Application
The Mixtronic pasteurizer is designed to pasteurize,
cool and conserve the ice-cream mix
at a temperature of +4°C .
Description
The machine, constructed entirely in stainless steel,
is equipped with a microprocessor which regulates
the low and high pasteurization cycle (from + 65°C to +85°C)
and all intermediate cycles.
The machine’s software automatically regulates the
pause prior to subsequent cooling.
The bain-marie technology ensures rapid pasteurization
using gradual variations in temperature to avoid any
sudden changes in temperature of the ice-cream mix.

Cool 85 ° C and maintain the mixture in aging,
once cooled to 4 ° C, shaking slowly.
Tnks Each has two pools, operated separately,
which correspond to the basins of the
pasteurizer Mixtronic:
- AGETWIN 55: 2 wells, 60 l
- AGETWIN 120: 2 tanks, 120 liters
For this reason, it can be coupled to the
pasteurizer and create storage space in a
little more mixed with various flavors.

AGETWIN 55
Application
The Agetwin ageing vat cools and maintains
the temperature of the mix at +4°C.
Description
The machine, which has two 55 litre stainless steel tanks,
stirs the mix slowly, conserving the smooth texture
to ensure a creamy ice-cream.
The Agetwin cools the mix rapidly thanks to the
extremely powerful semihermetic compressor which
enables the machine to take the mix at a temperature
of 85° C and to cool it to 4° C in less than an hour.

AGETWIN 120
Application
The Agetwin ageing vat cools and maintains
the temperature of the mix at +4°C.
Description
The machine, which has two 120 litre stainless
steel tanks, stirs the mix slowly, conserving the
smooth texture to ensure a creamy ice-cream.
The Agetwin cools the mix rapidly thanks to
the extremely powerful semihermetic compressor
which enables the machine to take the mix at a
temperature of 85° C and to cool it to 4° C
in less than an hour.

Single-stage HOMOGENIZER 300 LITERS
Application:
It homogenizes and makes uniform the molecular structure of the mixture for ice cream (water, fats, sugar and milk
solids) with extrusion at very high pressure (250 Bar). Homogenization improves the air embodiment in ice cream
and makes the ice cream preservation possible at low temperature of -20°C for a long time without occurrence of
significant alterations in the structure. Homogenization is to be carried out with hot mix (75°/85°C).
Single-stage HOMOGENIZER
Description and features:
The homogenizer is fed by a 0.75HP centrifugal
pump in stainless steel fitted with a filter with
cartridge in stainless steel, that can be removed and
washed
The homogenizing portion consists of:
• Mechanical group in oil bath, which is driven by
an
electrical motor and determines an
alternative movement in the suction and
pumping pistons.
• The mixture is pumped at very high pressure (up
to a maximum of 250 Bar) through a small orifice
which, as a result of the extrusion, homogenizes
the mixture.
• The homogenizing portion (impact head and
counter-head) is made from special abrasionresistant material.
• The homogenization pressure is regulated by a
pneumatic reducer placed on the control panel.
• The work pressure is indicated by an analogue
glycerine-bath pressure gauge
• The machine is fitted with an overpressure relief
valve .

Application:

Description

Application
The Professional is a universal laboratory for the
preparation of sweet and savoury creams (butter cream,
cheese sauce, custard, whipped cream (meringue, mousse)
, paté, fruit jellies; it is designed to blend chocolate,
pasteurize and batch freeze ice-cream mixes and granita
(crushed ice) in a single compact machine.
Description
Machine fitted with top bain-marie tank to mix, cook,
pasteurize and cool the creams and a bottom tank with
horizontal cylinder for processing custard and ice-cream
to the selected recipe.
The two tanks are completely independent and can
operate separately with different programmes. Professional
can therefore be used partially just as a pasteurizer or as a
batch freezer.
The machine is supplied with operating software with over 40
preset recipes which can be personalized.

The goods are made available at Technogel. Transport and relative risks are to the purchaser’s
charge and we therefore advise appropriate insurance coverage.

30% on placement of order. Should the purchaser fail to pay, Technogel reserves the
Right to terminate this contract since the deposit paid is then considered as payment for damage
suffered.; 70% prior to shipment of the goods; Technogel will make the goods available only when
the total payment has been made.
