Letter from Cara Houlding, Office Manager

The Fansler Foundation.
Spanish Language Editor:
In 2005, my husband and I were blessed with the birth
of our son, Carson. All parents would agree, your life is
forever changed after the birth of your children. I for one
was not aware you could love so unconditionally until we
had Carson. At 18 months Carson was diagnosed with
Autism and we began our journey into the world of special
needs. I have learned a lot through Carson. He has taught
me compassion, perseverance, acceptance, patience and
so many other lessons.

When Carson was three, Kelly Cahill came into our life
as Carson's speech therapist. She began treating Carson
at his pre-school and is still his speech therapist today,
5 years later. Many of you know Kelly as a member of
DSACC's Board of Directors. For us, she's been so much
more than a speech therapist. She's become a member
of our family; an angel that we are so lucky came into our
lives. It is through Kelly that this wonderful opportunity of
joining DSACC as office manager was presented to me.

KID'S CORNER. . . Fall Fun
Easy Apple Pie
You will need:
1 box pre-made pie crust (two pieces)
1/2 cup unsalted butter
3 TBL flour
1/4 cup water
1/2 cup sugar
1/2 cup brown sugar
1 tsp lemon juice
2 tsp cinnamon
8 Granny Smith apples, cored and sliced
Preheat oven to 425 degrees F.
In a large bowl, combine apples, flour, water, sugars,
cinnamon & lemon juice. Mix to coat.
Place the bottom crust in your pan. Fill with apples
mixture, mounded slightly. With second crust you can
cut into strips and make a lattice top or use cookie
cutters to cut out fall shapes and place across apple
mound. Be sure to leave some holes for steam to
release.
Bake 15 minutes in the preheated oven. Reduce the
temperature to 350 degrees F (175 degrees Continue
baking for 35 to 45 minutes, until apples are soft. Let
cool & serve with ice cream.
Healthy Back to School Cheese Snacks
You will need:
1 1/2 cups (about 4 oz.) grated cheddar cheese
4 Tbsp unsalted butter, softened, cut into 4 pieces
3/4 cup all-purpose flour
1/2 tsp coarse salt
dash of cayenne pepper
1 Tbsp milk
Preheat oven to 350 degrees. Using a pastry
cutter combine the cheese, butter, flour, salt and
cayenne pepper until the mixture looks like peasize crumbs. Add the milk and use your hands to
form the dough into a ball. On a lightly floured
surface roll out the dough about 1/8 inch thick.
Use a pizza cutter or a sharp knife to cut the
dough into your desired shapes or use some mini
cookie cutters. Gently transfer the crackers to an
un-greased cookie sheet leaving 1/4 inch between
them. Try to make the crackers roughly about the
same size so everything will cook evenly. Bake the
crackers on the middle rack for 10-12 minutes,
or until the edges of the crackers are golden.
Cool on baking sheet set on a wire rack. These
taste great warm but are also very good at room
temperature. Store in a sealed container for up to
5 days.
