The pottery became known for producing kitchen items made from ‘white and cane’
glazed earthenware sometimes known as ‘yellow ware’ due to the colour of the local
clay, or ‘bargeware’ as it was packed onto barges and sent to market.
The pottery was run by a series of Master Potters of whom the most colourful was
William ‘Bossy’ Mason. During the 1800s the pottery was named after him, and when Tom
Cash acquired it in 1901, he renamed it Mason Cash & Co.
Although Mason Cash had produced mixing bowls during the 1800s, in 1901 they designed
and manufactured the very first iconic Mason Cash mixing bowl. The bowl’s design has
endured the test of time and has become something of a design classic. In fact, the design
has barely altered since then, which is why the brand is still renowned for its innovative,
classic kitchenware today.

The design of the Mason Cash mixing bowl has endured the test
of time to become something of a design classic.
The bowls are made from high quality, chip-resistant earthenware,
making them heavy enough to counter the tendency to move
during manual mixing, yet light enough to hold comfortably in one
arm during the process.
The patterned exterior is designed to help cooks grip the bowl,
whilst also enhancing its timeless elegance.
The shape allows cooks to hold the bowl in one arm easily while
the other can be used for beating the mixture, whereas the wide,
shallow shape is ideal for kneading dough.
Finally, the white interior makes it easy for users to see the colour
and consistency of the mixture ensuring the perfect result.
Today, the design and colour simply identifies the bowl as a Mason
Cash classic. While the bowl has been in use since 1901, it is still
practical for today’s kitchen, whether professional or in the home.

As classic and recognisable as the mixing bowls, no household would be
complete without the traditional white Mason Cash pudding basin.
Home and professional cooks have been steaming puddings in Mason Cash
basins for so long that the pudding basins have become design classics.
The Mason Cash pudding basins blend high quality with a perfect
functional design. The quality is so high that the British Royal Household
gives Christmas puddings presented in Mason Cash pudding basins to
their staff every year.
the rim
Once a pudding mixture is packed into a pudding basin, the basin needs
to be sealed by tying a lid (usually made from greaseproof paper and foil)
around the rim before steaming.
A handle must also be tied to this lid, and the protruding rim of the Mason
Cash basins allow the lid to be tied and maintained throughout the steaming
process and whilst being lifted in and out of a steamer.
the body shape
The rounded, smooth shape of the Mason Cash pudding basins give puddings
their distinct shape, but the shape also allows for an easy release after
being steamed for several hours.
the vented base
When a pudding basin is placed into a steamer or pan of simmering water,
air bubbles will form underneath it as the temperature reaches boiling point.
These bubbles or pockets will find the easiest route to escape, usually
straight up, which can cause some basins to tip inside a steamer.
The Mason Cash pudding basins feature 3 vents in each base which allow
trapped bubbles or pockets of air to escape easily when steaming, eliminating
any need for a trivet or saucer to be placed in the pot beforehand.

terracotta must be unglazed. Unglazed terracotta is
porous and will draw in moisture from whatever
touches its surface. When bread dough touches the
surface, it will draw or wick moisture away from it,
giving a crispier crust when baked.

pie baking such as soggy bottoms, burnt bases and pastry shrinkage. With
a series of unique embossments, the Perfect Pie Dishes help to prevent these
culinary catastrophes, with perfect results every time.
The Perfect Pie Range is made from fine quality stoneware which conducts
heat slowly and evenly. The dishes therefore heat up gradually, building
and spreading the heat throughout, resulting in perfectly-baked, browned pie
bases and evenly-cooked pie fillings.

The tagines consist of two parts: a circular base dish with low sides,
and a large cone shaped lid that rests inside the base during cooking.
The lid is designed to promote the return of all condensation to the
base ensuring that meat and vegetables are kept nice and moist and

Ingredients
For the Bread
500g strong white bread flour
350ml warm water
1 x 7g sachet fast action dried yeast
20g butter – melted
1/2 teaspoon salt
1 tablespoon caster sugar
For the Coating
250g soft dark brown sugar
125g butter – melted
1 tablespoon cinnamon
1. Put the flour into a large mixing bowl. Add the yeast
and salt. Stir until combined.
2. Add the butter and half the water and mix together,
continually add the water a small amount at a time until
the mixture forms a rough dough.
3. Tip the dough out onto a lightly floured work surface and
knead for approximately 10 minutes until the dough is
smooth, stretchy and bounces back when touched.
4. Place the dough into an oiled bowl and seal with cling
film or proving lid. Allow to rise for approximately 1 hour
or until the dough has doubled in size.
5. Meanwhile, mix together the soft brown sugar and
cinnamon in a small bowl. Melt the butter in a separate
bowl and set aside. Lightly grease your bread form
with butter.
6. Remove the dough from the bowl and knock it back,
kneading all of the air out of it.
7. Shape your dough into small balls (about 3cm). Dip each
ball into the melted butter then cover with the brown
sugar and cinnamon mixture. Layer your dough balls in
the bread form till all the dough is used up. Cover and
leave to rise for another 45 minutes. Meanwhile, preheat
your oven to 200°c/ 390°F/ gas mark 6.
8. Place your bread into the oven and bake for 35-40
minutes until golden brown
9. Leave in the bread form to cool slightly for 5 minutes,
turn out onto a flat surface and serve.
