I would like to officially welcome everyone to summer at Innisbrook. Let
me start by wishing all of our dads a very happy Father’s Day. June brings
us lots of exciting and fun family activities. Be sure to take advantage of
our ‘100 Days of Summer’ menus at Market Salamander Grille, Osprey
Bar and Packard’s Steakhouse. Beginning June 9, Innisbrook offers its
tennis, golf and day camp programs for our younger members.

A Note from the General Manager
Golf Overview:

After the input I have received concerning course conditions from our Owners, Members and Resort Guests, the following are bullet points of the steps
we are pursuing to address the issues:
•W
e have completed a site inspection of the courses by Tom Sasser an Agronomist
Consultant that has worked on over 120 courses with the Nicklaus organization.
He will be evaluating scope of work needed and estimated costs associated with
addressing tees, greens, fairways and bunkers on Copperhead. As well as offering
recommendations for Island, North and South courses.
•W
e have received the evaluation from Sasser for the Copperhead Course and I
will be scheduling a meeting or conference call with the PGA Agronomist, based
upon his availability, to compare notes and confirmation of the scope of work.
•W
e are soliciting the opinion of an additional Agronomist Consultant referred by
Salamander for evaluation of the courses.
•A
s you can see work is underway on 1st Tee of South Course to replace entire green
as well as addressing concerns on number 2 and 3 greens as a capital expense.
•P
roposing a capital project to repair and expand identified tee boxes for the white
tees on Copperhead that receive heavy usage and need redesign.
•S
ubmitted final bids for total replacement of the golf grounds equipment. This
very large investment will be conducted in phases over the next 3 to 4 years.
•W
e will continue to update these bullets points with definite plans and schedules
as they become available through the Pipeline and Condo Association Newsletter.

Yoga/Gentle Stretch Yoga has been in existence for 5,000
years. The yoga class consists of breathing, gentle stretching, smooth

Pilates Reformer Fusion Attain total body conditioning
moving from one exercise to another while adding a cardio
workout from fusion. Participants must register for this 45 minute

Aqua Blast
Aqua Blast is not just a dip in the pool but an effective
and safe way to get your body in shape. Beginning with a warm up and
slowly moving into cardio moves, ending with an upper body workout.

Zumba Love to dance? Get in shape with this Latin inspired 45

Table Talk with Chef Andrew Coniglio
Prosciutto and Goat Cheese Quiche
Quiche is not just for breakfast. Quiche is also perfect for a light lunch when paired with a
salad on a hot summer day. I will share some basic tips while cooking quiche.
Yield: 4-6 people
• 1 Each 9 Inch Pie Crust (you can use a frozen,
pre-made product or your own recipe)
• ½ Medium Yellow Onion (Diced)
• 4 Ounces Prosciutto (Cut into Thin Strips)
• 6 Ounces Goat Cheese (Crumbled)
• 1 Ounce Baby Spinach
(Blanched and Squeezed)
• 3 Sprigs Fresh Thyme (Picked)
• 3 Large Eggs
• 3/4 Cup Milk
• 1/2 Cup Heavy Cream
• Salt & Pepper To Taste
Method
1. Par-Bake your pie crust by preheating your oven to 350 degrees, line the pie crust with parchment
paper and add dry beans to weight down the crust so the middle does not puff up
2. Place in oven for and bake for 20 minutes, remove beans and parchment paper and bake for
another 10-15 minutes just as it is starting to brown, cool
3. While the crust is baking you can sauté your onions in a little olive oil until brown to get the sweetness
from the natural sugars, blanch your spinach and squeeze dry (you want your onions and spinach fully
cooked and pat dried so the moisture does not come out while cooking the quiche)
4. In a separate bowl whisk together eggs, milk, cream, salt and pepper until frothy (this is incorporating
air into the custard and will make the quiche light and fluffy)
5. Sprinkle half of the cheese on the bottom of the crust, top with prosciutto, onions, spinach and
then the remaining cheese
7. Bake in 325 degree oven for 30-40 minutes until the edges and center are set
8. Let quiche sit for 4-6 minutes before cutting and enjoy

6. Pour egg mixture into pie shell over the filling (place pie on cookie pan just in case the egg
mixture overflows to keep your oven clean)

The Fox Squirrel (Sciurus niger) weighs from one to three pounds, and exhibit color
variations which range from a buff color to gray, and in some instances black. The under
parts are usually lighter, and typical specimens have white noses and ears with black
faces and feet. They are noted for their long, bushy tails and for their strong hind legs
which allows them to leap easily from place to place. The Fox Squirrel probably was
named after the fox because of its comparatively large size and peculiar way of running
along the ground which gives the appearance of a small fox. They spend more time on
the ground than in trees and often attempt to escape enemies by running rather than
climbing. The Fox Squirrel may be found throughout Florida in open woods, pine and
cypress stands, and mangrove swamps, but they are protected from hunting throughout
the state. Of the four subspecies found in Florida, two are listed as protected species.
Innisbrook Associate Scholarship Fund’s Awards Reception
This year’s Innisbrook Associate Scholarship Fund’s Awards Reception was
held on May 8 in Stirling Hall. Twelve (12) scholarships were awarded to the
children of Innisbrook associates totaling $31,000. The Scholarship Board,
Selection Committee, the recipients and their families wish to thank the
Members and other donors who have so generously supported the Fund. Your
donations have provided financial assistance to these students for college.
