Op dit Keltisch Mystival geïnspireerd op het land van de Tuatha Dé Danann lijkt de
tijd wel stil te staan. Een mistig paradijs waar de bloemen eeuwig bloeien, iedereen
vredig samenleeft en alle zorgen worden vergeten. In de Ruïne van Brederode komt
dit mystieke paradijs op 16 & 17 uugustus 2014 een klein beetje tot leven: tussen
de verhalen, de muziek, het eten en drinken en de mystieke sfeer krijgt u de kans
een klein beetje te proeven van een land dat eigenlijk onbereikbaar is voor gewone
mensen in de ambience van één van de sfeervolste plekken van Noord-Holland: de
Ruïne van Brederode.
Laat u vermaken door verhalenvertellers, geniet van de keltische muziek die tijdens
dit evenement niet mag ontbreken en raak onder de indruk van de expertise van de
keltische krijgers die met zwaard en boog hun dodelijke vaardigheden laten zien.
Maar pas op voor de Tuatha Dé Danann - want deze magische wezens, die soms als
goddelijk gezien worden - deinzen er niet voor terug om mensen in hun onderlinge
machtsstrijd te betrekken... en dat loopt niet altijd even goed voor de mensen af!

we are now taking bookings
We welcome everyone to Scotland for this Homecoming year with A superb 3 night,
4 day long weekend Cultural tour.
Sep 11 Thursday arrive into Edinburgh airport (ideally early or mid morning) transfer direct to the Harviestoun Brewery for a tour and taste. We then drive to St
Andrews for free time here, the home of golf, ruined cathedral and castle, shops &
university. Overnight Perth.
Sep 12 Friday a day of beer and scenery today, as we head south from Perth to

Lade Inn (not included in costs) and wander (and shop) at the real ale shop; almost
the Trossachs, some local sightseeing, free time in Callander before lunch at
200 different real ales from The Borders to Shetland! The afternoon is history/whisky
time, as we move to Doune. A stop at Doune castle (Monty Python filmed the Holy
Grail here) and Deanston distillery. Returning to Perth.
Sep 13 Saturday a day of culture as we drive north to Pitlochry - a truly Scottish experience; Pitlochry Highland Games - a parade of Pipe Bands com-
mencing at 11.40 am marching down the high street to the games field, where the
games themselves follow - British Tug o’ War Championship, Heavyweight events
including toss the caber, Highland Dancing, Junior Piping, Pipe Band Championship
and ending with a Mass Parade of Pipe Bands and Drum Majors’ demonstration.
Surrounded by beer tents, food and shopping. The ticket to the games is included.
Overnight Edinburgh.

Festivalmaand augustus
Edinburgh is het hele jaar door fascinerend, maar in augustus barst de stad helemaal
uit in een festival dat dag en nacht doorgaat, de hele maand lang. De Fringe en het
International Festival trekken artiesten van over de hele wereld tijdens het grootste
opvoerende kunstfestival ter wereld: dit mag u niet missen! Geniet van de festivalkoorts in augustus met Faith Liddell, directrice van Edinburgh’s Festivals.
Evenementen in augustus
De hoofdstad van Schotland is een druk cultureel centrum en nergens komt dit beter
tot uitdrukking dan in de vele festivals van de stad. Uitvoerende kunsten, muziek,
theater, tentoonstellingen, films, komedie en lezingen - de creativiteit in Schotland is
tijdens de festivals van Edinburgh gewoon ongeëvenaard.
Er vinden het hele jaar door uitstekende festivals plaats in Edinburgh, maar in de
Edinburgh International Festival werd in 1947 opgericht en is het officiële mid-
zomermaanden en vooral in augustus is het aantal activiteiten enorm. Het
delpunt van de festivals van Edinburgh. Dit wereldberoemde festival van uitvoerende
kunsten duurt vier weken.
Tijdens dit festival zijn er voorstellingen van wereldklasse te zien op het gebied van
theater, dans en muziek, die uitmonden in een spectaculaire vuurwerkvertoning boven Edinburgh Castle.
De
Edinburgh Festival Fringe (letterlijk: randfestival) vindt tegelijkertijd plaats
en is het grootste kunstfestival ter wereld. Hier vindt u vooral komedie- en theatervoorstellingen, maar ook wat ongewonere acts zoals cabaret en circus. Als u echt
voordelig uit wilt zijn, dan zijn er ook honderden gratis evenementen die elk jaar
plaatsvinden als onderdeel van de Fringe.

Ook de Royal Edinburgh Military Tattoo is een onmisbaar evenement in au-
gustus. Hiervoor komen bijna duizend musici, doedelzakspelers, drummers, zangers
en dansers van over de hele wereld bij elkaar om op het voorplein van Edinburgh
Castle hun optreden te geven. Dit onvergetelijke spektakel wordt elke avond tot een
emotioneel en ontroerend slot gebracht met een enkele doedelzakspeler die hoog
op de borstweringen van het kasteel een schrijnend klaaglied speelt. Voor een fan-
tastisch multiculturele ervaring mag u de Edinburgh Mela niet missen, waarin de
culturele diversiteit van de stad wordt gevierd met wereldmuziek, dans, tentoonstellingen en nog veel meer.

Als u nog nooit gezeild heeft maar wel graag de maritieme omgeving van Schotland
wilt verkennen, of zelfs als u veel ervaring heeft maar nog nooit in de Schotse wate-

ren bent geweest, dan kunt u een boot met schipper huren en iemand met ervaring
alle organisatie, navigatie en zeilwerk laten doen. Dan heeft u meer tijd om uw te
ontspannen, van de schitterende Schotse kust te genieten en onderweg dieren in het
wild te signaleren, zoals dolfijnen en walvissen.
U kunt ook leren zeilen bij de professionals in een van de vele zeilscholen in Schotland die zich op eilanden, langs de kust en bij lochs (meren) door het hele land
bevinden. Daar kunt u in allerlei soorten boten en op verschillende manieren les krij-
gen. Na een dagje heerlijk zeilen langs de schitterende kust heeft u de mogelijkheid
om uw avond door te brengen in een rustige ankerplaats. Stap aan wal en slenter
langs geweldige witte stranden of geniet van de heerlijke lokale producten in een
restaurant, pub of hotel.
Eten en drinken in augustus
Schotland staat niet alleen bekend om delicatessen zoals
haggis en lamsvlees
van lammeren die met zeewier zijn gevoerd, maar ook om rundvlees dat tot het
beste ter wereld behoort dankzij generaties Schotten die hier vee hebben gefokt en
grootgebracht.
Runderen van allerlei rassen grazen op de groene weiden van Schotland en zijn over
de hele wereld bekend om hun sappige vlees en kenmerkende smaak.
Het meeste rundvlees in Schotland komt traditioneel voort uit kruisingen van bepaalde Schotse rassen, bijvoorbeeld
Aberdeen Angus en Highland Cattle.
Aberdeen Angus is misschien wel het bekendste Schotse runderras, bekend om de
rijke en volle smaak van het vlees, zoals u kunt proeven in de uitstekende biefstuk.
Een van de oudste en bekendste Schotse rassen is verder de Highland, met als
koosnaam de ‘Heilan’ coo’. Dit is een ikonisch nationaal symbool, met een dikke
vacht van rood haar en lange hoorns. Men denkt dat deze dieren oorspronkelijk naar
Schotland zijn gekomen met de Kelten. Ze kunnen de strenge winters in de bergen

Evenementen in september
In 2014 is de
Forth Road Bridge 50 jaar oud en daarom wordt er een groots
festival georganiseerd rondom deze beroemde bruggen over de Firth of Forth. In het
landhuis Hopetown House zal groot feest worden gevierd, waaronder een botenop-
tocht en een speciale ‘dag van de voorvaderen’. Voor wie avontuurlijk is aangelegd
bestaat zelfs de gelegenheid om naar de top van een van de torens op de brug te
klimmen.

Braemar Gathering, zaterdag 6 september
De Braemar Gathering is een traditioneel Schots evenement dat al honderden jaren
lang plaatsvindt. Sinds 1832 wordt het regelmatig bijgewoond door het opperhoofd
van de Braemar Gathering, die ook als ‘regerend vorst’ bekend staat, of zijn vertegenwoordiger. De Britse koningin houdt veel van dit grootse evenement, waarbij

Nog een bijzonder evenement in september is de 40e Ryder Cup, die pas voor de
tweede keer in zijn geschiedenis terugkeert naar de “Home of Golf”, Schotland.
Europa probeert de trofee te verdedigen die het in 2012 op spectulaire wijze won.
Ook is er een openingsconcert in Glasgow met Schotse en Amerikaanse artiesten.

Dit is de hoogste berg in Groot-Brittannië en een navigatie-uitdaging voor geharde
wandelaars. Er zijn twee routes de berg op, die een van de 282 zogenaamde mun-
ro’s is. Een munro is een berg hoger dan 914.4 m (3000 voet in het oude stelsel), en
als u er een beklimt wordt dat ‘Munro bagging’ genoemd (een munro meepikken).

A thousand years of settlement
Archaeological excavations in the early 20th century showed that the village began
between 500 and 200BC. A large area, roughly 45m across, was defined by deep
ditches and ramparts. At a later stage, an entrance causeway was added on the east
side, and a circular broch tower built in the west half. Around the latter arose a set-

tlement of small stone houses, with attached yards and sheds. Some time after AD
100 the broch was abandoned and the ditches filled in. The site thereafter continued
as a single farmstead until around the 8th century. The last activity came in the 9th
century, when a Viking woman was buried here with her grave-goods.
The broch
Gurness Broch was probably the residence of the principal family of the community.
It also provided the last defensive resort. Within its massively thick walls the broch
originally had a single central hearth, a ring of stone-built cupboards around the wall,
and a sunken water feature traditionally interpreted as a well. A spiral stair led up to
upper levels in the tower and to the wall-head. When the broch began to collapse,
this arrangement was altered. The ‘well’ was filled in and the interior refitted with
new partitions. Most of what the visitor sees today dates from this secondary phase.
The broch village
The village at Gurness is the best-preserved of all broch villages. There are numerous houses. Each had an entrance leading to a large living-cum-sleeping room, off
which lay smaller side rooms. The main room had a hearth, a large tank set into the
floor, cupboards and sleeping spaces. Some houses had a yard outside, open to the
sky, and a separate shed.
A Viking cemetery
The Vikings who settled in Orkney from around 800 often used the mounds of earlier
settlement sites as burial places, and this was the case at Gurness. The grave of a
Viking woman was found here, along with some grave-goods - a sickle blade and a
pair of ‘tortoise’ brooches. Human bones and other Viking objects, including shield
bosses, suggest that Viking men were buried at the site also.

Rijbewijs
Europese Unie (EU) en een geldig rijbewijs hebben, toegestaan in Schotland een
auto te besturen. Bezoekers van buiten de EU mogen dat ook in Schotland, en in de
rest van het Verenigd Koninkrijk, maar alleen voor een periode tot 12 maanden - op
voorwaarde dat hun rijbewijs nog geldig is in het land waar het werd afgegeven.

Highlands, Perthshire & Edinburgh | ZONDER auto
Over het algemeen is er alleen filevorming op de belangrijkste toe- en uitgangswegen van de grote steden zoals Edinburgh en Glasgow tijdens de gebruikelijke
spitsuren (7:30 - 9:30 uur en 16:00 - 18:30 uur), en op feestdagen.
Dag 1 aankomst op Edinburgh airport, neem de bus of taxi naar Edinburgh centraal station
(20 minuten) en neem de trein naar Inverness. Na een fantastische pittoreske reis aankomst
in het centrum van de stad, een taxi naar uw accommodatie, relaxen, bagage afgeven en de
rest van de namiddag/avond gebruiken om te ontdekken en dineren.
Dag 2 een ochtend uitstapje. Van het VVV-kantoor wordt u opgehaald door de toeringcar
die u naar de River Ness Jacobite Loch Ness Cruises brengt (bij de reis inbegrepen). U vaart
door het loch naar Urquhart castle om de ruïnes van dit kasteel, ooit een van de grootste van
de highlands, te bezoeken. Ruimschoots de tijd voor een bezoek, te winkelen en wat te eten.
De bus wacht u op om u terug te brengen naar Inverness. Eenmaal aangekomen, neem een
taxi naar Culloden Battlefield waar Bonnie Prince Charlie in 1746 werd verslagen (zijn enige
nederlaag) door de Engelsen. Hier een bezoek aan het fantastische museum, gevolgd door
een wandeling met een gids over The Battlefield Moor. Terug wanneer u dat wilt naar Inverness per taxi. De rest van de dag vrij te besteden om de vele winkels te ontdekken, pubs,
wandelingen langs de rivier, touristische attracties. Overnachting in Inverness.
Dag 3 opnieuw naar de trein, in zuidelijke richting naar de in de Perthshire highland gelegen stad Pitlochry. Hier zijn twee whisky distilleerderijen (Edradour & Bells), theater, visladder, tuinen, winkels en restaurants. Een Victoriaanse vakantiestad! Als u zin hebt een balletje
golf slaan. Ook het beroemde Heathergems Centre bevindt zich hier: sieranden en snuisterijen gemaakt van heide. Een alleraardigst pension voor uw overnachting.
Dag 4 Opties voor vandaag zijn: per locale bus naar Blair Castle of per touringcar naar
Dewar world of whisky in Aberfeldy, the Crannog (oude boven het water gebouwde huizen),
Killin en de Falls of Dochart, pittoreske stroomversnellingen met plaatselijke dorpspub, erg
pittoresk. Overnachting in Pitlochry.
Dag 5 een laatste treinreis, deze keer naar Edinburgh. De resterende tijd van de dag besteden aan het ontdekken van onze hoofdstad, zoveel te zien en te doen. Hier overnachten.

Plattelandswegen
Een van de genoegens van het rijden in Schotland zijn de rustige plattelandswegen
waar u kunt genieten van de rust en de landschappen. In de Highlands bestaan de
wegen vaak maar uit één baan met uitwijkplaatsen. Dit werkt prima wanneer de
bestuurders rekening met elkaar houden.

UK Highway Code kunt u lezen hoe u een uitwijkplaats
dient te gebruiken op een eenbaansweg.
In afgelegen gebieden zult u ook geregeld grazende schapen en andere dieren in

middelbaar onderwijs kunnen aanzetten en in staat stellen hun woordenschat verder dan wat normaal geleerd
wordt te verbreden en hen opnieuw kennis te laten maken met hun landschappelijke erfgoed.
Het boek neemt een unieke en integrale aanpak in die zin dat het de huidige woordenschat aan plaatsnamen
categoriseert en uitbreidt en tussen elke sectie toelichting geeft op de Gaelic ecologie, cultuur en landschap.

Alle bestuurders en passagiers, ongeacht waar ze zitten, dienen een veiligheidsgordel te dragen.
Kinderen tot 12 jaar en kleiner dan 1,35 meter (4ft 5in) moet u in een autokinderzitje
vervoeren dat past bij het gewicht van het kind (de meeste kinderen bereiken een
lengte van 1,35 meter rond de leeftijd van 9 jaar).
Rijden en drinken
Rijden onder de invloed van alcohol wordt zeer serieus genomen in Schotland en het

Approximately quarter pint of milk
2 oz (60g or ½ US cup) flour
2 oz (60g or a generous one third of a US cup) brown sugar
2 oz (60g or ½ US stick) butter or margarine
Method
Sift the flour and salt into a bowl and rub in the butter.
Method
Knead this on a floured surface until it is both moist and elastic.
Place in a deep pie dish. Mix togeter the ingredients for the crumble in the order

Grease a baking sheet (cookie sheet) and place the rounds on this.

Allow to cool on a wire rack and serve split in half with butter.

Het begint zoals altijd met een optreden van The Saint Andrew’s Pipe band. Dit alles
is tussen 14.00 en 15.00 uur. Vanaf 15.00 uur begint het spektakel en dit duurt weer
tot 19.00 uur.
Zoals u van ons gewenst bent, is de entree nog steeds € 5.00 en daar krijgt u het
Glencairn glas gratis bij.
Op dit moment ben ik bezig om het aantal whisky’s te bepalen, maar dit aantal zal
wel weer uitkomen tussen de 60 en 70. Alle whisky’s die open staan, zijn gratis te
proeven. De variatie zal weer groot zijn met whisky’s vanuit diverse landen, maar ook
van diverse onafhankelijke bottelaars. Buiten dit alles zijn er natuurlijk ook veel distillerie bottelingen. Ook onze eigen importen zullen weer ruim vertegenwoordigd zijn.
Al met al dus een leuke reden om eens kennis te komen maken met onze sortering.

Scotch whisky distillery boost for peninsula

THE Scotch whisky industry has welcomed its latest addition following the
opening of the Ardnamurchan Distillery in Argyll.
The multi-million-pound project has been launched by Adelphi Distillery, which in its

Its arrival marks a return to distilling for the Adelphi name, which in its original guise
built a distillery in the heart of Glasgow in 1826.
The new distillery has been backed by a £1.77 million food processing, marketing
and co-operation grant from the Scottish Government, as well as £625,452 of capital
funding from Highlands and Islands Enterprise. It will be powered by renewable energy, using a boiler fuelled by locally sourced woodchip, and produces its spirit from
barley grown and malted in Scotland.
The opening has been hailed as an economic boost for the Ardnamurchan peninsula,
bringing jobs and attracting tourists who visit Scotland for its whisky trail.
The by-products from the distillation process will be used to feed livestock and fertilise land.

Ook u kunt kennis maken met een ruime selectie van whisky’s uit Schotland. Allen
hebben zij het predicaat Schotse Malt Whisky en zijn afkomstig uit de voornoemde
regio’s.

have an outstanding distribution network in place across the world.
“For the first time in over 105 years, we now have the ability to produce our own
world-class single malt.”

first new Scotch whisky distillery to open in Scotland this year.

Graeme, It was really good to tour the distillery recently with our Finnish group.
How are plans for opening and filling the first cask? A; Opening should be in the next
couple of weeks. We are just waiting for approval from HMRC. The first filling will be
unpeated spirit into an ex Bourbon Barrel.
Q; Can you describe what you did previously in the whisky industry? A; Just celebra-
ted 30 years in the industry. Started in the warehouse at Glen Grant Distillery, after
a year moved on to production. Back then there were 3 men on a shift, mashman,

could have meetings with other industry colleagues regarding bulk sales. I might
have a tour to do for customers. I also have to train my Assistant who has to be able

steam, and all the woodchip is source locally. We are the first in the industry to do
this. Any new venture is a risk but I am confident we will get it right.
Q; how many bottles you have on sale annually? And if I may ask, how many do you
keep personally? A: Again that is Alex’s side of things. I do not collect whisky as I
think it is for drinking. The only bottle I have kept is a Balblair hand bottling that all
the staff signed when I left.
Q; do you have any signed bottles or special numbered bottles for collectors? A:
No. I do have a signed bottle of Champagne that was given to me by Ken Loach who
directed the film The Angels Share that was made at Balblair.

catch something big and tasty.

Q; Finally, how do you see the whisky industry advancing in the coming years? A; It
is very hard to predict. It is looking great at the moment, what with all the new mar-
kets opening up but you never know as tastes change. All distillers can do is carry on
making quality whiskies and hopefully the sales and marketing teams can get them
into the market for people to try and enjoy.

Dag 1 aankomst op Edinburgh airport, we zullen u daar ontvangen, transfer naar Elgin, met
een korte tussenstop, op tijd voor een rondleiding en iets proeven bij Glen Moray distillery.
Overnight Elgin.
Dag 2 we bezoeken Knockdhu distillery voor een privé-rondleiding & iets proeven. Terug
naar Dufftown voor een rondleiding en iets proeven bij Balvenie distillery. Terug naar het
hotel hotel in Elgin waar de gasten van een whisky diner genieten, 3-gangen diner met 3
whisky’s. Overnachting in Elgin. Afhankelijk van de tijd vandaag, zullen we een bezoekje
brengen aan The Highlander Inn voor “whisky tijd”.
Dag 3 rijden naar The Speyside Cooperage, een leerzaam bezoek waarbij getoond wordt
hoe vaten gerepareerd worden, gemaakt en aangepast (formaat). Dit zal een VIP bezoek
zijn; een ervaren cooper zal de gasten begeleiden gevolgd door een dram van hun eigen
single malt whisky in een Speyside Cooperage tasting glass dat u mag houden samen met
de proefnotities. Tijd ingericht voor lunch, alvorens richting Huntly te gaan, een rondleiding
door de pakhuizen en bijzondere privé proeverij bij een onafhankelijk bottelaar. Overnachting

Dag 4 een laatste dag, zuidwaarts rijdend, eerste stop in Perth waar we de microdistilleerderij Strathearn aandoen voor een kort leerzaam bezoek, gevolgd door een new make

If you’ve made it over to visit us over
the past few months, you will have
seen all the new building work which is going on in our Lochranza site. Warehouses
1, 2 3 & 4 are all nearly full and so a Warehouse 5 is required! We have laid the foun-
dations for our brand new Warehouse Number 5 although work has currently been
put on hold until early August to allow the Golden Eagles peace and quiet during their
nesting season. As you will all know, we are very protective of the pair of eagles who
have their home in the hills behind the Distillery. Indeed, when the Distillery was
being built in 1994/5 we took time out of the building schedule in order not to disturb
them during this crucial time.
Whilst we await early August, we are putting the finishing touches to Warehouse
Number 6 which will be home to our casks which are being closely monitored for our
cask finish Single Malts. Our wine finish expressions of The Arran Malt and other
casks which need a short term home before bottling will find their place here. We will
also have our own vatting facilities and space for cask disgorgement.

for building a VIP tasting room on the other side of the site in Lochranza, beside the
Visitor Centre. This will house a specially designed tasting and blending room and
will host parties of VIP guests. There are lots of things going on and we are all very
excited about what the future holds for our Distillery and Single Malt.

Nose - Aromatic and floral, a delicate perfume of white peaches with a background
of white chocolate
Palate - The influence of the barriques are evident almost immediately, the delicate
floral notes give way to a rich and warming touch of spice which amplifies beauti-
fully on your tongue. Chocolate raisin and cinnamon in the tail give this a creamy
mouthfeel. The fresh character of Arran prevails, the typical citrus notes always in
the background, complimented with the light vanilla from the Bourbon Barrels which
add a layer of sweetness.
Finish - Long, lingering and luxurious. The final curtain falls with long lasting notes
of sweet spice and mandarin.

August 5, 2014 - As expected, Moray Council members have given the green light

completion expected in 2017 on an all-new distillery and visitors center that will be
built near the current distillery.
“It’s a very exciting time for The Macallan, and it’s a great testament to the power of
single malt Scotch Whisky around the world and its growth,” Grier said in an August 8
telephone interview with WhiskyCast’s Mark Gillespie. The project is being designed
by the renowned London-based architects Rogers, Stirk, Harbour and Partners, and
will be built with much of the distillery below ground level and topped by a series of
rolling grass-covered hills to mimic the surrounding landscape.
“We believe in doing things that are incredibly beautiful, stuff that nobody else has
done, and obviously things that really are all about extreme quality and real mastery,
and of course, working with Rogers, Stirk, and Harbour - this is the first time ever
in the industry that anyone has actually designed and will build a named architectdesigned distillery.”
Speyside-based contractors will handle most of the engineering and management
work once construction begins. Forsyths of Rothes will build the distilling equipment,
while Robertson Group will serve as general contractor on the site. No estimates on
the local economic impact of the project have been announced, but the construction
work is expected to create a significant number of jobs, while increased visitor traffic
once the distillery is completed is likely to create a long-term economic impact.

The current distillery produces 9.5 million litres of spirit each year, while the new dis-
tillery is expected to have a capacity of 15 million litres. Edrington intends to mothball
the existing distillery once the new one is completed, with plans to keep it ready to
return to production should additional capacity be needed in the future.

where were you born?
Select: I am an Islay production, born and bred Islay, off Scotland’s west coast. My
ancestors are also from Islay, I can trace them back to 1815.
Paul: Tell me a wee bit about yourself.
Select: I like to think I am special, even though a part of a big family. I have a large
part of me that is Scottish, a part American; I have been left alone to contemplate
for 6 months in a warm warehouse. I also have some European in me - I am sweet
really with a powerful aroma.
Paul: You have that certain Islay colour about you. Have you been in the sun?
Select: No, mine is a natural colour, very complex in my taste. I do love giving
pleasure to people, I am a FRIENDLY KIND!
Paul: What do you know of your ancestors?
Select: 80-90 years ago, Ian Hunter was one of the biggest influences in my life
as he was one of the first distillers to travel to bourbon county in the USA. He later
married this ‘new’ style with European (I have a hint of Spain in me also). I have a
grand history!
Paul: How old are you?
Select: Ah, I cannot say, all I will say is that I am well matured. I am a blend of family
members.

From Edinburgh to Belfast - and beyond - a whiskey soujourn.
Paul McLean takes his own personal tour, a travel log; After dropping our guests off
in Edinburgh at their hotel - almost on the Royal Mile - the coach was to head back
to Belfast. The previous night I had made plans and bookings to accompany the
coach, for a few well -earned days away. “Having booked the coach from McCombs
in Belfast, with a friend driving, Mark Burgess (he does our Irish tours also) I thought
it a grand idea to have a few days away” says Paul. So, from Edinburgh, Mark and
myself headed west to CairnRyan near Stranraer via Kilmarnock, Ayr and Girvan. Just over 3 hours later we were at the ferry, as Mark parked up at the coach lines, I
headed into the office, me met up on the ferry - another two hours! Arriving in Belfast
docks, we then headed into the city, as Mark dropped me off at my hotel, he still had
a couple of hours work cleaning the coach before home.
Flopping on ma bed, time to consider plans; a quick drink at the Crown pub; with
period gas lighting and cosy snugs. The exterior is decorated in polychromatic tiles.
This includes a mosaic of a Crown on the floor of the entrance. A Republican pub,
you need walk over the crown as you enter! The snugs feature original gun metal
plates for striking matches and an antique bell system for calling staff. Extra privacy
was then afforded by the pub’s etched and stained glass windows, fairies, pineap-
ples, fleurs-de-lis and clowns. A good place for a dram - Jamesons Gold Reserve,
wood and pot still with a touch of sherry, honey combines in the mush to create a
spicy character. The long finish really caps it off with a pleasantly peppery conclusion. A good start. I dondered next door to Robinsons; Fibber Magees to be sure,
here I partook in a Kilbeggan. Fibber Magees is a traditional Irish Bar in the corner of
Blackstaff Square, is the city’s hidden gem; the genuine article; a good old spit and
sawdust bar, packed to the rafters with little bits of history and steeped in Irish tradi-
tion. My dram, Kilbeggan is named after St Bécán, one of the Twelve Apostles of
Ireland who founded a monastery in the area in the 6th century. This dram is smooth
and malty. The nose is smooth and gentle with nut oils and barley, cereals and a little

peat. I do like these drams, here presented on the bar in its new bottle. A couple
more wee Irish gems, then - time for bed.
Tuesday arrived, bright and cheerful, sun from 05.30 through my window (on the 8th
floor). All the usual morning stuff, some breakfast, then picked up by a McCombs
driver (Stephen) for a day trip, courtesy of Rodney (owner), was looking forward to
this - having done it before with the tourist board. Watching the coach fill up with tourists - I was still working y’know, we then headed north to Carrickfergus castle; a stop
here at this old castle before north again to Larne and Carnlough and my favourite,
Cushendall. Cushendall village is the meeting point of three glens: Glenann, Glenballylemon and Glencorp, a perfect place to walk along the beach, donder around
the glens, sit by the river or explore stone-aged monuments and its more recent
historical, sword-producing, past. Views of Scotland add the final touch why I love
this place. Och well, onwards north - ah, the stop I have been waiting for, it’s been
hot sitting here on the crew seat with the strong sun hitting me like a plank through
the window! Bushmills.
When Diageo took over Bushmills distillery from Pernod Ricard in 2005, sales volumes had been flat for over 10 years. The new owners set a goal to reach 1 million
cases by the end of 2012 and set about investing (to the tune of around €45 million)
in the distillery itself as well as the brand. Diageo increased the production rate to
five days a week and since 2008, they have implemented a seven-day week. This
tripled production in just 2.5 years. Bushmills uses two kinds of malt, one unpeated
and one slightly peated. The distillery uses triple distillation, something they’ve done
since the 1930s. The range of single malts consists of a 10 year old, a 16 year old
with a finish in port pipes for 6-9 months and a 21 year old finished in Madeira casks
for two years. There is also a 12 year old Distillery Reserve which is sold exclusively
at the distillery (as you imagined, I have one). Black Bush (my dram of choice in my
local pub - Christies) and Bushmills Original are the two main blended whiskeys in
the range. To celebrate the 400th anniversary, a Bushmills 1608 Anniversary Edition

drams followed! A return to Fibbers. Caught up with family matters and stayed away
from trouble - no remarks please Mark, Liz, Sean, or anyone come to think of it. Hit
ma bed 11pm knackered.
Wednesday; cousins in tow we hit what I think the best whiskey pub in the city;
Bittles Bar is located close to Victoria Square. Red-bricked and ‘flat-iron’ in shape
took a tour of the gaol, a grim place to be held in, but my reason for the visit; a new
Road gaol is hoped whiskey-making will boost tourist in Belfast It is hoped whiskey-
making will boost tourism in Belfast. Peter Lavery has announced plans to turn part
of the former Crumlin Road Prison in north Belfast into a distillery. The £5m investment will see the A wing of the listed building turned into a boutique distillery that will
use his existing brands of whiskey. There will also be a visitors’ centre, tasting room,
bar, restaurant and shop. It is claimed the project could create 60 jobs. Up to five
of those jobs will be in the distillery. Mr Lavery is the chief executive of the Belfast
Distillery Company which is behind such brands as Titanic and Danny Boy whiskey.

decided to NOT sell any whiskey to anyone, leaving Danny Boy really in the lurch,
along with many others including Slane Castle, however some of these are now (like
to two mentioned) building their own distilleries. I have Danny Boy at home, sitting
alongside Slane and Michael Collins drams.
Back in the city, having seen enough of the Union flags everywhere, dropped into
Fibbers again, before heading to the airport. Ah ... flybe, get your act together, never

Angels whisky club INTERVIEW - Ananandale Distillery
Hello Malcolm, nice to meet you. Can you tell me how you became involved in the
whisky industry?
A; Hi Paul. My father was a cooper to trade and took us from Stir-
ling to Islay in 1974 when I was 11 yrs old, to Bunnahabhain Distillery in fact. I worked
at Bunnahabhain for a short while after leaving school before going to the Merchant
Navy for 2 ½ yrs. When I returned we had moved to Bruichladdich, my dad as head
warehouse man where he stayed for 25yrs. After a hiatus I started at Bruichladdich
as a Mashman in 1987 until the Distillery closed in 1995. I then managed to get into
the newly taken over by Glenmorangie, Ardbeg in 1997. In 2003 I was seconded
to Glen Moray in Elgin as Assistant Manager. In 2005 I became Distillery Manager
of Kilchoman Distillery. Starting a Distillery from scratch was quite a challenge but
was well worth the effort considering how well the spirit has been received. In 2010 I
decided on a new challenge here at Annandale.
Paul; And how did you come to be at one of Scotland’s newest distilleries? A; While
at Kilchoman I used to run an Academy type course where people could come and
learn a more hands on and in depth experience. My very first ‘pupil’ so to speak was
David Thomson who some months later bought the Annandale Distillery site. The
rest, as they say is history.
Paul; Can you describe a typical day at the moment? A; A typical day at the mo-
ment is really project managing and tying things up with our building contractor regarding the restoration and new build. Also co-ordinating all the other aspects of
starting up a Distillery like HMRC approvals, plant installation, negotiating process
material and cask supply contracts etc.
Paul; If you can, tell me of the distillery plans... A; Obviously we firstly want to
produce fantastic spirit. We also think it’s very important to bring whisky distillation
back to this part of Scotland, along with all the economic benefits that should bring
to the region. So we want to make Annandale Distillery a ‘must go to’ destination in
southern Scotland. Our Visitor Centre will include a Coffee Shop and retail area. We
will also offer various different tour experiences including special Managers tours by
myself.

Paul; With so much news and marketing for whisky these days, PR and marketing is
very important, how did you decide on bottle shape, logo and labels? A; Our ‘A’ logo
was inspired by the shape of a billowing sail of one of the tea clippers which were
built in Annan. We are going to build a relationship with two very well known Scots for
our 2 styles of spirit. Robert Bruce for our peated and Robert Burns for our unpeated.
Our bottles and labels etc are all in their final design stage.
Paul; can you give me any techno details on equipment and plant? A; Porteus Mill
An average spirit in an old cask could well be of inferior quality to the younger spirit
even though it had spent more time in the cask. 3 yr old bottlings are necessary for
something like 6 yrs old minimum to let the wood give more complexity and maturity.
Maximum would have to depend on spirit character and cask type so I’m going to
leave that one. Although too long and the lower strength alcohol starts to extract
more water soluble components giving the characteristic ‘woody’ effect.
Paul; what are your views re adding water, coke, ice etc? A; To experience whisky
at it’s best I would recommend only water. But you can add whatever you like if it
makes you drink whisky, whatever floats your boat.
Paul; does winning a whisky award/medal really make any difference to sales? A;
I’m not sure really, but it’s nice recognition for the effort you’ve put into your product.
Paul; how will you select casks? A; Very carefully. We don’t want an overtly bourbon character to our spirit so we will use a bigger proportion of good refills over fresh
bourbons along with some sherry.
Paul; do you have any thoughts on finishing? (sherry, port etc) A; Yes, we will

definitely do some finishing in sherry especially for our younger expressions as it

aromatic pipe tobacco and a spicy oaky mouth feel. Some fine vanilla toffee with a
long spicy finish.” The BenRiach 12 Years Old impressed the competition’s judges
with: “Currant buns, a light whisky with hints of raisins and sultanas, spicy citrus fruits
and a lightly waxy mouth feel. A very well balanced spicy finish.”

Age is just a number, so far as spirits are concerned. “Don’t get hung up on
numbers,” Dave Broom, author of “The Complete Bartender’s Guide,” told Tales of
the Cocktail attendees at “The Blind Truth About Aging Whisky” seminar, sponsored
by Diageo. “Age just tells you how long it’s been in a cask, not how good it is.”
J & G Grant have recently acquired a very rare, historic bottle of Glenfarclas 1923
which was bottled to celebrate former Chairman, George S Grant’s 21st birthday in
1944. This is thought to be the last one in existence. The current Chairman of J &
G Grant, John L S Grant, says “From reading my Father’s journal of 1944, he took
part in the D Day landings on 6th June 1944, spent two months in France before
returning to England in August 1944, and then sailed from Liverpool for Alexandria
in October 1944. This, I guess is when he would have taken the bottles with him
to Alexandria. He certainly had some in Alexandria with him as several of his ex-
colleagues have mentioned it to me since.” No doubt this taste of home was greatly
appreciated by George and his fellow servicemen. In any case, none of the bottles
made it back with them! The remaining bottles were gifted to other family members
and to George’s former governess, Gladys Ferguson, to commemorate the occasion.
It was this last bottle that came up at auction in early 2014 and that J & G Grant were
fortunate enough to be able to buy back and return to the distillery some 70 years
after it was bottled.

As you can see the frames are made from whisky barrel staves and they are left as
rustic as possible. The front is lightly sanded so you can still see some off the original
stamp numbers on some staves. The backs are sanded and given two coats of clear
varnish, so you can still see the original charring from when the barrel was fired.
The square pictures are framed with wood taken from old barrel lids and upcycled
into frames for our pictures
All our framed prints are £120 each plus P&P which is £19.99 in the UK but we will
be happy to get a price for any other countries .
The crib board is made from barrel lids as well, the markers made from the old metal
hoops that held the barrel together. It is a 120 hole board with two slots for Glencairn
glasses. Why 120 holes? Well no point rushing the game when you are enjoying
your whisky!!!

The tasting/coaster stave can be engraved/blasted with your name on the glass.It is
the end of the stave with the slot for holding the barrel lid.

Sinds 18 oktober 2012 heeft whiskyminnend Nederland er weer een prachtige whis-
kybar bij. Eigenaar is gastheer en whiskyconnaisseur Wim Wamelink, bekend van
onder andere zijn eerste bar de Heerenkamer die hij met zijn hotel eind 2010 ver-
kocht heeft. Voor zijn grote whiskycollectie die hij nog steeds in bezit had zocht hij
een nieuwe plek en die is nu gevonden. De nieuwe bar heet de MasterClass Bar en
is gelegen in het plaatsje ’t Loo Oldebroek, 10 km ten zuidwesten van Zwolle. De
bar is in het pand van horeca interieurbouwer Inris die het als showroom gebruikte.
Een prachtige bar in oud Engelse stijl met een buffetbar, fraaie lambrisering, luxe
fauteuils en zitjes voor maximaal 45 gasten. Het decor is de indrukwekkende whis-
kycollectie van meer dan 300 verschillende whiskyflessen. Dit is de passie van Wim
Wamelink die als whiskyconnaisseur dagelijks proeverijen biedt, vaak op locatie,
maar nu vooral in zijn eigen whiskybar. De bar is besloten dus bezoeken kan alleen
na reservering. Maar men is alle dagen van de week al welkom vanaf 2 gasten als

wordt samengewerkt om een bezoek compleet te maken.
