This popular Cuban cocktail is easy to vary.
Many people like to muddle wedges of lime
along with the mint. Try adding a few strawberries,
raspberries or pomegranate seeds as each comes
25ml lime juice
1 handful mint leaves
15ml sugar syrup or 1 tbsp sugar
1 handful ice cubes or crushed ice
50ml white rum
100ml soda water
Put the lime juice, mint leaves and sugar syrup or
sugar in a sturdy highball glass. Gently crush mint
leaves using a muddling stick if you have one, or the
end of a wooden spoon or rolling pin.
Add the ice to the glass, then pour in the rum and top
up with soda water.
