Artisanal Cider –
Half Science, Half Artistry

When I was a student at the
University of Georgia (many, many
years ago), one of my favorite drinks
was a “Snakebite” at The Roadhouse,
the bar across the street from my
apartment. The bartender combined
Harp’s Lager with an apple cider
(usually Woodchuck). I must admit
there were a few times when the
Snakebite caused me to miss an early
lecture the next morning.
And to be honest, the Snakebite
is my only exposure to cider, so to
get the true cider experience, MD
ARRIVE publisher Vicki Franz and I
toured Millstone Ciders in Monkton,
located in an 1840s gristmill. The
father-son owned distillery, which
opened two years ago, has quickly
become a well-known entity in the
artisanal cider business, with over
120 stores shops carrying its ciders,
as well as some high-end restau-
rants such as Woodberry Kitchen
in Baltimore serving Millstone
Cider on their menus. Curt Sherrer
earned a degree in viticulture from
UC-Davis, while son Kyle earned a
finance degree from the University of
Baltimore. The combination of these
two backgrounds results in wonderful
small-batch cider and a thriving new
business.
On our visit, Kyle noted that his
father originally bought the historic
gristmill 10 years ago not to make
cider, but rather to save a historic
building that was in dire need of
extensive renovation. Once renovated,
the two began making artisanal cider,
mead (honey wine) and cyser, a combination of cider and mead. “There is
a great deal of experimentation; it’s
half science and half artistry,” says
Kyle. “Lots of Old World practices
are utilized, and we only use products that can be obtained from farms
within 150 miles … no sugar is used

as we cannot get sugar locally.” He
notes that once word got out about
Millstone, farmers began calling
them to buy excess fruit – apples,
peaches, plums, etc. “Last year we
bought 45 tons of apples and two
tons of honey,” he says. He explains
that sometimes they are not necessarily in need of a particular fruit,
but if the farmer is looking to get
rid of excess peaches, for example, at
a rock bottom price, they may alter
their plans to take advantage of the
savings. “Wine is hard to grow in
the Mid-Atlantic, so the great thing
about cider is that all ingredients
grow well here in Maryland,” Kyle
says. Kyle says that in the beginning
he was driving the products all across
Maryland, but once business took off,
they hired a distributor.

has roots in this country to the first

ed and aged for approximately eight
months. Kyle explains that – unlike
a single-grape chardonnay – cider is
a blending process of different fruits,
herbs and spices, along with raw
honey. And with over 1,200 cultivars
of apples out there, the combinations
are endless. We leaned that some
apples that are great for cider may
not be great for slicing up and eating
for a snack (Granny Smith apples are
surprisingly great for cider making),
and that the best cider comes from
American heirloom varietals as they
were cultivated with hard cider in
mind. Millstone separates its apples
into four categories – sweet, sharp,
bitter and aromatic. We were allowed
to open the top plug on a few barrels
to smell the different types of cider
and the aroma was intoxicating.
“It’s a whole new frontier and it’s
fun to try different combinations. You
cannot add ginger to a wine but you
can try with cider. One interesting
thing we learned was when you add
lavender to cider it tastes like cinnamon when combined with the acidity
of apples,” says Kyle. “We started with
simple varieties of cider and mead but
are looking forward to expanding …
we’re looking at making some French
and Spanish ciders in the future.” To
help come up with ideas for different
flavor combinations, Kyle visits area
farmers’ markets.
Kyle had Vicki and I sample
four different ciders. First up was
‘Bramble,’ a dry cider with a cranberry honey taste (the cleverly
designed labels on the bottles indicate
with illustrations the ingredients of
each cider). Next up was ‘Blossom,’
a Champagne style cider with a
smooth, floral taste that Kyle suggested to be paired with Thai or
Indian food. We then tried ‘Harvest,’
a autumnal cider, and my personal
favorite, the semisweet Rhuberry,
which contains 60 percent strawberries and 40 percent rhubarb.
As evidence by the growing popularity of artisanal cider, Kyle notes
that at the annual CiderCon conference in Chicago, there were 220 participants, up from just 80 the previous
year.

In a large bowl, beat eggs and milk
with an electric beater until frothy;

Parma, scallions and cheese. Heat oil
in an 8-inch ovenproof skillet; add
egg mixture and cook over medium
heat until edges are set, about 8 to 10
minutes. Place in oven and bake until
firm, 15 to 20 minutes.

1cup coarsely grated Montasio

Preheat oven to 400°F.
Separate biscuits onto a parchment

With your thumb, press into center of
each biscuit to form a small well. Fill
each well with 2 tablespoons of the
grated Montasio. Bake until tops are
golden, about 8 minutes. Serve immediately.

Why Try? Yorkshire pudding is perfect for ‘sopping up’ a roast beef’s natural
juices and reduced wine pan sauce.
Foodie Byte: Modest variations
can be made to the traditional recipe;
try adding ½ cup of finely shredded
Cheddar cheese or Stilton Cheese and
¼ cup of minced fresh chives. Once
the pudding goes into the oven, there
is ample time to finish cooking fresh
vegetables, dish up potatoes, make the
reduced wine pan sauce and slice the
beef. It’s a nice touch to seat and serve
the family or guests and then pass the
Yorkshire pudding hot and fresh out
of the oven.

Let batter sit at room temperature

tablespoon of beef fat in each tin or cup.
Pour approximately 1/3 cup of batter into each cup.
Bake for 20-25 minutes or until
pudding rises well above level of tins
or cups and begins to brown on tops
and edges. Reduce heat to 350°F and
bake an additional 10 to 15 minutes.

Preheat oven to 425°F.
Melt the butter in a Dutch oven
over medium-high heat. When the
foaming subsides, add the onion and
cook, stirring occasionally, until soft
and lightly browned, about 4 minutes.
Add garlic, thyme, salt and pepper. Cook for about 30 seconds.
Add potatoes, broth and cream
and heat to simmer. Cover, reduce
heat to medium-low, and simmer
until the potatoes are almost tender (a
paring knife can be slipped into and
out of a potato slice with some resistance), about 10 minutes.
Transfer the mixture to an 8-inch
square baking dish. Sprinkle evenly
with cheese. Bake until the cream is
bubbling around the edges and the top
is golden brown, about 15 minutes.
Cool before serving.

This recipe featuring the top sirloin roast provides all the spirit of an

Roast dinner at a fraction of the cost.
Why Try? The top sirloin is
a wonderful cut for roasting; the
drippings will provide the essentials for a decadent reduced wine
sauce and traditional Yorkshire
pudding.
Foodie Byte: When selecting a
top sirloin, select Choice or a higher
grade designation like Certified
Angus, Top Choice or even Prime.
Aged or dry aged meat will positively
affect the quality of the meal.
1boneless beef top sirloin
roast (6 -7 pounds)

cups Merlot, dry
1
ounce olive oil
6 to 8 garlic cloves
2cups beef broth, low sodium
2 /3
cup Port wine
2
tablespoons butter
As needed kosher salt and freshly
ground black pepper
Preheat oven to 250°F.

Trim meat of any heavy fat cover
in excess of 3/8 inch and any visible
cartilage on bottom of roast. Some fat
is essential for self basting the roast as
it cooks.
Season all sides of roast with salt
and pepper.
On the stove top, heat heavy iron
Dutch oven or deep skillet, add olive
oil and garlic.
Brown all sides of beef roast approximately 4 to 5 minutes on each side.
Place roast in pot in oven. When
internal temperature reaches 110°F
(approximately 60 to 80 minutes),
turn oven up to 500°F and continue
until internal temperature reaches
130°F. This will provide a medium
rare product with a nicely browned
exterior and take up to 15 additional
minutes.
Remove roast from oven, transfer to a tray and allow it to rest for
approximately 20 minutes.
Pour off and spoon all excess
fat from the pan. Reserve hot for
Yorkshire pudding.
Heat pan with remaining juices on
medium-high heat, add merlot and
reduce by half. Add stock and port.
Reduce to about one cup. Strain and
remove garlic. Add butter and serve.
Flourless Chocolate Cake.

minutes; Serves: 12
Here’s the famous rich and
decadent chocolate cake named for its
missing ingredient. Dense, moist and
super-chocolaty.
Why Try? This recipe calls for
only a few ingredients – chocolate,
eggs, butter, sugar and the optional
black coffee – and the results are a
chocoholic’s dream come true.
Foodie Byte: Although the cake
may not appear to be done, remove it
from the oven when an instant-read
thermometer registers 140°F. It will
continue to firm up as it cools.
1pound high quality bitter
sweet chocolate, chopped
coarse
1pound high quality semisweet chocolate, chopped
coarse

large eggs, cold
16tablespoons (2 sticks) butter, unsalted, cut into 16
pieces
¼cup strong black coffee or
liqueur (optional)
Confectioner’s sugar or unsweetened cocoa for dusting the cake
(optional)
Position oven rack to the lowermiddle part of the oven and heat oven
to 325°F.
Line the bottom of an 8-inch
springform pan with parchment paper
or waxed paper and grease the sides
of the pan.
Beat eggs in a bowl of a standing
mixer at high speed until the volume
doubles, about 5 minutes.
Meanwhile, melt the chocolate
and butter (adding the coffee, if
using) in a large heatproof bowl
set over a pan of almost-simmering
water until smooth and very warm
(about 115 degrees on an instant-read
thermometer), stirring once or twice.
Fold a third of the egg foam into the
chocolate mixture using a large rubber spatula until only a few streaks
of egg are visible; fold in half of the
remaining foam, then the last of the
foam, until the mixture is totally
incorporated.
Scrape the batter into the prepared springform pan and smooth
the surface with a rubber spatula. Set
the roasting pan on the oven rack
and pour in enough boiling water to
come about halfway up the sides of
the springform pan. Bake until the
cake has risen slightly, the edges are
just beginning to set, a thin glazed
crust has formed on the surface, and
an instant-read thermometer inserted
halfway into the center reads 140°F,
22 to 25 minutes.
Cover and refrigerate overnight.
Dust with confectioners› sugar or
unsweetened cocoa before serving, if
desired.

Liven Up the Holiday Party!
6 Festive Holiday Cocktails

Holiday parties can go two ways. One route is the fun party with your neighbors and friends where everyone unwinds,
de-stresses and ignores calorie counting for one night. The other route is the stuffy party where everyone looks bored
to tears (these are typically the ones you did not want to go to in the first place but felt obligated). Either way, a fun,
festive cocktail can liven things up, so instead of serving just the usual – beer and wine – how about getting creative
and adding some holiday flair to your drink list. Here are some favorite ones of mine that I’ve experienced at friends’
houses.
Christmas Cocktail
This simple cocktail graces our cover this month and for
good reason!
1 oz. Chambord
1oz. vodka (plain or flavored, i.e. vanilla or
citrus)
2 oz. cranberry juice
Sugar
Green food coloring
Lemon or lime wedge
Lime for garnish
On a plate, mix sugar and green food coloring to

desired tint. Rub a lemon or lime wedge around the
martini glass to moisten. Then edge the rim of the
glass with the sugar mixture. Shake off any excess
sugar.
Using a martini shaker filled with ice, add
Chambord, vodka and cranberry juice. Shake. Strain
and pour into martini glass. Serve straight up or with
ice (as shown above). For a decorative flourish, take a
lime and slice the rind all the way around the lime in
one strip. Tightly roll the rind to make it curl. Take
one of the curled ends and drape it over the edge of
the glass.
Spiced Mulled Wine
Rumored to be brought over from
England during colonization (thanks
Brits!), this is an easy recipe and perfect
for parties. Also, the aroma of the mulled
wine while cooking will get your guests’
attention.
1 orange, sliced
4 cups apple juice
2 tablespoons honey
6cloves
10 cinnamon sticks
2 bottles of red wine
Fresh ginger (about a 2-inch piece)
Place all ingredients in a large saucepan. Gentle simmer for 30 minutes.
Do not boil. Stain and ladle the
mulled wine into glasses of your
choice. Garnish with fruit slices or
cinnamon sticks. Note: if you want
a slightly sweeter version, put a few
tablespoons of sugar into the mixture
before heating.
Pink Mojito
How much fun is this drink?! The festive color and garnish will give your
party a fun Caribbean feel, even when
it’s snowing outside.
½ oz. Chambord
1 ½ oz. white rum
2 teaspoons simple syrup
Mint leaves
Lime wedges
Cranberry juice
To make the simple syrup, mix equal
parts sugar and water and simmer
on medium-low heat until sugar dissolves. Unused syrup can be stored in
the refrigerator for other drinks.
Then, muddle mint leaves, lime
wedges and simple syrup in a tall
glass. Add rum and Chambord, mix,
and then cranberry. Stir, add ice and
garnish with mint leaves and lime
slices, if desired.
Rocking Rosemary
Even non-gin lovers will love this festive cocktail.
3 oz. gin
1 oz. lemon juice
1 tablespoon grenadine
1teaspoon simple syrup (recipe
listed in previous recipe)
Rosemary twigs
Club soda
In a cocktail shaker with lots of ice,
add gin, lemon juice, grenadine and
simple syrup. Shake vigorously. Strain
into a highball glass with ice and top
with club soda. Garnish with rosemary twig for holiday flavor.

Eggnog
OK, we know. There a hundred different ways to make eggnog. Some like
it better with rum, brandy or cognac.
Some like to not cook the eggs, but to be
safe, we opted for one where the eggs are
cooked (nothing is more of a party buzz
kill than horribly sick guests).
6 large eggs, separated
¾ cup sugar
1 quart whole milk
2cups bourbon (can add less
or more depending on how
strong you want it)
1 tablespoon vanilla
½ cup heavy cream
Nutmeg to garnish
Separate the eggs and reserve egg
whites in the refrigerator. In a large
bowl, add the egg yolks and sugar
and whisk. Slowly add milk and stir.
Pour into a saucepan and heat to
medium. Continuously whisk and
heat until you see some steam or use
a food thermometer and heat until
150 degrees. You want the mixture
to thicken but don’t cook too long or
… well, you’ll have breakfast.
Remove from heat and cool. Add
bourbon, vanilla and cream. Chill.
When ready to serve, whip the egg
whites until foamy peaks appear.
Fold into mixture. Serve in holiday
glasses and sprinkle nutmeg on top.
Christmas Tea
No, we are not simply instructing you
on how to buy a Christmas-themed
bagged tea from the market. This is an
easy recipe and perfect for parties.
6tea bags (try a fun, spiced
version)
2 cups simple syrup
1 ½ cups white rum
6cloves
8 cinnamon sticks
Orange slices
Boil 2 quarts of water and add tea
bags, cloves, cinnamon sticks and
orange slices. Remove from heat and
allow to cool. Add simple syrup and
rum. Stir and serve in tall glasses
filled with ice. Garnish with mint,
orange and/or cinnamon sticks, if
desired.

For nearly 10 years, we have been a part of
our local community delighting readers with
our content. My children, and many of yours,
were in elementary school when we launched
our first issue. Now these young adults are in
college. Change is inevitable. Change is good.
We started as a small niche publication
with just 15,000 copies distributed free in
local shops. Now, we publish two separate
local magazines, printing 60,000 of each
issue. We direct mail 48,000 to homeowners
and move another 12,000 from strategic locations – all free for readers. Advertisers and
readers have supported our evolution, staying with us through format and distribution
changes. The larger community benefits from
this relationship as we promote local events,
highlight interesting people and places, support non-profits and our great quality of life.
But as you know, the business economy has
never recovered from the banking collapse in
fall 2008. Five years later (and absorbing three
postage increases in three years), there are
now about 70 percent fewer small businesses
than when we launched in March 2005.
Recently, the economy began to show signs of
growth only to be impacted by sequestration.
The current fiscal crisis has (and will continue
to) negatively impact “Main Street” businesses
that also compete with internet sales and
national chains.
We believe that our commitment to quality and highly valued content is what sets us
apart. We put a high value on everything
from attractive design to well-written content
to beautiful printing. The result is that you,
our readers, love what we deliver. What we
create and how we deliver is expensive, paid
for through the support of local business.
Without a strong economy, the model falls
apart. Pressure to become more “affordable”
(lower ad rates) would mean sacrificing our
commitment to the very things that make us
effective for our advertisers.
So, beginning in 2014, we will be taking
a break from publishing MD ARRIVE as
we hope for economic recovery. We will stay
tuned in to readers through periodic emails
(we send to nearly 10,000 – and you can sign
up on mdarrive.com) and Facebook (Followers
love our cocktails and recipes). We may even
start a blog. We would love to hear from you,
hear what you love about ARRIVE and what
you will miss. Tell us your story. Your participation will help us analyze how and when we
will publish again. You can still reach me at

What will we do now? We will focus our
energy on growing our sister publication, I95
BUSINESS. Now in its third year, it is a

Richard Bedsole, the chief instructor at The American Institute
of Floral Arts in Atlanta, finds few wreaths as traditional as the
Williamsburg-style holiday wreath. The colorful fruit placed in
eye-pleasing symmetry also provides a wonderful fragrance of
evergreen and citrus.
He starts with a 16-inch wire frame with a 22-inch diameter.
He uses fruit in sets of three except for lemons; the six lemons distribute the color and serve as a strategic weight in spots. Other fruit
selected: fresh red and green apples, green pears, bright orange tangerines and cranberries. Small pineapples may also be used.
Place the fruit in a pattern directly on the top or front side of the
wreath. His pattern features a red apple between a green apple and a
green pear to break up the color. He alternates the orange tangerine
placement with the red apple. He “clocks” the lemons by placing
them in a circular pattern.
The only way to attach heavy fruit to this wreath frame is with
wire. Use an 18-inch, 21-gauge wire, cut a sharp point on one
end of the wire with a pair of wire cutters. Push the sharp end
through the piece of fruit directly in the center and through the
middle.
Lay the fruit on the face of the wreath and pull the wire
around the wire frame of the wreath and cinch down (but not too
tight, otherwise the wire will rip through the fruit). Twist the
wire in the back around the wired wreath frame until it is secure.
Push the ends of the wire back into the evergreen so that it won’t
scratch the surface on which it is resting. Follow this process for
each piece of fruit carefully and strategically.
Use one bag of fresh cranberries to string them together with
a monofilament (fishing line) and a needle. Once you have one
long string of berries or several shorter strings, wrap the strung

establish an attractive pattern of your own creation.
Using the same monofilament-type line, cut several
pieces to wrap it around the string of the strung
cranberries and feed it through the front of the
wreath around the cranberry string and through
the evergreen. Tie it in the back of the wreath
around the frame. This will secure the cranberry
string and prevent them from falling loose around
the fruit.
Use a very strong metal hanger to secure the
wreath to the door. Enjoy for several weeks.

For the Birds: Winter Berries

Our feathery friends need lots of fuel
to stay warm in winter months. You
can attract birds to your yard by adding shrubs that produce nutritious
berries in winter. Most offer four
seasons of beauty and in addition,
provide shelter and nesting places.
Consider adding vertical layers to
attract a wide variety of birds. Some
prefer the canopy of tall trees, others
perch on understory trees and shrubs.
Use native species as they are more
likely to provide the right nutritional
values for birds in our area. Native
habitats create natural corridors for
birds to rest, feed and nest, especially
in areas impacted by development.
All of these are appropriate to our
zone.
beautyberry (Callicarpa dichotoma)
Showy clusters of purple fruit
make beautyberry attractive to both
birds and flower arrangers. The arching wands of berries last a long time
and provide nutrition and moisture
for birds in winter. Beautyberry
thrives in light shade but produces
more berries in a sunny spot. It can
grow 4 feet tall.
Chokeberry (Aronia arbutifolia)
Brown Thrashers, Cedar
Waxwings (pictured above) and other
songbirds are fond of chokeberries.
It grows 6-10 feet tall in sun or part
shade and tolerates moist and dry
sites. It spreads by suckering and is a
good choice for a hedge. This shrub is
indigenous to areas of North America.
American elder (Sambucus canadensis)
This spreading, 12-foot-tall shrub
best suits moist spots in sun or light
shade. Elder thickets give excellent
shelter and are favored nesting sites.
Enormous, creamy flower clusters the
size of dinner plates in summer precede purple berries in fall that attract
dozens of different birds.
American Cranberry Viburnum
(Viburnum trilobum)
American cranberry bush is a
handsome shrub that has white springtime flowers, maple-shape leaves that
turn bright colors in autumn, and red
fall berries. Brown Thrashers, Cedar
Waxwings, and other birds feast on
the long-lasting fruits, which serve
birds well in tough winters. It grows
8-12 feet tall and wide but can be kept
smaller with pruning.
Arrowwood Viburnum (Viburnum
dentatum)
Arrowwood is a particularly good
shelter plant for birds. Hardy and
adaptable, it grows 8-12 feet tall
and features pretty, creamy white
f lower clusters in early summer. In
late summer and autumn, bunches of
blue-black berries appear. Plant near
other viburnums to ensure good pollination. It is native to areas of North
America.
Wahoo (Euonymus atropurpureus)
A North American native counterpart to burning bush, wahoo likes
a moist, sunny spot. It produces bright
scarlet berries in autumn. It bears red fall
color and makes for an attractive informal hedge. Wahoo grows 20 feet tall.

With the latest technologies and
unique methods in jewelry design,
owners Scott McQuaid and Matt
Durante at In House Jewelers in
Jacksonville bring their customers the
best of custom jewelry.
After the market crash in 2008,
Durante said he noticed people were
more inclined to “restyle what [they]
have instead of buying new” when it
came to updating their jewelry collection. Investing in new technology
around this time allowed In House
Jewelers to handle the influx of custom design and repairs business they
receive year-round, keeping their
business “in house” rather than outsourcing. The Laserstar laser welder
offers the designers precision accuracy
on a piece without using a torch,
which is especially helpful when it
comes to antiques as it keeps the original integrity of the piece intact.
Durante and McQuaid take their
customers’ designs seriously, never
trying to impose a certain “mold” on
their creation. The Cad Cam computer design software allows them to
build pieces from scratch and show
the customer pictures of the projected
final product. This keeps the customer involved from start to finish, adding a special level of personal touch
to the process. They go above and
beyond to find the “best way to make
[the customer’s] idea work,” with the
end result being a quality product
made to stand the test of time.
In House Jewelers has become
recognized as one of the few jewelers who take the time to perform
the ancient Mokume Gane Japanese
metal layering technique. Mokume
Gane began in the 1600s as a
technique to create the handles of
Samurai swords and was applied to
jewelry in the 1800s. It is a very long
and delicate process of alternating
layers of different metals to create
an intricate and beautiful “wood
grained” finish look on rings, earrings
and pendants.

Greetings & Readings has expanded
and evolved since its opening as
a small, family-owned book and
card shop nearly 45 years ago. The
independent gift store specializes in
creating boutiques within the store
for high demand fashion lines like
Vera Bradley, Trollbeads, Brighton,
Life is Good, Alex and Ani, Scout,
Hobo Lodis and expanded jewelry
lines. Some selections in these miniboutiques are as extensive as a brand’s
independent store.
Greetings & Readings (G&R) is
now co-owned by the founders’ son
and son-in-law, Steven Baum and
Stephen Spund. The culture of the
store is to provide excellent customer
service and a low pressure shopping
experience with high quality merchandise. “We treat customers how we
want to be treated,” says Baum, “and
we strive to instill this in our staff.”
Due to the evolution of technology
and the popularity of e-books, independent bookstores like G& R have
had to update their business model to
remain a viable retail establishment.
“Our approach has been to condense
our selection of books, and add more
products, services and selection,” says
Spund. “We’ve added many gift and
fashion lines over the years, and have
grown into one of the region’s largest
independent department stores.”
“If you don’t change with the
times, you won’t be here,” says Baum.
As the store’s primary buyer, Baum is
always searching for hot new products
he knows his customers will like,
while maintaining a large selection of
popular novels and children’s books.

for dining and entertaining.
Over recent years, the clothing
department has grown to include more
lines and merchandise. Expanding on
the success of women’s fashion, they’ve
added men’s dress shirts, ties and belts.
Cutter & Buck offers a Ravens-themed
men’s dress shirt popular for Purple
Friday. The Ravens Fan shop includes
one of the finest collections of unique
NFL Ravens apparel from dress up to
dress down.
Being involved and supporting the
local community is just as important
to the G&R staff as offering quality products. The store hosts many
events, such as children’s story time,

book signings with local authors,
and health and wellness events such
as free walk-in flu vaccination clinics and Good Samaritan Hospital
book club events. Shopping days are

supports local Habitat for Humanity
projects by donating books to create a
starter library to recently built homes.
The David Simpson Gallery is an
important addition that supports local
artists. The gallery has been around
for about one year and features the
artwork of local and regional artists
and artisans in the first-floor entrance
to the store. The gallery exhibits
change about every two months and
all of the artwork featured is for sale.
