400 g of chick peas (soaked)
1 smoked ham bone
1 pig trotter
200 g of sliced streaky bacon
200 g fat from the cheek of the pig
200 g pork
1 chorizo sausage
1 black pudding sausage
1 bay leaf
Salt (to taste)
Preparation

In a large stewpot, place chick peas, meats, ham bone and bay leaf and season with salt. Bring to a hard boil for 5
minutes until a foam rises on the liquid. Skim off the foam (these are toxins). Lower the heat and simmer for 1 hour.

Prick the sausages with a pin so that they release their fat and flavour and add to stew. Cook for another hour.

Once everything is cooked, remove the meat. Debone the pig trotter and put that meat back in with the broth. Slice
the meat and serve separately.

Use the broth to make a rich soup. All you have to do is add some mint leaves and tiny noodles, boil and serve.
