Jaen, the WoRld capital oF oliVe oil
José Enrique Fernández de Moya Romero
Mayor of Jaén
Welcome
Geographical
Location
There are several different communication
entries to the city:
- From the West: The Cordoba Road, by A-316
or A-44 (Jaen West exit), which will take you
rapidly to the Castle.
- From the North: The Madrid A-44 Road (exit
Jaen North). It will take you to the centre of
town where several parking are available,
such as Avenida, La Victoria or Constitucion
Square.
- From the East and South: The Granada A44 Road (exit Jaen South). This will take you
to the Granada Avenue where we can take
the Southern Bypass (Ronda Sur), which
will take us to the city’s monumental area,
from where we can also easily reach the
Castle. If you drive into the city from this
direction we recommend the San Francisco
parking (it is the most central parking place),
the Alcantarilla or the La Alameda parking
places.
The saying “you arrive to Jaen crying and you leave it crying” is often repeated by people
who has spent here some time. In the beginning they did not want to come to Jaen but
after living and sharing live with Jaen’s people they make great friends and like the
standard of living, so when they must go, they cry.
Visitors will be surprised in Jaen by its people’s hospitality, gastronomy, the city’s cultural
legacy and scenic beauty. It is a city that draws much attention as we get to know it.
Jaen is living history, a city influenced by many cultures, including the great Jewish legacy
in the old part of the city. Its narrow and hidden streets and churches like Magdalene
and St. John together with the Arab baths, invite tourists to watch carefully not to miss
any details.
You pay more attention when you reach the majestic cathedral that dominates Santa
Maria’s square. A monument that astonishes those who visit it for the first time and it
continues amazing those who walk around every day. The work by Andrew Vandelvira
is impressive outside as well as inside, so it does not leave anyone indifferent because
every corner is worthy of admiration.
On the Saint Catalina’s mountain, at 820 mts above sea level, you find another gem of the
city: Santa Catalina’s medieval Castle; a former defensive Christian building, from where
you can see most of the province and its extensive olive groves. This fortress boasts of a
brand-new Tourist Interpretation Centre through which you can learn the history of the
city and its castle.
And last but not least, the rich and varied Mediterranean cuisine of which the city is
proud of and visitors can enjoy in numerous bars and restaurants. The famous pipirrana
(a salad) seasoned with the best extra virgin olive oil in the world, is just one of the many
dishes you can taste in them. Our liquid gold is a must in the local kitchen because it is,
certainty, the essence of these dishes that please everyone tasting it.
Welcome to Santo Reino capital city, the world capital of olive oil. Regards and I hope you
all enjoy our city in every way.

Cathedral
The Cathedral of Jaen, a masterpiece by Andres de Vandelvira, has been qualified as one of the most outstanding Renaissance works in Andalusia.
It has inspired many other great Cathedrals in South America. A process was started, ten years ago, in order to achieve its qualification as a World Heritage
Site by UNESCO.
The history of its building began after the conquest of the city by Ferdinand III, when he converted the mosque into christian worship. In the 14th c. bishop
Nicolas de Biedma brought the relic of Our Lord’s Holy Face which, according to tradition, is one of the three clothes used by Veronica to dry the sweat and
Jesus Christ’s blood during his ascent to the Calvary. The place, therefore, became a holy pilgrimage place. On top of the arabic mosque foundations of the
city, a new, bigger, church in Gothic style was built. Some few elements of it can still be found at the cathedral’s back. The primitive cathedral had several
construction problems and that is why a new Renaissance design was ordered to be built by the architect Andres de Vandelvira. Although works were carried
on for three centuries, the master’s mark survived. This is why it has been qualified as the most balanced, harmonious and well-proportioned Andalusian
cathedral. It is the one, which has the most majestic and solemn interior.

Santa Catalina Castle
The Castle of Santa Catalina was originally a Caliphal Islamic fortress, from the 9th century. After the Christian conquest of the city by Fernando III in 1246, a
new christian castle was built, which can nowadays be visited. Next to the castle a National Parador Hotel was built in the 60’s. From the top of the hill one
has fantastic views of the city and the surroundings, specially from the Cross. The fortress lodges the brandnew interpretation centre of the castle.

Nature
Routes and Adventure Sports in the nearby
mountains
Almost half of Jaen’s district territory is set amidst the mountainous system of the Betica System Hill Ranges.
You can fully appreciate this when looking at the city’s surroundings from the Castle on Santa Catalina Hill, an
excellent lookout point for the full district. Over one hundred square meters of woodlands, mountain prairies and
rocky peaks extend Southwards. The exact figure is 4,363 hectares of woodlands, in which two urban perimeter
parks have been classed as protected areas: the Neveral and the Sierra.
Hidden and almost untouched mountain routes will introduce you to charming hilly landscapes where an
abundant Iberian fauna lives within a very short distance of the city . One can practise adventure sports such as
rock climbing in these nearby mountains.
One of Jaen’s most peculiar environments is the area between the countryside and the hills. The hills combed
in olive trees become a picturesque landscape of steep slopes where the centenary olive groves are dotted with
patches of pine trees and other vegetation, which introduce you to the neighbouring hills. These slopes end up
in steep hills such as the Zumbeles, the Peñas de Castro, El Canjorro, the Peña of Jaén and a multitude of other
heights of easy access from where you will be able to gaze at magnificent views of the city and its surroundings.
Traditional country houses and the peculiar “cortijada” or farmhouse typical of the area around Jaen is the best
well-known example of local rural architecture.

Culture
Cultural Routes in the city and surroundings
The Autumn Festival of Jaen is held during the autumn. A consolidated festival, its XVI edition will be celebrated in 2015, which has appealed to a lot of
national and international figures of music, dance and theatre. It is one of our cultural identities and emblem of the Board of Culture which has become the
most important cultural event of this city. It became a full member of FestClasica(Spanish Association of Festivals and Music) in 2012 .
Since their arrival to Jaen in 612 a. C., Jews co-existed in peace with Visigoths, Christians and Muslims. The Jaen Jewish community was one of the most
representative in Al-Andalus. The remains of the Jewish Period in Jaen can be clearly seen in the narrow streets and small squares in the old San Andres
quarter. The city is a member of the Jewry Network of Spain since 2005. The Iuventa-Tarbut Association of Jaen stands up for this area and its history . To
mark the 1100 anniversary of the birth of Diplomat Hasday Ibn Shaprut, many cultural activities wil be held in 2015 in order to let know this celebrity from
the Court of the Caliphate of Cordoba . www.redjuderias.org. www.iuventa.org.
The city forms part of the Network Cities with cathedrals in Spain, whose aim is to work together in the promotion and defense of the Town Planning,
Architecture, Environmental, Historic and Cultural heritage and, specially, in the defense of the Cathedral heritage. www.ciudadescatedralicias.org
The cathedral of Jaen is the starting point to the Mozarab Road of Saint James in the province of Jaen. A fascinating road to the tomb of Saint James, where
they will enjoy an overwhelming natural beauty, landscape and monumental city of Jaen and the villages of the Sierra Sur. For further information: www.

Panoramic Routes
If something must be quoted as typical of the city of Jaen it is its steep
slopes. Although very difficult, more so perhaps for visitors than for residents,
some of them have the added charm of becoming privileged lookout points
for the city. This will, of course, make up for any inconvenience or effort.
Please take note of the following lookout points: In the Bypass Road: from
the top of Duque Street; the Parks: Seminary, Boulevard, Cerro de los Lirios
and Park Cerro de las Canteras; and the Castle and Cross.
Jaen of Legend
The history of the city intermingles with a good number of legends that take as a scene some of its principal monuments, squares and
corners as well as many of the prominent celebrities who lived there. Although legends like the one of “the thief of S. Ildefonso”, “the
Grandfather”, “the Cross of the Castle”, “the Lizard of La Magdalena”, “the Holy Face”, … are known by all the people of Jaen, we recommend
you to know them in a pleasant guided tour along the city or by reading some of the many books published on the topic.

Jaen, The World Capital of Olive Oil
Olive Oil and its benefits for health
The production of olive oil is for the city of Jaen and all its province’s the most important identity sign having made it famous all over the world. 77% of the
province’s lands are occupied by olive tree groves, that is 60 million olive trees, making it a landscape: long files of green and silver borderline peaks and
valleys creating an ecosystem in its own right, which surprises all those who come to know us.
Olive oil is a fountain of health and has therapeutic effects, which have been acknowledged by all experts. It contains a high quantity of oleic acid contributing to reduce levels of cholesterol. We also find anti-oxidation properties thanks to compounds such as vitamin E and poliphenols, substances that help
to slow up ageing processes. These antioxidants are responsible for the typical itching and bitterness of the picual, variety grown mainly in the province,
considering this as positive organoleptic attributes along with its fruity characteristic aroma. Olive oil is better appreciated in the world of cuisine, which
deepens its roots in Mediterranean tradition. Crude olive oil communicates these qualities to food, so it is very suitable to dress salads, sauces, aliolis, vinaigrettes, cooked food, bread... Olive oil used in fried forms a crust to foods that prevent them from getting more oil and therefore they have fewer calories
than fried with other oils, also preserves the nutritional properties of food. Finally we highlight its resistance to the thermo oxidation due to the high
content of natural antioxidants and oleic acid.

The Olive Oil Production
Olive oil begins its elaboration process in the olive tree. Harvest is at the beginning of
autumn and ends up with the storage in the warehouse. Therefore, it is of the utmost
importance to control all the phases in the process since the characteristics and qualities
of the oil are conditioned and can be affected by each and every one of the phases. Nevertheless, the great care with which the process is followed during farming, harvesting,
selection and packaging have made Jaen’s olive oil reach their fame; not only because of
the enormous production but also because of the excellent quality of the final product.
This quality reaches its peak with the star amongst olive oils: the extra virgin olive oil. In
the world of olive oil production there are different categories. Extra Virgin Olive Oil is
held to be the best of them all because it faithfully reproduces the odor and the flavour
of the olive. That does not mean that all olive oils in this range have the same characteristics since each olive oil will adopt the odor and flavour of the olive it comes from. This
diversity of flavours delights a great number of consumers.
The most important trade market related to the olive oil world takes place in the city of
Jaen.
EXPOLIVA: The International Olive Oil Market and the related industries. It will be held
from 6th to 9th May 2015:
The Mediterranean Diet, where olive oil is an essential ingredient, has been declared
World Cultural Heritage site by UNESCO in November 16th, 2010.

Tapas and Cuisine
Those ones wishing to discover the secrets of Jaen’s cuisine, during their stay, will have many possibilities to do so and we are convinced that you will not be
disappointed.
For a start if you want to have “tid bits” there is a nourishing repertoire of “tapas”, choose as you please. The popular “bocadito” or bread morsel, olive oil and codfish
are very popular amongst the olive’s trade workers; the small radishes, the black pudding and “chorizo” sausages, the capers and big capers, the great variety of
seasoned olives for example the cornezuelo ones, these are the first to be tasted, snails in broth, and even the typical “rosetas” or “popcorn”, the fried potato chips
in olive oil made in town. All this deserves a good glass of a beer made in Jaen, such as Cruzcampo or a glass of wine from any of these villages Lopera, Porcuna,
Bailen, Torreperogil or Frailes.
There are many bars and restaurants to taste a good tapa, although the most traditional tapas areas are three: one situated around the church of Saint Ildefonso;
another one around the Cathedral, at the Arco del Consuelo Street; and the third one between the Posito and the Constitution Squares.
The Ruta de la Tapa takes place every year in the city, where many bars offer their best and most tradicional tapas.
As for main dishes we must highlight amongst others, the pipirrana ( a type of salad), Jaen style spinach, Jaen broad beans,“rice of Jaen”,“poorman’s potatoes”,“onioned”
tomatoes and codfish, “migas” (crumbs), young goat’s meat (with garlic) and roasted, seasoned pork ribs. For dessert, the most famous ones include “rice with milk”,
“gachas”, apples and melons from the river of Jaen; “alfajor” of Moorsih origin, “pestiños” or “gusanillos”, “ochíos”, “hornazos, “mantecado” buns, and the specialities of
the convents of the city. We recommend an anisette “Castillo de Jaen” or resolí (an herbal-based liqueur already famous in the 15th c) to take with the desserts.
