Christian Fumado
Director of Food & Beverage
Christian Fumado is the resort’s Director of Food & Beverage.
He arrived in Bali directly after a two-year stint with the
newly-opened InterContinental Danang Sun Peninsula
Resort, Vietnam. This was a pre-opening role that involved the
conceptualisation and set-up of five dining venues. Christian
is a Catalan national with an extensive background in worldclass restaurants, having worked in Michelin 3-and-2-star rated
establishments in England, including Le Manoir aux Quat’
Saisons and The Waterside Inn, as well as in Switzerland at Le
Domaine de Chateauvieux. While there he was privileged to
work under the tutelage of some of Europe’s finest culinary
experts, fulfilling the role of Maître d’hôtel before moving into
the role of Director of Food and Beverage.

Executive Chef
Christophe Depuichaffray is our Executive Chef. He
moved to Intercontinental Bali Resort in 2013 from Hotel
InterContinental San Francisco, where he successfully
held an equivalent position for several years. This French
national’s career has taken him to various locations
around the globe to lead multi-cultural teams and share
his passion for good food that is cooked with integrity. In
the early years of his career, Chef Christophe had the
opportunity to perfect his culinary skills in a number
of Michelin Star-rated restaurants in France as well as
Germany. He joined InterContinental Hotels Group in
1994 and has been with the luxury hotel and resort
brand ever since. Chef Christophe’s background in fine
dining served him well during a succession of senior
Food & Beverage appointments in Egypt, Philippines,
Korea, Vietnam and Spain.

Executive Saus Chef
Chef Setyo Widjonanto came to InterContinental Bali Resort
in 2012. He is the Executive Sous Chef at our KO Restaurant,
Teppanyaki & Cocktail Lounge. This Indonesian national
trained under the guidance of some of Japan’s finest chefs.
Between 2005 and 2012, he worked exclusively at various
outlets of the internationally renowned Nobu restaurant
chain specialising in modern Japanese cuisine in places such as
The Bahamas and Mexico City.

Executive Saus Chef
Well-versed in the art of preparing sushi, sashimi and
omakase, Chef Setyo is meticulous about the quality of food
that is served from his kitchen.

JIMBARAN GARDENS
Located beside the resort’s main pool, and incorporating indoor and outdoor dining options,
Jimbaran Gardens offers a relaxed alfresco seaside setting, with casual all-day dining accompanied by
stunning views across the beach and Jimbaran Bay. The restaurant is housed in a traditional, opensided Balinese-style dining pavilion and gently cooled by sea breezes. Alternatively, two elevated Bale
Bengong ‘daydreaming pavilions’, with alang-alang thatched roofs, offer privacy for families and groups,
each with a seating capacity of ten.
Start another beautiful day in Bali at Jimbaran Gardens with a sun-filled buffet breakfast of international
and Asian dishes, including hot and cold choices, an espresso coffee station and more.

JIMBARAN SEAFOOD NIGHT
Every Sunday evening at Jimbaran Gardens, our chefs will prepare and grill the fresh catch of the day
so that you can relish what was received during the afternoon. Your dinner will be enhanced by a
performance of the traditional fisherman’s dance, which depicts the daily life and work of a fisherman,
evident in every graceful movement of the dancer’s body and hands, which re-enact activities such as
rowing and the casting of the nets.

THE RESTAURANT
This fully air-conditioned restaurant offers an opulent indoor dining room with a lively open-kitchen
concept, where all the culinary magic is visible. For those wishing to dine alfresco under the stars,
Bella Cucina also boasts a charming outdoor terrace spilling out into tropical gardens illuminated at
night with fire beacons and lanterns – an impossibly romantic place to dine.

There is also a private Surya dining room designed in the fashion of a glass conservatory (seating 16)

WINE CELLAR
Wine like no other beverage has a personality of its own, reflecting the character of the place in
which the grapes grow, the culture of the people who live there, the food enjoyed by them and
the personality of the winemakers, with each vintage echoing the climate and weather of that year.
Discerning diners will appreciate this refined establishment’s fully-stocked wine cellar, showcasing a
fine selection of international wines and champagnes. Our seasoned Cellar Master can initiate special
tastings before and after dinner, as well as pairing meal choices with various vintages.
CENA DI FAMILIA
The Italian food culture is all about joy,
family and tradition. Grandma’s and
Mama’s recipes are passed on with care
and pride, each one a symbol of a family’s
heritage and roots.
At Bella Cucina, we are pleased to introduce
CENA DI FAMILIA, representing the
importance of spending time with the
family and enjoying traditional homecooked dishes: “Just like Mama used to
make.”
The meal will begin with a large sharing platter placed in the middle of the table and filled with cold
cuts, marinated vegetables, olives, rustic country breads and a selection of Italian cheeses.
The Primo course will be prepared live by our chef at the table and will include an impressive choice
of homemade pastas with a tasty selection of sauces. It will also include a very important highlight of
the event, for which our chef will be reinventing the wheel by scooping out a hollow within a large
wheel of Parmesan cheese to create a shallow bowl for blending and mixing his delicious risotto,
which will be further enhanced by the rich flavour of the cheese. This is a first for Bali and a “must
try.”
For the main course, diners will be able to select their preferences from our special à la carte menu,
which will accompanied by a sharing platter of garnishes that typify the rustic Italian countryside style

Experience Bali’s legendary Kecak Dance,

SPECIAL OCCASSIONS AND ROMANTIC EVENINGS
InterContinental Bali Resort provides outdoor dining venues that offer the ultimate in romantic
dining and private interludes in the form of two tented pavilions, canopied in white cotton and
discreetly located on beachfront lawns that overlook Jimbaran Bay.
After sunset, these tented pavilions for two emerge as romantic dining retreats under a tropical night
sky filled with stars, illuminated by flickering candles and the glow of the moon, while accompanied
by tropical sea breezes and the sound of waves gently lapping the shoreline.
You will be seated at a beautifully decorated table for two, with candles and a set menu especially
created for this intimate beachside rendezvous. Each course is prepared by a personal chef and
served throughout the evening by a personal butler, completed with private entertainment. This

Chef Theo Randall’s path to culinary acclaim began during childhood across the roads of rural Italy,
where his family often travelled on holiday, all the while enjoying the simple but delicious fare at
trattorie and panetterie. By 18 he was ready to start a career, first as waiter at London’s venerable
Chez Max before undertaking a classic French apprenticeship there. He later joined River Café,
leaving for one year to head to the U.S. and cook alongside Alice Waters at Chez Panisse in Berkeley,
California. He returned to River Café, eventually becoming head chef and partner. In time, he struck
out on his own in 2006 and opened Theo Randall at InterContinental London Park Lane, where he
remains today running one of Europe’s most acclaimed Italian restaurants.
