The Zell family Flögl opens the “Hotel am See”, a
small building where today’s restaurant/terrace is
located. However, one year later they must file for
bankruptcy.
The new owners, Carl & Therese Böhm, renovate
the hotel and it becomes an amazing historical
building. It is renamed “Grandhotel am See”.
Interesting detail: Carl Böhm earned his starting
capital by working as a waiter and coffee house
owner in Stuttgart.
Modern luxury is introduced with the installation
of electric light. The hotel boasts 25,000 overnight
stays that summer.
After the forced pause brought on by WWI, the
hotel is sold to Karl Pischkittl and experiences a
brief upswing in the 1930’s.
The hotel is used as lodging for US military and
is the victim of large fires that rob the building
of all comforts. Karl Gramshammer remodels it in
typical 1950’s style. The hotel also serves as the
backdrop for several films.
Guests once again enjoy their “Grand”, yet the
walls crumble. A storm tide causes substantial
damages to the cellar rooms.
While the hotel is in possession of a Swedish
time-sharing company, it is completely torn
down and rebuilt into a suite hotel with its’
original architecture.

2015
The time-sharing company introduces a balancing
method. The Holleis family acquires the hotel and
the neighbouring “Clima Hotel” and combine them
to create the GRAND HOTEL ZELL AM SEE.
With help from the new Imperial Café-Bar, the hotel
once again comes alive with good old Austrian spirit.
Dr. Holleis gets the famous Austrian artist Friedensreich Hundertwasser to build the well in the hotel
garden.
A modern wellness oasis called the GRANDSPA is
built in the 4th and 5th floors (formerly the Clima
Hotel). It boasts an amazing view of the dreamlike
mountain panorama.
The ground-breaking ceremony on 16.03.2015
marks the start of a new era for the GRAND HOTEL
ZELL AM SEE. Dr. Holleis managed to acquire
Casino Austria for Zell am See but, above all,
for the GRAND HOTEL ZELL AM SEE. In addition
to the construction of the casino, the Kaisersaal
imperial restaurant will be extended, the kitchen
rebuilt and another underground car park built.

Food & pleasure go together like holiday & relaxation. In the words of Goethe:
“No pleasure is temporary because the impression it leaves behind remains.”
Our kitchen team sets itself the daily challenge of leaving you with culinary impressions. The best confirmation for the team is of course the empty plates that
come back to the kitchen. In order to meet the desires of as many guests as possible we offer three different menus, speciality buffets and themed evenings. Our
half-board guests can enjoy refined combinations with a selection of 3 menus in
the evening: classic GRAND HOTEL cuisine, local Austrian cuisine and wholefoods.
The dishes are of course based on many products from the region and the Upper
Tauern National Park.
Our hotel patisserie creates two dozen types of cakes every day, which you can
enjoy on our lakeside terrace or in the nostalgic Kaisersaal restaurant with its cosy
snuggery that offers unique views of the lake and mountains.
In summer come and enjoy an early drink in the traditional “Pinzga Bräu am See”
restaurant. Our wine cellar is the ideal place for romantic occasions as a couple or
even for small wedding celebrations.
Let us indulge you and take the remaining culinary pleasures and impressions
back home with you at the end of your holiday.

Ingredients for 4 people:
4 eggs (size M)
180 g flour
400 ml milk
Delicious ..
PREPARATION
1. Pre-heat the oven to 200° (fan-oven 180°). Separate the eggs. Finely sift the flour.
Mix together the milk, flour, vanilla sugar and a pinch of salt.
2. Grate the rind of half a lemon and add to the mixture. Beat 2 egg whites with 30 g
1 packet vanilla sugar
of sugar until they are semi-stiff. Mix 1/3 of this into the batter, and then carefully

2 tsps icing sugar
3. Melt the butter in an oven-safe frying pan. Pour in the batter, spread it out evenly,
sprinkle in the raisins and cook for approx. one minute. Turn over the mixture
(and maybe quarter it) and cook for a further 8 minutes in the middle of the oven.
4. Remove the frying pan from the oven and cut the pancake into pieces using a fork.
Caramelise the rest of the sugar in another frying pan, add the chopped pancake
pieces to this, mix everything together and leave to cook for half a minute.
Serve warm and sprinkled with icing sugar.
WHERE DOES THE NAME „KAISERSCHMARRN“ COME FROM?
According to legend the figure-conscious Empress “Sissi” refused to eat this sweet dish, which caused the Emperor to quip: “Now
let me see what “Schmarrn” (mess) our Leopold has cooked up”. In another version of the story, an alpine cheese-maker (Kaser)
served the Emperor a “Kaserschmarrn” in the mountains ...

A CHAT WITH CHEF BERND BEREUTER
You’ve been loyal to the Holleis family of hoteliers for 20
years – that’s a long time!
That’s true. Having “travelled” through the hotel industry with my
wife for ten years, 1992 was the year that we decided to settle
down. My mother was German with Bohemian roots and my father was Austrian – hence the connection. And here I can find everything that I need for a good life: the cities of Innsbruck, Salzburg
and Munich are not far away and there is a world of relaxation on
the doorstep. Cycling, hiking, swimming – everything is possible. In
addition, there are also the best products imaginable for my job.
Our three styles of cuisine offer a wide diversity: classic GRAND
HOTEL cuisine, local Austrian dishes and fine whole foods.
And the guests can spontaneously decide what they would
like to eat in the evening?
Exactly. Just like in an a la carte restaurant they can create their
own menu from a choice of twelve dishes. Our wine list also offers
fine national and international wines.
Is there anything that your guests particularly love?
The hearty regional specialties are very popular, as are the Asian
and Mediterranean starters. Some of the guests look forward all
week to our themed evenings such as the “culinary journey through
Austria” and the buffet with Pinzgau delicacies.
You almost forgot the almost sinful old Austrian style dessert buffet …
Yes, you’re right (laughs). A sin that’s enjoyed unbroken popularity
for twenty years. Holidays are for celebrating after all!

The best way to start is with a glass of water from the “Schneckenbrunnen”.
Engraved in the stone are the words: “Whoever drinks from this water will
live longer”. And let’s be honest: what could be better than unwinding on
holiday?
SAUNA MASTER Klaus is very modest. He doesn’t want us to make too
much fuss about him here. Even though he has studied dozens of sauna techniques in more than 15 countries; starting with the classic sauna
countries such as Finland, Russia, Norway and Sweden and then moving
to Belgium, Italy and Germany and even Nigeria. Klaus can be found in our
GRANDSPA two or three times a week where he gives tips on how to use
the sauna properly and detoxify, blends various bio scents, hair care products and peelings, and explains precisely how to use these to their best
advantage in the different saunas. For example, to achieve sensationally
silky smooth skin. Try them out!

In the TEPIDARIUM, the most famous bath from antiquity, a type of fe-
ver temperature is generated at 39 ° C which relieves the immune system,
strengthens the body’s defences and fights viruses. The classic STEAM
BATH has also been used for a long time in alternative medicines. Temperatures between 40 and 55 ° C combined with 80 to 100 % humidity boost
the circulation and metabolism, unblock the airways and release tense
muscles. The BRINE STEAM BATH is a variant that uses finely dissolved sea
salt which, together with essential oils, deeply cleanses and nurtures the
entire breathing zone. For a HERBAL BATH you should allow between 20
and 30 minutes. Herbal extracts have both a balancing and revitalizing effect and a pleasant radiant heat that was used in Roman thermal springs.
