Noir, Muscat and Pinot Meunier. They barrel-age it

is a naturally amber colored brandy with a nice
nose and clean finish and a very rich, full taste. It is
similar to a good regional brandy-like Cognac or
Armagnac. Use as any other Brandy in a Sidecar,
French 75 or Brandy Sour.

Their most popular grappa, the easiest to like,
and perfect for someone who has never had
grappa before. Grappa Moscato is made from the

GRAPPA / POMACE BRANDIES
Clear Creek, Cavatappi Grappa Nebbiolo
Clear Creek, Marc de Gewürztraminer
Oregon
Oregon
Because this pomace is fermented on the skins
and distilled after pressing it results in a very
small quantity of grappa. They bottle this at a
higher proof than any other grappa. Very much
like a traditional Northern Italian grappa.
This is the classic Alsatian marc. In the
progression from floral to “earthy” the marc is
a fairly big jump. The Gewürz nose is good but
a little woodier than the Muscat. There is a little
more jolt in the initial taste, but the finish is clean,
not hot. Like all our marc or grappa this one is
made in the most traditional style–pure pomace
from the winemaker’s press.

Clear Creek, Grappa Pinot Gris
Oregon
Made from the pomace of Pinot Grigio grapes
directly after press, before inoculation. They
inoculate the fresh pomace at the distillery.
This grappa is difficult to make because the
winemakers there press their Pinot Grigio pretty
hard. The pomace is so dry that it is difficult to
ferment, and when it does ferment the distillation
process produces very little grappa. This grappa
is intense, earthy, and not for the faint of heart.

Torre di Luna, Grappa
Italy
(Vias Imports)
The Torre di Luna Winery uses the famed
Distilleria Bertagnolli to help with the production
of their grappa.
Founded in 1870, the Distilleria Bertagnolli has
carried on the tradition of high-quality spirits
for four generations. Once the supplier to
imperial courts, Bertagnolli continues to hone
its techniques in order to craft smooth, aromatic
grappas.

The scent is fragrant, intense, remarkably
frank. The taste is pleasant, light and especially

Clear Creek, Grappa Pinot Noir
Oregon
Ordinarily it is very hard to make decent grappa
from red wine grapes that are fermented on
the skins. When the winemaker presses the
completely fermented must, often there isn’t
much left in the pomace to distill. So they need
to search carefully for very good Pinot Noir
fermentations with a winemaker who has a light
touch at the press. This grappa is made from
pomace from Lemelson Winery. The result is a
very clean grappa with good Pinot Noir character,
and a very clean finish. TLAGTLNVC12/750

Made much as it has been made in Europe
for centuries, but the result is smoother, more
aromatic, and more sophisticated than any
European Blue Plum Brandy. Makes a great
sorbet. Kosher.
Clear Creek, Pot Distilled Apple Brandy, 2 Year
Oregon
This is the same as the eau de vie de pomme,
but aged only two years in Limousin oak. Long
fermentation of cider and no caramel or sugar
added. This is the one you use to make fruitcake,

Clear Creek, Framboise (Raspberry)
Oregon
Very aromatic and very difficult to make. It takes
up to 80 pounds of raspberries to make one small
bottle of Framboise. Fermentation of fresh whole
raspberries is very tricky and some years they
don’t get it right. So, some years there isn’t any
at all.

Clear Creek, Eau de Vie de Pomme, 8 Year
& Apple in a Bottle
Oregon
Eau de Vie de Pomme: Following the customs
of the Calvados makers of Normandy, the high
proof apple spirit is aged in old Cognac barrels,
made of Limousin oak, for at least eight years.
The result is a beautiful amber brandy, with a
remarkable amount of apple in the nose, but with
the sophistication and complexity gained from all
those years in oak.

Clear Creek, Douglas Fir Eau de Vie
Oregon
This eau de vie is made from an infusion of the
springtime buds of Douglas Fir picked by hand
into clear brandy which is then re-distilled and reinfused with more buds. Finally it is strained and
bottled. The green color and complex fresh flavor
are from the Douglas Fir buds. No artificial colors
or flavors are added.

Clear Creek, Mirabelle Plum Eau de Vie
Clear Creek, Kirschwasser (Cherry Brandy)
Oregon
Oregon
Clear Creek looked for 20 years and finally found
the fruit at King Estate near Eugene, Oregon –
wonderful, organically grown plums that make
a great eau de vie. Much more aromatic than its
Blue Plum counterpart.
Considered the top domestically produced cherry
brandy. Fresh Oregon and Washington sweet
cherries are crushed, fermented, and distilled into
clear, powerful Kirschwasser (Cherry Schnapps)
in the traditional German fashion. The flavor and
great vanilla/almond "nose" come only from the
cherries, as does the alcohol. Kosher.

Pear in a Bottle (also available): The pear actually
grows inside of the bottle in their orchards, and
then filled with their pear eau de vie. This practice
of growing pears in the bottle is traditional in
Alsace where pear brandy has been made for
hundreds of years. Pear-in-the-bottle is highly
labor intensive, requiring weeks of work putting
the bottles on the trees in late May when the small
pear will still fit in the neck of the bottle, tending
them all summer, and picking them in late August.

New York
(Tuthilltown Spirits)
Still the One donates a portion of the sales of
each bottle to the Wounded Warrior Project. Each
bottle of Jarhead Gin is hand-numbered with its
batch and bottle number. It starts with Florida
orange-blossom honey, followed by fermentation,
then distilled in a custom-made copper pot still.
Tuthilltown distiller produced the first legally
distilled and aged spirits in New York since
Prohibition. They have created a new base of near
neutral spirit from both wheat and the Hudson
Valley’s ubiquitous apples. “We’re in the heart of
the American apple industry so it’s natural for us
to turn to apples to create an original New York
gin.” The distinctive subtleties of the apple blend
in the base spirit create a smoother and rounder
gin, more drinkable than the standard grain
neutral spirit base used in other gins.

Clear Creek, Pear Liqueur
Oregon
Because the pear is a relatively simple sweet fruit,
without the tartness of a berry, the Pear Liqueur
is the trickiest liqueur to make. The base distillate
is their pear eau de vie. The taste is surprising
complex, smooth, slightly floral, with a little bit
of acidity, and a pear finish that lingers long after
you set down the glass.

Hum, Hibiscus Liqueur

Pennsylvania
(Craft + Estate)
A natural Calisaya liqueur (like Campari), meaning
made from the Peruvian Calisaya bark with no
dye and only natural sweetening agents. Notes of
incense, light toffee and leather, with a pleasant
dry and delicately lingering quinine and orange
zest bitterness.
Hum has a striking crimson red color from fair
trade hibiscus, a peppery kick from organic
ginger, heady aromatics from cardamom and
the intoxicating fragrance of kaffir lime. This
unparalleled spirit ironically tastes like the
boldest red wine you could ever imagine. Hum
is technically a “liqueur,” however. At a bold 70
proof, Hum was created as a base spirit (like rum,

(Craft & Estate)
Jacky Rudy’s tonic contains raw ingredients
such as lemon grass and orange zest that gives
it superior flavor to other mass-produced or craft
tonics. It is a raw quinine syrup, allowing more
control when creating cocktails, a distinct color
and appearance in the glass. It's light, crisp and
refreshing, with a soft backbone of quinine.

Gonzalez Byass, Noe, Pedro Ximenez, VORS
Spain
(SFWE)

One of the world’s oldest and rarest dessert
wines, Noe has a powerful bouquet with aromas
of concentrated raisins, figs, coffee, and
Christmas spices, finished with a taste of sweet,
plump, cooked fruit.
Jack Rudy, Small Batch Grenadine
South Carolina
(Craft & Estate)
After a long search, we were able to locate a
small family farm in California growing their own
pomegranates and pressing them whole. Using
that bright, complex juice as our base, we’ve
added real cane sugar and orange flower water
to craft a Grenadine like the one our grandparents
might have enjoyed. Again, we produce in small
batches to keep our raw products the freshest
and keep the process controlled. GONPEXNVB6/375

FORTIFIED WINE / OTHER
Beaumalric, Muscat de Beaumes de Venise
France
(Robert Kacher Selections)
The wine is made by arresting the fermentation
process before all of the natural sugars of the
Muscat grapes have been consumed. This is
done by adding a small amount of neutral spirits,
much in the same way a vintage port is made.

Lavail Maury, Rouge
France
(Robert Kacher Selections)
A sweet wine from 100% Grenache Noir,
which complements the entire line and can put
up a good fight against any port wines, as it
offers more subtlety and complexity. This wine
oozes red fruit, and ages well, releasing every
combination of cocoa imaginable. At its best with
desserts containing fruits or chocolate.
