What’s in season…
PASTA PRIMAVERA
A simple Pasta with a combination of the earliest
vegetables available in Spring – asparagus, peas and spring
onions – making it a true celebration of the season.
Best with springy egg pasta, be sure not to overcook
as the chewy bit will stand up to the gently cooked veg.
Frozen peas can replace fresh if needed – but add them
at the last minute.
ROAST DINNERS
Roast dinners may be sometimes associated with being
a winter warmer, but does a classic Sunday lunch ever
go out of fashion?! In fact, they come in to their own
again over Spring, with the big events of Mothers Day
and Easter to think about too.
FRUIT DESSERTS
For those who have their cake and diet too, calorie
controlled items fit the bell, but the ultimate healthy
dessert is fresh fruit. Add to the appeal by trying fancy

St Patrick’s Day
St Patrick’s Day is probably the most celebrated Saints Day in the world, held every year on March 17th in
commemoration of the most recognised Irish patron saint.
One day a year – or increasingly for one weekend a year - the world goes wild for all things Irish, whether it be a sup
of the black stuff or traditional hearty Irish dishes like soups and stews. Why not join in the celebrations by offering
Champ a traditional Irish dish consisting of spring onions and mashed potatoes, or Colcannon which substitutes the
onion for cabbage or kale.
Make it homemade…
Traditional Soda Bread
Offer the taste of Ireland with some fresh, simple soda
bread.
Ingredients
250g Plain White Flour
250g Plain Wholemeal Flour
100g Porridge Oats
1tsp Bicarbonate of Soda
1tsp Salt
25g butter cut in to pieces
500ml Buttermilk (alternatively milk with 1tsp Lemon
Juice)
Method
- Preheat the oven to 180° and dust a baking sheet with
flour
- Mix the dry ingredients in a large bowl and rub in the
butter
- Pour in the buttermilk and mix quickly with a knife then
bring in the together, handling gently.
- Shape in to a flat round loaf, 20cm in diameter
- Put the loaf on the baking sheet and score a deep cross
(to let the fairies out). Baked for 30-35 mins or until it
sounds hollow when tapped on the bottom.
- Transfer to a rack, cover with a clean tea towel and leave
to cool.
SOMETHING FOR AFTER …
Baileys and Chocolate cheesecake
The smooth, creamy liqueur will give you a St Patrick’s
Day celebration cheesecake with the wow factor. Top
with grated chocolate and a dusting of cocoa. Makes 1
Ingredients
100g Butter
250g Crushed Digestive Biscuits
600g Cream Cheese
25ml Baileys
100ml Icing Sugar
300ml Double Cream, whipped
100g Grated Chocolate
To Garnish
200ml Double Cream, whipped
Cocoa Powder, to dus
Method
- Melt the butter in a pan and add the crushed digestive
biscuits. Mix well until the biscuits have absorbed all the
butter.
- Remove from the heat and press into the bottom of a
lined 18cm/7in springform tin. Place in the refrigerator
and allow to set for one hour.
- Meanwhile, prepare the filling. Lightly whip the cream
cheese then beat in the Irish cream and icing sugar. Fold in
the whipped cream and grated chocolate. When smooth,
spoon evenly onto the biscuits.
- Refrigerate and allow to set for a further two hours.
Once set, remove and decorate with whipped cream and
cocoa powder dusted over the top. Serve.

While Christmas can steal the headlines for the attraction of diners and drinkers, Easter is sometimes overlooked for
the potential it offers. In fact, it provides great opportunities to drive up both participation and average spend.
Nearly 7 in 10 Britons (68%) spend money on Easter, which is above other significant ‘Hallmark events’ like Mother’s
Day (64%), Valentine’s Day (55%) and Halloween (43%).
Of all, the people of Scotland are amongst the biggest spenders at an average spend of £25.87, well above the UK
average of £23.39.
Like Christmas, Easter is a time for family gatherings that usually culminate with a special meal where consumers seek
a meal that befits the occasion. A roast dinner (often lamb), is a common sight, served with side dishes of spring veg
like asparagus, but why not try offering our suggestion for a set meal offer that really stands out?
