Recipes from
Missouri’s First Lady
Georganne Nixon shares two favorite recipes from
the Governor’s Mansion. Fresh vegetables are
picked from the garden on the mansion grounds
and used in these recipes.
Corn and Avocado Salsa
From the Herbal Cookery Cookbook
2 tablespoons extra-virgin olive oil
4 cups fresh corn kernels
1 large red onion, chopped
1 large red bell pepper, chopped
½ cup pitted green or black olives,
chopped (optional)
2 garlic cloves, minced
juice of 2 limes
3 tablespoons red wine vinegar
¹⁄³ cup extra-virgin olive oil
¹⁄³ cup chopped fresh cilantro, or
2 tablespoons chopped fresh oregano
salt and freshly ground pepper to taste
2 ripe avocados, cut into ½ inch chunks
Heat 2 tablespoons olive oil in a 14-inch skillet over medium-high heat until
shimmering. Add the corn and cook until some of the kernels are brown and slightly
dry. Combine the corn, onion, bell pepper, olives, garlic, lime juice, vinegar, ¹⁄³ cup
olive oil, the cilantro, salt and pepper in a medium bowl and mix well. Marinate at
room temperature for a few hours. Fold in the avocados just before serving.
Note: Use as a salsa with chips, or serve over a bed of lettuce with sliced or
wedge-cut tomatoes.
Sweet Green Tomato Pickles
From cooks.com
½ peck green tomatoes
½ cup salt
3 cups cider vinegar
1 cup water
2 cups white sugar
2 cups light brown sugar
1 box stick cinnamon
½ box whole cloves
Night before, slice tomatoes, add salt, and cover with cold water. Leave overnight. In
the morning, bring to a boil, let cook on medium heat until not quite tender. Drain.
To make syrup: Combine remaining ingredients, bring to boil, lower heat and continue
cooking for ½ hour. Add tomatoes to syrup and cook for 5 minutes. Remove
tomatoes with slotted spoon and fill hot sterilized jars.
Add 1 cup each of brown and white sugar to liquid and boil until thickened. Pour over
tomatoes and seal. These pickles can also be made in a crock.

Chanukah: Festival of Lights A traditional Jewish holiday celebration

Kwanzaa: Festival of the First Fruits A contemporary AfricanAmerican holiday includes storytelling, and authentic African drumming and

Gardenland Express Our annual holiday flower and train show is better
than ever with more trains and child-friendly scenes. Watch as G-scale
model trains travel through a mountainous, miniature landscape of living
