Highland Creek News....................................December 2015/January 2016
On Monday, October 19th, the City of Concord
began its annual loose leaf collection
season. This popular program provides each
Concord resident three opportunities to
have unbagged leaves collected curbside,
between October 19th and January 29th.
Concord is one of just a few North Carolina
municipalities providing this exceptional
value to taxpayers, by funding a wide range of
solid waste services out of their tax dollars.
The program is offered by Solid Waste
Services to residents at no extra charge.
While bagged leaves, grass, and other yard
waste are picked up year-round, loose
leaf collection offers residents the extra
convenience of simply raking leaf piles to the
curb. Be a good neighbor—don't put leaves out
too early. The 2015-2016 loose leaf collection
schedule was mailed to each residence in the
Fall 2015 City Circular. For more information
about the program or collection schedule, visit
www.concordnc.gov/Portals/0/Documents/

I can do a lot more than just protect your car.
And when you bundle coverage for your auto

The Ridge Road National Junior Honor Society hosted our Fall Fun Dance on October 9th. It was a rousing success,
with students and teachers alike on the dance floor. The proceeds from the dance will help fund our annual district
SAC (Special Academic Curriculum) dance in the spring.
We are so happy to welcome our Raven Men group to campus. Started by our counselors, over 40 men spend time
volunteering and mentoring in our school. Their presence has already made a positive
difference in our school culture. We look forward to many rewarding experiences with the
Raven Men.
Ridge Road also hosted its 4th annual Anti-Bullying
week in October, with dress up days and instructional
lessons. The event culminated in a neighborhood
walk against bullying. All students and teachers
dressed in orange and walked through Highland
Creek as a sign of unity. This event was widely
covered in the media.
Better
together.
Anti-Bullying walk
Ridge Road was recognized in the District and State
for exceeding growth on our EOGs and EOCs. Our
football team was Conference Champions and our
Battle of the Books club came in first at the district
level. We continue to fly high!

Highland Creek hosted their Annual Kid’s “Tri the Creek” event on Sunday, September
13th. With over 150 kids participating, we were able to donate close to $3,000 to Bright
Blessings—a Charlotte non-profit organization that benefits homeless and impoverished
children. The event also hosted a toy drive for the organization that sent Bright
Blessings back to their office in Matthews with dozens of unwrapped toys for the children. The event is
hosted at Christenbury pool where children begin by swimming laps followed by biking and concluded
with a run. As participants passed the finish line they were presented with a ribbon and those who
placed in the top three of their age bracket were awarded prizes donated by event sponsors. Thank
you to those sponsors who could help make this all happen: Carolina’s HealthCare Systems, Sweet Frog,
Sun & Ski Sports, Dave & Busters, Highland Creek Chiropractic, Sports Clips, Niagara Bottling Company

Harvest Festival & Chili Cook Off
It was a beautiful day for the Harvest Festival and Chili Cook Off. Six teams dished out
their own special chili recipe to over 250 residents. The residents tasted the variety
of chilis offered and then cast their vote for the best chili and most original recipe.
The cook off was also judged by three residents who were selected in advance known
to have previous culinary expertise. Congratulations to all of our participants and
winners!
Judges Choice: Team 3 (Valerie Hunter)
People’s Choice 1st Place: Team 2 (Cathy Staskel)
People’s Choice 2nd Place: Team 5 (Erick Peters)

Photography Mini Sessions
Brian Souders, Supreme Lending, sponsored the hot dog eating contest. The
contestants were residents along with a couple of our event sponsors, David and Dr.
Brett. Each participant was given five hotdogs in buns. The first one to eat all of them
won the $50 gift card prize. A huge crowd gathered around to watch as Brendan
Fitzgerald finished all five in less than two minutes. The crowd and other contestants
were amazed! Congratulations, Brendan!
Over 20 Highland Creek families took advantage of knocking out their holiday pictures in a quick 15
minute mini session with Lisa Crates Photography. In addition, one lucky picture from all the sessions
has been chosen to debut on the cover of this newsletter. Congratulations to little Kallie Sweatman!
“It’s our first year in Highland Creek and what an honor to have our one-year old, Kallie, on this year’s
cover. We have lived in Charlotte for 8 years and just moved to Highland Creek at the end of May. We
LOVE this community and look forward to spending our first Christmas here!
Throughout the event, there were goodie bags, pumpkin painting, festival games,
inflatables and pony rides for the kids to enjoy. The popular costume contest had
over 60 participants this year. Our judges had the
difficult task of deciding which costumes would
walk away with a prize. Congratulations to all our
costume participants and winners:
Kallie is just a bundle of energy and joy and always has a smile on her face. This will be her first “real”
Christmas, as she was just a month old last year. She has an older sister, Khloe, that we have created
annual traditions with already. This year, we plan on continuing the traditions with Kallie by baking
Christmas cookies, picking toys (one each for each of their ages) for Toys for Tots to be donated at
the Panthers “Christmas” game, and filling the Operation Christmas Child shoeboxes. It’s sad to think
there are children that won’t have a Christmas, so, giving back during this holiday season is extremely
important to us and something we strive to continue doing.
Ages 7 & up: 1) Grace as Sally from Nightmare
Before Christmas, 2) Cole as an Inflatable
Godzilla, 3) Colin & Camylle as the Scarecrow &
Dorothy from The Wizard of Oz.
Ages 4 – 6: 1) Rose as Rainbow Dash, 2) Jorge as
a Transformer, 3) Khloe as a Cheerleader
Ages 0 – 3: 1) Everett as Woody, 2) Sophia as
Batgirl and 3) Jackson as a Pirate
The Popcorn Bucket was won by Giovanna D. and
the Candy Guessing Jar was won by Cailyn C.
We are a laid back and loving family. Please feel free to wave or say “hello” if you see us out and about.
We love people, getting to know our neighbors, and being a part of this AMAZING community.
Thank you to Lisa for taking the time out of her busy schedule to offer residents such a great deal to
capture new moments! Pictures can be viewed at:

A Walk in the Woods
A group of Highland Creek kids and parents gathered together for this program to explore plants and animals that live in the three regions of North
Carolina. This included sea turtle nesting, offshore reefs, salamanders, beavers, rabbits, black bears and so much more! Hands-on artifacts included
pelts from deer, skunk and fox as well as preserved specimens of a Copperhead snake. The kids were very excited to see and touch turtles and
snakes!

Remove the roast from the oven and transfer it to a cutting board.
Cover it tightly with aluminum foil and allow the meat to rest for 20
minutes. Carve and serve with the sauce.
Crab Rangoon Dip - A party favorite!
2 cups crabmeat
16 oz. cream cheese (2 blocks)
1/2 cup sour cream
4 green onions, chopped
1 1/2 tsp. Worcestershire sauce
2 Tbsp powdered sugar
1/2 tsp garlic powder
1/2 tsp lemon juice
Mustard Horseradish Sauce
Whisk together the mayonnaise, mustards, horseradish, sour cream,
and salt in a small bowl.
Peppermint Meltaways Recipe
First, soften the cream cheese in the microwave for about a minute.
Chop your green onions. Add them and your two cups of crabmeat. Add
the sour cream, Worcestershire sauce, powdered sugar, garlic powder
and lemon juice. Mix all the ingredients and bake for 30 mins at 350°.
Serve hot with chips, fried wontons or pork rinds.
MAKES: 30 servings
1 cup butter, softened
1/2 cup powdered sugar
1/2 tsp. peppermint extract
1-1/4 cup all–purpose flour
1/2 cup cornstarch
Frosting:
2 tablespoons butter, softened
2 tablespoons milk
1/4 teaspoon peppermint
2 to 3 drops red food coloring, optional
1-1/2 cup powdered sugar
1/2 cup crushed peppermint cadies
Standing Rib Roast
1 (3-rib) standing rib roast (7 to 8 pounds)
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
Mustard Horseradish Sauce, recipe follows
1 1/2 cups mayonnaise
3 tablespoons Dijon mustard
1 1/2 tablespoons whole-grain mustard
1 tablespoon prepared horseradish
1/3 cup sour cream
1/4 teaspoon kosher salt
Two hours before roasting, remove the meat from the refrigerator and
allow it to come to room temperature. Preheat the oven to 500°. Be
sure your oven is very clean before setting it at 500°. Place the oven
rack on the second lowest position.
Place the roast in a pan large enough to hold it comfortably, boneside down, and spread the top thickly with the salt and pepper. Roast
the meat for 45 minutes. Without removing the meat from the oven,
reduce the oven temperature to 325° and roast for another 30 minutes.
Finally, increase the temperature to 450° and roast for another 15 to
30 minutes, until the internal temperature of the meat is 125°. (Be sure
the thermometer is exactly in the center of the roast.) The total cooking
time will be between 1 1/2 and 1 3/4 hours. Meanwhile, make the sauce.
