Thomas
Edison…
...I just share his
passion for innovation!
Edison was one of the world’s most prolific
inventors with over 1,000 patents! At Stamford, the
next big idea could be MY OWN! We have a stateof-the-art Science Wing that I use to experiment
with new ideas that has a break-out space for
hypothesizing, lab space for experimenting and
presentation space for sharing my findings!
Stamford is a world-class school with over 60
nationalities of students from 2 years old through High
School, offering daily Mandarin and Spanish and the
rigorous IB Program enhanced by American standards.

the arts and music are an essential part of a well-rounded
education. Seeing a performance by a world class group
such as Whim and having the opportunity to learn firsthand from them helps inspire our students to pursue
their musical dreams.”
At Stamford American International School, the study
of Music, Drama, Visual Arts and Dance is an important
part of life because it instils discipline, endurance,
analytical skills and furthermore, students gain a sense of
community.
Stamford has established a Visiting Artist Program which
enables students of all ages to receive instruction from
experts in the field. Visiting artists include guests from
multiple creative fields including authors, illustrators,
professional musicians and actors who help teach
students new techniques and facilitate engagement in
the community.
For more than 100 years, a cappella singing has been one
of Yale University’s most honored traditions. These days
it’s a tradition that spans continents with the all-male
Wiffenpoofs and the all-female Whim n’ Rhythm enjoying
a global audience through their annual world tours. This
year’s tour finds Whim n’ Rhythm - known as Whim once again in Singapore and at Stamford to share their
musical knowledge with Stamford’s student choir.
Students at Stamford begin their informal musical
education at age 2 in the Nursery Program where songs
and music are integrated throughout the curriculum,
including through the Foreign Language Program. PreKindergarten and Kindergarten 1 students are introduced
to violin using the Suzuki Method and Kindergarten 2
students are introduced to the piano using the Suzuki
Method. In the same way that a child learns to speak
before they are able to read, the Suzuki method of
instruction pivots off the belief that a child can play music
before they are able to read notation.
From Pre-Kindergarten through to Secondary School the
opportunities for music education continue to expand
in variety, depth and degree of difficulty. Stamford is
committed to providing the best learning experiences
available to our students and research suggests that music
education can provide significant benefits to all ages.
Mr Andrew Hancock, said it was a privilege to host the
world famous group at the school. “An appreciation of
“
The performance and workshops given by
Whim n’ Rhythm are part of an ongoing
Visiting Artists Program at Stamford, giving
students access to artists and performers from
a range of backgrounds and disciplines

THE AMERICAN CLUB
3
FROM THE
PRESIDENT
o here’s a question... When you think of
The American Club, what do you think of?
Do you think of food? Do you think of your
friends? Do you remember some deal you
closed there, a fantastic tennis game you won,
a party you don’t really remember but heard
you enjoyed? For me it’s simple... I think of
family. Mine and those of others.
This morning I had the privilege, and it really
is a privilege, of having brunch with my wife
and daughter on The 2nd Floor for Father's Day.
Although having lunch with your family may
seem rather routine, this Father's Day, for me,
was particularly poignant as I’ve spent many
alone while the family was back in the States
for the summer. This Fathers’ Day, well, it was
awesome... and given the “novelty” of it is
something I didn’t take for granted particularly
since I know a lot of the staff members who
made it possible were away from their family so
we could enjoy time with ours. One thing I’ll say
about our Club on this point... we’re actually
pretty good at thanking our staff for all they do.
Please, therefore, let me thank everyone who’s
written to Martin and others in the last few
months to compliment staff on their efforts.
Your notes and kindness mean the world to the
team which, in turn, help maintain the positive
environment we all enjoy.
Yep, it’s easy to take things for granted when
you live in a place like Singapore where
things just “work”. Positive change, however,
typically won’t occur without a lot of thoughtful
preparation and affirmative efforts and, with
that in mind, I thought I would:
i) take a minute to celebrate a few positives
that have happened recently
ii) let everyone know how the Strategic
Development and General Committees are
coming along in their discussions regarding
proposed redevelopment activities;
iii) make sure everyone knows where they can
get more information; and
iv) make sure everyone knows how they can
get involved in shaping the Club’s future.
Ok, point one. Have you noticed the new phone
charging stations at the Club? One of them
is in the Linkway while the other is near the
Business Center. THANK YOU Eric for making
this happen! You have undoubtedly saved
people at the front desk and reception areas
4
THE AMERICAN CLUB
JUL / AUG 2014
from endless requests for power. Second,
have you noticed that we’ve added some
outstanding American microbrews in the
Union Bar? I don’t know who figured out how
to get Stone, Deschuttes and Rogue into the
country (Ryan perhaps) but whoever did it,
whoever you are, THANK YOU on behalf of
everyone who enjoys great beer! I owe you a
bad (but clean) limerick to celebrate.
In addition have you noticed that Ryan and
his team have set aside an area in HOME for
wines under $50? What about the pastries
– we have a greatly improved selection of
cakes and baked goods in Thyme Café – not
that they were ever “bad”... They’re just a lot
better now. Thank you Malik and Chef Yeni
for making that happen. And Malik, great
move in putting the Reuben along with some
other Member favorites back on the menu.
All of these changes, by the way, arose from
Members’ suggestions. In short, the Club
looks, listens, evaluates and acts. Please,
therefore, keep up the suggestions and thank
you again for your continued patience as your
ideas are evaluated and, often, implemented.
Now, having mentioned the redevelopment
plans I guess I should get back to that. The
next steps regarding our exploration of the
Club’s redevelopment options include:
1. Assessing how much the project would
cost and if the $85M in the bank’s enough
(financial modeling);
2. Deciding what we can do based on what we
can spend, i.e., get designs and plans made
for the new facilities;
3. Figuring out how to manage the project;
and finally
4. Making sure we communicate the plan to
Members i.e., determine the best way to make
sure Members know what the plan is, what the
new building will look like, how this will affect
them, etc.
Given these needs, management recently
issued requests for proposals to several
vendors for each of these deliverables.
Since we want to address these matters
systematically,
management’s
currently
waiting for a reply from one more firm on
the financial modeling tender. Once we have
that, management will hire the most qualified
bidder (after consultation with Exco) to
validate the estimates we’ve received for
the project thus far (the initial estimate is
$65M for the build) and make sure we can
afford the work. Hopefully I will be able to
report to you on that next month... At least
that’s our goal as we, meaning the GC, want
to keep this moving.
Now I know you’re all saying, “Hey, that’s
not a lot of information this time. Isn’t
there more?” Actually I’m glad you asked...
if you did... but irrespective, I hope you’re
interested in the renovation project and
want to know what’s going on. As per my
prior note (and I guess I can say as per all
my future notes), the GC and management
have posted a bunch of facts and FAQs
regarding the redevelopment plan at www.
amclub.org.sg/strategic_planning.html.
This, again, is the best possible source of
information on the project. It’s better than
what you hear on the tennis courts, in the
gym, and by all means at the Union Bar.
Please, therefore, USE the site, go there
for information and, if you have further
questions, don’t hesitate to write Martin
at [email protected] or me
at [email protected]. In addition,
if you want to make a difference regarding
the Club’s future up front, meaning during
the planning stages, please get involved
in one of the various committees that
will be considering the issues presented,
particularly the House, Gym, and
Membership Committees. You can do so
by picking up a Committee Interest form
from Concierge or visiting the website and
clicking the ‘Volunteers’ button. From there,
you can download the Committee Interest
Form and pass it to the ladies at Concierge.
This, again, is your opportunity to be heard
and to DIRECTLY make a difference in
the Club of the future so please, if you’re
interested, get involved and speak up.
That’s it for now. Thanks again for your
attention to this. It really
is an exciting time.

the umbrellas and awning will be replaced,

• The Teens Room will also be repurposed into

or enjoy a takeaway dinner from Poolside.
know for many of our long time Members,
and for many new Members as well,
this is one of your favorite times of the
year. The Clubhouse remains very active but
certainly not as frenetic as we all normally
experience. It’s also a time that many of our
families reconnect, and in particular with
sons and daughters returning from college for
summer. I sincerely hope you enjoy this special
time and just wanted to remind all Members
about the Visiting Membership option. Please
call the Membership Team at 6739-4360
for any inquiries. It’s also a time that the
Union Bar experiences an influx of Junior
Members (above 18) and our young Visiting
Members. Please be reminded that the staff
is very strict on checking that individuals being
served alcohol are over 18 years, and we only
accept Passports or Membership cards that
highlight an age of over 18. Staff and Duty
Managers will also be tough on poor language
or inappropriate behavior, so please set an
expectation with your sons and daughters.
Besides that, I hope you’re having a wonderful
summer and I look forward to seeing you soon.
Here are a few more updates for you...
Clubhouse Upgrades
I mentioned in the GM message in the last
issue of the magazine that management is
holding back on any significant construction
or upgrade work, particularly in the Scotts
Road building, until we have some clarity from
the membership as to whether the major
redevelopment project will proceed. However,
it has been another very busy year and the
Clubhouse has experienced heavy usage and
there are some areas that definitely need to
be upgraded.
• The Library, including the kids section, will
be refreshed with new carpet, furniture, and a
more contemporary color finish.
• The issue with the under-surface of Gym
flooring in the weight area (and Studio 1) will
be rectified.
• The Eagle’s Nest will receive new flooring,
a combination of carpet tiles and floor boards
(it’s actually a tile that looks like a wooden
floor board), the chairs and bench seating
will be re-upholstered, the wallpaper will be
replaced and lighting improved.
• The Poolside furniture, including the
lounges and single seats, will be upgraded
with new seating material and all repainted,
6
THE AMERICAN CLUB
JUL / AUG 2014
• Finally, there will also be some Kitchen
upgrades with key pieces of equipment being
replaced and some redesigning of the space for
better flow and food production efficiency. This
will be at both Poolside and Eagle’s Nest.
Annual Member Survey
Reviewing key indicators such as Membership
usage, covers and average check is one
way that we gauge Member satisfaction. In
addition to these quantitative measures, other
mechanisms such as comment cards and
surveys form a critical component that helps to
paint a more complete picture of satisfaction
levels. These results are also tied to staff KPIs.
As you know we recently completed our Annual
Member Survey, using the same 10-question
format as prior years, because we value being
able to benchmark against past performance.
Remember last year we landed with an overall
mean score of 3.98 (the rating scale is from 1
to 5, with 5 being excellent). We had over 1,750
responses and this score was the highest
for the past 6 years. At the point of writing
this message, the consultant had completed
the data entry for over 1,250 surveys and
we’re sitting at an overall mean score of
3.91. Considering the difficult year we’ve had
attracting staff and the implications on service
standards, this is a very good result.
Like I did last year, when we get the report and
the Senior Managers have had a chance to
read through the thousands of comments, I will
do a series of emails highlighting some specific
actions we’ve taken (or will be taking) to
address any feedback or theme that is recurring
in the report. For example, we’ve already
acknowledged that the number and diversity of
Family Activities is not where it should be. To
improve this situation, we have split the old,
single role into two, and by July 1, we shall now
have a dedicated Events Coordinator and a
dedicated Catering and Banquet Manager.
Fiscal Year – End 2013 / 2014
The Club’s fiscal year ended on June 30, 2014.
Despite the rising costs of doing business,
especially pressures on payroll and cost of
goods, The Club remains in a healthy position
both in terms of membership levels and
revenues. After management closes the books
and our Auditors Deloitte & Touché completes
the annual audit, then our Finance and General
Committees will have the opportunities to
review the Annual Report. We then look forward
to sharing the successes from the year with you.
Annual Staff Dinner & Dance
One of my favorite nights of the year will be held
on Monday, August 4 at the Marriott Hotel at
the corner of Orchard and Scotts Roads. On
behalf of the entire team, we thank the General
Committee and all Members for allowing us
this special night off to celebrate together and
enjoy the great company of over 350 full and
part time staff. It’s always a fun-filled evening
and after a relatively busy year, the evening can
have a profound and invigorating effect on the
team. The Clubhouse will be shut by 3:00 p.m.
on this day; however, operations will resume as
per normal on Tuesday. Please feel free to ask
the staff about the event, as it is a hot topic
of conversation amongst the team before and
after the festivities.
Senior Staff Update
In terms of continuing with our focus on
showcasing Club staff, I wanted to take a
moment to introduce you to one of our staff
who is a little more behind the scenes, but
plays no less of an important role in assisting
to run this large and dynamic operation. Tang
Teck Wah (Tang) is our Director of Facilities
and Security (2nd from the right in SM photo).
Tang joined the Senior Management Team in
January 2008 and has a wealth of experience
in managing diverse teams in the areas of
Engineering, Housekeeping, Security, events,
logistics, and site operations. His experience
also covers project management from concept
to final delivery ranging from fit-outs projects to
construction of new buildings. Apart from being
trained in Mechanical Engineering, Business
Information Systems and Technology, and Post
Graduate studies in Information Security &
Intelligence, he is also a certified practitioner
and lead auditor for the Singapore Standard
in Business Continuity Management. More
recently, Tang was invited to serve as member
of the Ministry of Manpower Workplace
Safety & Health Council’s Committee for the
Hospitality and Entertainment Industries. This
is a great compliment and a reflection of his
abilities and commitment to Club and industry
safety standards and procedures. It also gives
me great pleasure to formally announce his
promotion to Senior Director. His performance
over many years, from staff management
through to project work, has been outstanding
and he truly deserves this new title.
If you wish to discuss any of the above, or
anything else relating to The Club, please
feel free to call me at 6739-4376 or email
[email protected].

REDSEA GALLERY PRESENTS:
OUR PLANET,
UNTOUCHED
Our Planet, Untouched is a joint exhibition showcasing three Asian artists,
Agus Priyono (Indonesia), Malik (Indonesia) and Bang Sy Truc (Vietnam).
These artists have joined forces to produce a collection of paintings reminding us
of the natural environment from where they come. It's an environment which today
is gradually being consumed or ruined by either rapidly advancing concrete jungles
or destruction caused by natural disasters. One effect can be controlled, the other
cannot; but both play a major role in the way our planet is being shaped.
Thankfully, some large areas of natural beauty are still largely untouched and it is
through these paintings we are reminded just how beautiful but fragile our planet is.
To make an enquiry or purchase one of these artworks, please contact a member of

EAST AFRICA LOW SEASON
(November - December)
While it is the rainy season, few actually know that rainfall is typically
in the form of thunderstorms occurring late in the afternoon lasting
for about an hour or so. This brings about the much needed water
that transforms the brown winter landscape into a sea of stunning
greens and wild flower blossoming. The bush now comes alive with
the calving season!
Catch the migration action as it takes places south of Serengeti
and witness Lake Manyara’s wet season as it brings about a sea of

WINE DINNER
The Pahlmeyer story is a tale of
international intrigue, passion and
Hollywood stardom – of Jayson
Pahlmeyer, friends and family, French
clones, legendary winemaking and
iconic wines.
Following his dream, Jayson
partnered with the owner of a 55-acre
site in south-east Napa Valley. The
two shared a devotion to Jayson’s
audacious dream of creating a
“California Mouton” and began
imagining the vineyard’s potential.
The key, they were sure, lay in planting
the finest French clones of the red
Bordeaux varieties – a considerable
roadblock since importing clones is an
international offense.
Since 1986, Jayson Pahlmeyer has
been producing highly sought-after
wines. It began with Jayson’s dream
to make world-class Bordeaux-style
wine from Napa Valley.
Pahlmeyer continues to live up
to Jayson’s audacious dream –
producing phenomenal wines of
power and finesse.

a peek at the magic that happens when Our
Chef De Cuisine at The 2nd Floor, Gary ENG,
makes it possible.
G
ary has at least 16 years of culinary experience ranging from
casual to semi-fine dining. Prior to joining us, he headed The Prime
Society kitchen operations, staff training and most importantly, the
Charcuterie project where they made their own cured meats such
as Parma Ham, Guanciale, Lonza, Duck Prosciutto and the like.
Chef Gary is classically Italian trained. However, he has keen interest in Modern Gastronomy and is always on the lookout for new techniques
and methods to improve the quality and consistency of his food.
He cites Grant Achaz and Heston Blumenthal as his idols. Other than his passion for food, Gary is also an artisan in crafting leather products.
Since his arrival, Gary has added a new dimension to The 2nd Floor kitchen team. His penchant for cooking and leather products makes him a
really interesting guy to talk to.
When you decided to become a
professional chef and was there
anyone in particular who influenced
your decision?
No one really influenced me. I was never
really academically inclined. I was more of
an artsy fartsy kind of guy and cooking
to me is the ultimate art form. It has to
be a perfect marriage of form, aesthetic
and taste.
Can you describe a ‘typical day on
the job’?
A typical day would be checking on
events for the day; next item on my list
may seem fussy, but without a doubt,
a good mise en place will make one a
better and more efficient chef. It is one
of the most important lessons I picked
up early on in my career. Mise en place
literally means "set in place", and it refers
to having everything prepared and ready
to go. From the dicing of the onions and
carrots, to ensuring that all the spices have
been measured and the different broths
prepared and portioned. I take this one
notch up by making sure the pots and pans
and even ladles are in proper condition.
Where do you look for inspiration as
you create new dishes for the menu?
Inspiration for a new dish? I try to use
seasonal ingredients if I can. If not, I would
want to create something new with great
flavor and texture.
What is the toughest part of being
a chef?
The long hours. You need to work on
weekends which is normally the time that
you would spend with your family. It would
be even harder if your partner’s off days are
on weekends. So, you really need to have an
understanding wife.
Can you share with us some useful
kitchen tips?
Always have garlic, onion and butter.
Those are the 3 things that I always have
in my kitchen.
What can we look forward to in the
next Western menu change?
We will be adding more secondary cuts
apart from the usual primary cuts, reason
being that the former is more flavorful and
has more texture than the primary cut. Also
the price is value for money. I wouldn’t want
to divulge too much. It’ll be a surprise!
ingredients at affordable prices compared
to the other restaurants in the market.
Therefore I would say it is value for money
for the Members here.
Do you have any recommendations
when dining at The 2nd Floor?
I would recommend a degustation menu
which is not on the standard menu. We do a
lot of customization on the menu so just pop
by and have a chat with us.
The menu items of this restaurant were
thoughtfully created for you by bringing
together the flavors of the East and
the West.
Would you mind sharing with us the
biggest flop you have ever made as a
chef?
I can never cook rice in a rice cooker. You
can give me the best quality rice but if you
want me to cook it in a rice cooker, I will
definitely ruin it. Give me a pot any day and I
can do wonders.
The Restaurant and Bar were also
designed with the intention of fusing
Eastern and Western influences; featuring
tiled ceilings and a hardwood-floored
pavilion, evoking an ambience that is
reminiscent of Singapore’s colonial past.
The use of moveable dividers brings to
mind the traditional Chinese screens. In
May 2012, The 2nd Floor was presented
with a “Highly Commended” award in
the Leisure Interior Category at the
International Property Awards.
How would you describe a dining
experience at The 2nd Floor?
At The 2nd Floor, we serve the best quality

Detoxification
Detoxification is one of the best ways to
remain healthy in a polluted and toxic
environment. A few common symptoms
of toxic overload include unexplained
headaches or back pain, trouble
concentrating and staying focused, brittle
nails and hair, frequent allergies, trouble
sleeping, sinus congestion and skin
problems such as acne, psoriasis
or eczema.
Experiencing several of the above
symptoms may be evidence that you
have a build-up of toxins. But all is not
lost; you have the power to help yourself
feel better! You can regain your health,
balance and youth through several
means, including detoxing.
Why Detox?
Detoxification is one of the body’s most
basic automatic functions of eliminating
and neutralizing toxins through the colon,
liver, kidneys, lungs, lymphatic system
and skin. Unfortunately in this day and
age, with the pollution found in the air,
water and food we eat, our bodies have
a hard time keeping up. If these systems
aren’t working effectively, you will feel
increasingly sluggish, tired, irritable, and
certainly won’t be looking your best – dry,
flakey skin and dark circles under the
eyes often point to an unhealthy lifestyle
coupled with insufficient sleep. Take a
look in the mirror and be honest with
yourself; are you showing signs that you
need a detox?
Detox Body Wraps are a way to help
nourish and purify your body, all while
you relax. It is really a wonderful way to
do something good for you. The benefits
of Detox Wrap work in two ways. The
ingredients that are applied on the body
draw out toxins and impurities from the
skin. At the same time, the skin gets
replenished with essential nutrients.
Detox Wraps are a great addition to other
detoxification plans like fasting.
This treatment may also help to reduce
cellulite if it is done on a regular basis. It
definitely does tone and tighten the skin
and leaves a refreshing and healthy look.
It is an enjoyable and relaxing treat that it
is beneficial for the body and soul.
Still not quite sure what to expect
in a Body Wrap session? sên offers
two Signature Kerstin Florian

Junior Eagles Tennis Program
Term One: August 11 – December 20, 2014
We are very excited to launch the NEW Junior Eagles Tennis Program in August 2014.
The guiding principle of the Junior Eagles Tennis Program is to teach lessons based on
what is best for the long term development of the player.
As we do currently, students will be placed in a level according to age and ability. Within
that level there will be a set of tasks to help develop all aspects of a player’s game.
During each lesson, players will perform certain tasks to develop fundamental skills.
Some tasks take a short time to acquire the necessary skill, while others can take a
number of weeks to master. The tasks cover every aspect of the game, and set quality
foundation to ensure that all players can reach their full potential.
Each student will be given a players chart of tasks, according to their level, to be learned
and performed. As players learn and accomplish new skills, the tasks will be signed off
by the coach, and players rewarded with stamps on their charts.
Achievement Levels
Yellow Eagles: Ages 5 & 6 (Tiny Tots) 45-minute | $20.25 per session | ratio 1:5
Students learn movement, balance and hand-eye coordination with an emphasis on controlling the
racket, making contact, cooperation with others and having as much fun as possible!

GYM
Training for
F le x i b i lity
Understanding the mechanisms of stretching
is far less critical than understanding when to
apply each stretching technique.
As a guideline, static stretching (stretching the
muscle and then holding it in its elongated
position for a stipulated amount of time) should
strictly be done post-exercise. Numerous
studies have shown that SS pre-exercise impairs
performance and increases the risk of injury.
This makes sense because when you stretch
a muscle and make it more compliant, it takes
less force to rupture. Post-exercise, our muscles
are shortened and tense leading to a feeling
of tightness, therefore we should apply static
stretching techniques as a means to help ease
the muscle back to its pre-workout status.
You’re probably thinking that flexibility just
means stretching and you’re actually not too
far from the truth, but doing your standard
pre and post-exercise stretching routine is
not exactly training for flexibility. Like strength
and conditioning, there is a science behind
stretching – appropriate ways and methods
of stretching that can either enhance your
performance or hinder it.
So what then should we do pre-exercise? Before
starting a workout, our bodies – particularly
our muscles and working tissues, exhibit what
is known as the thixotropic effect. Here’s an
example: Have you ever tried to pour ketchup
out of a bottle right after you take it from
the fridge? Wasn’t it easier after you shook
the bottle or waited for it to get to room
temperature? That’s the thixotropic effect, and
in that sense, our bodies are quite similar to
ketchup. It’s why we should employ DS (or warm
up) before a workout. We need to mobilize our
joints, use similar movement patterns to what
we intend to employ for our workout, but also
increase body temperature, improve enzyme
activity and get neuromuscularly ready for
the workout!
There are three basic types of stretching:
1. Static Stretching (SS),
2. Dynamic Stretching (DS - often known
as dynamic warm-up), and
3. Proprioceptive Neuromuscular Facilitation
(PNF) stretching.
So how then does PNF come into the picture?
SS and DS produce acute adaptations, but just
for the short duration of the workout. In order
to improve flexibility permanently, we need the
body to continually adapt. Chronic flexibility
issues can lead to poor posture and increased
dmit it; you think this sounds ridiculous,
right? Most gym goers know how
to engage in resistance training to
improve their strength, and endurance training
to improve cardiovascular performance. But
who knows how and why to train for flexibility?
32 THE AMERICAN CLUB
JUL / AUG 2014
risk of injury due to inefficient or poor
movement patterns. Therefore, it is paramount
to have good flexibility, and it needs to be
trained just as we train for strength and cardio.
Dedicate a weekly 30-minute session to PNF
stretching. To retain the improved flexibility,
use SS regularly to supplement PNF. Recent
research has shown that PNF stretching can
improve a joint’s range of motion in as little as
three weeks.
Research has also proven that flexibility, power
and strength share a positive relationship
which means the more flexible you are, the
stronger and more powerful you will be. These
components all work synergistically. Think
about a stretched out elastic band; it flies
further than one that is stretched less and
it’s more painful when it hits you too! With the
amount of time and effort we spend doing
resistance and endurance training to improve
our bodies, it only makes sense to spend equal
energy on flexibility. Your body will thank you.
