Welcome
I love the four different seasons, partly because I love change. I long for an
entirely new wardrobe - after all, in winter you need to layer your clothes, so you
also need to buy more... at least, that’s my motto as a true fashion addict - and
naturally my interior also gets a new look too.
We want to look fashionable and to welcome our guests into a characterful home.
A little light jazz music in the background and a few candles set the mood. Candles
are another of my addictions; there are almost always candles lit at my home.
Cheerful little tartlets and cake served on attractive tea plates, biscuits in a fun biscuit
tin, and tea sipped from delightful teacups. Products for the kitchen and the perfectlylaid table are the latest trends. We enjoy baking and cooking more and more these days,
as witnessed by the cupcake and cake-pop hype and the success of television programs
devoted to cooking, such as those of Jamie Oliver and Nigella Lawson. For some
delicious recipes from my favourite food writer Madri Gerber, take a look at page 38.
The combination of food & fashion is showcased in this autumn’s collection. Warm
colours such as caramel and mocha combined with a tuft of cupcake pink, apple
red, and raisin brown give ‘Miss Applepie’ a homey feel. Cushions with mini
houndstooth pattern, warm fur rugs, sturdy wooden lanterns, and wooden
candle stands. And then there’s the must-haves for the kitchen, ranging from
handy storage tins in stylish powder pink to cookbook stands in two sizes: the
large one for cookery books and the small one for your own magazine cuttings and
Grandma’s hand-written recipes. Other knick-knacks include the cheerful blackboards
(the XXL teapot version is fantastic!) and the serving trays with our well-known ‘dictionary
definition texts’. And I almost forgot to mention the addition to our Riverdale crockery: the
porcelain cake stand.
In short, make sure you have all the ingredients ready to make apple pie, buy some balls
of wool in cosy colours (see the styling tip on page 19), sit down on the sofa and kick off
your high heels, you are the real Miss Applepie!

For true candle lovers, the

arranging candles of different

you should always be careful and

unattended).
One of the nicest places in the
home to display accessories
is the windowsill; not only
because a windowsill has
a beginning and an end, to
‘frame’ the still lifes you create
there, but also due to the
natural light, which changes
along with the seasons.
Tip: Under a bell jar, even the
simplest items such as balls of
wool become worthy of a place
in a museum. Buy them in the
season’s trendy colours and
create a continually changing
mini-museum.
TIP: Lay a few cushions on the
windowsill to create a lovely
place to relax and enjoy a cup
of tea, a slice of tasty apple
pie, and a romantic book.
Alternatively you can simply sit,
look outside and daydream!

Patrick and Sophie de Kleijn (39), the owners of
Riverdale, live together with their children Emilie (10),
Frédérique (9), Maurits (6), Lucas (4), and Philine (2) in
a large 1930s house in Wassenaar (The Netherlands).
Despite the fact that having five children and their own
business makes things pretty hectic sometimes, the
house has an atmosphere of relaxation, and everyone
has his or her favourite spot. The house recently
underwent major renovation work, but the family’s
favourite place to spend time together remains the
large kitchen-diner.

Preheat the oven to
180 degrees Celsius.
The Favourite
Apple pie of
famILY de kleijn
Crust:
3 cups plain flour
1/3 cup almond flour
2/3 cup cold butter
3 tablespoons superfine sugar
2 – 3 tablespoons water
¼ teaspoon salt
Baking weights such as baking
beans or rice (for blind baking).
Mix the flour, sugar, salt and
butter in a kitchen machine until
it resembles crumbs. Pour in one
tablespoon of water to make the
dough form. Knead it lightly by
hand and then wrap it in kitchen
foil. Place it in the fridge for 30
minutes.
Roll out the dough on a lightly

beans or uncooked rice. Bake for
10 minutes and then take out the
beans or rice and return to the
oven for a further 10 minutes till
golden brown.
Filling:
1 cup plain flour
1 teaspoon baking powder
3 eggs
4 tablespoons butter
1 cup sugar
¼ teaspoon salt
½ cup milk
3 teaspoon vanilla essence
1 cup apple sauce
4 tablespoons roast almonds,
chopped
6 granny smith apples; cored,
peeled and halved
peel of one mandarin or orange
1 cinnamon stick
3 tablespoons sugar
form. Strain and slice the apples
thinly. Set aside.
Mix together the 4 tablespoons
of butter, 1 cup sugar and ¼
teaspoon salt. Add the vanilla
essence. Slowly add the eggs one
by one. Sift the cup of flour and
baking powder into the mixture.
Add the milk and mix. It is a
runny batter. Lastly you add the
applesauce, chopped almonds and
vanilla essence into the batter and
mix carefully using a spatula.
Pour half of the batter into the
baked crust. Carefully place a layer
of the sliced cooked apples into
the batter in the pan. Now pour
in the remainder of the batter and
top again with the remaining sliced
baked apples.
Bake in the preheated oven for 45
minutes to an hour until the dough
is set. Stick a toothpick in the
center of the cake and check if it is
cooked.
While the cake is baking,
prepare the sweet glaze sauce:
1 cup sugar
1 cup cream
Pour the sugar and cream into
a saucepan and heat. Once
the apple pie is baked, pour the
mixture over the hot apple pie. You
can also opt to serve the sweet
glaze separately.
This is total comfort food…
Place the halved apples, peel of
mandarin, cinnamon stick & 3
tablespoons sugar in a saucepan
and cook slowly until the apples
become soft but still hold there

the whistle of the kettle announces that the water is boiling. Now, where is that
cute little teapot? Dear friends and relatives will be arriving in ten minutes. The
cushions on the sofa have been plumped up, and the old record player has been
brought down from the attic and is now playing tunes from our grandparents’
era. There’s a delicious smell coming from the kitchen. Just five more minutes and
the home-made apple pie will be ready. Time to take off your slippers and put on
your fabulous high heels, you are the real Miss Applepie!

1 teaspoon mustard powder
1,2 liter water
250 ml milk
250 ml cream
salt & pepper to season
3 scallops, halved
30 ml sour cream
truffle oil
Butternut Soup
(serves 6)
‘Butternut Soup represents some
of my most comforting memories.
It reminds me of lunch at my
parents’ house often enjoyed
during the autumn season.
Everything about butternut soup
is soothing… the lovely deep
orangey color reminds me of the
autumn leaves and the spices
are warm and comforting. I love
to make this soup a bit thicker
in substance so I can use a nice
crusty bread to scoop the last
bits of soup out of my bowl. That
warms me up on the inside and
puts a smile on my face.
With this soup, there are never
leftovers. You just want to keep
going until you see the bottom of
the pot.’
1,4 kg butternut, skin removed
and chopped into chunks
2 tablespoons olive oil
2 large onions, chopped
2 chicken stock cubes, broken
up into pieces
1½ teaspoon curry powder
Fry the chopped onion, chicken
stock cubes, curry powder and
mustard powder in the olive oil.
Be careful not to burn the onion.
You just want to fry it until it is soft
and light in color and the aroma of
the curry and mustard fills the air.
Add the water, milk and chopped
butternut. Bring to the boil and then
turn down the heat. Keep it on low
heat until the butternut is soft.
Use a stick blender to blend the
soup. To prevent spatter when
blending, I move the lid of the pan
slightly to the side so I can use my
stick blender to blend and move
around in the soup. Once the soup
is smoothly blended, season with
salt and pepper to taste.
Stir in the cream.
few drops of truffle oil around the
scallop and top with some ground
pepper. The few drops of truffle oil
just add another flavor to the soup
that brings it all together… Autumn
in a bowl!
If you make the soup 2 to 3 days
prior to serving, don’t add the milk
or cream. Add the milk and cream
only when you heat the soup prior
to serving.
Starter
For me it is important that the
soup is a bit thicker in substance.
Depending on how you want the
texture of your soup, limit the use of
cream and milk.
Just before serving the soup, you
need to sear the scallops. Instead
of putting oil in the hot pan, I rub
some oil and salt on the scallops.
Sear it in a hot pan for about 30
seconds before turning it over on
the other side. Sear for another 30
seconds.
Once the scallops are done, place
one scallop in each separate
serving of soup as well as 1
teaspoon of sour cream. Drizzle a

Roast Pork Belly
(serves 6)
‘Pork is not necessary the first
meat you think of offering to
your guests or even to serve to
your family; not to mention pork
belly. Please don’t be under the
impression that the meat is fatty.
This is not the case. Of course
there is a layer of fat under the
skin that gets beautifully crackled
if roasted according to this recipe.
When you buy the meat from
your butcher, ask them to score
only the skin and be careful not to
score through to the meat. I order
my pork belly deboned.
I serve the roast pork belly
with simple side dishes not to
overpower the meat but rather
compliment it. Be sure to add
something sweet to the meal!’
1,6 kg pork belly with skin,
scored & deboned
3 tablespoons of olive oil
lemon juice and zest of 2
lemons
5 springs of fresh rosemary
5 springs of fresh thyme
16 to 18 fresh leaves of sage
4 garlic cloves
1 red chili, deseeded
2-3 onions, sliced in 1 cm thick
rounds
2-3 apples, sliced in 1 cm thick
rounds
1 cup of white wine
Place the onion slices in the bottom
of an ovenproof dish. Top it with the
apple slices and 6 to 8 leaves of
fresh sage.
Proceed to make the meat rub
using a stick blender. Place all the
rosemary, thyme, remaining sage,
garlic cloves, red chili, lemon zest
and lemon juice in the hand blender
and blend till it represents a coarse
mix. Be careful not to over blend
since you want a grainy rub. Once
you are happy with the mix, add the
olive oil and mix well.
It is very important to keep the skin
dry. Only rub the mix on the meat
and not on the skin. Place the meat
in the ovenproof dish on top of the
onion, apple and sage towers with
the dry skin side facing upwards.
Cover with foil and marinate for 4
hours in the fridge. If you wish, you
can keep some of the meat rub
separately to serve together with
the meal.
Preheat the oven to 225 degrees
Celsius.
Take the meat out of the fridge.
Rub the skin with coarse sea salt
and a small dash of olive oil. Pour
½ cup of wine around the meat in
the ovenproof dish.
Place the meat uncovered in
the oven for 45 minutes at 225
degrees Celsius. The skin will start
to form little bubbles and this is
what you want to ensure good
crackling.
Turn the oven to 150 degrees
Celsius and leave the pork to slowly
roast for 5 to 6 hours. Do keep a
watchful eye on your roast. If you
think the skin is becoming too dark
and crispy, you may cover it with
foil. Throughout the 5 to 6 hours,
you can keep basting the meat side
using a spoon to scoop the wine
over the meat.
Roasted Vegetables
(serves 6)
2 large orange carrots, peeled
and cut in rounds
2 large yellow carrots, peeled
and cut in rounds
2 large purple carrots, peeled
and cut in rounds
2 parsnips, peeled and cut in
rounds
12 broccoli sprouts
olive oil
3 springs of fresh thyme
I love roasted vegetables… We
enjoy it at home often. It is always
satisfying and looks lovely with
little effort. You can use whatever
vegetables you have in the house.
Keep in mind that root vegetables
take longer to roast and should be
in the oven first. When I roast meat,
I normally add my vegetables in a
separate tray, or just add it to the
meat in the meat tray for the last
2 hours. Again, root vegetables
take longer to roast and therefore
I suggest you add the vegetables
the last two hours of the meat
roasting time. Make sure that you
spread some of the olive oil on all
the carrots and parsnips. Stir the
carrots every half hour. If you want
a sweet taste, you can add some
honey for the last 30 minutes. This
will caramelize the carrots and
parsnips, which is always a lovely
combination with the pork belly.
Only add the broccoli for the last
30 minutes to the root vegetables
with some olive oil and salt.
In the meanwhile you can prepare
the roast veggies.
Love to cook
this slowly to the hot milk while you
continue to stir. Remove from the
heat once it reaches boiling point.
Remove the vanilla pod. Add the
hot mixture to the condensed milk
and whisk until well blended. Once
well blended, fold in the stiff egg
whites using a metal spoon. Pour
into a dish with a fitted lid that can
hold 2 liter and place in the freezer
till it’s frozen.

(This makes about 2 liter of ice
cream)

It is easy to make and you don’t
need an ice cream maker. I love
this!
I remember her making it, followed
by the anticipation for it to
freeze…’
3 cups of milk
3 tablespoons coffee creamer
3 eggs; separated and egg
whites are beaten stiff
½ cup sugar
1 can condensed milk
¼ teaspoon salt
1 vanilla pod, cut lengthwise
Heat the milk in a saucepan
together with the vanilla pod and
seeds (scraped from the pod)
until boiling point. Add the 3
tablespoons of coffee creamer.
Whisk together the 3 egg yolks,
salt and sugar. Once whisked, add

Now mix the ¾ cup sugar with 3
tablespoons cacao in a separate
bowl. Spoon this over the individual
servings batter or over the batter in
a deep oven dish. Lastly pour over
the cold coffee. It is very important
that the coffee is cold.
Bake in the oven for 25 to 30
minutes, depending on how saucy
you want your chocolate pot.
Longer cooking time results in a
drier pudding.
Enjoy while hot and serve together
with the homemade vanilla ice
cream.
(serves 8)
1 cup plain flour
½ cup sugar
2 teaspoons baking powder
2 tablespoons cacao
½ teaspoon salt
½ cup of milk
2½ tablespoons butter, melted
1 teaspoon vanilla
8 ceramics for individual
servings or only 1 deep oven
dish
Sauce:
¾ cup sugar
3 tablespoons cacao
1 cup cold coffee
Preheat oven to 180 degrees
Celsius.
Sift the flour, cacao, baking powder
and salt. Add the sugar. Mix well.
Add the milk to the melted butter
and heat together. Add the vanilla
to the butter and milk mixture and
mix this with the dry ingredients.
The batter does not appear to be
much at this stage, but believe me,
it is enough for 8 people.
