The Carroll County Council on Aging meets the first Thursday of
each month at 10:00 a.m. at The Friendship Center. The next meeting
will be held MAY 5th. These are open to the public and we
encourage your participation. Current Officers are: President Adele Miller, Vice President - Donna Walters, Secretary- Beulah Bland,
Treasurer –Ruth Ann Tinlin, and 3 Trustees - Bernard Yost,
Roberta Eckley and Ollie Scott.

LEGAL SERVICES
Funds are provided to pay up to $250 per person per year for a wide
variety of legal services from participating Carroll County attorneys.
CONGREGATE MEALS
A hot nutritious meal is served each day at the Senior
Citizens' Friendship Center and our satellite sites in
Malvern and Sherrodsville at 11:30 am. The Center’s meals
are no salt added and diabetic substitutes are available.
This meal gives seniors the opportunity to gather together
and alleviate the loneliness of eating alone. It is very
difficult for our nutrition coordinator to plan and prepare
the meals each day without an accurate count, so Please
call to make your reservation by 8:45 a.m.

CRUSTLESS VEGGIE MINI QUICHES
Ingredients
Pam Original No-Stick Cooking Spray
6 saltine crackers, finely crushed
2 tablespoons grated Parmesan cheese
2 cups frozen broccoli florets
1/2 cup frozen whole kernel corn
3/4 cup shredded reduced fat Cheddar cheese
Carton (16 oz each) Egg Beaters® Original
Directions
Preheat oven to 350°F. Generously spray 12 regular
muffin cups with cooking spray; set aside.
Mix together cracker crumbs and Parmesan cheese in
small bowl; set aside. Place broccoli in medium microwave-safe bowl with 1 tablespoon water; cover. Microwave on HIGH 2 minutes; drain well. Chop into smaller
pieces. Spoon broccoli evenly into muffin cups; top evenly
with corn, crumb mixture and Cheddar cheese. Pour Egg
Beaters evenly over filled cups.
Bake 18 to 22 minutes or until puffed and knife inserted in
centers comes out clean. Let stand 2 minutes; run table
