This scrubby gnarled tree is part of the history of the Southwest. Indians used it for many things, as medicine,
as food and even as liquor, made from the beans. Ranchers "cussed" it as useless scrub tree that ate up the ranch land.
Later in the century people discovered its qualities as a wood. It has the hardness of mahogany and produces
an intense heat when set ablaze. It is ideal for preparation of steaks or barbeques because the heat sears the meat
and seals in the juices. The smoke adds a distinct flavor.
Mesquite doesn't grow in just one place, but is cultivated and used worldwide.
Because of its unique cooking
qualities, mesquite has come of age among cooks worldwide.
It is estimated that in the next year about 19 million U.S. citizens will join the "pros" and use mesquite wood
for the first time. The "pros" use it because it is a wonderful cooking tool that burns better, longer, and hotter than
other wood and adds a subtle, delicious flavor.
It has a predictable flame and because it cooks hotter, food does not have to be left on the grill as long, which
means meat won't dry out or be overdone. The mark of a good steak - Mesquite broiled - is truly incomparable.

CIMARRON RIVER
The first geographic area to be called Cimarron was the river with its head waters in New Mexico and then
ranging through the panhandle, Kansas and into Oklahoma where it ends in Arkansas. Although Apaches, Comaches,
Kiowas, and other Indian tribes hunted along the river, the first European to "discover" and name Cimarron was
Coronado,
a Spanish explorer, who was searching for the mythical "seven cities of gold".
CIMARRON CUT-OFF
The old Santa Fe Trail from Missouri to Santa Fe could be made 50 to 60 miles shorter by using the Cimarron
Cut-Off. This cut-off, in the corner of Coronado, was somewhat steeper and through the mountains, but could cut-off

CIMARRON STRIP
The "Strip" was an area about 34 miles long and is now known as the Oklahoma Panhandle. In the frontier
days it also called the Neutral Strip or No-Mans Land. After Texas ceded its claim to the area to the U.S. in 1850, no
other Territory seemed to want it. The Strip was ignored when the boundaries of surrounding Territories were formed.
Cattlemen brought herds into the Strip and absence of laws also brought in criminals. Farmers came and built sod
houses, but were harassed by outlaws and were unable to record their land claims. In 1868, squatters began to try to
establish law and land registry. They drew plans for a Territory of Cimarron and in 1877 held election and sent Dr.
Owen G. Chase as a delegate to Congress to seek official recognition. It never happened, but instead was made a part
of Indian Territory and subsequently Oklahoma.

CIMARRON RUN
In 1893, the last land run was The Cimarron which opened the Cherokee Outlet for homesteading. The Outlet
included an area of 6.5 million acres from around Ponca City in the east, to Woodward and Panhandle in the West.

THE NOVEL & THE MOVIE
The best-selling novel "Cimarron" by Edna Ferber depicted life's romances and struggles in Indian Territory,
on the great cattle ranches, the discovery of oil, statehood, the decline of the Indian tribal independence and so on
through the first World War. It was made into a movie in 1931. Cimarron starred Richard Dix and Irene Dunne and
won an Oscar for "Best Picture". It was.the last "Western" to win and Oscar until "Dances With Wolves". There was a
remake of the Cimarron in 1960 which starred Glenn Ford, Anne Baxter, and Maria Schell.
The Cimarron will no doubt continue its history-making ways, and you will see that Cimarron, the restaurant,
is a virtual EI Dorado of great foods and spirits.
