Angus Roast Beef Mini Sandwich Trio
Serves 4 to 5

Private Selection Potato Rosemary Bread, sliced (about 3/8 inch thick) approximately 1 loaf

Private Selection Angus Roast Beef, sliced very thin
Private Selection Olive Oil as needed

Private Selection Formaggio Trio (Parmesan, Asiago, Romano) shredded

Roasted Red Peppers, dice small
Method
1. Pre-heat the broiler on your oven on high.
2. Brush the sliced bread with a small amount of olive oil and place
on a baking sheet (oiled side up). Place in the oven and broil for
approximately 20 to 30 seconds or until you start to see the bread
brown. Remove from the oven and set aside.
3. Once the bread slices cool down, split them up into 3 groups (you
may not have exactly the same amount of slices in each group).
4. On one group, place about 1 oz of roast beef onto the toasted side
of the sliced bread. Drizzle 1 tsp of sweet onion dressing over the
beef and then top with 2 tsp of the Formaggio Trio cheese blend.
Place these on the baking sheet.
5. For the next group, spread ½ tsp of Dijon mustard onto each slice
of bread (toasted side), then add about 1 oz roast beef and top off
with 2 teaspoons of the crumbled blue cheese. Place these on the
baking sheet.
6. For the last group, place about 1 oz of Roast beef on the toasted
side of the sliced bread. Drizzle 1 tsp of creamy balsamic dressing
over the beef and then top with about ½ oz of provolone cheese.
Place these on the baking sheet.
7. Place the mini sandwiches, under the broiler for about 30 seconds
or until the cheese melts.
Refrigerate any leftovers

Private Selection Lower Sodium Wildflower Honey Ham, sliced thin

Private Selection Chipotle Cheddar Dip
1 ½ oz
Private Selection Shredded Parmesan Cheese
Method
Private Selection Olive Oilas needed
1. Preheat a Panini press (sandwich press or griddle) on high.
2. Slice the baguette into 3 even slices, then split in half.
3. Spread 2 teaspoons of chipotle cheddar dip on each half of the
baguette. (total 6 halves)
4. Divide the ham into 3 equal portions. Place each of the ham
portions onto the bottom halves of the baguette.
5. Sprinkle ½ oz of the parmesan cheese on the ham of each sandwich.
6. Place the top piece of baguette on the cheese and press down a
little to keep the sandwich together.
7. Brush a small amount of olive oil on to the outside of the top and
bottom of each sandwich, then place on the panini press and firmly
press down on the sandwiches.

Red Onion, sliced very thin
¼ tsp Lime, juice

Tomato, sliced ¼ inch thick slice

Method
Slice the bun in half. Slice the avocado and spread on the bottom
bun. Top with the onion, lime juice and tomato. Add the turkey,
cilantro, lettuce and top of bun. Enjoy.

Method
Roasted Red Peppers, medium dice
Slice Boule in half horizontally. Spread the pesto on both halves. On
the bottom half, sprinkle half of the red peppers, followed by the
Provolone, Genoa, Hard, Pepperoni, Mozzarella, remaining peppers
and Arugula. Place top piece of bread on top of Arugula. Place a pot
or pan, that is the same size as the bread on top of the sandwich and
gently press down to slightly flatten the sandwich. This will help keep
the sandwich together and it makes it a little less chewy.
You can either enjoy this sandwich cold or warm. For a warm sandwich, pre-heat oven to 400° prior to building. When the sandwich is
finished, wrap it in foil and place in the oven for 10 minutes. Enjoy.
