Itinerary
• Day 1
• Pre-dinner chef demonstration at Château de Bagnols conducted by Matthieu Fontaine, with a tasting
of wines of the region.
• A multi-course gastronomic dinner at Château de Bagnols (1* Michelin) prepared by Matthieu
Fontaine, with wines of the region.
• Day 2
• A day outing hosted by Clive Coates, MW from Beaujolais through southern Burgundy, including 2
winery visits, a visit to an artisanal delicacy producer and a regional lunch in a beautiful private home,
with regional wines.
• An evening visit to the home and cellars of a distinguished vintner in Gevrey-Chambertin, with a cellar
tasting followed by an authentic harvest feast prepared and served in the home, accompanied by the
producer's own wines.
• Day 3
• A visit to a quaint, countryside chevrerie to experience the cheesemaking process and sample the
artisanal cheeses.
• A visit to the vineyards, home and cellars of one of the most distinguished vintners in Vosne-Romanée,
with a cellar tasting followed by a lunch prepared by our celebrity chef and a local chef and served in
the home.
• Dinner at an authentic, family-run auberge, with local wines.
• Day 4
• A morning market shopping outing in the town of Beaune with Chef Fabienne Escoffier.
• A day outing on foot through the town of Beaune; sub-groups of no more than 4 guests hosted by
prominent locals, with insider visits, capped off by a gathering for tea at a beautiful private home.
• An evening horizontal tasting of grower Burgundies conducted by Becky Wasserman & Russell Hone
in their beautiful stone farmhouse home, followed by a dinner in the home consisting of different
courses prepared separately by our celebrity chef and Chef Fabienne Escoffier, creative versions of
Burgundian classics.
• Day 5
• A hosted visit to the Château de Commarin.
• Lunch in a quintessential village café nearby, with local wines.
• Hot air ballooning over the villages & châteaux.
• A multi-course gastronomic dinner at l'Abbaye de la Bussière (1* Michelin), with wines of the region.
• Day 6
• A day outing in Troyes, strolling through the old town, then shopping with our celebrity chef at the
town's covered market.
• A lunch prepared from those market provisions by our celebrity chef in an exclusive private venue in
Troyes.
• A visit to the chocolate factory of world-champion chocolatier, Pascal Caffet, including a personal
chocolate sculpting demonstration by M. Caffet.
• An authentic Champenois dinner in the home of a distinguished vintner in Champagne, with wines of
the region.
• Day 7
• A day outing hosted by a local slow-foodie to explore the culinary and oenological riches of the region,
including 2 winery visits (a grande marque and a grower-producer), with lunch and a visit to an
artisanal delicacy producer.
• A pre-dinner presentation and tasting of grower Champagnes.
• A multi-course gastronomic dinner at Château les Crayères (2* Michelin) prepared by Philippe Mille,
with wines of the region.
• Day 8
