Warm Heart nominee is retiring from TMC

This year’s Warm Heart Award goes to a person who is described as
“caring and thoughtful.”
Shelly Eide, Director of Nursing for the Tioga Medical Center was
nominated for the Warm Heart award because of the permanent impression she has had on the lives of everyone around her.
The nomination was made
by Gale Joyce, physician’s assistant at the Tioga Medical
Center.
Eide has been at TMC for 30
years, with 28 of those years
as the Director of Nursing.
In those years, colleagues
say, Eide has proven to be an
exceptional person.
“She is one of the most caring people I have been associated with. She shows that
in her love for the nursing
profession, though her leadership, and in the compassion towards the patients she treats,” said
Randall Pederson, TMC administrator.
Pederson has worked with Eide for 30 years.
“She’s been here a long time and is very dedicated,” added Mary Ann
Holm, co-worker.
In Joyce’s letter she describes Eide as “A thoughtful boss, family oriented, and involved in the community.”
“She is a true professional and very worthy of the nomination,” agreed
Pederson .
Eide has put others before herself on countless occasions.
“She will come to the hospital day or night to help assist with traumas.”
“I have even seen her stay and work as a nursing assistant when
needed,” said Joyce.
There are times when Eide has dropped everything to go on transfers.
“Shelly has made countless trips to Minot on the ambulance for critical patients and transfers to a higher level of care.”
“Whenever something comes up they call her,” said Holm.
Eide is a benevolent boss who is involved in all aspects of her staff’s
lives.
“She is usually the first to their aid whether planning a baby shower,
bridal shower or starting a card when they have had a death in their
family,” said Joyce.
Eide is number five among 13 siblings.
She always makes time for her family, by baby-sitting, helping her
siblings.
When issues arise she “is always there to help them out and lend a
helping hand when needed,” said Joyce.
“My kids count on her. They know if they need help their Aunt Shelly
is there,” said Debbie Erikson, Eide’s sister.
Although some may not realize it, Eide has her hand involved in most
community events, too.

“She has worked on this many years, donating her time, energy and even
money to help keep the kids in the community entertained and safe,” said Joyce.
“I think Halloween is her favorite,” agrees Holm. “She always goes all out.”
Eide also helps with set up of booths at the Farm Festival and usually rides on
a float during the Freedom Fest.
Eide will be retiring from her position at TMC in May, but those who have
worked with her will never forget the things she has done for them
“It’s going to be different around here,” said Holm, tearing up.
Pederson added, “There are some big shoes to fill.”
“The caring and concern that Shelly has displayed over the past years will
certainly be missed as she moves on to another community to begin another
phase of caring and sharing,” said Joyce.

Sugar, butter and chocolate
make Christmas delicacies
What a fun way to spend a Saturday! Sheila
Friedrich, Sheridan County’s Extension Agent,
was in town for a candy making class. Surrounded by friends and up to our elbows in
sugar, butter and chocolate, what could be better?
The best part of taking a class like this is, of
course, the sweet taste of the fruits of the labor,
but in addition one always comes away with a
few tips that make life easier in the kitchen and
success a little more likely.
The first technique we addressed was tempering chocolate. Tempering is a method of
heating and cooling chocolate in order to use
it for coating or dipping. Chocolate that has
been tempered is smooth, with a shiny finish
and a crisp, clean snap when you break it. This
process will eliminate the unappealing white
streaks or botches that sometimes appear on
the surface of chocolate.
A simple method of tempering chocolate is
as follows: Have an instant read thermometer
on hand. Grate or chop the desired amount of
chocolate. Place 2/3 of the chocolate in the
top pan of a double boiler. Heat over hot, not
boiling, water, stirring constantly until chocolate reaches 110-115 degrees. Remove pan
from over the water and place on a towel. Cool
chocolate to 95-100 degrees. Add the remaining grated chocolate to the melted chocolate
stirring until melted. The chocolate is now
ready to be used for molding candies, coating,
or dipping. To use, keep warm, but not hot, ideally in the 85-88 degree range. If need be, return
chocolate pan over pan of warm water (not
simmering) stirring occasionally or try placing
it on an electric heating pad set to “low”. Stir
often to retain a uniform heat throughout.
Just a few simple, but high quality ingredients make these decadent little packages irresistible.
This recipe will utilize the technique of tempered chocolate.
Killer Kahlua Chocolate Truffles
3 ½ pounds high quality dark chocolate (we
used semi- sweet), such as Callebaut*, finely
chopped, divided
1 pint cream
4 ozs Kahlua
Ganache centers
Heat cream to a rolling boil. Pour over 2
pounds chocolate. Stir until melted, add Kahlua and mix well. Refrigerate overnight. Roll
ganache into walnut size balls (small scoop
works well to form balls, also). Freeze overnight.
Cover a cookie sheet with parchment paper.
Prepare coatingCoating
Melt 1 pound of remaining chocolate slowly
in double boiler. Do not exceed 120 degrees.
Remove from heat. Add remaining ½ pound
chocolate and stir until melted. Remove a few
of the centers from the freezer at a time. Dip
each center in coating, shaking off excess, and
place on parchment covered cookie sheet. Continue until all truffles have been coated. May
drizzle tops with remaining chocolate or melt
white chocolate in small freezer ziplock, cut
corner and drizzle tops. Yields 50- 1 oz truffles
Variations-may replace Kahlua with other liqueurs such as Grand Marnier (orange), Chambord (raspberry), Frangelico (hazelnut) or with
4 ounces pure vanilla.

Val’s Recipe Corner

The next candy favorite of the group was
English Toffee. Sheila explained the process
of cooked candies and the importance of having the proper equipment: heavy flat bottomed
pans, measuring cups and preferably wooden
spoons. Wooden spoons do not leave dark
marks on the kettle or discolor the candy.
Also wooden spoons do not become hot from
the sugar solutions. Keep an ample supply of
wooden spoons on hand so you do not have
to reuse a spoon during the cooking process.
Undissolved crystals adhering to the sides of
the spoon may fall in to the solution and cause
your end product to become grainy and coarse
in texture (sugared). Large crystals often form
on the sides of the saucepan also. An easy way
to wash down these crystals is to place a cover
on the pan for 30-60 seconds as soon it comes
to a boil. This allows the trapped steam to wash
down the crystals.
This is Sheila’s recipe for toffee. The amount
of chocolate and nuts may be adjusted to your
taste. Also, in most candy recipes the type of
chocolate-milk, semi sweet, bitter, white- used
may be changed to individual tastes.
Fantastic Butter Toffee
2 cups whole unblanched almonds, (10 ounces), divided
11 ounces milk chocolate, divided
1 cup butter
1 cup sugar
3 tbsp cold water
Preheat oven 350 degrees. Spread almonds
on cookie sheet and toast for 10 minutes, shaking pan occasionally. Cool nuts. Meanwhile
grind milk chocolate fine in food processor (do
not over process). Chop nuts coarse in food
processor. Sprinkle 1 cup nuts over bottom
of greased 15x10 jelly roll pan. Sprinkle 1 cup
ground chocolate over nuts. Set aside.
In heavy saucepan, combine butter, sugar,
and water; cook over medium heat, stirring
occasionally, until the mixture reaches 290 degrees, soft-crack stage. Very quickly pour mixture over nuts and chocolate. Sprinkle remaining chocolate over toffee; top with remaining
nuts, pressing into toffee. Chill and break into
pieces. Yield-about 2 pounds.
Both of these candies would make wonderful
little Christmas gifts for that special someone
on the top of your list. Why not have your own
candy making day with friends, family, or maybe the grandkids? Turn on a little Christmas
music, dig out the butter, sugar and chocolate
and your set to go.
