spain. The Jaén province is known for it’s mountains, olives and processing their liquid gold—olive oil.
In fact, Jaén is known as the World Capital of Olive Oil because it is the biggest producer of the oil.
Maribel’s passion for food began early growing up on her family’s olive farm. It continued after she
came to the U.S. and began working at a breakfast café downtown Minneapolis. Her culinary talent
has developed and Maribel insists on making everything from scratch. The result is a diverse portfolio
flavorful foods and recipes ranging from soups to sauces to desserts. One customer claims she makes
the best house chocolate cake in town!
Please enjoy the flavors that have inspired me and I hope the food at Hen House Eatery
makes your day just a little brighter.

Barb Gardiner
Barb grew up in St. Louis Park, MN and dreamed of owning her own restaurant that would be a
place for friends and family to meet and share a good meal. This began when she first got into the
business working at a seafood café in south Minneapolis. During her career she’s served a lot of
people, but her favorite thing is breakfast and serving it up downtown Minneapolis.
While fresh ingredients are the building blocks for great food, Barb realized early on that it’s not
just the food that makes a memorable meal but the entire dining experience. Barb’s philosophy is
to make or bake whatever the customer needs and to create a welcoming and vibrant atmosphere
where guests can enjoy it. A place that inspires good conversations and memorable moments with
your family, friends, or people you’ve just met.
I hope you experience Hen House Eatery as a place where you can enjoy a homemade
meal cooked with heart and soul served with a splash of creativity.

TARA KOENIG
Having served breakfast downtown Minneapolis for over 20 years, Tara has learned a thing or two about
making sure the customer has a good experience. When it comes to getting to know her customers, Tara
is the one that not only remembers your name—but also your favorite items on the menu.
Tara grew up in Dayton, MN surrounded by the farmland the Midwest is famous for. It’s no surprise that
she loves organic gardening and strives to minimize her footprint through sustainable living at home
and at work.
In the early stages of crafting the concept for Hen House Eatery with Barb and Maribel, Tara knew their
approach had to be different than the other café’s downtown. Using fresh locally-sourced ingredients
was a natural choice. Not just because it meant tastier food on the menu, but because it helps local
farmers and has less impact on the environment.
My goal is to make our guests feel like they’re part of our family. I hope you enjoy our food
so much that you’ll invite your own family and friends.
