The Oak Run Public Golf Course broke ground on Friday, April 8, 2016, on a new 8,500 square foot clubhouse/restaurant. Located behind the 9th green on the
course, the $2.8 million facility is anticipated to be a focal point for the community and a destination restaurant for the local area.
The most visible exterior features of the new facility will be the large timber frame supports, vaulted ceilings, and rear patio area for casual dining and scenic views
of the course. Upon entering the facility, patrons will be greeted by a grand entrance and large stone fireplace. The design, aesthetic throughout the building, incorporates a mix of timber framing, stone, barn wood, steel, and glass to deliver a rustic chic charm. General Manager, Mike Davison explained: "The design theme blends
nicely with the rural, recreational nature of the area, and stays true to our take on the casual menu options being offered."
Construction of the new facility is expected to be completed in December 2016. The existing clubhouse, which houses the Watering Hole Restaurant and Bar and the
Pro shop, will remain open throughout construction and will be torn down after completion.

Managerʼs Report
by Mike Davison
As we move into the summer
boating season, safe and considerate watercraft operation is of
utmost importance. Consequently,
I have chosen to dedicate my article to the themes that came out of
the Board appointed ad hoc committeeʼs review of good boating
practices.
Although we have managed
to maintain a superb track record
of avoiding serious accidents and
injuries, the number of registered
watercraft is increasing and lake
activity on weekends and holidays
is growing. Therefore, we all need
to be vigilant and practice caution. Itʼs always a good idea to
stay current with changes in boating laws, or to take a refresher
course in safe boating operation.
Consider attending the Boaterʼs
Safety Class held at Oak Run, or
take it online. Visit the Illinois
Department of Natural Resources
(IDNR) website for more information.
TIPS FOR STAYING SAFE
ON THE LAKE - REMEMBER
TO:
• USE CAUTION when drinking and boating.
• BE ALERT for slow moving watercraft, kayaks, and paddle
boards.
• FLY THE ORANGE FLAG
continuously when pulling anyone
behind your watercraft. LOWER
THE FLAG when no longer towing.
• OBEY all no-wake zones.
• ALWAYS drive counterclockwise with the shoreline to your
right.
• KEEP your eyes forward and
let spotters look behind the boat.
Always scan for people in the
water. If youʼre in the water, put
your hands up to be more visible.
• DONʼT jump wakes. Itʼs prohibited.
• SAFELY operate watercraft
while towing skiers, tubers, and
wake surfers. Be aware of your
speed and direction.
• AVOID dropping people in
the water in narrow portions of
the lake, especially during busy
periods.
TIPS FOR BEING
COURTEOUS – PLEASE:
• MAINTAIN respect for others. Sound amplifies over water.
• PREPARE your boat prior to
launching or driving on the ramp.
• KNOW which watercraft has
the right of way. Donʼt pull in
front of any watercraft.
• STAY a safe distance from
fishing boats (and all non-motorized watercraft) to reduce wakes
and rocking.
• USE idle speed when touring
the lake within 50ʼ of shore.
• AVOID plowing water and
creating a huge wake close to
docks.
• STEER CLEAR of ski boats
early in the mornings. Skiers prefer smooth water.
• DONʼT use full speed power
turns to pick up downed skiers or
tubers. Slow first, and then turn.
Itʼs just as fast and safer for everyone!
• ASSIST at the marina by
maintaining your place in line at
the gas pump and by helping the
attendant as needed.
• STAY towards the middle
of the lake when wake surfing. It
will give waves time to dissipate
before reaching shoreline.
• CONSIDER wearing bright
colored, high-visibility shirts or
vests when skiing or tubing. Itʼs
also a good idea when kayaking,
paddle boarding, or fishing.
• ENJOY the lake at non-peak
hours and during the week. Youʼll
be amazed at the difference!
KNOW YOUR RULES!
Take the time to review Oak
Run Rules and Regulations on a
yearly basis. Updates are provided
in the Communicator and on the
Associationʼs website at www.
oakrunpoa.com.
It is your responsibility to be
aware of when the lake may be
closed because of high water or
inclement weather. Beginning this
year, the lake will be closed to
motorized boats when the water
level at the dam is 8” above normal pool and rising.
Be aware of no-wake-zone
buoys as locations may have
changed.
Ensure that the Oak Run Office
has your email and cell phone
number in order to receive updates
and notices.
Practicing these common courtesies will help us all be safe and
enjoy the lake, and will avoid the
need for additional rules which
may limit activities.
Have a great summer!

Message
By Steve Foster
This nice spring weather has
afforded us the opportunity to
begin the site work for the new
clubhouse. This is an exciting
time for all of us here at Oak Run!
We have anxiously awaited construction of a new clubhouse for
many years. We appreciate the
foresight of past Boards and Mike
Davison in preparation for this
day. Although we will be experiencing some impositions in the
coming months, it will be interesting to watch the progress throughout the summer.

HOUSEHOLD
GARBAGE POLICY
With the return of summer, a
review of Oak Runʼs residential waste
policy seems appropriate.
1. The program is only available
to part-time residents who sign up and
pay the required user fee at the POA
office.
2. A three month minimum sign up
period is required.
3. The hours of operation are
Saturday, Sunday, and Monday from
9:00 a.m. to 6:00 p.m.
4. The waste program is for household garbage only. Construction material, yard waste, household appliances, furniture, and toxic or flammable
materials are strictly prohibited.
5. Items which meet the aforementioned criteria must be taken to the
Knox County Landfill for disposal.
The landfill is located approximately
10 miles from Oak Run off of State
Highway 167. Their hours of operation are Monday-Friday 8:00 a.m. to
3:30 p.m. and Saturday 8:00 to 11:30
a.m., and they may be contacted at
309-375-6045.
6. No household garbage can be
disposed of in the dumpsters or receptacles located in the parks. A minimum fine of $50.00 will be issued for
illegal dumping.
7. If you are a full-time resident
or part-time resident who is here
throughout the summer, you need to
sign up for curbside pick up. There
are two companies that offer this service at Oak Run. Tom Rollins provides Tuesday pick up service and can
be contacted at 309-879-2613. Waste
Management provides Thursday pick
up service and can be contacted at 1800-607-5474.

been told that information is complete and issuance of the loan
could come anytime. Nothing tells
us that the State of Illinois budget

Oak Run First Responders
(Neighbors Helping Neighbors)
By Larry Wood
The Oak Run First Responder Mission Statement is: “The true
meaning of community; neighbors helping neighbors...trained volunteers protecting life and property.”
Our 17-Year Oak Run First Responder History..the Formative
Years:
1999 – Formation of Oak Run First Responders
2000 – First EMS Vehicle goes into service
2001 – First Fire Truck goes into service and First Responder
Building erected (40ʼ x 40ʼ)
2002 – Oak Run First Responders win Governorʼs Hometown
Award
First Responder Calls
Your Oak Run First Responders had the following Emergency
Medical Services (EMS) calls: 6 calls in March and 5 calls in April
(through 4/26). Firefighters had 2 calls in March and 1 call in April
(through 4/26). Our EMS staff provides Firefighter Rehab for all local
fires.
Monthly First Responder Meetings
Our Monthly Team Meetings occur on the first Thursday of each
month at the First Responder Building, starting at 6:30 PM. Youʼre
invited to our monthly meetings or visit our website (www.oakrunfun.
com/firstresponders) for more information. At the station, check out the
trucks, turn-out gear, and medical and fire equipment. See if being a
First Responder, either EMS or Firefighter, is for you. Members must
be at least 18 years of age, a full-time resident of Oak Run, and have
a valid Illinois Driverʼs License. WE NEED VOLUNTEER FIRST
RESPONDERS!
Why Become a First Responder?
Hereʼs something to think about: the skills that you will learn as
an EMS / First Responder could someday save the life of one of your
loved ones. Whether from choking, breathing issues, heart problems,
stroke, etc., your training is invaluable.
The skills that you will learn as a Firefighter / First Responder could
someday rescue a child from a burning car or save a house from becoming a total fire loss, with all of the valuables trapped inside; possibly
even your own house.
First Responder Personnel
There were no changes to the First Responder staff in 2016. We continue to recruit new First Responders, noting that in 2015, we lost three
of our personnel and added just two.
We now have 13 Oak Run First Responders: 2 EMS First
Responders, 4 Firefighters, and 7 members who are both EMS and
Firefighters. Two of our EMS personnel have a higher level of training
than the required level for basic EMS.
Donations to Oak Run First Responders
We appreciate the generous donations made during this reporting
period by the following individuals: Michael and Janet Strader, Mr. and
Mrs. Greg Geicks, Mr. and Mrs. Dave Schanze, Fran Kepler in memory
of John Kepler, Howard Sundberg in memory of Shirley Sundberg, and
Kathy Hauberg. Thank You!
First Responder Training
February 27 – Fire training with Knoxville, on tactical leadership at
the fire scene held at Knoxville.
March 15 – Jan Congreve provided EMS training covering START
Triage for multiple injury accidents, along with equipment review.
March 21 – Fire training at Oak Run, on grass fires and forestry
hose. Please heed the Burn Ban Notices at each Oak Run Entrance.
April 8–10 – Fire training with
Brimfield, on WildLand Fires at
Brimfield.
April 23 – Fire training for the
District, which covered equipment
review and SCBA (air tank) installation.
April 28 – Fire Training with
Victoria, on drafting and relay
pumping, at the New Windsor Club.
Grounds and Equipment
New light-weight helmets
were purchased for all Oak Run
Firefighters, for use with grass and
timber fires. Light-weight fire retardant turn-out gear was provided in
October 2015, during the WildLand Training. This training focused on
grass and timber fires, with techniques to control, divert, and extinguish
fire which could jeopardize houses in this area that are surrounded by
forest, grass fields, corn and bean fields.
A new attic ladder was purchased for the Fire Truck.
Equipment inventory and inspection is conducted at each monthly
maintenance day, which occurs on the fourth Saturday of the month.
Components, such as the chain saw and electrical generator set, are
tested. Both trucks are completely checked out for readiness.
Website
Our website shares our history, provides safety information and
safety tips for the Oak Run Community, and has additional training
information specifically for First Responders: www.oakrunfun.com/firstresponders.
Community Involvement
We are proud of our involvement in community events. We offer
monthly free blood pressure checks on the fourth Saturday of each
month, from 9–10 AM at our station. We are responsible for testing our
two tornado sirens each month and for setting them off as necessary.
Oak Run Lake Patrol members are assisting with the siren testing.
The slogan, “We canʼt help you
if we canʼt find you!” has resulted in the addition of 262 (white on
blue) reflective address signs for
Oak Run homes and docks. We now
have these signs on about 37% of
the houses at Oak Run. Contact
Tom Kordewick at 309-879-2082
for details. The price for the metal
sign is $20 and an additional $10 if
you need a stake to mount the sign.
Fire Prevention
Every month should be fire prevention month. All home fire equipment, such as smoke alarms, CO
detectors, and fire
extinguishers,
should be inspected routinely.
When disposing of 9-volt batteries, take precaution to tape
both + and – terminals before
proper disposal. An exposed 9volt battery can be shorted across
the terminals against a metal
object and cause enough heat to
start a fire.
When inspecting the pressure
of a fire extinguisher, turn the
device upside down and shake it
to activate the retardant that may
have adhered to the bottom of the
canister.

June-July 2016--OAK RUN COMMUNICATOR--PAGE 7
By R. M. Kunzer
Mother Nature always plays a
big part when you have an event
outdoors, and she did make an
appearance for the Spoon Lake
Activity Teamʼs (SLAT) Easter
Egg Hunt on March 26, 2016.
The forecast was cool and rainy
for the Easter weekend. And cool
and rainy it was on Thursday the
24th! We needed the rain, but the
concern was a soggy grass areathe kind you just sink into! But,
Mother Nature decided to cooperate on Good Friday and dry out
our area. There was sunshine all
day on Friday and Saturday!
This allowed SLAT to get set
up and to stake out the designated
area on Friday, for the childrenʼs
egg hunt on Saturday. There were
four different areas set aside
according to age groups. SLAT
welcomed all Oak Run children
and guests from the ages of 3 and
under to 10 years, to come over
and fill their Easter baskets.
The Easter bunny arrived at
Brentwood at 9:30 am, so that
parents or grandparent could
have a “photo-op” with the
Easter Bunny. Picture taking is
always fun to watch and see the
kidʼs expressions. Some love the
camera, some not. Some love the
bunny, some not. It always makes
me laugh to myself while watching this!
After the Easter bunny was
finished being photographed, the
children were led to the different age groups by the Oaks Youth
Group. The dash began at 10 am
on Saturday the 26th. Children
lined up eagerly. As they waited,
one could see their eyes scanning
the areas, their minds plotting out
a strategy, others had their foot
on the “line”, and still others who
had no plan, but were excited to
get started! One boy arrived on
crutches! He definitely had a positive attitude and determination
towards collecting those eggs.
When the call “Get on
your mark, get set, go!” was
announced, they dashed off.
There were approximately 40-60
children waiting to find 1,035 candy
filled eggs, which were provided by
SLAT. The eggs ranged in different
sizes. Some were a medium size or a
large size. But the most sought after
were the “super sized” eggs! The
minds were spinning. They were all
there to collect the candy filled, and/
or sometimes prized filled, eggs.
There were also sponge footballs
hidden in the grass for lucky egg
hunters.
After all of the eggs were collected, the children began opening
their eggs and filling their baskets
with candy and trinkets!
SLAT would like to thank Jane
Peterson, the Maintenance crew,
The Oaks Youth group, and SLAT
members for volunteering their time
and effort for this event. Thank you
everyone!

The Oak Run
Garden Club
by Priscilla Muckey
The first 2016 Garden Club
meeting was held at Brentwood
on March 1st, at 7:00 p.m. A slate
of officers was put together and
approved by members present.
The slate consisted of: President,
Priscilla Muckey; Vice-President,
Keith Majors; Secretary, Suzie
Wanner; Treasurer, Carol Genty.
Election took place at the April
Garden Club meeting. Guest
program speaker was Bob
Coppernoll, Master Gardener and
a member of the Peoria Garden
Club. Bob's presentation was on
how to make your own rain barrel.
He also explained how to make
free-form stepping stones from
concrete.
Carol Genty, chairperson of
our annual plant sale, passed out
work signup sheets for different
committees needed to prepare for
the sale. A report was given by
Terry Ferguson and Judd Glow,
co-chairpersons for the spring
roadside/ditch cleanup project.
Keith Majors reported on the
scheduled Garden Club day-trips
and the scheduled guest speakers
for this gardening year. He also
reported that it is planned to celebrate Arbor Day by planting a red
bud tree in Brentwood Park at our
May 3rd Garden Club meeting.
The May meeting began at 6:30
p.m., rather than the regular time
of 7:00 p.m., in order to demonstrate planting this tree.
On April 5th, the Garden Club
held its regular meeting and conducted the annual election of officers per club by-law requirements.
The March slate of officers was
read to the members. President
Muckey requested for new nominations from the members present. No new nominations were
offered. The slate of officers was
voted on and approved unanimously. Officer positions begin
on May 1st, 2016, and end April
30th, 2017. Guest speaker, Rick
Smith, of Williamsfield, gave a
presentation on starting plants
from seed. His handout had valuable information pertaining to
wildflowers, invasive garlic mustard plants, and types of fertilizer,
herbicides and pesticides to use.
Bob Coppernoll, guest speaker 03-01-16
Several volunteers for the
spring roadside/ditch cleanup
project on April 19th came to The
Watering Hole Restaurant for coffee, doughnuts, and road assignments. The weather wasn't the
best for collecting debris, but a
few planned to try going between
the rain drops! The other volunteers took their road assignment
with them and will complete it
on a day of their choice. THANK
YOU to all of the volunteers and
to the residents who continue
picking up debris throughout the
year!
Rain, rain, rain! The Garden
Club's annual Plant Sale was held
on Saturday, April 30th. Despite
all of the rain, the plant sale was
very successful. Thank you to all
of the customers who came and
purchased plants at our only fund
raiser for the year. These funds
keep our Garden Club operating
throughout the year. Also, thank
you to all of the Garden Club
members who donated plants,
worked on the numerous committees, were present for setup,
worked the sale, and tore down
after the sale. The teamwork we
have is awesome!
The following are scheduled Garden Club activities:
Tuesday, June 14th - Day trip
to Starhill Forest, Petersburg,
IL. and Boehm's Garden Center,
Rushville, IL.; Tuesday, July
12th - Garden Club cookout/potluck and boat ride tour on Oak
Run (Spoon) Lake at Lakeview
Park, beginning at 5:00 p.m.;

Garden Club meeting at 7:00 p.m.
at Brentwood. Guest speaker will
be Chris Enroth, county extension
service, on "container gardening";

trip to Bicklehaupt Arboretum,
Clinton, IA. and Iowa Brewery/
Distillery tour, LeClaire, IA.;
Tuesday, October 4th - Regular
Garden Club meeting at 7:00 p.m.

Restaurant at 9:30 a.m. for coffee,
doughnuts, and road assignments.

on-going effort. If you are interested in learning more on how to
garden, join The Oak Run Garden

Golf News
Tips From
the Pro
By Brett Horton
Summer is just around the corner and so is Junior Golf Camp!
This is a great way for your children to learn valuable life skills,
such as decision making, social
skills, and resilience. The camp
will start on June 9th and is held
on Thursdays.
The kids are separated by age
groups. The 6 to 9 year olds will
play from 9 to 10 am. The 10 to
13 age group will be from 10:30
am to noon. The high school
class is from 1 to 2:30 pm. The
price is still just $ 3.00 and you
simply come as many times on
Thursdays, as you can. The Junior
tournament will be held on July
28th and starts at 9 am.
The annual Knox County
Amateur will be held August 6th
and 7th this year. This is a great
event for players of all abilities.
At the June Board of Directorsʼ
meeting, the Board will consider establishing a maximum size
(length) limit for pontoon boats.
Currently, there is no size limit on
pontoon boats at Oak Run.
The proposed maximum size
is 28ʼ, and that information would
be listed on the watercraft title
and registration card.
The Board is seeking feedback from pontoon boat owners
on this subject. Please email your
thoughts to [email protected]
and use the subject line “Pontoon
Boat Size Limit Proposal.”
For more information, please
consider also attending the Board
meeting on June 16th, at 7:00 p.m.
at the Brentwood Lounge.
by Brett Horton
It also gives players a chance to
compete in a USGA golf tournament. Last year, we had close to
100 players! The participantʼs
scores range from under par to
over 100 for 18 holes. The event
is flighted after the first round.
Players compete in their flights,
according to their scores, for prizes that are awarded on Sunday.
The championʼs presentation is
held at around 3:00 pm on Sunday
and spectators are always welcome. Call the golf shop at 309-
879-2582 or 309-289-6481-for
more information.
One of the most commonly
missed shots is the three wood
from the fairway. The cause of
these missed shots is usually
about the angle of attack. Many
golfers will either hit down on
the ball and take a divot as they
would with an iron shot, or try
to scoop the ball into the air. The
three-wood shot should be swept
off the turf with a shallow swing
path that strikes the ball and just
skims a tiny divot, or none at all,
in front of the ball.
To learn a shallow club path,
tee the ball up as you would for
your driver. Hit some shots from
this tee height with your three
wood and you will be forced to
make a level and shallow swing
path in order to hit. You will not
be able to hit down or scoop the
ball. Practice some shots with
this drill, and then hit some three
woods from the ground and you
will feel a good, shallow approach
that makes solid contact.
Safety
Committee
Lorie Ferguson
The first meeting of 2016 for
the Oak Run Safety Committee
was held April 9th at Brentwood.
With our new Board liaison
in attendance, we reviewed our
many accomplishments from the
prior year.
We have scheduled two (2)
classes with the U. S. Coast Guard
Auxiliary for their Safe Boating
class. The first one was held
on April 23, and there were 13
people in attendance. The second
class will be held on June 4. Both
classes needed prior sign-up and
were held at Brentwood.
We found that we still had
many issues left from last year
that were still being worked on,
such as lowering the speed limit
on County Road 15, around the
Brentwood area. Since there is
the pool, playground, and now a
Life Flight landing area there, we
feel that the speed should be 35
mph as it is around the rest of the
lake. We are currently working
with Knox County on this.
Our next meeting is scheduled
for Saturday, June 11th, at 9:00
am at Brentwood. We invite any
and all persons who are interested
in keeping our Oak Run citizens
safe, to attend!

Looking Up
by Bob Pauer
During the months of June and July, the constellation Hercules is
almost directly overhead and is easily identified by a group of four
stars shaped like a lopsided keystone. Two additional stars give it the
shape of a backwards “K”. Located in this constellation is two beautiful
globular clusters of stars, M13 and M92.
M13: The Great
Globular Cluster
in Hercules
M13 is a collection of hundreds
of thousands of
ancient stars gravitationally bound
t o g e t h e r. T h e r e
are approximately
150 such clusters
that orbit the core
our galaxy. At a
diameter of 145
light years and a
distance of 25,100
light years from earth, it is barely visible to the naked eye and is seen
with binoculars as a small fuzzy ball. With a telescope, the bright core
of the cluster is seen, along with a cloud of individual stars surrounding it. If the earth was put in the center of this cluster, our sky would be
filled with stars, many of which are three times as close as our nearest
star, Alpha Centauri, and nine times as bright.
M92 is a little sister to M13 and like M13 was coalesced during the
early stages in the formation of our universe, more than 14 billion years
ago.
Hercules
The mythology of
Hercules
Hercules is the son of the
God Jupiter and Alcmene,
a mortal. Jupiterʼs infidelity enraged his wife Juno,
who plotted to rid the world
of this living shame. When
Hercules was just a baby,
Juno placed two snakes in
his crib. Hercules, who was
large and strong for his age,
killed the snakes with his
bare hands. As he continued
to grow, his fame as a killer
of monsters also grew.
Hercules married and had
several children. Juno continued to plot revenge for her husbandʼs infidelity by finally succeeding in driving Hercules mad. In a fit of madness, he killed his wife and children. As an act of atonement, Hercules
was assigned to perform twelve labors, the last of which was to obtain
the golden apples of the Hesperides (Daughters of the golden sunsets),
that were guarded by a dragon, which he killed.
Hercules was later summoned by Zeus to help him to defeat the
giants, an ugly set of Gods that fought Zeus to control Mount Olympus.
During the battle, the Giants threw house sized boulders and burned the
trees of Mount Olympus. In retaliation, Zeus unleashed lightning bolts
to stun the giants and Hercules shot Alkyoneus, one of the mightiest
of the Giants, with an arrow causing Alkyoneus to fall back to Earth.
Such a commotion may have
been seen as the
reason for lightning and thunder
in the minds of
the storytellers. This, along
with other feats
of strength and
daring, resulted
in Herculesʼ
immortalization
in the sky as a
constellation.

For this issue of the Recipe
Box, Nancy Brown has graciously
agreed to write the following article about living gluten-free. She
also shared some of her favorite
recipes with us! Enjoy!
Living
Gluten-free
By Nancy Brown
Have you noticed that the
whole world seems to be going
gluten-free? In the five years since
I was diagnosed with celiac disease, the interest in and product
choices have grown to make gluten-free one of the top food trends
of the year.
Celiac disease is an autoimmune disorder, like diabetes
or M.S. The body views gluten,
that protein found in wheat, barley, rye and spelt, as an invader
and begins to attack the digestive
track. Symptoms are varied, but
often include diarrhea, constipation, pain and bloating, fatigue,
and brain-fog.
World-wide, approximately
one in one hundred people must
eat gluten-free. Many others have
gluten sensitivity or choose to eat
gluten-free to minimize inflammation throughout the body. So,
if you find yourself curious to see
how you may feel after a week of
eating gluten-free, or if you find
yourself entertaining gluten-free
guests this summer, rest assured!
Most food groups are naturally
gluten-free, such as fruits, vegetables, meats, and dairy. Sauces
and gravies can be thickened with
cornstarch instead of flour. And
if you catch lots of fish, glutenfree breadcrumbs from the local
grocery store will make a first rate
fish fry.
Baked goods are a bit trickier.
Gluten is responsible for bread
being able to rise, turn golden brown and stay fresh. Pretty
important stuff! Xanthan gum,
which is derived from corn, can
pinch-hit in gluten-free recipes.
Some commercial flour blends
contain it, some donʼt. Good
choices are Bobʼs Red Mill AllPurpose Blend or Betty Crockerʼs
Gluten-free Blend. The following
recipes have xanthan gum listed
as an ingredient. If your flour
blend contains it already, just omit
the xanthan gum. Here is one of
my favorite blends because itʼs
simple to make and gives excellent, light results every time.
Easy Gluten-free Flour Blend
5 cups brown rice flour
1-2/3 cups potato starch
3/4 cup tapioca starch
Combine and stir well before
each use. Keep covered tightly and use within one week or
freeze.
Here is a basic muffin recipe
that can be customized for each
season.
Basic Gluten-free Muffins
Combine dry ingredients and
set aside.
2 cups Easy Gluten-free flour
blend
2/3 cup granulated sugar
1 T. baking powder
1 tsp. baking soda
3/4 tsp. xanthan gum
1/4 tsp. salt
1/4 tsp. nutmeg
Next, combine liquid ingredi-
ents
1/2 cup milk
1/2 cup oil
2 eggs
1/2 tsp. real vanilla extract
Combine liquid and dry ingredients, stirring gently until just
combined. Add fruit, nuts, etc.
(see ideas below) Spoon batter
into paper liners and sprinkle
tops with sugar if desired. Bake
at 375° for about 18 minutes, or
until center springs back when
touched.
Add-in ideas: 1 cup blueberries or chocolate chips, or diced
apple or grated carrot and zucchini, or 1/2 cup each raspberries
and white chocolate chips
Hooray for pizza! Virtually all
toppings are gluten-free. Here is
my go-to crust recipe:
Pizza Crust
Makes one 12” diameter crust.
1 cup Easy Gluten-free flour
blend
1/2 cup millet flour
1 tsp xanthan gum
1/2 tsp salt
2 tsp sugar
2-1/4 tsp dry yeast
1 tsp. olive oil
1 cup warm water
Combine all dry ingredients
in large bowl. Stir in olive oil
and warm water. Beat well with a
spoon until thoroughly combined.
Spoon into well-greased 9 x 13”
pan or 12” round pan. This batter is like soft frosting and needs
to be smoothed gently across the
bottom of the pan. Allow to rise
for 15 minutes and then par-bake
for 10 minutes at 400°. Remove
from oven; add desired toppings
and cheese. Return to oven and
bake about 15 minutes longer
until cheese is bubbly and golden.
One of my bakeryʼs most popular desserts are these cupcakes.
They are moist and not too sweet.
Just right for any special occasion!
Pink Champagne Cupcakes
Makes 18 medium cupcakes.
1/2 cup softened butter
1 cup sugar
Cream together butter and sugar
until light.
2 eggs
1 tsp vanilla extract
Add to creamed mixture and
beat well.
Combine dry ingredients:
1-3/4 cups Easy gluten-free flour
blend
1/2 tsp baking powder
1/4 tsp salt
1/4 tsp xanthan gum
Add dry ingredients alternately with combination of 1/2
cup sour cream and 1/2 cup pink
champagne. Spoon batter into
paper-lined cupcake pans. Bake
at 350° for 18 mins, or until center springs back when touched.
Frost with champagne buttercream when cool.
Champagne Buttercream:
Reduce 1/2 cup of pink
champagne by simmering in
small saucepan until syrupy and
reduced by half. Let cool. In large
bowl of stand mixer, cream 1/2
cup butter. Slowly add 1 pound
confectionersʼ sugar, 2 T heavy
whipping cream and cooled
champagne syrup and beat well.
Spread or pipe onto cooled cupcakes.

TRIAD Programs
What is TRIAD?
TRIAD is a program available
to Knox County senior citizens
who are 60 years of age and older.
TRIAD began in 1988 when
three national organizations
agreed that crime related needs
of the elderly could best be met
by a cooperative effort. The
three organizations; American
Association of Retired Persons
(AARP), International Association
of Chiefs of Police (IACP), and
National Sheriff ʼs Association
(NSA), signed a cooperative
agreement.
The word TRIAD represents
a three-way commitment among
the Chief(s) of Police in a county,
the Sheriff, retired leaders, and/
or seniors. They agree to work
together to reduce the criminal victimization of the elderly
and enhance the delivery of law
enforcement services to older persons.
In July of 1997, an agreement was signed between AARP,
the Knox County Sheriff ʼs
Department, and the Chiefs of
Police in Knox County.
The main purpose of TRIAD
is to develop, expand and implement effective crime prevention
and education programs for older
community members. Activities
center on both pre-victimization
(preventative) and post-victimization (victim/witness assistance)
aspects.
TRIAD works to improve the
quality of life for senior citizens.
By providing an opportunity
for the exchange of information
between law enforcement and
older persons, TRIAD can also
focus on reducing unwarranted
fear of crime.
TRIADs accomplish their
goals through councils throughout the County. Many TRIADs
call the council: S.A.L.T., which
is an acronym for Seniors And
Lawmen Together. The S.A.L.T.
councilʼs members are all volunteers and work very close with
the Sheriffʼs Department, Police
Departments, and Senior Citizens
of Knox County.
The Knox County Sheriff ʼs
Department initiated this TRIAD
program in Knox County. Below
are programs that are or will be
available at “no charge” to the
Senior Citizens of Knox County:
•Home Security Checks
•Emergency Phone Stickers
•Newsletter Information
• C a l l O u t / H o m e Vi s i t
Programs
•Surveys – Senior Concerns
•Referral Card – Medical Info
Card
•Senior Talks – Fraud & Scam
/ Personal Safety Tips
•55 Alive – An AARP
Defensive Driving Program
•Citizen Academy – Crime
Prevention / Safety Seminar
•RUOK – Safety Phone call for
Seniors
For more information, contact the Knox County Sheriffʼs
Department (309-345-3733) or
Knox County Police Department
(309-343-9151) or your local
AARP representative.
Please try to attend all of
TRIADʼs cookouts at many of
Oak Runʼs functions. The food is
wonderful and reasonably priced,
and the proceeds go toward making these programs available
for the senior citizens of Knox
County.
Two of TRIADʼs senior citizen programs are identified and
explained below for better understanding and utilization of the services. Application forms to sign
up your loved one for the RUOK
and/or the Call Out and Home
Visit programs are available at the
Knox County Sheriffʼs office.
RUOK
The RUOK (are you okay?)
system was started by the Knox
County Sheriff ʼs Department/
Knox County TRIAD in
December 1998. It is a computerized automatic phone dialing
system for senior citizens 60
years of age or older. The system
is designed to call a senior any
day of the week desired, at a time
specified by the senior. Usually, it
is suggested that the system call in
the morning when a person would
wake up. The system would call
within the hour chosen (example –
call 8:00 a.m. – system would call
between 8-9 a.m.). If the senior
citizen did not answer the RUOK
calls, then the system would
sound/show an alert. At this time,
a printout of the alert is sent to the
Knox County Dispatch center and
a Deputy or Officer is sent to the
location to check on the senior to
see why the phone calls were not
answered.
RUOK is not designed as a
life saving instrument, but would
alert the departments of a possible
problem at the address. The City
of Galesburg Elder Care Program
was invited to join in on the
RUOK system as part of a joint
partnership with Knox County
TRIAD. It is believed that RUOK
can help seniors maintain independence in some cases. RUOK
has helped not only seniors in the
Knox County area, but is in use in
several other areas in the United
States.
There is no cost to senior citizens using the RUOK system.
There are rules and regulations
on who is considered eligible for
RUOK. Anyone interested can
call 309-343-9151 for more information.
CALL OUT & HOME
VISIT PROGRAM
The Call Out & Home Visit
Program was started by the Knox
County Sheriff ʼs Department
when TRIAD was created in
Knox County. The program is
intended for seniors 60 years of
age or older. The procedure is as
follows: Once a week (MondayFriday) a check or call is made
to the senior citizenʼs house.
The senior is allowed to pick the
day of the week and the option
of morning or afternoon for the
call or check. The call and check
rotates from week to week (call
one week – check the next week).
If no contact is made, the officer will call the emergency phone
numbers on the member application form. Only if all options
have been explored, would the
officer need to enter the house to
check the well being of the senior
citizen. Please note: it is very
important to notify the Sheriffʼs
Department if the senior is going
to be away from the home on the
designated call/check day.
This program is not intended
to be a life saving instrument, but
could suggest a problem at the
address. The Call Out & Home
Visit Program is also believed to
help seniors maintain independence in some cases. For more
information, and rules and regulations on eligibility for this program, please call 309-345-3733.

SLAT Committee Hosted Card Bingo Night
Card Bingo Winners
On Thursday night, March
17th, the SLAT Committee hosted
Oak Runʼs St Patrickʼs Day Card
Bingo event, which was held at
Brentwood Lounge at 7:00 p.m.
You didnʼt have to be Irish to
be a winner that night, although it
did help some!
We had an excellent turn out,
30 people shared in that nightʼs
festivities. Snacks were provided
by SLAT and many participants
brought dishes to pass as munchies. The beverage of choice was
provided by each individual.
After a long winter, this night
was a great way to develop and
rekindle camaraderie among fellow residents.
The nightʼs big winners were
( left to right) Don Timmerman,
Irene Zehr, Sherry Foster, Sally
Nelson, Jo Haskell, Margie Glow,
Doreen Frey, and Joyce Graves.
If they couldnʼt win, there
were some that just wanted their
pictures taken! Losers Table (left

Labor Day
Boat Tie-off
SAVE THE DATE!
The Spoon Lake Activity Team
(SLAT) will again host the Labor
Day Boat Tie-off. This is a very
popular event. We had around
200 boats tie-off last year, and
are hoping for another beautiful
sunny day and invite everyone to
participate!
The event will be held on
Sunday, September 4th, and as
always, the location will be in
Party Cove. The band will play
on the dock from 2-6 pm. There
will be an aerial photograph taken
at around 2 pm, so plan to arrive
early and tie-off before then!
SLAT merchandise will also
be available dock side, for anyone wanting to do some “end of
summer shopping.” This is always
a popular event, and is free of
charge to all Oak Run Members
and their guests attending via
boat, jet ski, kayak, etc...! Stop by
for a while, or tie-off for the entire
afternoon, and float while listening to great music and enjoying
the company of friends within our
Oak Run Family.
This year, we are asking
that you consider a donation to
off-set costs, to help make this
event a success and to continue
events like this one on the lake.
Donations can be made online on
the SLAT website at www.slatnews.com, or they can be brought
up to the dock by the band, on the
day of this event. Your kind donations will help to promote this,
and other great events, all year
long.
In addition, this year letters will be sent out to various
businesses serving our Oak Run
Community also asking for their
support to help sponsor this event.
Look for more information in
the upcoming August/September
Communicator. See you then!
Wine in Nine
By Linda Kordewick
Spoon Lake Activity Team is
hosting the second annual “Wine
in Nine” event on Sunday, August
14th. This nine hole event is open
to women only, although, we will
be looking for adventurous men
to act as hosts for each of the nine
holes!
Tee off is at 2:00 PM. Each
hole will have a surprise game,
wine sampling, and tasty treats.
After golf, Andrew Keener and
his talented staff will be providing
an array of appetizers, and then
prizes will be distributed.
This year, we are asking that
you reserve and pay for your spot
on the golf course with Brett at the
Pro Shop. The cost of the event,
NOT INCLUDING THE GOLF
FEE, is $25.00. That charge covers wine, appetizers and prizes.
Checks should be made payable
to SLAT and delivered to Larry
Douglass or Tom Kordewick.
Ladies, you donʼt want to miss
out on the fun!!

who made liquor so strong that

Early Morning Exercise Group
by Ruth Love
About 16 or more years ago,
Anna Mae Gorski and Gay Rusnak
were sitting at The Watering Hole
talking when the subject of a
need for an exercise group here at
Oak Run was mentioned. Nancy
Brown was a part-time waitress
there at the time and she joined in
the discussion. Nancy offered to
lead the group and the Oak Run
Early Morning Exercise Group
was formed!
Word soon spread through the
various Oak Run committees and
before long, the morning group
had about 25 members! Exercise
was to run from 8:30 a.m. to 9:30
a.m. at Brentwood, four days a
week (Monday, Wednesday,
Thursday and Friday). Nancy
developed a routine that encompassed yoga moves, aerobics
and some other fitness moves,
which she set to music on tape.
The group even had their own
T-shirts! An evening group was
later started for those folks who
worked during the day, and it
was even attended by some men.
Unfortunately, the evening group
folded after a while.
Nancy became pregnant, and
while she was gone one of the
other “gals” conducted the group
in her absence. After her twin
boys were born and they were big
enough, Nancy would bring them
to exercise group in their stroller
or car seats, and then conduct the
exercise routine. One of the gals
would help take care of either of
the boys if he became “fussy.”
As Nancyʼs family grew, she
was unable to continue to conduct
the exercise group, so they bought
a small TV with a VHS player
in it (remember them?) and they
donated their VHS exercise tapes
so that the group could do exercises to them.
As the years passed, people
moved, lost interest in the group,
or joined the YMCA, and the
numbers dwindled significantly. The group acquired a larger
television and many of the old
VHS tapes were then converted
to DVDs.
Members of the group aged and
the exercises became somewhat
less strenuous, but still enough to
get the heart pumping. For some
reason, the subject of conversation
always centered on food! As each
member celebrated a birthday, one
of the gals would bake something
and weʼd find an excuse to have a
little “party” after exercise to celebrate. After all, weʼd just burned
all those calories so we needed to
add some back, so we could burn
some more, right? We also got
together during the holiday season
for a Christmas luncheon.
Due to lack of participation,
the group (I use that term loosely
as there is only two of the original
group left) now only meets three
times a week. We have a couple of
other members who attend intermittently, and one who is a “brand
new” resident of Oak Run, who
we welcomed with open arms.
Iʼve thought many times of
giving up the group, and then I
look at Anna Mae Gorski who at
90 years young just keeps going
and going, just like the Energizer
Bunny, and I realize that I want to
be just like her when Iʼm 90!
Women and men too, come
join us. Exercise is not only good
for the body but also for the soul!
Members of the original early morning exercise group in action.

pictures.
