Brauerei Locher AG was purchased by the Locher family in 1886 and is the
last remaining brewery in the Appenzell. This independent family-owned
company has been brewing beer for its clientele for five generations
now. Its specialty beers have achieved wide acclaim as have the
company's traditional beers. The beers are made by hand and in
traditional methods with special attention being paid to the quality of
the raw materials. Appenzell beer is available throughout Switzerland,
with the Quöllfrisch and Vollmond brands being particularly
popular.

Zurich style minced meat is made from veal, thinly
sliced and sautéd. The delicious gravy, which goes
particularly well with another Swiss specialty, the Rösti,
is made with onions, white wine, and cream. Whether
or not to add mushrooms or kidneys, is a matter of faith
– at least in Zurich, the hometown of this Swiss national
dish.
