Ingredients
1 bottle red wine, Waitrose
Fairtrade South African merlot
4 Bart Fairtrade cloves
1 Bart Fairtrade cinnamon stick
3 Bart Fairtrade cardamom pods, crushed
2 star anise
¼ tsp freshly grated nutmeg
Peel and juice of 1 unwaxed orange
Zest of 1 unwaxed lemon
110g Waitrose golden caster sugar
Preparation Time: 5 minutes
cooking time: 15-20 minutes
serves: 6-8
Method

Place all the ingredients, except the sugar, into a
pan and heat slowly until just below boiling point.

Remove the pan from the heat and leave the
ingredients to infuse the wine for 10-15 minutes.

Put back on a low heat but do not allow to boil.
Stir in the sugar until dissolved.

Serve with festive cheer.
a speedy shortcut
If you’re pressed for time you could use a Bart
Fairtrade mulling spice sachet. Just put the wine
and the sachet into a saucepan and slowly heat
until just below boiling point, add the sugar and
stir until dissolved. Serve immediately.
