No. 5 Panthers win tenth game of the season
By Andrew Luberda
Superior Sun
The fifth-ranked Superior baseball team
won its tenth game of the season last Friday,
defeating visiting Mogollon, 12 – 7. Edgar
Galindo and Austin Navarrette, both juniors,
had big games at the plate to lead Superior.
Galindo had two hits, including a
homerun, and drove in five runs in the win.
Navarrette went 3-for-4 with three RBI.
Nicolaus Cruz had two hits, one of them a
double, and two RBI. Eli Olmos hit a triple,
one of the Panthers’ three extra-base hits in
the game.
On the mound, Cruz pitched three-anda-third innings in relief of starter Steven
Ybarra to pick up the victory. The junior
allowed one run on two hits with two walks
and four strikeouts. Ybarra, a freshman,
had perhaps his roughest outing so far
this season, allowing six runs on six hits
in three-and-two-thirds. He did, however,
strike out five Mogollon hitters during his
short stint.
Upcoming schedule: Apr. 5 at Duncan
and Apr. 7 vs. Miami. Both games are
scheduled for 4 p.m.
Defending state champs in familiar spot atop state rankings
By Andrew Luberda
Superior Sun
The defending Division V state
champion Superior softball team found
itself atop the first rankings release of the
season last week and the Lady Panthers
remained the No. 1 team in the state
in the most recent rankings that were
released earlier this week.
After Telesis Prep forfeited the
scheduled Mar. 29 game, the Lady
Panthers defeated Mogollon last Friday,
15 – 2.
Senior shortstop Gabby Salcido had her
biggest game to date after going 3-for-3,
including a double and two homeruns,
with four RBI in the Lady Panthers’ 12th
win of the season. Phalicitee Thomas had
two hits, one of them a double, and drove
in two runs. Keanna Torres, a senior,
contributed with a hit and two RBI.
Ivie Lopez earned her seventh win of the
season, pitching a five-inning complete
game. The Lady Panthers’ ace allowed
two runs – none earned – on one hit with
a walk and five strikeouts.
Upcoming schedule: Apr. 5 at Duncan,
Apr. 7 vs. Miami, Apr. 8 vs. Apache
Junction (3:45 p.m.). All games are
scheduled for 4 p.m. unless otherwise
noted.

Latin Night coming to the Kearny Elks
Saturday, April 23, is on the verge of becoming a night the
Copper Communities will remember, as Arabella and Empower
Empire Promotions host ‘Latin Night’ with Power Drive Band at
the Kearny Elks Lodge #2478.
The idea for the creation of this event came from a night of conversation at the dinner table with family members talking about
the good old days, when the dances at the Mammoth Ballroom,
Hayden’s Verdugo Hall, Superior’s Magma Club and Sonora, Ray
were the happening places. Couples dressed in style and traveled
to these places to dance to live music, and everyone had a good
time, enjoying life, music and friends. This era changed with the
times, these nights became few, some even came to a complete
end. Alejandro Estrada and Arlene Villaflor, CEOs of both
companies, decided to create a night where residents from these
areas could relive those good times again. In addition, this night
would allow the younger generations, including Estrada and Villaflor, to experience a time that lives so fondly in the memories
of many residents.
Event planning got underway that included looking for the right
venue, the right band and getting the idea out through social
media. The responses from former area residents and those with
family ties to these towns were overwhelmingly positive. This
motivated Villaflor and Estrada to take steps in making this a
reality.
Who better to bring the right music than Power Drive Band?
Rudy Barcelo, manager, was contacted about the idea they had,
and, after explaining their purpose for creating this event, Power
Drive enthusiastically made themselves available. For those who
have not had the privilege of hearing or dancing to Power Drive,
they are very well known in Arizona and have performed all over
the Phoenix area, at the El Zocalo Mexican Grill in Chandler, Vee
Quiva Casino, Fort McDowell Casino, Wild Horse Pass Casino,
Casino Arizona and many other music festivals in Arizona.
Stay healthy!
Did you know that eggs
can boost antibodies
that help fight
illness? So before
you break out the
cold medicine, break a
few eggs and make an omelet!
As words got out through social media, it was evident that this
idea was generating so much excitement, which led members of
the Kearny Elks Lodge #2478 to express their interest in being
the venue of choice. With Power Drive’s commitment and the
Kearny Elks Lodge as venue, plans were moving right along. The
next move was reaching those that might not engage in social
media, so they set out going door-to-door, personally inviting
residents.
Estrada shared, “Some of the most valuable feedback came
from the older generation. Many told us personal stories that
included how they dressed up, how much fun they had and
how excited they were about attending ‘Latin Night’ now that
they had a personal invitation. Their smiles said it all. Villaflor
agreed.
Villaflor remarked, “Our goal is to keep this going as long as
possible, and we have many more ideas.”
Estrada added, “Instead of people having to travel to Tucson
or Phoenix just to enjoy a night out. What could be better than
enjoying it closer to home?It can be very expensive for rural
residents to travel to the city for a night of dancing.”
In addition, Villaflor and Estrada value higher education and
have set another goal to achieve with future events. They aspire
to award a special scholarship to outstanding academic applicants graduating from the Copper Communities.
“Our scholarship will be a little different.” Villaflor stated.
Estrada expressed, “We understand that higher education is
technology-driven, and would like to be instrumental in helping
a young adult start college with a laptop. Our message to the
youth is that you can inspire yourself. Empower yourself and
others by creating that inner drive that keeps you moving forward, no matter what challenges you might encounter. Set your
mind and keep it set. Dream wide awake and make your dreams
a reality. Most importantly, remember to pay it forward.”
To kick off ‘Latin Night’, a horseshoe tournament will begin at
11 a.m. Registration will begin Saturday morning at 10 a.m. Entry fees are $10 per person with double elimination. This tournament is an event for all ages and prizes will be presented to the
winners. Drinks will be sold both inside and outside the venue.
The ‘Latin Night’ dance, itself, is an 18 years and older event
and all must show I.D. and sign in for a wristband. The wristband must be shown to purchase alcohol from both beer bottles
and bar (and, of course, you must be of legal drinking age). The
bar will open at 7 p.m. and the dance is from 9 p.m. to 1 a.m.
Door entries are $20 for singles and $30 for couples.
Villaflor and Estrada are looking forward to seeing the citizens
of the Copper Corridor communities come out and enjoy a night
of dancing after a long week of hard work. “Salud! You deserve
it!”, they both expressed.

Jade Grill
F
ood, we need it, we
want it and we crave
it. Superior is home
to many family owned and
operated restaurants and
over the years there have
been more food options
for everyone to consider.
Seven years ago, Lucy Wing
opened the doors to the
Jade Grill to give back to
the community.
What brought you
back to Superior to
open a restaurant: Lucy
explained that she and
her family wanted to give
back to the community
of Superior because the
community supported their
parents businesses which
allowed them to send all
11 children to college. “We
were not able to come
back to Superior to use
our degrees, so we wanted
to give back by opening a
restaurant” Lucy returned
to Superior after 42 years
in New York where she
developed her career in
culinary arts. She is well
known for developing many
recipes and for writing
the book “Grilling for
Dummies” in the Dummies
series of books. The Jade
Grill is a endeavor of the
entire Wing family, her
brother who is an architect
designed the building, her
sister who is a dietician
helped to develop the
menu and recipes along
with another sister who is
a Doctor. The graphics for
the menus and logo were
designed by one of her
nieces. “It was my idea to
open the restaurant, so I
am the one who runs the
day to day operations”
explained Lucy.
What makes the Jade
Grill unique: The Jade
Grill is an Asian Barbecue
restaurant, and this type
of food does not exist
anywhere in the nation and
the restaurant has become
a destination restaurant for
food lovers across the state
and even the nation. The
meats in the recipes are
marinated and smoked over
wood not charcoal outside,
that is how real barbecue
is done, Lucy explained.
This type of cooking is
much more healthy than
traditional Chinese food
which uses a lot of oil to
prepare the foods.
The Kitchen at the
Jade Grill is designed
to allow the foods to be
prepared with the freshest
ingredients. There isn’t a
walk in refrigerator which
means that her ingredients
must be purchased
regularly and not stored
for long periods of time
which walk in refrigerators
allow. The kitchen at the
restaurant is larger than
the actual dining room
which allows for special
washing and prep areas for
the vegetables and meats
to ensure that there is no
cross contamination. The
foods are fresh and made to
order and they do not use
MSG in any of the recipes.
There are also many foods
that can be made for gluten
free, vegan and vegetarian
dietary needs.
The restaurant is also very
eco-friendly, with paper
straws and no styrofoam.
Advice to fellow
business owners and
future business owners:
“Be patient with your
business, it takes time to
get started. Have a bucket
full of money and prepare
for long days and long
nights, especially if you
are pursuing a restaurant
business.
The Jade Grill is located
on US Highway 60 and is
