stablished in 1985, we are a family run business
based in St. Ives supplying the catering trade.
Dad Geoff, mum Sylvia, daughters Emma, Naomi
and Hannah and niece Zoe all play vital roles in the
day to day running of Celtic Fish and Game. Geoff,
a fisherman with over forty years experience in the
catching sector brings a wealth of knowledge about
all aspects of the fishing industry.
As a board member of the Cornish Fish Producers
Organisation (C.F.P.O.) and a Director of the
Duchy Fish Quota Company, Geoff is active in the
political arena.
We are perfectly located to take advantage of the
thirty to forty species landed into our local ports
Newlyn, Looe, Plymouth and St. Ives. We attend the
auctions daily to offer our customers the freshest fish
at the best possible prices.
The fish landed via the Newlyn and Plymouth
Markets is landed within quota restrictions. Ensuring
the fish we supply is sustainable is very important,

therefore by using the local markets we can
guarantee this. The fish is bought and sold by vessel
therefore each fish we sell can be traced to the boat
which caught it.
We buy and process feathered and ground game
from hunters throughout Cornwall and Devon.
Game meat is a product area which is becoming
more and more popular and is one of the few
product ranges along with fish that can be
guaranteed wild and traceable. Another factor
responsible in increasing the popularity of game is
the consistency it provides in aspects of quality, price
and flavour.

techniques are used to produce exciting new
products with local ingredients. We also smoke on
request, so if you have an idea just let us know.
As a company we have evolved our range by
customer demand, therefore our products always

In addition to the Fish and Game we stock over one
thousand fine food items. Our list has evolved from
demand by chefs. The chef decides the ingredients
they wish to work with and we do our upmost to
source these products and so the list grows.
Sourcing as locally as possible is very important to us.
In addition to the fish and game there is a wealth of

Over 35 species landed locally via 4 local ports. The finest
crabs and lobsters landed by local Hayle fisherman straight to
our holding tanks. Hand-cleaned mussels and clams from
the crystal clear waters of the River Exe. Oysters sourced
from the Helford River and the freshest Rainbow Trout
harvested from Devonshire waters. We combine the freshest
local seafood and deliver it daily to your kitchen.

ith Newlyn Market only a 7 mile trip from
our factory we are able to take full advantage
of the daily landings. A member of staff attends the
market daily. Fish is bought via a verbal auction.
Plymouth Market also has a daily auction, but we
access this online. We collect the fish when the van is
empty having completed deliveries.
By using both local markets we ensure a constant
supply of fish at the best possible price.
Smaller boats fishing from St Ives land their catches
directly to us. This can be a cross-section of species
but always extremely fresh and never more than a
few hours old.
Ordering your fish
C
ombining Newlyn, Plymouth and St Ives we can
offer up to 35 species daily. Once the fish is
bought we send out daily emails and faxes to keep
you up-to-date or why not let us call you! All fish is
bought whole, it can then be processed and packed
to the customers’ requirements.
All orders are tailored to customer’s requirements.
Fish can be ordered whole, filleted, gutted, scaled,
pinned, portioned and can be vacuum packed or
simply placed on ice.
We offer a delivery service spanning six days a week,
Monday to Saturday.
Packing your fish
A
t Celtic Fish & Game we are committed to
doing as much as we can to reduce our carbon
footprint. We have looked in detail at what we do,
especially the waste we produce and have taken
huge steps to reducing this. Although vacuum packing
is convenient, simply placing your fish in a bag and
delivering it to you in a returnable box will help us to
go even further in our commitment to reducing our
waste. Please advise a member of our team as to
how you would like to receive your order.

W
ith ‘sustainability’ and ‘environmentally
responsible fishing’ the key concepts of the
modern fishing industry Cornish vessels are perfectly
poised to meet consumer expectation and ensure
the ultimate assurance of sustainably caught fish.
The Cornish Fleet have been pioneers of the
modern fishing industry:
• Fishery Science Partnerships (FSP) have ensured
scientists and fisherman working together to
improve scientific stock assessments leading to
sensible quota levels.
• Work on gear configuration such as release panels
and mesh configuration has led to a reduction in
discards and more selective fishing.
• Cornish fisherman initiated the largest closure of
spawning and juvenile fishing grounds off the
North Cornish coast.
For a number of key stocks such as Dover Sole and
Hake there are agreed long term management plans
in place that have been agreed by the fishing industry
and scientists to secure the long term sustainability
of many fisheries.
This pro-active stance has seen an improvement in
many stocks and associated increases in both the

abundance and quota levels, which means that you
can be confident that the fish landed by Cornish
Vessels has been done so responsibly.
As a fisherman’s organisation we would like to set
the record straight. The rhetoric from environmental
groups, celebrity chefs and well meaning individuals
that all fish stocks are in terminal decline is plain
wrong. These sorts of spurious statements are based
on emotion and misinformed perceptions. The
scientific evidence is clear; many stocks are
improving, fishing practices are heavily regulated and
fishermen are in the main environmentally aware. If
you are genuinely interested in the truth and
provenance of you fish then ask those who know
– the Cornish Fish Producers Organisation!
Quota availability to Cornish Vessels remains one of
the key issues to ensure that best practise remains a
top priority. Schemes like the Duchy Fish Quota
Company (DFQC) are working to secure quota in
Cornwall and encourage best practice by those who
use that quota. Therefore by supporting the DFQC
you are supporting sustainability.
There is not an unlimited amount of any specie. If we
are going to take conservation seriously before we
give advice to consumers on what they should or
shouldn’t be eating we have a responsibility to speak
to the people that understand fisheries and stock
levels in order that we don’t swap the pressure from
one species to another because of self-promoting
interests. The bottom line is, the fish landed on the
market is sustainable, so buy what is available, in season,
and high quality and that is all there is to it!!

grown in popularity year on year. The stuffed plaice
rolls are a new idea produced using ingredients
from our fine food department such as capers,
cornichons and anchovies to enhance fresh local
fish. We’ve done the work saving you time without
compromising on quality.

W
Harvey & Sons of Newlyn, a family business
established in 1955, is the largest UK Shellfish
supplier. Anything that is too small for the crab pot is
put back into the sea to carry on breeding. The crab
pot leaves the seabed unharmed.

ieter Wirtz has been quietly farming rainbow
trout at Plaistow Mills for more than two
decades. These are exceptional fish, Dieter says
the reason for the high quality of his trout is “the
leat water”. He suggests that the fast flowing water
makes them swim harder, unlike the flabby lazy fish
reared in large cages on conventional salmon and
trout farms. This gives his trout a firm flesh and he
believes, is a healthier environment for the fish.

Fresh Shellfish from The Exmouth Mussel Company
Frozen Fish
W
orking from their base on Exmouth Docks this small innovative company has developed unique
equipment to farm the fast flowing River Exe. By doing away with dredges and using a self-fluidising
elevator, the clams and mussels are teased from their muddy beds without impact on the stone layers beneath.
Minimal disturbance and constant re-seeding allows the high density of fish, crabs and sponges that build up
on these “underwater rainforests” to be maintained. After cleaning, grading and purification all orders are hand
finished and packed.

The St Ives Smoke House
S
moking meat and fish used to be about
preservation, but now its about taste too! With
three on site kilns we have spent 20 years perfecting
the art of hot and cold smoking to produce products
that have a subtle and natural smoky taste. Each
smoke is treated individually, we simply smoke until
its ready combining modern technology with old
fashioned smoking techniques. Using only natural oak
wood chips and sea salt for brining and dry-salting
we have created a range of products sourced and
smoked locally. We can also smoke on request, so if
there is something you would like us to put in the
smoker, hot or cold we are happy to oblige.

offers all three. Cornwall is home to Deer, Pheasant, Partridge, Pigeon
and Rabbit. We buy, butcher to individual requirements in order to
supply you with the finest seasonal Game. Norfolk Chicken reared in
local hatcheries from egg to chicken means control in terms of quality
and taste from start to finish. Duck, Guinea Fowl and Poussin arrive
weekly to enable us to offer you fresh, affordable poultry.

Fallow, Red and Roe Deer. Red Deer are shot most
commonly by local hunters, these are the largest
of the Deer. Long term relationships with local
estates and shoots means we get a constant supply
of the finest feathered and ground game. We can
tell you the hunter, the location and the date it was
shot. Game meat is a constantly growing market
area for us along with fish it is one of only a few
foods that offers a product that is totally wild and
traceable. Another factor responsible in increasing
the popularity of game is the consistency it provides
in aspects of quality, price and flavour.

the Muscovy duck,
this duck is slaughtered at
10 months old, well into its
second feather stage. As the
bird is killed at a later stage than
most other ducks it has a more
mature flavour. The Barbary Duck is far
less fatty than the common duck and has a
thin skin with no layer of fat underneath. Compared
to English Duck, the Barbary has a much higher meat
to bone ratio. It is a lean bird full of texture and
flavour. Sourced from France, these Ducks guarantee
total traceability from the breeding stage through to

Sausages Made in Cornwall
O
ur sausages are hand made from the finest
local ingredients. The venison is butchered
from carcases we buy from local shooters, the
pheasant meat from birds sourced from local
estates. All sausages are enhanced with berries, fruits
and seasonings. The pork sausages are perfect for
breakfast, they hold shape and lose no weight, just
plump and delicious. Perfect with mash potato and

ll our chicken products are sourced from Banham
Poultry Ltd, a Norfolk Poultry company which was
started in 1959 by the Foulger family and has remained
under the families ownership to this day. Based in the
small Norfolk town of Attleborough , all birds sold to
Celtic Fish and Game are processed at the Attleborough
plant and are locally sourced from Banham’s own
Norfolk hatchery and grown on Norfolk farms with the
majority of farms owned and run by Banham Poultry.
This allows complete control over the quality and
welfare of the chickens from Hatchery to the customer.
The company logo is “The Company That Cares” and
Banham have always strived to be the industry leaders
in welfare, quality and service.
The Banham Hatcheries and Processing Plants are run
to Assured Food Standards (Red Tractor) and BRC
industry standards.
We have a butchery on site, so if there is a particular
cut of chicken you require and/or you have particular
packing requirements we can accommodate all.

of rural Somerset the business today is a modern
example of how farming and food manufacturing
can be integrated to create products with heritage,
tradition and quality within a sustainable agricultural
framework. This Cheddar is truly characteristic of the
region from which it originated; the Maryland Farm
is situated just 15 miles from Cheddar. Maryland
Cheddar is typically matured for 12 months, allowing it
to develop its rich full flavour whilst maintaining a well
balanced rounded character and smooth texture.

made from the milk of the Lynher herd of Holstein/
Fresian cows. Pengreep Farm is now processing

semi-hard cheese, creamy under the rind and slightly
crumbly in the core. It has a young, fresh, slightly
tangy taste and is made by hand in open round vats.

fishing village of Mevagissey, their farm benefits
from a mild climate and fertile soil. Cornwall has
the perfect climate to grow the best strawberries in
the world. Fruit ripens gradually, increasing the sugar
content so they can be sure of maximum flavour and
sweetness. This Strawberry conserve is packed with
fruit – 80 g fruit to 100 g of conserve.

farmed at Tiptree for over three hundred years.
The very first conserve was there in 1885 and to this
day they still specialise in fruit grown on the Tiptree

BEING ENVIRONMENTALLY CONSCIENTIOUS
At Celtic Fish & Game we are committed to doing
as much as we can to reduce our carbon footprint
and we also aim to help you to reduce yours. We
have looked in detail at what we do, especially the
waste we produce and have taken huge steps to
reducing this.
The main waste we produce can be broken
down into cardboard, paper, polystyrene, fish and
meat waste.
The cardboard waste is compacted using a “Miltek”
baler using low energy consumption. A waste
management company then collect all cardboard
bales and paper waste.

The polystyrene is melted to reduce it to it’s smallest
possible volumes using a machine called “Styromelt”.
Fish waste is collected by a local company.
Meat waste is collected by the PDM Group.
The waste is taken away and burned in combustion
plants designed to generate renewable electricity
as well as heat to satisfy local heating or
industrial demand.
By processing all our waste we have reduced our
waste going to landfill by over 83%. We now deliver
all our products in returnable plastic boxes, reducing
both our waste and yours.

We can extend these waste management services to
help you the customer. Any polystyrene boxes we
deliver your fish in we will collect. All we ask is that
you keep them as clean and dry as possible and our
drivers will be happy to collect them.
We also have a policy whereby our vans leave the
factory full and return full. They deliver your goods
on their outward journey and collect our stock on
their inbound journey. We also source locally where
possible which helps to keep the food miles to a
minimum. This reduces fuel consumption and
carbon emissions.

TERMS & CONDITIONS
A priced invoice accompanies all deliveries. Each
invoice will then be listed on a statement which
will be sent at the end of each month. All accounts
to be settled by the fourteenth day following the
month end.

A pricelist will be issued to accompany this catalogue.
Every effort will be made to maintain the prices
listed, however due to changes in currency exchange
rates, market prices and seasonal trends we are
unable to guarantee the price quoted for any length
of time. We will endeavour to notify you of such
changes at the time of ordering and via mail shots.
