ArtiGras To Feature Abacoa Resident Who Turned Love
Of Underwater Diving And Photography Into A Career
For one Abacoa resident when the ArtiGras Fine
Arts Festival starts to set up on Central Boulevard and
University Drive this Presidents’ Day weekend, it means
more than getting ready to have fun strolling through
the booths of fine art, it means preparing to participate
as one of the 300 talented artists from around the nation
who were juried into the show.
Photographer Christopher Doherty will be that
resident who has turned his love for underwater diving
and photography into a career. Doherty travels the world
to capture amazing and unique underwater scenes to help tell
the story of the ocean and the need for conservation.
“I am driven by my determination to capture the beauty
of the ocean in my images, so I can educate others in the
world to help preserve this ecosystem,” said Doherty who is
showing for the third time in ArtiGras.
To help bring out colors and depth in his images, Doherty
prints on metallic paper bonded with acrylic. The glossy
finishes sharpen the images, while the metallic appearance
of the paper creates images with exceptional visual interest
and depth.
You can check out Doherty’s work during the 30th edition
of ArtiGras. Festival hours are 10 a.m. to 6 p.m. Saturday,
Feb. 14; 10 a.m. to 6 p.m. Sunday, Feb. 15; and 10 a.m. to 5
p.m. Monday, Feb. 16. Along with the art, ArtiGras will also
feature live music and artist demonstrations that provide an
art experience like no other in South Florida.
“One of the things I like about ArtiGras is that it is greatly
supported by the local community,” said Doherty.

As in years past, children
12 and under are admitted free of charge, because they have
their own ArtiKids area where they can participate in a
wide variety of interactive art activities. Children of all ages
can make clay creations, paint pictures and enjoy hours of
playing in the fun area or buying art in the Tiny Treasures
tent benefiting Quantum House.
The ArtiGras Fine Arts Festival is presented by Palm
Beach Gardens Medical Center and produced by the
Northern Palm Beach County Chamber of Commerce. The
30th anniversary of ArtiGras, which benefits school art
programs and local charities, has been ranked as one of the
top 50 art shows in the nation for many years and expects
around 85,000 patrons to attend the show this year.

Commissioner’s Update
Several Park Projects Slated For 2015

The DuBois Pioneer
Home, located atop an Indian
midden in DuBois Park was
originally built in 1898 and
is the oldest house standing
on its original site in Palm
Beach County. The home is
located on top of one of the
best studied ancient Native
American sites in the state of
Florida. Artifacts discovered on site indicate that the property
has been utilized by humans for at least the past 6,000 years.
In 1971, the house and most of the surrounding property
was sold to Palm Beach County. The DuBois Pioneer Home
Museum opened in 1977 and was placed on the National
Register of Historic Places in 1985. Unfortunately, the home
has been closed to the public for several years while the
interior’s first floor and exterior were renovated. The county
is working with the Loxahatchee Guild to provide period
furnishing, train docents and line up volunteers so this historic
structure can be opened once again to the public for tours.
The DuBois Park Pineapple Packing House is also
located within the park, on the site of the former Kindt
Estate property. The packing house was moved down river
by barge and relocated to its current site in the late 1890s by
Harry DuBois. This structure is one of the oldest remaining
wooden structures in Palm Beach County and it was acquired
in 2008 by Palm Beach County as part of a waterfront land
acquisition. The structure is in substandard condition and is
in need of renovation. The county has set aside capital funds
to renovate the exterior, including a new foundation and
structural repairs. The exterior renovation project is expected
to commence in the spring of 2015. The restored house will
showcase information on the DuBois Pioneer Homestead,
the Jupiter Inlet Indian mound complex and the local flora
and fauna of the area.
At Jupiter Beach Park, the county recently completed an
important pathway and environmental restoration project.
Abacoa POA Meeting Notices
Official notification is posted via the bulletin board outside the Abacoa POA office as well as the www.
Abacom.com Web site. Members may now download Abacoa POA agendas and minutes from our Web site.
The project included installation of over 1,400 linear feet of
ADA compliant concrete pathways, which provides visitors
safe access to the Jupiter Inlet and the ocean. New picnic
tables have been installed, exotic vegetation was removed
and native trees were planted to provide shade along the new
pathways and picnic areas.
Improvements continue at Riverbend Park. Plans are
underway to construct a new 40’ x 47’ covered area and public
restroom. Additional improvements include 101 new asphalt
parking spaces, 300 overflow grass parking spaces and new
ADA accessible routes and trails. Construction is expected
to begin this summer. At the Loxahatchee Battlefield Park,
historical markers were installed in 2014 that identify points
of history during the Jessup battle with the Seminole Indians.
Construction is scheduled to begin this spring on
Waterway Park, a new boat launching facility, which is
located on the west side of the Intracoastal Waterway, south
of Indiantown Road. When complete, Waterway Park will
feature 52 boat trailer parking spaces, 24 car parking spaces,
three concrete boat ramps, four 40’ long floating staging
docks, a restroom, fishing pier and a yacht basin with 170
linear feet of floating staging docks. Construction is expected
to take approximately one year to complete.

This year on Valentine’s day you get to celebrate your heart

County CPR day! Thanks to technology, learning the: who,
what, where, when, why and how of CPR is easier than ever.
• What- CPR stands for cardiopulmonary resuscitation,
simply put you are manually pumping the heart until it can
pump on its own again.

activity. Here’s a brief update
on some other exciting things
going on around Abacoa and
around Town:
Abacoa Community Park
Work continues on the expansion of Abacoa Community
Park (formerly known as South Jupiter Community Park).
134 additional parking spaces will be ready and available in
time for spring training, and work on all of the facilities and
fields is on-track for completion in July. Once construction is
complete, the turf on the athletic fields will need some time
to thrive, so public access and use of the fields will not be
permitted until August.

views and the businesses in the Inlet Village area.
2015 is moving quickly forward, and it’s shaping up
to be a wonderful year for Jupiter. I hope that you are able

to sign up for Jupiter U, our citizens’ academy (see www.
jupiter.fl.us/jupiteru). The program runs in March, and
includes tours and sessions that help residents learn about

Council and CRA Commission business at meetings and

the first and third Tuesday of each month at 7 p.m., and the
CRA Commission meets on the second Wednesday of the

Bicycle/Transit/Trolley
Committee
In the January newsletter, Councilor Harrison mentioned
forming a Bicycle/Transit/Trolley committee this year. I
would also like to see an organized group that could address
some of the bicycle and transit issues in Abacoa, to act as
a voice for the community and have an impact on future
improvements to facilities and provide input for future
decisions. Look for more information soon on the formation
of this group, or if you know of an existing group that might
take this on, please let me know.
Institute For Healthy Living
You may have noticed some clearing taking place between
Central Boulevard and University Drive, west of Corporate
Way. In December, the town approved moving forward with
a 235,445-square-foot nursing and/or convalescent facility
and an assisted living facility. Although the project had
been previously approved, it came back before the council
because of a change in partnership for the project to include
the Scripps Research Institute. Plans for the facility include
129 post-acute and rehabilitative care beds, 70 assisted living
beds, 30 memory care beds, 17,545-square-feet of medical
office, 5,200-square-feet of research and development, and
3,090-square-feet of office.
Central Boulevard Traffic
Management
During a discussion on traffic management in Town
at the regular Town Council meeting on Jan. 6, council
discussed some of the issues around safe travel along
Central Boulevard. Many have raised concerns regarding
this issue, and Town Council and staff are discussing some
design strategies that may help to slow speeds and increase
safety, particularly at the intersections of University and
Dakota Drive. More analysis and study is needed, but there
may be a way to curve the roadway in both directions in a
pattern that encourages slower speeds (to see a conceptual
illustration, visit www.jupiter.fl.us/agendas and view the
item on the Jan. 6 Town Council agenda). Palm Beach
County, who has jurisdiction over the roadway, is open
to discussing options, and the Town and county will work
together to identify specific solutions.
A1A Inlet Village
Roadway Project
Work is in full swing on the first phase of the project
to reconstruct A1A from Jupiter Beach Road to U.S. 1 in
the Town’s Inlet Village area. This important first phase
involves putting utilities underground, and installing a
master stormwater system. Recently council discussed how
to incorporate what is known as “Traditional Neighborhood
Design” – or TND – concepts into the existing plans for the
second phase of the project, which involves streetscaping,
pedestrian facilities and bike lanes. Ultimately we decided
to proceed with a modification of the original plans that
includes decreased travel lane widths, increased bike lane
widths, colored bike lanes, and additional street trees. The
overall construction project is expected to take about 18
months to two years. Expect some lane closures throughout

1. Be O.K. with your relationship status.
Instead of thinking about what you don’t have, think

a relationship. My research shows that good catches are
O.K. on their own, but they prefer romance “with the
right person.” A good catch has high self-esteem and is
attractive, like you. Likewise, you are not going to date just

in yourself. It would be easy to sequester a mate if you had
zero standards! Know that your future romance is coming

immediately, and you will love how empowering this feels!

The mission of the Property Appraiser’s Office is to
prepare a fair and equitable tax roll according to Florida
statutes, administer all exemptions, maintain up-to-date
ownership records and maps, and serve the public in a
courteous manner.
Each year the property appraiser must determine the
market value of all property within Palm Beach County.
Market value is typically what a property would sell for in
an open and competitive market. By Florida law, only sales
transactions that occurred during the previous year can be
used to establish values as of Jan. 1 of the current year. For
2015 values, that means we will look at sales that occurred
during 2014 to estimate values for the 2015 tax roll. For
example, if you sold your residence in 2014, its selling price
would be used together with other comparable sales in our
analysis of the market.
Our deputy appraisers inspect all properties in the county
at least once every five years. Between inspections, property
values are adjusted annually to reflect recent sales activities
in the neighborhood.
The filing period for homestead and other exemptions ends
on March 1. You can file for exemptions in person at the North
County Governmental Center at 3188 PGA Blvd., or online
at pbcgov.com/PAPA. Existing homeowner exemptions are
renewed automatically by the Property Appraiser’s Office.
Renewal cards are mailed Jan. 1 each year to every residential
property owner who has an existing homestead exemption.
In 2014, the approximate number of exemption renewals was
311,200. The number of new applications taken in 2014 was
20,882.
Each year our homestead fraud team investigates and
removes exemptions that have been received illegally. In
2014, we recovered $1,440,061 in tax dollars from taxpayers
claiming an improper exemption.
Ownership records and maps are updated regularly for
every property in Palm Beach County. In 2014, the number
of properties in Palm Beach County was 630,701.
Keeping track of current owners, values and exemptions
requires the efforts of a highly skilled staff of dedicated public
employees. I am proud that our office is recognized by the
International Association of Assessing Officers as having
the largest number of certified professional designees of any
single jurisdiction in the world.

Northern Notes
What Is A Non-Ad Valorem Assessment
and How Is It Determined?

through Palm Beach
County’s Tax Collector’s
Office as allowed by Florida
law. Each acre or part thereof is assessed based on the
services provided to the property. Northern is comprised of
multiple “Units of Development,” which have varying levels
of service and assessments. Assessments (Non-Ad Valorem)
require developed and undeveloped acres to be assessed by
Northern at the same level. These assessments are not ad
valorem taxes or millage taxes that vary depending on the
appraised value of the property.
The Non-Ad Valorem assessment is an assessment or
fee, which is levied on certain properties for the purpose
of defraying all or part of the cost of a specific capital
improvement or service. This specific capital improvement
or service must be deemed to benefit the property being
assessed. Sometimes referred to as a special assessment,
the property value is not taken into consideration when this
assessment is calculated.
The process for determining the assessment of benefits
and levy of drainage assessments begins when the Northern
Board determines that it will proceed with a proposed plan
of improvements. At that point, the district engineer is
required to prepare a final version of the plan and a report
called the “Engineer’s Report.” The report determines the
amount of benefits and the amount of damages that will
accrue to the land upon implementation. The report also

estimates the cost of the proposed plan and assesses the
benefit to the land to be derived from implementation of
the plan.
After the engineer’s report and plan have been approved
by the Board, Northern is authorized to levy special
assessments upon lands to which benefits have been
assessed. These special assessments may be used to pay
the cost of implementation of the plan or may be used to
pay debt service on bonds issued to raise funds for such
purpose.
In addition to special assessments levied to pay debt
service on bonds, the district may levy annual assessments
to maintain improvements described in a plan.
Each year, Northern levies Non-Ad Valorem assessments
on all taxable real property within each of its Units
of Development. A Unit of Development is simply a
geographical area established by Northern’s Board of
Supervisors within which Northern provides construction,
operation, and/or maintenance of public infrastructure.
Northern levies Non-Ad Valorem maintenance assessments
for the annual operation and maintenance of its facilities in
each Unit of Development. These facilities include roads,
lakes, canals, storm water systems and preserves. In some
cases, Northern levies Non-Ad Valorem Debt Service
assessments to make principal and interest installments
on bonds it has issued in order to fund the construction of
public infrastructure within that Unit of Development. Your
assessment pays for the operation, maintenance and debt
service (if applicable) for only your Unit of Development.
Northern’s Maintenance and Debt Service assessments
appear in the Non-Ad Valorem section on your property
tax bill, which is issued by the tax collector of Palm
Beach County on or about Nov. 1 of each year. Northern’s
Maintenance and Debt Service assessments are collected
by the tax collector of Palm Beach County together with all
Northern Notes on page 10

Doesn’t Work For Prostate
Patients
Prolific writer and renowned expert on men’s sexual
health, Mark A. Moyad, M.D., MPH, co-director, Men’s
Health Program, University of Michigan, Ann Arbor, will be
among eight esteemed physicians and researchers presenting
at the Eighth Annual Ingalls Memorial Prostate Health and
Cancer Seminar that will be held on March 7 at the Scripps
Research Institute in Jupiter.
Based on his extensive studies, Moyad has authored over
130 published medical journal articles, and is the co-author
or author of nine books including: Promoting Wellness for
Prostate Cancer Patients, Dr. Moyad’s No BS Health Advice:
A Step-by-Step Guide to What Works & What’s Worthless and
Dr. Moyad’s Guide to Male Sexual Health.
Moyad has lectured on prostate, breast and a variety
of other cancers in addition to cardiovascular disease and
general health in all 50 states and in almost every country.
He also consults for most major magazines and television
shows devoted to health in the United States.
Having received his Master’s in public health from
the University of South Florida, Tampa, with a focus on
epidemiology and dietary supplements, we are pleased to
welcome Moyad back to this region for this well-regarded
educational program that draws patients and medical
professionals from around the state.
Organized by Juno-based Health Information Research
Inc. (HIR), a 501(c)(3) Florida nonprofit organization, the
Ingalls Memorial seminar was created in honor of Brad
Ingalls, a former Jupiter and Boston resident who died
from prostate cancer. Frustrated by the lack of information
and clinical trials for this disease, he funded the Ingalls
Foundation to support medical research and programs to
increase awareness and education of prostate cancer.
HIR Executive Director David S. Most, Ph.D., who
worked closely with Ingalls during his fight against prostate
cancer, carries on his passion for educating patients. Through
his continuous study of research papers, attendance at
professional conferences and involvement in national prostate
groups Most stays current with the leading-edge work in the
field and assembles a prestigious panel of physicians and
scientists each year to participate in the local event.
Among the outstanding presenters for the Eighth Annual
Ingalls Seminar are Faina Shtern, M.D., president and CEO,
AdMeTech Foundation, Boston, who will discuss advances
in diagnostics utilizing MRI techniques with special contrast
enhancing methods. The new MRI imaging tools improve
the accuracy of detection and reduce risks from surgical
procedures.
Michael P. O’Leary, M.D., MPH, professor of surgery,
Harvard Medical School, senior urologic surgeon, Brigham
and Women’s Hospital, Boston, will present Benign and
Inflammatory Diseases of the Prostate, a familiar condition
to many men of a certain age. Board certified in urology,
O’Leary has been identified as one of America’s Top Urology
Doctors by Castle Connolly and was named a top urologist
by Boston Magazine.
The use and effectiveness of new genomic-based screens
will be addressed by two speakers. Sanoj Punnen, M.D.,
MAS, urologic oncologist and assistant professor at the

Northern’s Non-Ad Valorem assessments, other NonAd Valorem assessments and your Ad Valorem taxes
if you pay your property tax bill in November.
Each year, Northern prepares a budget for the
upcoming fiscal year (Oct. 1 to Sept. 30). The
preliminary budget is proposed by the staff and
presented to property owners, homeowners, property
managers, residents and Northern’s Board at public
meetings. The property owners have the opportunity
during these meetings to ask questions about the
proposed budget and to make requests for budget
modifications. The final decisions regarding the
budget are made by the Board of Supervisors. The
Board carefully considers the public comments/
requests when approving the final budget. When
adopted, the budget becomes the official financial plan
of Northern’s departments. Consequently, this makes
preparation of the budget one of the most important
duties performed each year.

probably something gone wrong in your setup.
You’ll notice counterbalanced putters come in a greater range of shaft lengths. There’s a little wrinkle
to gaining the maximum benefit from a counterbalanced putter. You probably don’t want to grip the
putter at the very end of the handle. So take your time getting the length of shaft that will allow you
to grip down a little and to still get into a good posture, setup and alignment.

Scripps Florida Scientists Develop Novel Platform
For Treatment Of Breast, Pancreatic Cancer
Scientists from the Florida campus
of The Scripps Research Institute
(TSRI) have identified a novel synthetic
compound that sharply inhibits the
activity of a protein that plays an important role in the
progression of breast and pancreatic cancers.
In the new study, to be published in the February 2015
print edition of the Journal Molecular Pharmacology, the
scientists showed that the compound, known as SR1848,
reduces the activity and expression of the cancer-related
protein called “liver receptor homolog-1” or LRH-1.
“Our study shows that SR1848 removes LRH1 from
DNA, shutting down expression of LRH-1 target genes, and
halts cell proliferation,” said Patrick Griffin, chair of the
TSRI Department of Molecular Therapeutics and director
of the Translational Research Institute at Scripps Florida.
“It’s a compound that appears to be a promising chemical
scaffold for fighting tumors that are nonresponsive to standard
therapies.”
LRH1 plays a crucial role in breast cancer through
its regulation of genes involved in hormone synthesis
and cholesterol metabolism – also key risk factors in
cardiovascular disease.
LRH-1 has also been
implicated as a tumor
promoter in intestinal
and pancreatic cancer.

potential therapeutic because of its lack of impact on cells
that do not express LRH1, which could mean few potential
side effects.
“It’s a novel mechanism that needs more study,” he said.

A Hot Sixth Season Of Cool Live Music, Thursdays,
6 to 8 p.m. Midtown’s Music On The Plaza
If you have not been to one of Midtown’s Thursday night free concerts, you’ve
definitely been missing out on one of the best live music series in the county. Now
in its sixth season, Music on the Plaza is held in Midtown’s open-air plaza every
Thursday night from 6 until 8 p.m., attracting an all-ages crowd. For those new to
the area, Midtown sits on PGA Boulevard just west of Military Trail and east of the
Florida Turnpike, on the north side of the road. The plaza, bordered by the trendy
Christopher’s Kitchen and family friendly Saito’s Japanese Steakhouse, provides a
cozy outdoor setting where hundreds of people gather each week to socialize, eat and
watch an eclectic selection of live music.
February marks the halfway point of the 12-week series. Kicking off the month on
Feb. 5 is the South Florida high-energy five-piece band The People Upstairs, mixing
funk, rock and reggae. On Feb. 12, experience the everlasting pop music of The Beatles
with hugely popular tribute band, Across The Universe. The Bluefire Band take to
the stage on Feb. 19 with Randi Fishenfeld out front on violin, mixing classic rock,
R&B, and country fusion. Finally, on Feb. 26, award-winning JP Soars brings his Gypsy Blue band to Midtown to play a
variety of old-time blues classics in the style of Django Reinhardt.

If you heard girls
screaming “Nah, nah,
nah, na-na-na nah, bushka,
bushka!,” then you know
the Jupiter Seahawks of the
Jupiter Tequesta Athletic
Association (“JTAA”). For
those of you who don’t,
welcome to Florida’s
largest Fast Pitch Softball
Program.
Hard work pays off. For
this team of 7 and 8 year
old Jupiter Seahawk girls,
they really didn’t know what they were getting involved in. They liked running, hitting and
throwing. They liked the girls on their team and their coaches seemed nice, although stern
at times. They loved singing songs and cheering for each other.
It is a story of many fast pitch softball teams. It is a story of hard work, sacrifice and a
commitment for perfection.
Not many teams in any sport play their first 31 games without a win. Not many teams
can stay together that long to get to their 31st loss. The parents can’t take the pain of loss
and failure. Who wants to watch their kid lose, cry or look silly? For many parents and kids
of competitive sports, they may blame the coaches. They ask many questions. How can the
other teams be that much better? Why are we losing? Should we go play elsewhere? Yes,
everyone loves a winner.
For the Jupiter Seahawks, the parents and kids asked how they could get better. What are
our strengths? What are our weaknesses? What do we need to do? Who can help us?
After the 23rd consecutive loss, a two-week total of losing eight games by a total of 1116, and a leap of faith, the coaches and parents agreed it was time to seek professional help.
The rest was history!
With the professional assistance of Rally Sports and Rhino Softball, a belief from the
parents, and a commitment for perfection from 7 and 8 year olds like you have never seen,
the Jupiter Seahawks began a climb into relevance. After eight more losses, they recorded
their first win. After their first win, they lost four more and on a day when you thought the
end was near, they blossomed. Rallying for three straight, last inning walk-off wins, the
Jupiter Seahawks placed third at the Class B State 8u Championship!
What’s A Garden Tower?

If you’ve been by the Abacoa
Community Garden lately, you
may have noticed a tower of
plants near the northeast corner
– that’s our new Garden Tower,
which was generously donated!
Basically it’s a big white barrel
with plant-filled pockets all
around it. The best part is the tube
down the center which houses a
colony of red wiggler worms.
Those little guys turn kitchen
scraps into organic fertilizer,
which they then distribute
throughout the barrel.
We are experimenting with
assorted plants in this first effort,
and so far most are thriving:
mustard greens, kale, spinach,
broccoli, cabbage, cucumber,
cantaloupe, mint, parsley and
even a couple of strawberry
plants. A tower like this would be
a great addition to anyone’s patio,
where minimal effort would
produce a constant supply of
fresh greens and herbs in a small
space. Stop by and see what you

You know it is special when the parents from the other teams you beat are coming over
and congratulating you and telling you they were rooting for you.
Since that fateful day in July, the team has since gone on to win the Jupiter Fall Classic.
The Jupiter Fall Classic is a 17-year fall league hosted by the Jupiter Seahawks at Jupiter
Community Park. The Jupiter Fall Classic hosts teams from Palm Beach County, the Treasure
Coast, Okeechobee and Broward County.
This spring 200-plus girls from Jupiter will continue the tradition of singing “Nah, nah,
nah, na-na-na nah, bushka, bushka!” up at Jupiter Community Park. Recreation practices for
girl’s ages 4 to 16 begin the end of January and the season continues through April. Register
today at jtaa.org. Games are on Saturday mornings starting the third week of February and
everyone is welcome.
This year the Jupiter Seahawks of the JTAA will be rolling out a new logo. The next time
you see someone wearing the Seahawk’s logo, whether it be the old or new logo, reach out
your hand and say hi.

individuals shed unwanted
pounds, but they can also
harm teeth by causing
enamel erosion, cavities
and bad breath. Your Jupiter
family dentists, Dr. Higham
and Dr. Sauchelli discuss
some of the latest fad diets
and their negative effects on
dental health.
The Milkshake Diet
It is difficult to find a smoothie or milkshake that does not
contain a fair amount of sugar. This sugar feeds bacteria in
our mouth, and the bacteria then produces an acid that attacks
and erodes enamel. This can create a hole in our enamel that
is called a cavity. In addition, the large amount of sugar leads
to spiking and crashing of insulin levels within the body. This
can gradually disturb the structure of the collagen in our body.
Collagen fibers help to stabilize and support our teeth. If you
decide to try this diet, Dr. Higham and Dr. Sauchelli suggest
selecting smoothies or milkshakes with low sugar content
and rinsing your mouth with water after drinking a smoothie.
Meal Replacement Diet
These diets provide pre-made low calorie meals so that
the dieter does not need to worry about calculating the calorie
content. However, these meals often reduce fat but inject
additional salt and sugar to maintain flavor. This increase
in sugar can lead to the formation of cavities. Dr. Higham
and Dr. Sauchelli believe that home-cooked meals are the
healthiest option for our overall health and dental health.
Low-Carb/High Protein Diets
Most of us are familiar with the Atkins diet and its many
variations. For example, the 5:2 diet involves eating high
protein and low-carb foods followed by a few “fast days”
which gives the body an opportunity to break down the fat.
These kinds of diets often bring about bad breath that cannot
be corrected by brushing and flossing.
Juice Cleanses
Juice cleanses possess a harmfully high sugar content
that can lead to cavities and gum disease. Additionally, the
high acid content of fruit juices wears down enamel and can

When Should
Infants Start Eating
Solid Foods?
The American Academy of Pediatrics
(AAP) recommends 6 months old as the
best time to start your infant on solid
foods.
Single-grain infant cereal is a good
first supplemental food because it
supplies additional calories and iron.
Rice cereal is recommended because it’s least likely to cause
an allergic reaction. Infant cereals can be prepared by adding
breast milk, infant formula or water. The consistency should
start off thin and can be made thicker over time. Cereal should
not be added to a bottle because your baby could choke.
There is the exception for when this is recommended by your
pediatrician as a treatment for gastro esophageal reflux.
Other supplemental foods to try are single ingredient
pureed foods, such as vegetables, fruits and meats. Pureed
foods should not contain additives like salt or sugar. If you
make your own baby food, be aware that home-prepared
spinach, beets, green beans, squash and carrots are not good
choices during early infancy as they may contain large
amounts of nitrates. Peas, corn and sweet potatoes are better
choices for home-prepared baby foods.
New foods should always be introduced one at a time,
every few days, to determine if the child has an allergic
reaction.
Symptoms of a food allergy include: hives, rash, facial
swelling, vomiting, diarrhea, coughing, wheezing, difficulty
breathing, weakness or pale skin. You should consult with
your child’s pediatrician if any of these symptoms occur.
Infants may be at high risk for developing an allergic reaction
if one parent or sibling has a food allergy. If the infant has
no signs of allergy, including eczema, with the initial foods,
then additional foods can be introduced gradually.
As your child gains the ability to feed themselves, usually
around 9 months, you can offer a greater variety of adult
foods that are soft, easy to swallow, and cut into small pieces,
including banana, cookies, crackers, cooked egg yolks, pasta,
chicken, peas and potatoes.
“Do not force your baby to eat if she cries or turns away
when you feed new foods,” explains pediatrician Alexandria
Niewiadomski-Ayala, M.D. of Children’s Physicians in
Jupiter. “Continue with breastfeeding or bottle-feeding for a
time before trying again.”
Be sure to offer a good variety of foods that are rich in
nutrients and discuss with your pediatrician any questions
about nutrition or concerns on whether your child is eating
too much or too little.

vendors, dining and drink specials and a special toy collection. Donations were accepted to
benefit Little Smiles of Florida to help their mission to bring smiles to the faces of children

Everlasting Love

The month of February
always symbolizes love. We
all have read the statistics
about divorce rates and I
am sure many of you have
experienced heartache and
may be part of the statistics.
I am certainly no expert
on how to keep love alive
but as we near our 10year anniversary there are
certain things I know for sure have contributed to our
happy marriage.
One of my first love lessons occurred during a season
of loss. Just before our wedding and a day before my
birthday, my husband to be, lost his father after a long
battle with leukemia. It was a sad time for everyone. I
wanted to comfort my husband and during that process
learned a profound truth that we still rely upon to this day.
We are in this relationship together, we have each other’s
back and working as a team is better than going it alone.
Difficulties either drive you apart or bind you together. One
of the most prolific pieces of advice we received before
we were married centered on our vows. A dear friend
said, “You know there will always be a worse, a poorer
and a sicker.” As an optimist I really had not thought of
the opposite side to better, richer and healthier until that
poignant reminder.
During our engagement, I wrote a love letter to my
husband recounting all the things I loved about him. My
husband did the same, we still have the letters and the list
we created with simple adjectives that described our most
cherished qualities. Once a year, we review our lists which
helps us both remember why we fell in love. This reflection
exercise takes us back to the beginning and softens our
hearts toward one another. Bitterness struggles to exist
when there is no fertile ground. Love and compliments
are lethal weapons to deploy against anger.
Right after we married, we signed up for a couple’s
weekend. Over the course of the weekend we learned a
great deal about each other and how to manage conflict
lovingly. The Weekend To Remember conference provided
us with tools that we keep in our arsenal and use when
needed. One of the biggest Ah Ha moments for me was
pertaining to self-centeredness. They talked about how
so many people underestimate selfishness and how it can
destroy your relationship. Selfishness leads to a critical
spirit, which leads to disappointment, bitterness and finally
isolation. One way to counteract going down the rabbit
hole is to concentrate on your spouse’s positive traits. Once
you shift your focus off your spouse and on to yourself,
you can often catch bitterness before it takes over. When
you start to become critical of your spouse, inevitably there
is something within you that needs to change. Turning
the microscope of perfectionism and cynicism inward
creates a shift in understanding differences along with a
commitment to resolve them in a mature way.
There is no secret formula or magic pill that creates
everlasting love. If you opened my husband’s wallet
today, you would find a tattered and torn piece of
paper that contains his handwritten heart felt, wedding
vows. Here is an excerpt, “I devote myself to creating a
marriage of affection, love, laughter, encouragement and
understanding.” Those are not just empty words, staying
in love requires a great deal of work and commitment. We
plan to stay the course.
As we approach Valentine’s Day, think about one small
thing you can do to compliment your partner and breathe
new life and love into your relationship.

Chicken Parmesan With A Great Brunello di Montalcino

Who doesn’t like chicken
parmesan? I have been eating
it for years and will continue to
enjoy good chicken parmesan.
But, that is the key. I said, good!
Many times when I try
to make it the chicken is
overdone and the breading is
soggy or the mozzarella cheese
just sits on the chicken and gets
rubbery.
I would like to share a recipe with you that I enjoyed recently.
Now pay attention, there are some secrets that might make this
the best chicken parmesan ever.
First, prepare your mom’s favorite tomato sauce. Begin with
a one-half inch thick chicken breast and salt them. This acts like
a brining. After about 20 minutes pat the breast dry and prepare
the breading for the chicken.
In a shallow bowl mix all-purpose flour with an egg until it
comes to a runny paste. In another bowl mix panko breadcrumbs
with grated parmesan cheese, garlic powder and pepper. There
should be more parmesan then breadcrumbs.
Dip the chicken in the egg and flour, then coat the breasts
with the panko and parmesan mixture.
Make sure the panko and parmesan fully covers the chicken.
Prepare to fry the chicken in hot vegetable oil for two minutes
on each side. Remove the cutlets from the frying pan and drain
them on paper towels. The cheese that you will use as a topping
for the cutlets is a mix of mozzarella and fontina. (Fontina
cheese is rich and creamy with a nutty flavor). Cover the cutlet
completely with the cheese. Place cutlet in broiler and watch
the cheese melt. When melted, perfectly plate cutlet on a bed
of linguini, top with a small amount of tomato sauce and fresh
basil.
Since celebrating this new recipe, you might as well drink a
nice Brunello di Montalcino to compliment this meal. Brunello
is made from the Sangiovese grape. It has aromas and flavors
of blackberry, black cherry, black raspberry and chocolate and
makes a great pairing for this chicken recipe.
