2014 annual report - The Sylvia Center
2014 ANNUAL REPORT
THE MISSION
OF THE SYLVIA CENTER IS
TO INSPIRE YOUNG PEOPLE AND
THEIR FAMILIES TO EAT WELL THROUGH
HANDS-ON LEARNING EXPERIENCES
ON THE FARM AND IN THE KITCHEN.
THROUGH OUR PROGRAMS, PARTICIPANTS LEARN
WHAT FRESH FOOD IS, HOW DELICIOUS
IT TASTES, AND HOW TO PREPARE
HEALTHY MEALS ON A DAILY BASIS.
WE TEACH SKILLS THAT INSPIRE OUR STUDENTS
TO ESTABLISH INDEPENDENT HEALTHY EATING
HABITS — SO THAT THEY MAY LEAD HEALTHY
AND PRODUCTIVE LIVES.
2
MISSION
Dear Friends,
The Sylvia Center was founded in 2007 to address issues in children’s
health by providing hands-on experiences with growing and cooking
healthy food. Now in our eighth year of programs, TSC has developed
and codified an innovative and forward-thinking model that teaches
cooking as a life skill to fight the obesity epidemic and create a new
generation of healthier New Yorkers.
We focus on teaching cooking in low-income communities, because
for families who are on a budget and don’t know how to cook, it’s
nearly impossible to eat healthy food in a regular way. Our programs
are designed as joyful, hands-on experiences with fresh, delicious, and
healthy foods that inspire students to establish independent healthy
cooking and eating habits that will last a lifetime.
In 2014, our programs served 1,000 students in New York City and 1,625
students in Columbia County, helping young people and their families
learn to cook. We are proud of the progress we’ve made, and are
committed to expanding our programs in 2015 and beyond so that we
can begin to meet more of the tremendous need for programs like ours.
In 2015, we are:
•Expanding the Cooks for Health program to operate in all five boroughs
•Establishing a teen apprenticeship program that trains high school
students to teach healthy cooking to children in NYC summer camps
•Establishing a Train-the-Trainer program to enable other community-based organizations to teach our curriculum on their own
•Offering full scholarships to community and youth groups from
Columbia County to participate in our farm programs
•Expanding the Seed to Plate program in Columbia County to serve
more students during the school year
We could not do all of this without the generosity, commitment and
enthusiasm of our donors, Board of Directors, volunteers and staff.
Thank you so much for your support!

THE
NEED
Childhood obesity is one of the most severe
health crises facing our nation and the
communities where we work.
•In Columbia County: one out of every three
school children is overweight or obese.1
•In New York City: 33% of youth (ages 10 to 17)2 and 24% of adults3 are overweight
or obese.
•In New York City, the obesity epidemic
strikes hardest in communities already
suffering from health and economic
disparities, particularly low-income
communities where the rate of overweight
and obesity reaches over 70%.4
THE
OPPORTUNITY
4
ABOUT US
Obesity rates are inversely correlated to the amount of time spent cooking food. A survey of nations across the world shows
that the more time people spend cooking food at home, the lower the rate of obesity of that country.5
In low-income communities where processed,
high-calorie foods are prevalent and healthy
whole foods are often scarce, The Sylvia
Center provides essential programs that work
to counteract the rise of diet-related health
problems later in life.
WHAT WE
DO
The Sylvia Center conducts its cooking and
food literacy programs primarily in New York
City Housing Authority community centers,
and at Katchkie Farm in Kinderhook (Columbia
County), NY. Programs focus on building
competency in five key areas:
•Willingness to try new foods
•Ability to identify components of a healthy meal
•Knowledge of how and where food is grown
•Definition of seasonality
•Self-efficacy in food preparation
Since 2007, we have served over 11,700
participants—youth, teens and family
members—in New York City and Columbia County.
The Columbia County Department of Health’s Community Health Assessment,
conducted from 2010 to 2013.

enrolled in Questar III’s vocational culinary arts program.
6
OUR HISTORY
• Programs shift completely to serve children in the
communities where they live, based in NYCHA community
centers in Harlem, Brooklyn, Manhattan, and the Bronx.
Two teen programs are piloted: NYCHA teen program
at Drew Hamilton Community Center and a program for
pregnant teens at Inwood House.
• In the city, TSC successfully pilots Cooking Together family program and partners with GrowNYC for Seed to Plate program.
• As NYCHA transitions community center management, TSC
establishes new partnerships with Grand Street Settlement,
Harlem Children’s Zone, St. Nick’s Alliance, Graham
Wyndham, and Green City Force.
• At the farm, in-school Seed to Plate program is piloted in
Columbia County.
• In the city, youth, teen and family classes are offered at 6 NYCHA sites, 5 days a week.

1 to 3 sites.
OUR HISTORY
7
THE SYLVIA CENTER’S
NYC PROGRAMS
In 2014, TSC’s city programs served almost
1,000 students. TSC’s COOKS FOR HEALTH
PROGRAM offers six-week series cooking classes
in New York City Housing Authority community
centers. The majority of Cooks for Health
participants are residents of NYCHA housing
developments and qualify for free or reduced
cost school lunch. Classes are for youth, teens,
and families; are led by trained chef instructors;
and have a student to teacher ratio of 4:1.
In the YOUNG CHEFS CULINARY PROGRAM, children
learn basic cooking and baking skills and the
importance of eating a variety of fruits and
vegetables, as well as whole grains. 580 YOUTH
completed the Young Chefs program in 2014.
I love cooking because it makes

The TEEN CHEF: SKILLS FOR LIFE PROGRAM also
focuses on teaching the process of cooking fresh, simple meals from scratch, while also providing a basic professional culinary foundation on setting up a work station, the code of
rules chefs have in the kitchen, knife skills, and
how to handle fresh produce. 120 TEENS
completed the Teen Chef program in 2014.
The COOKING TOGETHER: FAMILY PROGRAM
emphasizes cost-effective, practical, and healthy
recipes; time and cost-saving techniques; and
ways to incorporate more vegetables into
family-friendly meals while providing a unique
opportunity for families to learn, cook, and eat
a meal together. 80 FAMILIES completed the
Cooking Together program in 2014.
My kids love kale. I never knew anything about kale…
but now we cook it a lot. We sauté it at home. We are now eating a lot more greens.

NEW & NOTEWORTHY
IN 2014
•The TEEN CHEF: SKILLS FOR LIFE PROGRAM
expanded to two additional sites, for a
total of four sites.
•The COOKS FOR HEALTH PROGRAM expanded
to our first site in the South Bronx: the
Mitchel Community Center in Mott Haven.
•TSC HIRED OUR FIRST TEEN PROGRAM GRADUATE,
Chris Santos, as a Chef Assistant for Cooks
for Health youth classes in Brooklyn.
• 20 GREEN CITY FORCE STUDENTS completed
an 8-week culinary training program with
TSC, including preparation for the NYC
Food Handlers Certificate.
•On June 6th, 40 VOLUNTEERS from DELOITTE,
as part of their annual IMPACT DAY, helped
TSC staff collect data on the availability of
fresh food at supermarkets, grocery stores,
and corner stores in West Harlem. This day of
data collection was the first step in creating
a healthy food shopping guide that will be
distributed in 2015 to TSC students and their
families in the Cooks for Health program.
TSC became a firsttime grantee in 2014
of Newman’s Own
Foundation, (the
independent foundation
created by the late
actor and philanthropist,
Paul Newman) which
made a grant award to
support the expansion
of our Cooks for
Health program in
the South Bronx and
East Brooklyn. Thanks
to this grant, TSC
is establishing new
teaching residencies at
the Mitchel Community
Center in the Mott
Haven area of the Bronx,
and the Pink House
Community Center in
East New York, Brooklyn.

The Sylvia Center at Katchkie Farm served
1,625 CHILDREN and their families in 2014, a 49% INCREASE from 2013. 81% of participants
came from Columbia County. 19% came from
the NYC metro area.
TSC’s FRESH FOOD COMES FROM THE FARM PROGRAM
is a four-hour experiential program that
introduces youth ages 4-18 to seasonal
cooking and gardening. Participants tour and
taste their way through the Learning Garden,
which is home to over 200 different varieties
of fruits, vegetables, herbs, and flowers.
Children learn where food comes from, how
it grows, and age appropriate cooking skills
for creating delicious and healthy meals.
871 CHILDREN PARTICIPATED in 36 FRESH FARM
PROGRAMS in 2014, a 36% INCREASE from 2013.

The SEED TO PLATE PROGRAM is a series of
90-minute classes for elementary aged
children. Students develop and build on their
culinary skills and knowledge of healthy foods
as they prepare simple dishes and snacks.
Participants also learn gardening and farming
through experiential projects such as seeding.
All students also take a trip to the farm to
participate in the Fresh Food Comes From the
Farm program. 65 STUDENTS at FOUR SCHOOLS
completed the Seed to Plate program in 2014.
Schools included: John L. Edwards Primary
School, the Hudson Youth Center, Perfect Ten
After School, and Germantown Central School.
TSC’s EDUCATIONAL INTERNSHIP program offers
a 6-month internship for an individual with
an interest in organic gardening, children’s
health, food literacy, outdoor education, and
the culinary arts. Designed for an individual
with beginner level experience in those areas,
the intern gains valuable knowledge and
experience in small-scale organic farming,
livestock care, culinary techniques, meal
creation, and building community around
food. At the end of the season, the intern
will be prepared to pursue an entry-level job
in the field of farm to table education. TSC
hosted TWO INTERNS in 2014: Kye Ameden and
Rebecca Behr.
The FRESH TASTING PROGRAMS are one-time
educational programs, such as cooking demos
and veggie taste tests, that we offer at schools,
local farmers markets and events, and other
educational organizations off the farm. The
program reached 554 PARTICIPANTS in 2014.
TSC organized two public farm events in 2014 including SPRING PLANTING DAY, featuring a live
performance by singer DAN ZANES, and Fall Harvest Day.
I never saw a real chicken before, I only saw ones from storybooks.
MADISON AGE 7, NYCP
The seventh annual Farm to Table benefit dinner,
hosted by Great Performances, raised over $91,000
to support TSC’s upstate programs in Columbia
County. Over 300 guests gathered in the fields
of Katchkie Farm in Kinderhook, NY for cocktails,
dinner and tours of TSC’s Learning Garden.
