Any member may make reservations for the clubs dining areas (Mix Grill, Formal
Dining Room & Cocktail Lounge) by calling the main office and speaking to our
Receptionist. It is recommended that you make reservations 24 hours in advance. If
your party requires a more private setting, you may call our Membership Service
Director to reserve a private dining area. For a private room, it is recommended that
you book at least one week prior to your desired date.

Happy New Year!
With Christmas and a prosperous
2010 behind us, we look forward to
the challenges of 2011.
Odessa Country Club has now
been in existence for 72 years. OCC
consistently remains the premier
place to be a member in West Texas.
We have a number of projects that
we are going to undertake in 2011

and a comprehensive drainage plan,
because we are going to see rain sometime, although it may
not seem like it. We have many other projects which we will
continue to push through 2011 and thereafter to enhance the
enjoyment of all of our members.
There are ongoing enhancements to the golf course and with
a little help from Mother Nature I think you are going to see this
course in the best shape it has been in for a long time.
Here is to looking at 2011.

Happy New Year! I hope the new look
of the Pipeline has caught your eye
and you are reading my article for the
first time. For those members who
religiously read the Pipeline from
cover to cover, thank you. The goal of
the new look is to increase the reading
ability and produce a better form of
communication to all members. The
new Pipeline is a work in progress and
will be filled with many pictures and
articles of activities in and around the
Ryan George

Club.
2011 is starting off with a bang. The expansion of our Cocktail
Lounge Patio is now complete. The Lounge is one of most
utilized areas in the entire Club. The expansion of the existing
patio into the under-utilized grassy area has doubled our service
capacity outside. Secondly, the long awaited construction of
the Links turn room and restroom facilities is beginning. The
location of the turn room will be at holes 8 and 12. The new
restroom facilities will be located at 4 and 16. The aesthetics
of both will resemble our beautiful Clubhouse. If you are
interested in the layout or the conceptual design, please stop
by the office to view the drawings.
The staff, board, and committee members have several other
enhancement projects planned for 2011. Each project is
designed to respect the traditions of the Club while developing
a private club experience the membership will enjoy many
years to come.

We look forward to seeing you early and often on your golf
courses and we are starting off the new year with our annual
Snow Scramble on Saturday January 15th. This is always a fun
event to kick off the New Year, so get two of your friends and
plan on participating.
We have a very full tournament calendar for the year that
can be viewed on our website, so get on your computer and
mark your calendar for all the fun events you want to play in.
If you should have any questions, please contact a member of
our professional staff and we would be happy to assist you.
With the New Year, comes some equipment changes. All
manufacturers may no longer supply wedges with “square
grooves”. While they can no longer make them, you may play
with them in any competition but USGA events until 2024. As
you can see, this will only affect a very small percentage of
golfers. In anticipation of this process, I have stocked the golf
shop with a large inventory of “square groove” wedges. Now is
a great time to stock up on these wedges as they will not be
available again and are still legal to play with. Stop by the golf
shop and see if we have that special wedge for you.
It’s never too early to start working on your game. Make
plans to get out to the course on those good winter days and
let one of our staff help you with your golf game.

willing to help you with all aspects of your game and assist you
in your search for the latest and greatest clubs for the New Year.

With the New Year upon us,
the golf course maintenance
staff continues to work on our
winter projects that will show
great benefits this upcoming
spring and summer, and into
the future. We will start our
Tee Renovation Program on
the Old Course this month
which will continue through
February. Our Tee Renovation
Program on the Old Course,
Greg Hinton
which has been approved by
Dir. of golf course Maint. your Board to improve the golf
course, will take place over the next two months and result in
completely replacing all the original Common Bermuda grass
turf with a new and improved turf variety, Tif-Sport hybrid
Bermuda. The Tee Renovation Program shows the continued
commitment of the golf course maintenance staff, the Greens
Committee and the Board of Directors to the improvement of
the golf courses. At the time of renovation, we will modify the
tee’s soil profile with sand and other amendments to allow us to
handle elevated salt levels in the future.
The Links Course staff is also continuing its many beneficial
winter projects. Bunker renovations are on-going as well as our
Greens Enlargement Program on #18 and #1 green’s with #2
and #3 to follow.
The lack of rainfall in the last four months and a predicted dry,
warm Spring has the GCM maintenance staff monitoring salt
levels in greens bi-monthly. We will continue to heavy/flush
irrigate greens on Mondays on both golf courses.

Winter Squash
Ingredients
Those cool looking winter squash at the grocery stores now
can be used for other things besides holiday centerpieces.
Winter squashes such as acorn, spaghetti, & butternut are great
sources of dietary fiber and vitamins. They can be peeled, diced
and roasted and served as a healthy side dish. They also make
delicious soups, great for a cold West Texas evening. Here’s a
recipe from the Culinary Institute of America for Butternut
squash soup.
Directions
Gingerroot, minced
White wine
Vegetable oil, as needed
Onions, med dice
Celery, med dice
Garlic cloves, chopped
Butternut squash, cooked
Chicken stock
Heavy cream
Salt & white pepper
¾ oz
12 fluid oz
1 fluid oz
6 oz
6 oz
1 tablespoon
2 lbs
3 qts
8 fluid oz
to taste
1. Heat the ginger & white wine until nearly at a boil.
Remove from heat & steep until cool.
Strain & reserve wine.
4. Simmer until the vegetables are soft, about one hour.
2. Heat the oil, sweat onions, celery & garlic until limp.
6. Add the heavy cream. Return the soup to just below
simmer. Adjust the seasoning to taste with salt & pepper.
Yields one gallon.
3. Peel, seed & dice the squash.
Add it to the pot along with the wine & chicken stock.

Here is a fun event with a format that you may

shamble in which both players hit a tee shot. Then

OCC Women’s Association
Our Christmas Luncheon was so beautiful. The tables had cream table cloths with red napkins. The glass urns had red candles
and greenery with Christmas balls on the tables. Everything looked great. Black Magic from Permian High School entertained us
with Christmas songs. They were great. Thank you! Our lunch was very good. The Hostesses were Chairman Wylma Madden, Iola
Gillham, Marita Hendrick, Mary Hill and Barbara Chappell. Thank you, ladies.
President J’Nevelyn Melton called the meeting to order. The minutes of the last meeting were ready by Secretary Jean Stinson.
The minutes were approved as read. The winners of the gift certificates were Betty Dale and Sharon Brown. The winner of the
Sunday Buffet was Ann Self. The meeting was adjourned for bridge and games.
The bridge winners were High: Dot Brooks, Second High: Beverly Martin. Other winner: Shirley Willingham. Other game winners
were Frankie Sorenson and Pat Williams.
We would like to welcome the Incoming Officers for 2011. We will look forward to starting our 2011 year off with our Traditional
Mexican Food Buffet for our first meeting on Friday January 14th at 12:00 Noon. The Hostesses for our January Luncheon will be
our 2011 Officers.
I would like to thank Administrative Assistant Barbara Morgan for all the help she gave me in my two years as Reporter. Thank

Dear OCC Members,
Happy New Year from the tennis
staff. I hope everyone enjoyed their
holidays. We had another great year
here at the courts. My staff and I look
forward to serving you in 2011.
Our new programs for 2011, we
have added a Tuesday Night Men’s
Drill from 6:30pm to 7:30pm, then
followed with some doubles action, so
if looking for a good workout stop by.

I know you will enjoy it. Looking for a
Director of Tennis
match, or just wanting a workout, we
now have Mixed Doubles on Sunday afternoon at 2:00pm. Just call
before 1:00pm so our staff can set up your matches.
We finished our tennis season with a couple of great events.
In November, we had our Parent Child Tournament. In the open
division, we had the Slater’s trying to defend their title , but after
a hard fought semifinal match they fell to the Beakley’s . So, in the
championship match we had two of our upcoming junior’s meet
in the final Ryan Morton (OHS) and Tate Beakley(PHS). After three
great sets the Morton’s captured the title. In the 14-under division,
the Steen’s came away with the title by defeating the Jackson’s 8-6 in
their round robin format. We also had a group of our 10-under girls
who came out to play in the singles tournament. Rhadi Singh won
her division and Kristen Morton finished a close second. Everyone
played some excellent, great tennis and we look forward to an even
better event next year! On December 10th, we had our Jr. Christmas
Tennis Party. Our kids enjoyed some tennis games, pizza, movies,
and made their own ice cream sundae, followed by a gift exchange.
It was a lot fun seeing the kids having a great time.
Our Adult and Junior tennis programs will resume January 4th
(leagues, private lessons, after school programs). Juniors , get your
rackets out again on January 22nd. We will have our first tournament,
NOTHING BUT DOUBLES TOURNAMENT, so find you a partner and
come out to play. Then, on the 29th, we will travel to Abilene and
play an inter-club match against Abilene Country Club. This will be a
great way to start off the year.
I would like to take this opportunity to thank the current Tennis
Committee Members – Chairman Rick Browning, Paula Coulter,
Lisa Hill, Steve Mareschal, Steve Steen and Robin Ward. Your work is
appreciated.
