The Cub at Flying Horse Recognized for Environmental Excellence. The Club at Flying Horse has achieved designation as a “Certified Audubon Cooperative Sanctuary” through the Audubon Cooperative Sanctuary Program for Golf Courses. Mark Beitel, Assistant Superintendent led the effort to obtain sanctuary designation on the property and is being recognized for Environmental Stewardship by Audubon International. Beehive Wheat Ale: Definitely sunshine in a glass.

Beehive is a joy to drink, with it’s beautiful honey-gold
color and refreshing, full-flavored body. Local Black Forest
honey adds character without sweetness.
Laughing Lab Scottish Ale: This brew has won Nine
Scottish Ale Medals since 1994. A careful blend of
specialty malts gives a nutty, roasted flavor that’s mildly
sweet, but not too rich.
Mass Transit Amber Ale: Like the (VW) bus on it’s label,
Mass Transit has a mellow vibe and fiercely loyal following
of fans. This Ale has a rich auburn color and easygoing
nature.
Compass IPA: This India Pale Ale has a lot of zip, it brings
together a tasty combination that lingers through the
inish and beyond. A hands-down favorite with the
regulars in the Bristol tasting room.
You can enjoy all of these specialty craft beers for $4.75
for the 12 oz. pour and $5.95 for the 22 oz. pour!
3 medium sweet potatoes
1 1/2 teaspoons Madras curry powder
Kosher salt and freshly ground pepper
2 cups low-sodium chicken broth
1 1/4 cups chunky applesauce
1 tablespoon extra-virgin olive oil
1 tablespoon apple cider vinegar
1 to 2 tablespoons chopped fresh cilantro
Directions
Preheat the oven to 425 degrees F. Peel and dice
2 1/2 sweet potatoes. Melt 2 tablespoons butter in
a large pot over medium heat. Add the onion and
garlic and cook until soft, about 5 minutes. Stir in
the ginger, nutmeg, 1 1/4 teaspoons curry powder,
and salt and pepper to taste and cook until
toasted, 1 more minute.
Add the diced sweet potatoes, chicken broth and
2 cups water to the pot, cover and bring to a boil
over medium-high heat. Reduce the heat to medium low and stir in the applesauce. Simmer, covered, until the sweet potatoes are soft, about 20
minutes. Puree the soup with a blender until
smooth. Season with salt and pepper; keep warm.
Meanwhile, peel and thinly slice the remaining 1/2
sweet potato and toss with the olive oil, and salt
and pepper to taste. Spread in a single layer on a
baking sheet and bake until crisp, 7 to 10 minutes.
Heat the remaining 1 tablespoon butter in a skillet
over medium heat. Add the remaining 1/4 teaspoon curry powder and cook, stirring, until
browned; remove from the heat and add the vinegar. Top with the curry butter, cilantro and sweetpotato chips.

CHILDREN’S ACTIVITIES CONTINUED Have fun while learning basic cooking techniques. Kid Chefs teaches kids how
to read and prepare recipes, how to measure, mix, prep and then prepare
foods of all kinds and kitchen safety. We save the best for last – eating what
we make at the end of each class.

TENNIS NEWS Junior Tennis
The current session for Junior Tennis began on August 5 and runs through
September 15. Session VII starts on September 17 and runs through October

The 7th Annual Tennis Club Championships has started. Early rounds were
played in July & August and the semis and finals (Sept. 6-8) will be played in
September.

FITNESS/PILATES Welcome Our New Personal Trainer Ryan Lentz!
The Club is excited to add someone new to the family! Please welcome
NEW Personal Trainer, Ryan Lentz. Ryan is a Certified Strength and
Conditioning Specialist with the National Strength and Conditioning
Association with a Bachelor of Arts in Philosophy. Ryan’s interest in
strength training began in high school and increased as he learned
more about the multifarious benefits that it imparts. He has chosen to
use this knowledge to assist others in increasing their quality of life
through improved health and fitness.
Colorado Springs has been his home since age twelve, minus one year
each in Yosemite National Park and Germany, and two and a half years
in Breckenridge. In Ryan’s free time he enjoys mountain biking, rock
climbing, trail running, backcountry skiing, and cooking. He also
reads voraciously, much of which relates to health and wellness. More recently
he’s completed the Ft. Carson Spartan Race. Please contact Ryan directly for

Fitness News
The kids are back to school so come join us for some fun fitness classes. We
offer a variety of fitness classes from Yoga, Zumba, Cycle to Hard Core Body
Pump, Insanity and Metabolic Mayhem. Join us in the early mornings at
5:30am, mid mornings at 8:30am, 9:45am or take advantage of our evening
classes. Find the class that you like best and don't be afraid to cross train
and come to a class you have never tried before. Group fitness classes are
included in your monthly membership costs so hope to see you there!
Barre Classes are starting soon. Barre is a combination of Pilates/Yoga and
Dance that will isolate your muscles to the point of failure leaving you feeling
and looking toned while increasing your flexibility. Four of your existing Instructors are certified and putting on the finishing touches to offer you dynamic new classes. Check the monthly fitness schedules for days and times
coming soon!

At the start of each school year we like to remind
Members of our Pilates Studio at Flying Horse.
We have a beautiful studio located on the top floor of the Athletic
Center next to the weight room. We have reformers, chairs,
spring boards and a ladder barrel. We provide small group
classes (max. 6 people) to offer individualized attention to your
body and ensure that you are completing the exercises with
proper form and control. We also offer 1:1 sessions if you prefer
a private workout with 100% full concentration on you and your
needs for the ultimate body workout. Please see our brochure on
line or at The Club for class options and pricing to best meet
your needs.
Special Beginner Pilates: We would love to start a new beginner
class on Wednesdays at 10:45am so if you or someone you know
is new to Pilates then come on in for a month long beginner class
at just $10.00 per class. Must have at least 3 people to start the
class.

AQUATICS On August 7th, the Club at Flying Horse held it’s Club Swimming Championship.. Swimmers
competed in many different events against their fellow club members. Participants included
some of our youngest members and their several of their parents. Be on the lookout for this
exciting event next summer as we are excited about building this tradition at the pool.

**Reservations are required no later than 12:00pm on the day of the reservation
so we can staff appropriately. Based on availability we will accept reservations
after this time (Please call the Kids’ Cabin to confirm). If reservations are not
received, the Kids’ Cabin will close at our normal time. As usual children may
stay in the Kids’ Cabin a maximum of 3 hours in a 24 hour period.

The Club at Flying Horse Recognized for Environmental Excellence
The Club at Flying Horse has achieved designation as a "Certified Audubon Cooperative Sanctuary" through the Audubon Cooperative Sanctuary Program for
Golf Courses. Mark Beitel, Assistant Superintendent, led the effort to obtain
sanctuary designation on the property and is being recognized for Environmental Stewardship by Audubon International. The Club at Flying Horse is the
38th golf course in Colorado and the 1014th in the world to receive the honor.
"The Club at Flying Horse has shown a strong commitment to its environmental
program. They are to be commended for their efforts to provide a sanctuary for
wildlife on the golf course property," said Joellen Lampman, Associate Director
of Environmental Programs.
"To reach certification, a course must demonstrate that they are maintaining a
high degree of environmental quality in a number of areas," explained Lampman. These categories include: Environmental Planning, Wildlife & Habitat
Management, Outreach and Education, Chemical Use Reduction and Safety,
Water Conservation, and Water Quality Management.
The Audubon Cooperative Sanctuary Program for Golf Courses, endorsed by the
United States Golf Association, provides information and guidance to help golf
courses preserve and enhance wildlife habitat and protect natural resources.
Golf courses from the United States, Africa, Australia, Canada, Central America,
Europe, New Zealand, and Southeast Asia have achieved certification in the program.
Audubon International is a 501(c)(3) nonprofit organization based in Troy, NY.

The Club Corner
Jon D Williams Cotillion is coming to The Club at
Flying Horse in October!
We are proud to announce that The Club will be partnering with Jon D. Williams, a social skills education company, to offer cotillion classes for children
in 3rd-6th grade.
In a world where kindness, courtesy and respect are often overlooked, JDW
Cotillions is recognized as an authority in educating young people in the art of
social dance and social skills training.
Dance breaks down inhibitions, teaches physical respect, develops confidence,
establishes teamwork and cooperation, reinforces non-verbal and verbal communication, and teaches the students how to appropriately interact with the
opposite gender in a structured and healthy environment.
3/4 grade-Junior Cotillion
Jr. Cotillion is the foundation for learning basic social skills through dance.
Classes provide a safe and fun environment in which students become confident and comfortable in social situations. Interactive activities and games
uniquely connect students to the value of treating others with courtesy and
respect, and how they can make a difference in their world.
Curriculum includes: Introduction to Social Skills, Introductions & First Impressions, Respect & Consideration, Everyday Courtesies and Table Manners.
Dances include fox trot, la’raspa, polka, swing hustle, bachata, and line
dances.
Classes are progressive from year to year and instructors work with students
based on their individual skill level and needs. New students at any level will
find it easy to adapt and extra help is always available.
5th grade-cotillion
Cotillion is the foundation for learning important social skills through dance.
Classes provide a safe and fun environment in which students become confident and comfortable in social situations. Refining and practicing good manners, at this influential age, offers rewards that will benefit children throughout their lives.
Curriculum includes: Introduction to Social Skills, Introductions & First Impressions, Respect & Consideration, Everyday Courtesies and Table Manners.
Dances include fox trot, waltz, swing hustle, bachata, andfolk dances.
Classes are progressive from year to year and instructors work with students
based on their individual skill level and needs. New students at any level will
find it easy to adapt and extra help is always available.

6th grade-club cotillion
Club Cotillion builds upon students' basic understanding of the social skills
that contribute to character, improve communication and develop successful
relationships. Developing a sense of social awareness in this interactive atmosphere allows students to apply their knowledge in everyday life.
Curriculum includes: The Power of Social Skills, Conversation Skills, Demonstrating Courtesy & Respect, Cell Phone Savvy and Dining Etiquette & Table
Manners.
Dances include basic and intermediate patterns of the fox trot,
waltz and swing hustle plus an introduction to cha cha, merengue and tango.
Classes are progressive from year to year and instructors work with students
based on their individual skill level and needs. New students at any level will
find it easy to adapt and extra help is always available.
