and a New Years Eve celebration of celebrations. I always look forward to New Year’s
Eve because it gives us a chance to wipe the slate clean and get a fresh start on life.
Never has that been more true for myself and for our winery. We are embarking
on a total tasting room remodel. After 15 years we are updating our old facility to
accommodate your requests for; more bar space, more user friendly areas, and best
of all, an exclusive wine club room you are going to love to hang out in. We are
planning a bistro, deli downstairs, a reserve room and upstairs lounge where you can
get away from the crowd. No longer will we hear “weekends are fun, but it is just
too crowded.” Stay tuned and pardon our dust as we really get started with upgrades
in January. Don’t worry though, we will be open and have a great atmosphere to
experience and enjoy our quality of wines that our team is growing and making.
We strive for our wines and atmosphere to get better and better each and every
day. Thank you for your continued love and support of Wilson Creek. It’s you, our
raving fans, that continually challenge us on how we can raise the bar and provide a

I was fortunate enough to wiggle in some vacation time at the
end of the 2015 harvest, being as small as it was. Even more fortunate to
be on the “Enchanted Rhine” river cruise with a number of Wilson
Creek wine club members. We were cruising down river and drinking
wine. “What do you think of this one?” was commonly asked of
me by our California wine drinking friends as they struggled to
understand the wines.
Winemaking style in Europe is quite different then that of
California, being more acid based and food driven, and less fruity
than the California style. As a result of this revelation or in some
cases confusion, I began comparing wine to pizza.
We are all very familiar with pizza, there is the New York style
having thin crust and the Chicago style with thick crust as well as
the California style with all types of unusual toppings. Pizza truly
reflects on the region of its inception for example: Hawaiian pizza
with ham and pineapple. Pizza reflects on the regions temperament,
ethnicity and favorite ingredients. We may have a style that we
prefer but we can also appreciate the other styles. As Americans we
look at pizza as a whole meal and feel that we own it. Yet pizza is
Italian, and it’s made and viewed quite differently there.
Wine is very much the same as pizza in this respect. In Europe,
wine is viewed a an integral part of the meal. It reflects on the
temperament, growing conditions, and viewpoint of the region.
The soil minerals, sunshine and the flavors come through in its
wine. As a result, the wines have pronounced acidity followed by
fruit. They tend to be lower in alcohol and thinner in body. These
wines truly shine with a nice lunch or dinner as the French and
Germans think it should.
The world of wine is as vast as the wine growing regions
themselves. Styles, flavors and approach to winemaking is a true
reflection of that uniqueness. Similar in respect to pizza with thick
crust or thin, tomato sauce of white, and the vast amounts of
toppings that are offered.
I found myself anxiously awaiting the next stop along the
Rhine to try its wines and order pizza with anchovies!

Christmas Eve (Dec 23rd).
If the Julenissen eats and drinks it, it is an
indication of a good coming year.
Some of my scientist friends make fun of
my willingness to be so dedicated to mythological
ceremony, but I think they miss the intent and
hopeful result of mythology. The best scientists are
the most humble and they realize how little we
actually know about what makes nature work.
However, patterns do emerge and the more
observant we are to the patterns of nature the
more able we are to work in harmony with the
natural processes leading to good stewardship.
This is what tradition and mythology teach us,
be humble, observant, look and listen more than
you act and speak and use ceremony to align
whether it is with the ecology of a vineyard or
the social construct of your family.
This is why I chose to work at a craft
winery, a place where we strive to infuse holiday
magic into wine. We recognize the world is a
place of incomprehensible beauty and magic.
We honor that place through care and the gift of
craft.

The
vineyard is
inextricably
tied to the
cycles of
sun and
soil. As we enter this transitional time from the
shortest day of the year, the winter solstice, we
are truly in the time of change. Pre-solstice is
a time of preparation of the vines, feeding the
roots and planting nourishing and protective
cover crops in anticipation of a much needed El
Niño.
Likewise, as we prepare our family holiday

Now is the perfect time to come checkout the fresh new seasonal menu items at
Creekside Grille and Creekside Lounge. Many new incredible creations including
our very own Sous Chef, Mark Weinberg’s award winning chili. His chili is not
only special because it has won many chili cookoff’s but it will feature rotating main
ingredients including beef, turkey, venison, lamb or vegetarian, served in a sourdough
bread bowl.
EGG NOG CREME BRULEE
Pair with Angelica Cream Sherry
or Late Harvest Chardonnay
Giving back to the community is a passion of ours
4 cups whipping cream
2/3 cup sugar
8 large egg yolks
1/4 cup dark rum
1 tablespoon brandy
1/2 teaspoon ground nutmeg
Large pinch of salt
1/3 cup (packed) golden brown sugar
Toy Drive
Preheat oven to 350°F.
Place 11x8-inch (8-cup capacity) shallow ceramic
baking dish in roasting pan. Mix cream and sugar
in medium saucepan. Bring to simmer, stirring until
sugar dissolves. Whisk yolks in medium bowl.
Gradually whisk in hot cream mixture, then rum,
brandy, nutmeg, and salt. Transfer to baking dish.
Pour enough hot water into roasting pan to come
halfway up sides of dish. Carefully transfer pan to
oven. Bake until custard is set around edges but
center still jiggles slightly when dish is gently shaken,
about 40 minutes. Remove ceramic dish from water. Chill custard on rack until cold, at least 3
hours. Preheat broiler. Press brown sugar through
strainer over custard to cover completely and
evenly. Watching closely, broil custard 4 to 6 inches
from heat source until sugar bubbles and caramelizes,
about 2 minutes. Alternatively, you may use a crème
brulee torch to caramelize the sugar.

This rich bodied Zinfandel reveals a robust fruit,
sweet oak and spice nose. Layers of cedar, coffee and
blackberry are layered over well incorporated oak and

This blend of Bordeaux grapes contribute to the unique flavor of this wine.
Brilliant garnet in color, this wine’s robust character is packed with aromas and
flavors of dark red fruits finishing with subtle notes of cedar and chocolate.
Pairs well with BBQ tri-tip grilled to medium rare with a light adobo sauce and served
with sautéed mushrooms and roasted fingerling potatoes.

This Syrah was blended with Petite Sirah and Cabernet to produce a rich full flavored
wine displaying classic notes. Cedar and spice are prominent in the aroma of the
