Case Study:
EXPRESS SOLUTIONS
Restaurant Cooks Up
Big Energy Savings
To say that the owners of New York Bagels ‘N Bialys in
Scottsdale are dedicated may be an understatement. Not
only does the restaurant offer four dozen varieties of bagels
and bialys baked fresh daily, it is also committed to saving
energy in as many ways as possible.
BENEFITS
Owners Ruth Leatherman and Shelley Curtis recall a
contractor who visited the business touting the benefits
of energy efficiency and the APS Express Solutions
incentive program. “We’re always looking for ways to save,”
Leatherman says. The contractor explained that energysaving equipment and lighting help reduce electricity usage,
operate efficiently and lower the electric bill. In addition, the
project would be eligible to receive incentive funds from the
APS Express Solutions program.
APPROACH
The multi-faceted project included reducing the number
of fluorescent lamps in the deli area and installing
energy-saving motors in the restaurant’s coolers, walkin refrigerators and freezer. Leatherman reports that the

APS incentives covered 85 percent of the project costs and
the estimated dollar savings in the electric bill should result
in the new equipment being paid for in less than four months.
“We got our electric bill the other day and thought, ‘Wow! It
just keeps going down,’” says Leatherman.
“[APS] has become involved in helping the business
community save,” she adds. “The contractors were easy to
work with and effective.” Asked whether she would consider
another energy efficiency project, the business owner is
quick to respond: “It’s been a great experience for us and
we’re looking to see what else we can do.”
