A Dip into L.A.’s Past

Originally founded in 1954 as
a distributor of Beef & Pork
products, we have since
become well-known for the
famous Dolores Chili Brick.
Our all-beef frozen bricks are
sold by major grocery chains
and food distrubutors throughout
the Western United States. The
Chili Brick is also the base for
many restaurant’s chili items. Recently,
Dolores added the Chicken Chili Brick,
which can also be found at major
grocery chains.
Philippe's "French Dipped Sandwhich" is the specialty of the house and consists of either
roast beef, roast pork, leg of lamb, turkey or ham served on a lightly textured, freshly baked
French roll which has been dipped in the natural gravy of the roasts. Swiss, American,
Monterey Jack or Blue cheese may be added. To accompany your sandwhich we offer a
tart, tangy cole slaw, homemade potato and macaroni salads, hard boiled eggs pickled in
beet juice and spices, large Kosher style, sour dill or sweet pickles, black olives and hot
yellow chili peppers.
Philippe’s Etiquette
The way the service works is unique.
There is a long display counter with 10
servers (we call them "Carvers") many of
which have been working at Philippe's
well over 20 years. Each Carver has
everything she needs to prepare your
meal. You get into one of the 10 lines,
and wen you reach your Carver she can
take care of your whole meal; make your
sandwhich or fix your hot dish, serve
salads or soup, give you coffee or a glass
Philippe's has brough the city
together for 95 years, serving
it's famous sanwhich with
camaraderie on the side.
Philippe the Original was
making sandwhiches in
downtown L.A. well before the
boys (our father, grandfathers
and great-grandfathers) ever
headed over to Europe for the
Great War. Even before a
troupe of easterners trudged
west to set up the beginnings
of the movie industry in sunny
Southern California, way back
