IN MEMORY OF NICHOLAS AND HELEN NIKA PARAS (Paraskevopoulos)
JOHN AND GEORGE PARAS (Paraskevopoulos)
The original members of the Paras
Family Nicholas, George and John
arrived in Tampa, Florida from
Skopelos, Greece in the first decade
of the 1900’s. Helen (Eleni) Nika,
came from Argos, Greece. Nicholas
married Helen in 1915. They were
the first Greek wedding in Tampa.
The ceremony was held in St.
Andrews Episcopal Church by the
Greek Orthodox priest from Tarpon
Springs They originally lived on
Ashley Street and then purchased a
home at 111 N. MacDill Avenue.
They lived there until their deaths.
Nicholas upon his arrival in the
United States originally started a
custom shoe making shop in
downtown Tampa and subsequently had several businesses including a shoe
repair shop, a sundry business and a restaurant. He was a business man his entire
life. Helen was a housewife and volunteered in the early Tampa Hellenic
community. She was one of the founders of the “Soldiers of Christ” which was
an Early Hellenic philanthropic organization which later became the Philoptohos.
She also was one of the first members of Saint John’s Greek Orthodox Church of
Tampa. The lives of these early immigrants illustrate the promise of the
American Dream and symbolize the hard work ethic of our immigrant forbearers
who labored to achieve that dream with the principles of Hellenism and
Orthodoxy rooted deep in their hearts.

A Brief

Baklava
Ingredients
1 (16 ounce) package phyllo dough
1 pound chopped nuts
1 cup butter
1 teaspoon ground cinnamon
1 cup water
1 cup white sugar
1 teaspoon vanilla extract
1/2 cup honey
Directions:
1. Preheat oven to 350 degrees F (175 degrees
C). Butter the bottoms and sides of a 9x13
inch pan.
2. Chop nuts and toss with cinnamon. Set aside.
Unroll phyllo dough. Cut whole stack in half
to fit pan. Cover phyllo dough with a dampened cloth to keep from drying out as you
work. Place two sheets of dough in pan, butter
thoroughly. Repeat until you have 8 sheets
layered. Sprinkle 2~3 tablespoons nut mixture
on top. Top with two sheets of dough, butter,
nuts, layering as you go. The top layer should
be about 6~8 sheets deep.
3. Using a sharp knife cut into diamond or
square shapes all the way to the bottom of the
pan. You may cut into 4 long rows to make
diagonal cuts. Bake for about 50 minutes until
baklava is golden and crisp. 4. Make sauce while baklava is baking. Boil sugar
and water until sugar is melted. Add vanilla
and honey. Simmer for about 20 minutes.
5. Remove baklava from oven and immediately
spoon sauce over it. Let cool. Serve in cupcake
papers. This freezes well. Leave it uncovered as
it gets soggy if it is wrapped up.
Spanakopita (Greek Spinach Pie)
Ingredients
3 tablespoons olive oil
1 large onion, chopped
1 bunch green onions, chopped
2 cloves garlic, minced
2 pounds spinach
1/2 cup chopped fresh parsley
2 eggs, lightly beaten
1/2 cup ricotta cheese
1 cup crumbled feta cheese
8 sheets phyllo dough
1/4 cup olive oil
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
Lightly oil a 9x9 square baking pan.
2. Heat 3 tablespoons olive oil in a large skillet over
medium heat. Saute onion, green onions and garlic,
until soft and slightly browned. Stir in spinach and
parley, and continue to saute until spinach is limp,
about two minutes. Remove from heat and set aside
to cool.
3. In a medium bowl, mix together eggs, ricotta, and
feta. Stir in spinach mixture. Lay 1 sheet of phyllo
dough in prepared baking pan, and brush lightly
with olive oil. Lay another sheet of phyllo dough
on top, brush with olive oil, and repeat process
with two more sheets of phyllo. The sheets will
overlap the pan. Spread spinach and cheese mixture
into pan and fold overhanging dough over filling.
Brush with oil, then layer remaining 4 sheets of
phyllo dough, brushing each with oil. Tuck overhanging dough into pan to seal filling.
4. Bake in preheated oven for 30 to 40 minutes, until
golden brown. Cut into squares and serve hot.

Kourambiedes (Wedding Cookies)
Ingredients
1 1b sweet cream butter
1/2 cup powdered sugar
1 egg yolk
1 teaspoon vanilla extract
6 tablespoons toasted almonds, chopped
4 cups sifted flour
3 cups sifted confectioners sugar
Directions:
1. Preheat oven to 350 degrees
2. Beat butter and sugar until creamy, about 15
minutes. Add egg yolk, vanilla, and almonds,
beating until well blended. Remove from
beater and gradually add sifted flour to make
soft dough.
3. Pinch off pieces of dough and shape carefully
into crescent or round designs. Place on an
ungreased cookie sheet 1 inch apart and bake
for 20 minutes or until very lightly browned.
4. Allow to cool slightly before removing from
baking sheet. Carefully place on flat surface
which has been sprinkled with confectioners
sugar. Sprinkle confectioners sugar over cookies and cool. Makes 5 dozen.
Greek Style Roast Lamb
Ingredients
5 lb leg of lamb
2 cloves minced garlic
Salt & Pepper
Juice of 2 lemons
Oregano
1 cup water
4 tablespoons butter
Directions:
1. Preheat oven to 450 degrees F.
2. Cut incision in meat and fill with
garlic mixed with salt and pepper.
Sprinkle with more salt and pepper
and oregano.
3. Place in roasting pan with water,
and top with melted butter. 4. Bake in hot oven for 30 minutes or
until browned. Lower heat to 350
degrees F and bake until done,
about 40 minutes or until internal
temperature reaches at least 145
degrees F.

Greece

The first Olympic games took place in
776 B.C. The first Olympic champion
was a Greek cook named Coroebus, who
won the “spirit race.”

The Ancient Athenians were the first
humans to develop democracy.

Feta, which is made from goat’s milk, is
Greece’s national cheese. Its production
dates back to the Homeric age.


Thousands of English words come from
the Greek language, such as: “academy,”
“apology,” “marathon,” “siren,” and
“alphabet.”
The yo-yo is the second oldest toy in the
world (only the doll is older) and originated 3000 years ago in ancient Greece.

Greek has been spoken for more than
3000 years, making it one of the oldest
languages in Europe.

No point in Greece is more than 85 miles
from water. Greece has over 9000 miles of
coastline, the 10th longest in the world.

The British poet Lord Byron (1788-1824)
was so enamored with the Greeks that he
traveled there to fight against the Turks
in the War of Independence. He died of a
fever at the age of 36, but Greeks consider
him a national hero.

The Greek flag includes 9 blue and white
stripes, which some scholars say stands
for the nine syllables in Greece’s motto:
“Elefteria I Thanatos,” which means
“Freedom or Death.” Blue represents
Greece’s sea and sky, while white represents Greece’s struggle for freedom. In the
upper left hand corner is the Greek Orthodox cross.

Greece has more archaeological museums
than any other country in the world.

Greece’s currency, the Drachma, was
2650 years old, making it Europe’s oldest
currency. It was replaced by the Euro in
2002.

Winston Churchill, Prime Minister of the
United Kingdom, was so inspired by the
resistance of the Greeks in their fight
against German and Italian occupation
in WWII that he said: “Hence, we will not
say that Greeks fight like heroes, but that
heroes fight like Greeks!”

The popular sports label “Nike “ derived its
name from the legend of Pheidippides,
who dashed to Athens in a 26 mile run
from Marathon to proclaim the message
“Nike, Nike!” which means “victory!” This
is also the origination of the 26 mile
marathon race.

Sugared Yams - Usually served for holidays
Par boil four or six sweet potatoes in salted water and
one tablespoon Crisco, till tender.
Drain, peel, cut to size or slice.
Boil 3/4 cup sugar, peel of one orange, 1/2 cup water about three minutes,
then add one teaspoon vanilla, one stick cinnamon.
Arrange potatoes in buttered pan, sliced orange on top, pour over syrup,
keep basting while baking about 1/2 to 3/4 hours at 350 degrees.
Can be frozen and heated when needed.

Koulourakia (Butter Cookies)
Ingredients:
1 cup butter
1/2 cup pure vegetable shortening**
2 cups sugar
4 eggs
1 tablespoon vanilla
4 teaspoons baking powder
1/2 teaspoon baking soda
6 cups sifted flour
Sesame seeds
Directions:
1. Preheat oven to 350 degrees F. 2. With electric beater, cream butter, shortening,
and sugar until very light. Add eggs, one at a
time, blending well after each addition.. Add
vanilla, baking powder, baking soda and 3 cups
flour. Continue beating until thoroughly blended. Remove bowl from mixer and stir in remaining flour until it forms a soft dough. 3.

Knead dough for a few minutes. Pinch off small
pieces of dough and roll into pencil~like strands
about 5 inches long and half an inch thick.
Form each strand into a circle or fold over and
twist into a rope. Place one inch apart on greased cookie sheets
and brush with milk or beaten egg. Sprinkle
with sesame seeds.
Bake at 350 degrees F for 20 minutes or until
lightly browned. Makes about 8 dozen.
**Vegetable shortening can be replaced with 1/4 cup vegetable oil.
