SAN GIORGIO HOTEL MYKONOS &
SCORPIOS BEACH-RESTAURANT-RITUALS
Thanks to a successful collaboration with Design Hotels™, what turned out to be an experiment in
temporal societies has become a permanent hideaway. Originally a summer pop-up for 2012,
San Giorgio Mykonos Hotel was such a smashing hit – introducing its very own design-driven spin
on Grecian hospitality – that four seasons have forged a Community bonded by the love of the open
sky, long, shared meals, and the dazzling azure of the Aegean Ocean.
Situated in one of the most scenic areas of the island between Paradise and Paranga beaches,
the 32-room hotel is surrounded by picturesque white houses, craggy shorelines, and bottomless blue.
Long-time friends of Design Hotels™, proprietors Thomas Heyne and Mario Hertel, collaboratively
conceived the hotel and new hospitality experience – intuitively forecasting the island’s need for
a nomadic enclave where design and simple pleasures would attract in equal measure.
As the island of Mykonos continues its evolution so has the pair’s offerings. Seeing a clear shift from
thumping beats to balance-restoring cultural gatherings, the makers of San Giorgio Mykonos launched
the ritualistic beachside bar and restaurant Scorpios in 2015. On a sun-drenched southern tip
of Mykonos Island (a short, scenic stroll from the hotel), a weatherworn house is transformed into
a modern day agora. Part ceremonial, part cerebral celebration, Scorpios brings the mystical charge
of nighttime rituals into daytime, slowed by a pace or two. The beachside lair encompasses a sandy
sunset beach, restaurant, and live event space, along with ample open-air terraces spilling into the
Cycladic coastline.
“We wanted the essence of San Giorgio Mykonos and Scorpios to mirror the evolution of the ‘new’ Mykonos
itself. There’s an overall movement taking place here – the island is growing up, and so are the tastes of those
spending time here.” — Thomas Heyne
Uniting both venues is a harmonious design concept by interior designer Annabell Kutucu and creative
director Michael Schickinger of Lambs and Lions, the creative duo responsible for the design of San
Giorgio Mykonos. Together with the Athens-based award-winning architects Dimitris and Konstantinos
Karampatakis of K-studio, they developed the holistic design treatment for Scorpios, placing
an emphasis on the essential and the celebration of traditional craftsmanship that fosters an
environment of effortless ease. At the core of both San Giorgio Mykonos and Scorpios: pure settings,
cultural interactions, and the magic of connecting in a foreign yet familiar place.
THE PERFECT BEACH DAY
At both properties, leisure is writ large and guests are encouraged to store or spend energy as they
please. Much like visiting the summer home of your coolest friend, who whips together a feast for the
eyes and palate with as much ease and grace as they throw the island’s most talked-about fête. San
Giorgio Mykonos and Scorpios are designed for those who seek simple pleasures like waking up
to views of the sea, sharing good food prepared with love and care, and feeling the ritualistic energy
of a crowd dancing under a starry sky. A perfect day at the beach.
SAN GIORGIO MYKONOS
A privileged perch – set 20 meters above the rocky shoreline – offers sweeping 270-degree views of
uninterrupted paradise. Views can be taken in from the sprawling poolside verandah and restaurant,
or from most of the 32 uniquely adorned rooms.
Understanding that the forces of design are best harnessed to unite, the hotel is equal measures history, heritage, style, and simplicity. The crisp splendor of the whitewashed building is dominated by
light and air with a spotlight on origin and craftsmanship, only a few carefully chosen accessories – raw
wood chairs, traditional Greek woven-top stools, cotton matelassé quilts – give the right warmth to
an otherwise open space. It’s precisely this appreciation for openness that extends beyond the design
principles to create an atmosphere of communal meals, unexpected friendships, and bonded souls
who return year after year.

OPEN-PLAN AND SPIRITED
A medley of accessories and seating such as wooden benches, chairs, and stools make up the eclectic
setting. The food and open kitchen is also a testament to the atmosphere. Honest, fresh ingredients
from the local farmer and fisherman are used to compose classical Italian dishes inspired by the
Umbrian countryside, and served up family-style to both locals and guests. Depending on that day’s
fare, the regularly changing menu will include dishes of handmade pastas and rustic sauces, burrata
and vine ripened cherry tomatoes with mint, or pork chops with freshly picked mushrooms and white
wine sauce.
The bar area being the epicenter of social interaction, translates the idea here with big, colorful, sink-in
cushions and exotic lanterns while retaining the whitewashed walls and furniture that are intrinsic to
the local flavor. Languid sunbeds spaced out over the generous deck create plenty of private sanctuaries as well. For the right kick-start in the mornings, breakfast foods like Greek yogurt with fruit,
freshly baked breads, Mykonos sausages, cheese from the islands, and homemade marmalade are
served.
San Giorgio’s divine location provides the ideal outlet to actively enjoy the wonders of Mykonos.
Various outdoor activities and the resort’s idyllic environment give guests the perfect combination of
relaxation and recreation.
I DO!
With its traditional rough-stone walls topped with a white bell-tower, the chapel is perfect for an intimate
ceremony with the closest of friends and family. What’s more, San Giorgio can be booked in its entirety for
a wedding or other special celebration. The staff works closely with each group to craft the perfect experience.
SCORPIOS
On a sun-drenched southern tip on Mykonos Island, a weatherworn house has been transformed into
a modern day agora. The tiered property sits overlooking the rugged wild of a nature sanctuary hugged
by the azure of the Aegean Sea. A culturally rich program and tactile laid-back luxury creates an
intellectual space where time goes unnoticed – day melts into evening.
“I loved this idea of re-imagining the Greek agora – a place where thought is cultivated and the soul nourished
by sublime surroundings, fresh food and inspired cultural programming.” — Claus Sendlinger, Founder
and CEO of Design Hotels™
SLOWED SIMPLICITY
In today's hyper-accelerated pace the need for slowing down and restoring balance takes on a newfound
relevance. Equally essential is an understanding of the tastes of an ever evolving, style-savvy traveler
forever in search of unique experiences – ones where ritualistic relaxation is nurtured through
transcendental music and soul-nourishing exchanges. In a clear invitation to unwind, let go, and
reconnect, a perfect mix of rural charm and understated elegance sets the tone in this natural paradise.
Scorpios is spearheading the cultural shift from night clubbing to afternoon ease – taking all-day
lounging, al fresco dining, and sunset marveling to a holistic new level.
Perched on a ridge between two stunning sandy beaches, hugged by the wild wonder of a protected
nature reserve, Scorpios is the setting for a feast of the senses. The sun-blessed peninsula offers
panoramic views over the crystal-clear Aegean Sea, with the precious luxury of an eastern sunrise and
the day’s closing sunset over the southern cliffs. As one of the very rare beach locations on Mykonos
offering uninterrupted views across the open sea, horizons of blue mix with the yellows, golds, and
pinks of the generous Cycladic sun.
The spacious location organically spans three areas: from the western sunset lounge, beach and sun
bed area, the eastern terraces and sunrise beach, to the ample restaurant, music lounge and bar area
at the heart of the space. Catering to the many unwinding whims of its guests, a personal touch,
intuitive service, and an engaging cultural program are the guiding forces at work here. Be it a chilled
gathering among friends, simply soaking up sunshine, feasting on fresh eats or taking in live music,
the mind is simultaneously stimulated and quieted. The cool and airy weather-worn stone clubhouse
and bar serve as the central hub of social activity – a welcoming place where time ceases to be relevant,
favoring easy interactions and sheltered moments away from the heat.
THE MODERN DAY AGORA
In Ancient Greece there was the agora, the literal meaning being “a gathering space”. The agora was the
meeting point for the athletic, artistic, spiritual, and political – the Community. Scorpios is a re-imagining
of this notion: Taking the ancient ritual of gathering for shared synergies and the free-flowing exchange
of ideas and energy. A sensory experience for the like-minded to engage, inspire and revel. An inclusive
atmosphere and a full range of family-friendly activities add to the all-around easygoing aura.
RITUALS
With the day’s events centered around sunset rituals, musical journeys guide guests through the
ceremony of sundown. Here, multiple custom-crafted stages fuse the avant-garde; psychedelic ethno
electronica by a roster of top international DJs is mixed with analog instruments inspired by the
ceremonial sounds of Burning Man, underground Berlin, and the mystical shores of Tulum. Amongst
floor level pillow seating and sunset-gazing perches, both musicians and guests bond in the magic
of music and energies born from within.
Ceremonia by Lum – Ceremonia is an experience of vibration and sacred sounds – an improvised
concert with flutes, chimes, xylophone, a shruti box, drums, electronic beats, and vocals. During the
Ceremonia, participants lie relaxed on the floor and let the sound wash over them.
Osunlade’s Yoruba Soul Experience – Curated by Osunlade, ordained priest in the african religion
of Ifa and owner of Yoruba Records, Osunlade’s Yoruba Soul Experience is a movement of deep house
and soul jazz masters who create transcendental live music sessions. Always rooted in integrity, the
label’s spiritual connection has been its priority from conception – guided by energies and vibrations
that allow one’s passion to create not only classics, but honest music that reflects the soul of acclaimed
artists such as Moodymann and Gabriele Poso.
Nu – A nomad of modern times who has crossed the continents with his music, Nu is as diverse in
his musical styles as he is well-traveled. Taking influences from his various homes, the producer and
trained sound engineer branched out into a myriad of genres. Through this musical journey, Nu has
found his true calling: Instrumentals amalgamated with electronic production – all held together
through solid rhythms.
Feathered Sun – The collaborative experiment from NU, Jo.Ke, Raz Ohara, Chris Schwarzwaelder,
Iannis Ritteris and Acid Pauli fuses a celebration of spirit with moody atmospheric melodies. Friends
for years, the collective’s main bases are Berlin and Lima, Peru, with summer stints in Mykonos
for the revelers of Scorpios.

CYCLADIC SENSIBLITIES
Knowing the value of working with top talent, Heyne and Hertel continue their collaboration with
the design team responsible for the visual identity of San Giorgio Mykonos. Interior designer Annabell
Kutucu and creative director Michael Schickinger of Lambs and Lions, have teamed up with awardwinning architects Dimitiris and Konstantinos Karampatakis of K-studio, Athens – a visionary team
for a holistic approach.
Central to the 6,000 sqm property is the gently weather-worn stone house with classic whitewashed
stone accents. Simultaneously evoking 1960s Greek glamour and contemporary modernism,
the structure consists of a 274-sqm main floor with a lower level, and 2,500 sqm of outdoor terraces.
The entirety exudes a sense of ease and lightness. Bringing the design aesthetic of San Giorgio
Mykonos to the beachfront, the dialogue between unobtrusively sensual décor and organic beauty
continues resulting in lightness and warmth. An emphasis on simplicity and the essential, together
with celebrating traditional craftsmanship and local Greek culture, are the guiding principles behind
both the design and hospitality. Mixing minimalism with rich textures and handcrafted details, nothing
is overbearing but just right.
FRESH TO TABLE
The rustic-chic restaurant at the center of the house comfortably seats 200, spilling onto an outside
terrace overlooking the sea. The ideal place to gather under a shady canopy, long, leisurely meals can
stretch into the afternoon or evening. With a daytime ambience reminiscent of a good friend’s living
room, nightfall gives way to a more festive energy transforming the space into a venue for special events
and live music.
“Cooking is art... all cooking that aims higher than a boiled egg is an attempt to create an art piece. It’s an
invention. You try things, different combinations – it’s a creative game. How to become Leonardo Da Vinci?
Start and keep inventing.’’ - Chef Alexis Zopa
Chef Alexis Zopas’ focus on fresh and regional ingredients means an easy and light-hearted approach
in the kitchen, with a modern mindset at the forefront. Reflecting the belief that we are what we eat,
the dining experience aims to physically energize while an appeal to the senses nourishes the soul.
Relying heavily on fresh seasonal produce from the fertile land, the top-level culinary talent lets the
quality of the ingredients shine – blending Greek flavors with modern musings. The result is a confident cuisine that strips away the unessential and focuses on purity, authenticity, and the reinterpretation
of iconic recipes. Plate after plate is laden with unreal delights: sun-ripened tomatoes, goat cheese and
thyme; ouzo-stewed shrimp and tangy avocado tzatziki. Fresh fish is brought in daily from local
fishermen, charcoal-grilled alongside quality cuts of local meat like tomahawk steak with zucchini,
mint, lima beans and cinnamon, and served on a platter meant to be shared. Friends arrive – some
old, some new. You sit together. You eat, you drink, you laugh. The sun moves across the sky.
COLLABORATORS
Sneaky Sound System & Guests – Powerhouse singer Miss Connie Mitchell and producer
extraordinaire Back Angus started making music together in 2004. As their reputation grew, thanks
to the still-weekly Sneaky Sundays club night in Sydney, Sneaky Sound System released their first
self-titled album in 2006. Various chart-topping hits, prestigious awards and all-star collaborations
with the likes of Kanye West and Jay-Z have earned the pair an international following.
Osunlade – Osunlade is an ordained priest in the African religion of Ifa. His successful label, Yoruba
Records, creates music that elevates humanity and expands the soul freely to fully honor our ancestral
lineage. Years ago he discovered Ifa, an African culture that changed his life and his music. He became
a devotee of Ifa and the founder and co - owner of one of the labels of underground house more
reputed in the planet, Yoruba Records. With a sound raised and defined in the Yoruba way of
enlightenment and elevation, Osunlade’s diasporic musical journey unfolds through the label, as well
as Yoruba Soul Radio, and live project Yoruba Soul Orquestra.
Lum – Lum is a tribute to the wisdom and medicine of the native people. Born in Argentina and
based in Riviera Maya, Lum has spent his life steeped in indigenous cultures. This is reflected in his
music which is equal parts house and world music. The end result is more magical than anything else.
Become your own medicine.

friends, and partners.
gem&bolt – An art and health lifestyle brand with a pioneering product line of certified organic
damiana-distilled mezcal. gem&bolt was founded in 2012 by artist-alchemist duo AdrinAdrina and
Elliott Coon with the purpose of pursuing and promoting a way of life charged with art, health, and
celebration. As a commitment to these values, they pledge to reinvest one dollar per bottle to supporting
artists and creating art within the brand. Responsible for the overall bar ethos, gem&bolt’s fine
mezcal, rare bottles, and bold visuals bring a seductively cultish aesthetic to Scorpios.
Caravana Montaecristo – For the first time Caravana has left its native Yucatan Peninsula in Mexico,
traveling to its new home at Scorpios. Offering an exclusive capsule collection for globetrotters,
the travel-focused label features handcrafted pieces ranging from engraved leather goods to artisanal
garments made from unrefined textiles. Caravana’s signature aesthetic of easy neutrals and draped
stylings also outfit the Scorpios crew.
THE KINGS OF MYKONOS
Some years ago, two nightlife impresarios from Southern Germany met on the shores of Ibiza. After
years of traveling and sharing ideas, Thomas Heyne and Mario Hertel took over Paradise Club in
2004, ultimately transforming it into one of the most popular nightclubs in the world. By the end of
the decade, San Giorgio Mykonos Hotel was born, tailored to pleasure-seekers enraptured with the
euphoric energy of Grecian paradise.
After leaving the nightclub industry in 2014, the duo conceived Scorpios. Their vision for San Giorgio
and Scorpios alike: a space where like-minded individuals from all over the world can come together
and feed off the exhilarating energy, but to also be a haven of peace, of friendship, of community, and
of memorable new experiences.
