Batter is a liquid mixture, usually based on one or more flours combined with liquids such as water,
milk or beer. Often a leavening agent is included to aerate and fluff up the batter as it cooks. The
viscosity of batter may range from very "stiff" to "thin." Batters may be sweet or savory, often with
either sugar or salt being added (sometimes both). Many other flavorings such as herbs, spices,
fruits and vegetables may be added to the mixture.

Breading is a dry coating made from bread crumbs or a breading mixture with seasonings. Perfect to use
on meat, vegetables, poultry, fish, shellfish or textured soy. Dry items should be dipped in water or a batter
such as Golden Dipt® Pre-Dip before breading. Breadings add flavor, texture, visual appeal and crunch.
Granular breaders are made by creating a dough of flour and water. This dough is formed into a thin
smooth sheet, which is then baked. The baked dough is then dried, cooled, and ground to the desired
granulation. Granular breaders have a coarser texture than the flour breaders.
Flour-blended breaders begin with a base of flour. Then salt, pepper, and other seasonings can be added
to give each product its unique flavor.

Bread crumbs are usually made from dry bread that has been baked or toasted and ground. Plain or
seasoned, they’re used for a coating for fried foods, topping casseroles, stuffing poultry, thickening
stews and adding inexpensive bulk to meatloaf and similar foods. All Golden Dipt® Bread Crumbs are
baked and ground for consistent quality and never use seconds or stales.

Golden Dipt Panko is a Japanese bread crumb (JBC) used to create a light, crunchy coating for fried
foods. Our Panko offers a light and airy appearance with crispy texture. Elongated slivers and a low
bulk density characterize JBCs. Because it has no brown crust (due to the very unique manufacturing
process), it delivers a uniquely tender, crispy bite. Golden Dipt Panko starts with a basic bread dough,
special proofing and a unique "baking" process that passes electric current through loaves to
generate heat within the dough.

Golden Dipt American bread crumbs (ABC) start with a loaf of bread made from wheat flour, salt and

• Store chicken on the bottom of cooler to prevent dripping on other foods, and away from the door
where temperature is warmer
• IQF pieces can be used but should be slightly thawed in cool water. Fried texture will be slightly flat
• Moisten chicken with water before coating
• Traditional application: Tumble pieces in selected Golden Dipt Coating
• Extra Crispy application: Re-dip coated pieces in water, ensuring all dry coating has been moistened.
Tumble again in coating before frying
• For a heavier coating, prepare a batter by mixing Pre-Dip Batter G7001, 1 lb. dry mix (3 cups) to 3 lb.

• Remove chicken carefully from frying oil. Tumbling tears the coating and causes moisture loss
• Heat lamps and holding cabinets are best for holding cooked chicken
• Avoid frying fish and chicken in the same oil
• Cook chicken in clean oil, and filter oil after each daypart
• Sift coating to remove lumps and add fresh coastings as needed

• For a light coating using our flour seafood breadings, moisten fish with water, then tumble fish
in selected coating
• For a thicker coating using any of our seafood breadings, dip fish pieces first into Pre-Dip Batter G7001
that has been prepared by mixing 1 lb. (3 cups) dry mix with 2 ½ - 3 lbs. (5-6 cups) cool water. Drain
fish for a few seconds, then tumble in selected coating
• When using Panko Japanese Style Bread Crumbs G8050 or Tropical Rum Coconut Breading G2460,
pre-dust fish first in dry Pre-Dip Batter G7001, then dip into Pre-Dip Batter G7001 that has been
prepared by mixing 1 lb. (3 cups) dry mix with 2 ½ - 3 lbs. (5-6 cups) cool water. Drain fish for a
few seconds, then place into a pan of the selected coating. Cover fish with coating and use a pressing
action to adhere coating to fish
• Place coated fish directly into 350°F oil – do not load into a basket first. Fry until golden brown,
usually 2-6 mins. for breaded fish and 1-4 mins. for shellfish, depending on size and shape of fish

• Pre-dust fish in the selected dry batter for better coverage
• Submerge pre-dusted fish in selected Golden Dipt® batter, prepared using the product’s
suggested handling instructions. Drain fish slightly
• Place fish gently and directly into 350°F - 360°F oil. If using a basket, submerge ¾ of the battered
fish in the frying oil for 3-4 seconds, then release the portion into the oil to prevent sticking. Fry
until golden brown, usually 3-6 minutes, depending on shape and size of the fish portion used
• Remove fish gently from fry baskets to avoid tearing the coating – some fish fillets can be fragile

• Use cold water to prepare batters and always add dry mix to water, not water to mix, to avoid lumps
• For a sweet flavor, add 1 tsp. of vanilla to each pound of liquid batter
• Avoid frying chicken and fish in the same oil
• Cook fish in clean oil and filter oil after each daypart
• For Shrimp: peel and de-vein – tail and last segment can be retained for appearance
• For Butterfly Shrimp: score down the line of the black vein almost completely through the shrimp
• For Scallops, Oysters, and Clams: drain juice
• For Squid: remove head, skin and quill and discard
– Cut eye and mouth from body and discard
– Cut body into rings or lengthwise for a butterfly
• All shellfish should be immediately refrigerated in a sealed container until and during preparation

• Peel fresh fruits with skins first – bananas, apples, pineapples, peaches & other fruit
• If using canned fruit, drain and cut into slices or wedges
• For batter frying fruits, pre-dust in dry batter mix before coating with prepared batter mix.
Submerge pre-dusted fruit into prepared batter and drain slightly
• Drop batter coated fruit directly into hot oil and fry for 2 ½ - 3 ½ minutes or until golden brown
• For breaded fruit, pre-dust fruit in dry batter mix, then coat in a prepared Pre-Dip Batter G7001.
Drain slightly, place in pan of selected coating crumbs and cover, pressing gently to adhere
crumbs to food. Gently shake off excess
• Place breaded fruit into fryer basket and lower into hot oil. Fry until golden brown, about
2 – 4 minutes depending on size and shape of food
