We are very excited to be bringing The Top of the Hops Beer Festival to the Mississippi Coast Convention
Center in Biloxi. Mississippi is the only state in the country that limits alcohol by volume 5% and one of only
two that outlaws homebrewing beer. Top of the Hops Beer Festival hopes to help RAISE YOUR PINTS realize
their mission to lift the ban on high gravity beer and make homebrewing legal.

Welcome to the Inaugural Top of the Hops Beer Festival - Biloxi presented by Lazy Magnolia Brewing
Company. With over 150 beers available for you to sample, there is no way to try them all, so here
are some tips to make the most of your festival experience:
MAKE A GAME PLAN
Pick a theme to organize your tasting choice.
• Pick one style of beer and compare samples from various breweries. • Taste a number of bitter beers: Pale Ales, German Pilsners, and India Pale Ales.
• Taste a range of sweeter, malty beers: Scottish Ales, German and Czech Dark Beers, Porters and Stouts.
• Taste beers of a certain region such as U.S. Pacific Coast beers, or beers from a certain country like Belgium.
Regardless of your plan, always remember to pace yourself!
HOW TO TASTE BEER
LOOK: Raise the beer in front of you and marvel at its greatness before you drink.
Note the beer’s color, head and consistency. With numerous styles of beer available, it can be easy to get them confused. Here’s a quick look at
some more commonly known styles of beer to bring you into the know:
SMELL: aggressive character, and little to no fruity flavor. Lagers are brewed using bottom-fermenting yeast at lower
temperatures and for longer durations than those typically used to brew ales.
Sniff the beer - note its aroma and bouquet.
TASTE:
Taste is by far the most subjective and important factor when evaluating a beer.
Try a sample and note the beer’s unique flavor.
TIPS AND TRICKS
• Start your day by sampling beers with a lighter flavor before moving on to heavier beers.
• Rinse your glass between samples. Water and rinse buckets will be at each table.
• Take notes and grade the beers so you can remember which beers you like and dislike.
• Drink plenty of water.
• Take some time to eat. There are numerous vendors on-site serving all types of food.
• Know your limits and please drink responsibly.
• Take a taxi if needed.

ALE BEERS showed up in England and the Netherlands around the 15th century. They have a sweet, full
bodied and sometimes fruity taste. Ales are brewed from malted barley using a top-fermenting brewers’ yeast and
are typically fermented at temperatures between 60 and 75°F.
VARIETIES OF ALES:
Brown Ale
Beer with a dark amber or brown color with subtle caramel and chocolate flavors.
Scotch Ales
A strong dark malty ale with toffee notes.
India Pale Ales (IPA) Amber to copper in color with hoppy, bitter and sometimes malty flavor.
Porter
A dark brown beer with a toasty chocolate flavor.
Stout
Dark, almost black, beer which range from dry to sweet with a toffee espresso profile.
Pale Ale
A classic ale that is light in color, fruity and usually bitter with a hint of malt.
LAGER BEERS are a family of beers originating from central Europe that are smooth tasting, with less

WHEAT BEERS are brewed with a large portion of wheat and typically a significant amount of malted
barley, which produces a fresh taste.

Weissbeir
Witbier
American Wheat
Wheat beer in its traditional unfiltered form. Usually has sediment with a citrus, nutmeg,
and clove characteristics.
A barley/wheat, top-fermented beer brewed mainly in Belgium.
The taste is only slightly hoppish and is very refreshing in summer.
Invented by specialty brewers in the United States within the last 25-30 years.
These beers display the creativity and diversity of America’s craft brewers.
Usually golden to light amber in color with subdued malt character but more assertive
hop character than their European counterparts.

BEER FACT: The type of water in a beer can strongly affect its taste. Superior ales are

of Capone’s Italian Ristorante
Join Chef Danie Rodriguez from Capone’s Italian Ristorante as she demonstrates how
to prepare a recipe called “Pollo Alla Birra,” an old world Italian recipe for cooking
chicken in beer. She will also perform a pasta demonstration showing how to make
fresh pasta that is not only good, but good for you as well. Chef Danie started her
first restaurant, Pappa Roni’s, with just one thousand dollars and a dream to own the
best Italian restaurant in the area. Chef Danie has a passion for fresh local seasonal
ingredients and has always made everything in house. In 2009, Chef Danie opened her
second restaurant in Ocean Springs called Capone’s Italian Ristorante. She remains
passionate about educating guests about the benefits of eating fresh whole foods and
enjoying one of the great gifts of life, which is a great meal with family and friends.

with Chef Gerald Quick of the Culinary Learning Center
Join Chef Gerald Quick from the Culinary Learning Center as he demonstrates how to
prepare caramelized pork belly with Samuel Adams craft beer glaze. Chef Gerald Quick
found his passion for cooking on the counter of his Grandmother’s kitchen. With fond
memory he can recall blending up Whiskey Sours for her while she completed the evening
meal. Currently, Chef Quick is a culinary instructor for the Culinary Learning Center
teaching displaced and under-privileged workers the culinary arts. Good food coupled
with a memorable social and sensual experience has always been Chef Quick’s focus.

Mississippi is the only state in the country that limits alcohol by weight (ABW) for
beer to only 5% and one of only two that outlaws homebrewing beer. Raise Your
Pints is a grassroots, non-profit organization whose mission is to help bring the
highest quality beers in the world to Mississippi. Our mission: to promote and enhance
craft beer culture in Mississippi by working to lift the ban on high gravity beer; to
clarify the status of homebrewing as a legal, fun, and wholesome hobby; to promote
Mississippi’s beer, brewpub, and brewing industries and small businesses; and to
work to broaden the appreciation of craft beer for all Mississippians.

Zohn Tennyson, Lazy Magnolia Brewer, will enlighten all who attend to the process that is
Craft Beer Brewing. He will discuss steps in brewing, ingredient and flavor components, as
well as what daily life is like for a professional brewer. Come on in, and learn a little bit from
a man who’s been brewing Lazy Magnolia beers for years! We’d be pleased to have you.

Amber (Vienna Lager) A Munich style lager brewed with crystal malt and Perle hops. It has a smooth, malty, slightly caramel flavor

Point 2012 Black Ale (Brown Ale) 2012 Black Ale is inspired by traditional German “schwarzbier,” or black beer. German-style
schwarzbiers typically are lagers, but we saw this beer is an opportunity to be more creative. We brewed our interpretation of black beer as
an ale, which means more hops as well as fruity notes that come from using an ale yeast. The use of roasted malts adds a slightly burnt
character to the beer.

Point St. Benedict’s Winter Ale (English Winter Ale) St. Benedict of Nursia lived in the late 5th to early 6th centuries. Legend
has it while living in solitude, he was befriended by a raven that later saved his life. He is most remembered for writing the Rule of St.
Benedict that, among other virtues, teaches humility. Inspired by this Rule we humbly offer St. Benedict’s Winter Ale, a hand-crafted ale
using generous amounts of dark roasted malts and the finest noble hops for a robust warming flavor.

sugar. The Alchemy bittering hops provide soft bitterness. Simcoe, a newly developed hop variety, adds unique hop flavor and aroma.

*Pitch Black IPA (Black IPA) Pitch Black IPA is a Pacific Northwest twisted tribute to an IPA style of beer. It is almost a traditional
IPA but it is instead brewed to the emerging style of Cascadian Dark. We add a modest amount of a specially made debittered black malt
to give this IPA a very dark color but without the characteristic dark malt flavors.

Granny Smith (Cider) Made from only Granny Smith apples, this one’s a lot more tart and quite a bit tangier than your average

Dos Perros Ale (American Brown Ale) Made with German Munich malt, English Pale malt, and Chocolate malt, and hopped
with Perle and Saaz hops. To lighten the body, as many Mexican brewers do, we add a small portion of flaked maize. The result is a
wonderfully bready malt aroma, balanced with some maize sweetness and a noble hop finish.

Pale Ale (American Pale Ale) Yazoo Pale Ale bursts with spicy, citrusy hop aroma and flavor, coming from the newly discovered
Amarillo hop. The wonderful hop aroma is balanced nicely with a toasty malt body, ending with a cleansing hop finish. Made with
English Pale, Munich, Vienna, and Crystal malts, and generously hopped with Amarillo, Perle, and Cascade hops. Fermented with our
English ale yeast.

Hefeweizen (Bavarian Hefeweizen) An authentic example of a Bavarian Hefeweizen. “Hefe” means cloudy or yeasty and “weizen”
means wheat. This beer is made with mostly wheat and uses a true Hefeweizen yeast that gives it a fruity, banana aroma with just a hint
of cloves. The tart finish makes this the perfect summer beer.

Hop Project (IPA) Each consecutive batch of Hop Project is brewed with a different blend of spicy, aromatic hops, never using the
same blend twice. It’s a Hophead’s dream come true!
