The Pacific Northwest’s premier fashion event
What do we love about fall in Downtown
Bellevue? Some may say the changing colors of the
leaves at Bellevue Downtown Park. Others rave
about pumpkin spiced everything. I’ll cast a vote
for a key ingredient to the Downtown Bellevue
experience, the restaurants. They are the highlight
for this issue, offering a range of seasonal, hearty
dishes, robust wines and local craft beer.
We’re raising a glass to a few stand-out places
to get good craft beer and scratch-made food.
Speaking of beer we’re looking forward to

Sometimes comfort is keeping it classic. The Dobar
Chicken pasta is penne tossed in a port wine and
gorgonzola cream sauce, topped with local grilled
chicken breast, port soaked grapes and gorgonzola
cheese. This authentic Croatian dish has been on the
menu at Pogacha (119 106th Ave NE) for over 27 years!
Give your stomach the contentment it craves during
the fall season with a Pub Style Meatloaf. Prior to baking,
ground sausage and beef are mixed together with a
secret blend of spices and then wrapped in smokehouse
bacon. It’s served with house-made mashed potatoes,
gravy and seasonal vegetables. Paddy Coyne’s Pub
(Lincoln Square, 700 Bellevue Way NE) will want to hand
over the blanket and pillow after this meal! Although,
simplicity has often times proven to provide just as
much — if not more— gratification, we have brought
you back to the basics with Paddy Coyne’s Ultimate
Grilled Cheese. With Oregon’s Tillamook white and
yellow cheddar cheese, grilled tomato and crisp bacon
on a toasted potato bread, it is sure to hit the spot.

Kirsten Helle gives us a few ideas for
whipping up game-day dishes this
football season— after all she is the
personal chef to some of our favorite
Seahawks players!
We heard you’re a Seahawks fan and personal
chef to some Seahawks players! What is it like
working with them?
I work with their doctors and trainers as well as
their families to design meals that help them
reach their performance goals while also helping
them enjoy meals with their families. I love
helping them not only eat well but also enjoy
what they’re eating and even bring a taste of
home (their heritage and favorite flavors) to their
table. I have to say that each and every one of
the players I work with are so kind, humble and
think so much of the fans.
It’s football season and 12s are hungry! What
beast mode tips do you have for whipping up an
awesome tailgating menu? Where are some
touchdown spots in Downtown Bellevue to shop
for ingredients?
While we do indulge in traditional tailgate
favorites, I try to make our offerings a little
healthier while still satisfying even the biggest
12th man’s hunger. Offering a big chili or thick,
hearty stew you can make in advance and bring
along in the slow cooker is one of the easiest
and best crowd-pleasing meals. The best part is
you can sneak in a lot of vegetables! From there
it’s all about the snacks and sides and it helps
to choose nutritious options since we usually
munch for hours before the game.
While I’m hitting the Bellevue Farmers
Market for the fresh ingredients for my main
entrée in the early part of the season I love to
grab some artisan cheeses, pickles or maybe
a fun artisan treat. Whole Foods is the stop
for me to pick up baked tortilla chips, pre-cut
vegetables and fruit, popcorn, salsa, healthier
dips, olives and nuts for snacking on. When we
really want to have some fun tailgating offerings,
Uwajimaya is the place to go! Bringing along
some fresh oysters, maybe some interesting
crackers or my personal favorite, their prepared
fresh ahi poke (just keep it on ice!) can really jazz

11/2 pound boneless pork loin, cut
into 1” dices
1 red onion, chopped
2 carrots, chopped
1 red bell pepper, chopped
1 small sugar pumpkin or 1 small
butternut squash, peeled and cut
into 1 inch dices (about 2 cups, you
may substitute frozen cubed squash)
(optional) 1/2-1 scotch bonn

1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried thyme
1/4 teaspoon nutmeg
1/4 teaspoon allspice

go together,” he says. All of the smoked meats
featured at the BBC are braised in different beers;
from the pulled pork in their famous Cubano
sandwich to the pulled beef in the Bel-Red Beef
Dip sandwich. They do as much using local and
seasonal ingredients as possible so expect the
menu to change about every six or so months
with new and special menu items all the time.
And in keeping with the “fresh is best” mantra
BBC does not have a deep fryer or microwave
and their freezer is quite small only leaving room
for what they absolutely need frozen.
During football season make your way
to this brewery for one of the best football
viewing spots in Bellevue. Cheer on the
Seahawks as the game plays on a 19 foot by
10 foot projection wall. But get there early.
“People usually line up a couple of hours ahead
of time to get a good seat,” Robertson says.

be giving a talk about
his first solo museum
exhibition, Let’s Play War!
and the ways in which
gender training—whether
intentional or accidental—
is instituted and perceived.
Vincent will explore
toys and their role in our
indoctrination, as well as
the role of “play” and it’s
seemingly benign effect.
In addition, Vincent will
discuss his past works
and how they led to this
installation as well as the
process behind these
