Lettuce Wraps with Balsamic Chicken
Item

4 Chicken Breasts
1 C Balsamic Vinegar
1/2 C Orange Juice
1/2 C Extra Virgin Olive Oil
4 Tbsp. Honey
1 Tbsp. Dried Basil + Salt & Pepper to Taste
8-12 Whole Lettuce Leaves (Butter, Iceberg or Romaine)
1 Pint of Sliced Strawberries
1/2 C Pecans
1/2 C Feta Cheese
Total Cost for Dinner- Serves 4
Cooking Instructions:
Use 1/2 of the balsamic
vinegar allotted to this recipe
for the marinade alone. Start
by making the marinade,
add 1/2 C of the balsamic
vinegar, the orange juice,
olive oil, honey, basil and
salt and pepper together and
mix in a bowl.
Rinse Chicken and pat
dry. Season Chicken with salt
and pepper. Pour marinade
over chicken and refrigerate.
Cook Chicken on the grill
over medium heat until no
longer pick, about 6 minutes
per side (depending on
thickness). Set aside and
cover to keep warm.
Prepare the balsamic
glaze; pour the other 1/2 C
of balsamic vinegar into a
small saucepan and cook
over medium low heat until

reduced by half. Sauce
should be thick enough to
lightly coat the back of a
metal spoon. Set aside.
Prepare the lettuce wraps;
gently peel leaves, wash and
pat dry. Chop chicken and
layer in the lettuce leaves,
followed by sliced
strawberries, pecans, and
feta cheese. Top it all with
the balsamic glaze and serve
immediately. ENJOY!
How to Navigate The Grocery Store
Successfully:
Ever go to the grocery store hungry therefore, wanting to
buy everything in site? Try having a snack before grocery
shopping. This will help keep your eyes on your shopping
list and not on the shelves!
Take a close look at our grocery store tips to help
navigate you through the grocery store successfully.
1.
ALWAYS make a list! (Not making a list can cause you to buy
unnecessary items that can be unhealthy and even wasted).
2.
Walk the Perimeter. Your healthy choices are usually around the
perimeter of the store, not within the isles. Have you ever noticed that
your produce, dairy, and meat are located outside the center isles?
(This will help to ensure you are making healthy decisions).
3.
Stick to Fresh and Organic.
4.
Grab a Basket, not a Cart! (Carts can obviously hold much
more than baskets, causing you to overload with excessive
unneeded items.) Stick to the original list.
5.
Limit your trips to the grocery store to 1 per week. Plan
out your meals for the entire week when grocery shopping.
This will ensure that you are sticking to your original weekly
meal plan.
6.
Plan Crock-pot Recipes! For those of you who work a 9-5
job and don’t feel like cooking an elaborate meal when you
get home, pre plan a crock-pot recipe so that dinner is ready
after work.
7.
Utilize Curbside Pickup at your local grocery store.
Maybe disregarding the inside of the grocery store all
together will enforce you to stick to your healthy lifestyle
plan a bit easier. Place your grocery order online in order to
keep you committed to healthy decisions without tempting
you to veer off to unnecessary isles.
