am a big fan of the two girls on our cover. I followed them weekly as they competed on
Asia’s Next Top Model Cycle 2. Of course, I rooted for both of them! So it was such a
thrill when Jodilly Pendre and Katarina Rodriguez ended up in the top three. Cliché as

it may sound, in my eyes—and in fellow Filipinos’—they were already winners. I wish them
both the best of luck in their respective careers!
Another personality I’m a big fan of is fashion photographer Shaira Luna. Readers of a
certain age will remember her as a “gifted child” of Promil ads back in the 90s (sorry, Shaira,
I know you hate it when I tease you about this!). She’s one of my favorite people to work
with and I always look forward to her creative mix of ukay finds, high-street brands, and
designer accessories. Check her out as this week’s Woman@Work.

And Climate Change—agam is an early Filipino word for foreboding and memory—has a collection
of 26 images taken by photographer Jose Enrique Soriano and 24 original creative narratives in

All proceeds from the sale of the book will go to the Re-Charge project, an integrated solar

the life-changing experience that was
Asia’s Next Top Model
What were you doing before joining Asia’s Next Top Model (AsNTM)?
Jodilly: I was a graduate of information systems and a full-time model in
the Philippines. I was just a girl full of aspirations and hope. Katarina: Before AsNTM, I was a full-time student and athlete at De La
Salle University. My days consisted of waking up at 5am to train, then class,
followed by training again or yoga, homework, and sleep. It was a very
routine lifestyle.
What made you decide to join the show?
Jodilly: I joined because I wanted to give my mom the best future and to
fulfill my goal of becoming the next Pinay international supermodel. I also
wanted to show the world how great Filipinos are. Katarina: My best friends convinced me to audition for the show. They knew
I had always had this interest in becoming a model. I auditioned live and
was the third girl interviewed. I was completely out of my element—until
now I am still in disbelief I was chosen!
What was your experience like as a contestant of the show?
Jodilly: It was tough dealing with all the stress, pressure, co-contestants,
and, most especially, yourself.
Katarina: My experience was phenomenal. I learned so much about myself,
others, modeling, and life in general. I love who I am at this very moment
and a lot of it has to do with what I learned and went through on AsNTM.
Being a contestant gave me opportunities, from seeing how the glamorous
life is, to traveling, to being put through situations you only, well, see on TV!
What were the lessons you learned being in the show?
Jodilly: You always need to appreciate and encourage yourself. Katarina: In modeling, it doesn’t matter how tall you are, how stereotypically
thin you are, and even how beautiful you are—if you don’t know how to
deliver the expression, energy, or vision the client wants, you won’t succeed
as a model. I also learned to be brave in whatever I choose to do. When you
dismiss fear and any negative feeling, you have fun and the passion comes
out, and whatever it is you’re doing will be wonderful.
What was your favorite challenge on AsNTM?
Jodilly: The Subaru Challenge, because I learned to communicate with other
people better and how to have a good conversation. Katarina: The very first runway challenge when we had to walk on water.
That’s when I first realized how challenging this entire competition was
going to be and that it was not a joke. I also learned that as long as I gave
it my all each time, I would progress. Regardless that I was the only one who
fell in the pool, I wasn’t eliminated but instead praised for picking myself
back up after falling. I had to look at every other obstacle that they would
throw my way in that same perspective.
What has been your proudest moment as a model?
Jodilly: The moment in the finale even when I wasn’t proclaimed as the
winner, but I knew in my heart that I’ve been my greatest for myself, for my
mom, and for the Philippines.
Katarina: I think my proudest moment as a model is happening right now.
It’s how I carry myself after the show that will determine everything else for
me. AsNTM gave me the foundation necessary to begin my career and so
far, I feel like I have been doing an amazing job. These next couple of years
will be my proudest moments because it’s the decisions and actions I take
within them that will set off the rest of my life.
What is next for you? Jodilly: To go global. There are campaigns that I cannot disclose yet. Just
stay tuned for the bigger and grander things Jodilly has in store for you! Katarina: There are many projects happening for me for the second half
of this year! Although I can’t give much away, I am surely establishing
myself here in the Philippines. Aside from that, I also have a lot of work in
Indonesia—I seem to be forming Jakarta as a second home. At the end of
August, I’ll be going to Thailand for work. I suppose I really am aiming high
and internationally. Huge things will be happening for me—I can feel it!

H
otel Luna was built on what was once
known as The Doña Carmen Florentino
House. It is a two-storey structure built
in 1882 by Don Jose Florentino as a wedding
gift to his daughter Carmen, who married Don
Honorato Romero Encarnacion on February 3,
1883. After Doña Carmen’s death, Don Honorato
married again, this time to Doña Petra Faz de
Leon. When Don Honorato died in 1917 in
Manila, his remains were brought back to Vigan
for burial.
His two daughters Maria and Mercedes
inherited the property, then sold it to their
nephew Don Salvador Encarnacion in the mid
70s with the wish that he not sell the property to
anybody except the heirs of Sabas Que, who had
expressed interest in the property. Before 1990,
the house was sold to Sabas Que’s son Benigno,
who made the necessary repairs and beautified
the interiors of the house.

Hotel Luna, named after painter Juan Luna, is
known as the only hotel-museum in the country.
If you’re into art and history, then this hotel is
definitely a perfect fit for you. The minute we
stepped inside, I could have sworn we were in
a museum rather than a hotel lobby as there
were lots of paintings and sculptures for us to

statue of a pregnant woman in alabaster by
Fred Baldemor; a streamlined “Maria Clara” in
bronze by Abdulmari Imao; stainless-steel human

small bronze bas-relief of the Deposition from
the Cross by Napoleon Abueva; “Lavandera”
by Fernando Amorsolo; and works in paper by
Romulo Olazo and Manuel Baldemor.
On the second floor, what was once the
grand sala of the The Doña Carmen Florentino
House was converted to the hotel’s museum,
which houses Juan Luna’s “La Mandolinera”
and a pencil sketch, as well as works by several
National Artists and other noted painters such
as Jose Joya, Abdulmari Asia Imao (who also
did the Luna bust located at the foot of the
hotel’s elevator), Bencab, HR Ocampo, Napoleon
Abueva, Guillermo Tolentino, Vicente Manansala,
Juvenal Sanso, and Carlos “Botong” Francisco.
Besides the old house, there is also an
extension building to accommodate more
guests. All in all, the hotel has 10 rooms in the
old house and 44 rooms in the extension. Each
room is designed for double occupancy, but can
accommodate a maximum of four people, since
each bed is big enough for two people to share.
The Queen Standard room and Double Queen
Deluxe can be found in the extension. Aside from
rooms having at least one painting inside, they
are also equipped with a flat screen TV, which
also offers WiFi connection, a safety deposit
box, and a high-tech push-button toilet. If you
want something a little more luxurious, go for
either the Loft Suite or Executive Suite, which
are located at the old house. The Loft Suite is a
double-floor room, with a king-size bed on the
second floor and a bathroom with a tub and TV
set. The Executive Suite isn’t double floor, but
it has a king-size bed, two couches that can also
be used as back-up beds, and a bathroom with
a tub and TV set.
As for food, Hotel Luna has three outlets
to choose from: Chula, Comedor, and Azotea.
Chula Saloon Bar offers a selection of beers,
fine wines, spirits, and bar food, and can
accommodate up to 40 people. The bar and
seating area have ornate furniture and uniquely
designed lighting, along with brick wall pillars
adorned with art pieces and bronze sculptures.
Comedor, the hotel’s restaurant, offers Ilocano,
Spanish, and select international items
with chef Robby Goco at the helm. It serves
breakfast, lunch, and dinner in a dining hall
filled with chandeliers, and contemporary art
pieces from famous Filipino painters, and has a
seating capacity of 100 people. It can also serve
as a function room for small events. Azotea at
the roofdeck offers a spectacular view of the

city matched with minimalist lounge chairs and
music. It can hold up to 300 people, making it
perfect for big events such as an anniversary party
or wedding. We even encountered a wedding
reception booked at Hotel Luna during our stay!
For those who want to go for a swim, the
hotel has an indoor pool with underwater
lights that turn on at night, while a spa and
gym will be up and running in the near future.
If you’re looking for something to do outside
the hotel, they offer city tours to the province’s
tourist attractions, as well as tours for nearby
destinations such as Laoag, Paugpud, and Baguio.

REMEMBERING HISTORY

Calle Crisologo
Named after Ilocano poet Mena Pecson Crisologo, Calle Crisologo
is the main street in Vigan. This cobblestone street stretches up
to one kilometer and is lined with two-storey colonial houses. The
ground floor is made of stone and used as a granary or storage
area, while the upper floor is made of wood and used for living
quarters with its sliding windows adorned in capiz shells. Some
of the houses have been turned into souvenir shops selling items
from T-shirts to locally grown tobacco. At present, the famous
cobblestoned Calle Crisologo is conserved by the local government
by prohibiting any motor vehicle to travel along the road. The only
means of transport allowed is the kalesa.
St. Paul’s Cathedral
St. Paul’s Cathedral is also known as the metropolitan cathedral. It
is considered a major religious landmark not only of northern Luzon
but the country as well. The church as it stands now was completed
in 1800. The original structure was built in 1574 upon the command
JULY 18, 2014 of the Spanish founder of Vigan, Juan de Salcedo. It was a mere
chapel then, made of wood and thatch. In 1641, the chapel was
replaced by a church. When the seat of the Nueva Segovia Diocese
was transferred to Villa Fernandina de Vigan from Cagayan’s Lal-lo
in 1758, the church was elevated to become the center of Catholic
faith in the north.
Vigan Pottery
Referred to as burnayan by the locals, Vigan Pottery is a little
spot that preserves the tradition of pottery-making. The burnayan
preceded the Spanish in Vigan and was established by Chinese
settlers, and the process remains faithfully the same. Each pot is
shaped for two minutes and dried for over a week. According to the
locals, burnay (made from Ilocos soil) is stronger than terracotta.

Uno de 50 opens its first Asian store to spread its brand of
uniqueness, craftsmanship, and boldness By Maris Mortel-Hiruntrakul
F
ormed back in 1996 by a group of
creative artists, jewelry brand Uno de
50 (pronounced uno-de-sing-kwen-ta)
originally produced only 50 pieces of each model,
thus the name. Their unconventional designs,
high-quality materials, and handcrafted pieces
of jewelry and accessories added to the exclusive
factor and appealed to a discerning market.
When the current chairman and owner
José Azulay acquired the company in 1999, he
applied his know-how from heading his family’s
watch company. Under his management, Uno
de 50 grew, from one store in Spain to over 70
around the globe, starting with a team of 10
employees to over 400 today. Having expanded

and South America, Uno de 50 has set its sights
on Southeast Asia with its first store opening
at SM Aura Premier. Expansion director José
Luis Pardos was in town for the launch. In an
exclusive interview, he told us, “Almost a year
and a half ago, we started to speak with SM.
To be successful in a new market, one of the
most important things is to have a good partner.
At the same time, the retail market in the
Philippines is very nice because you are bringing
in more international brands, there are lots of
shopping malls, and new consumers are being
incorporated into the market.” He added, “Also,
since Philippine consumers are more aligned with
American consumers than other countries in
Asia, and with our success in the States, it’s good
to start here.”
Inside the first Philippine store, the feel is
similar to all other Uno de 50 stores worldwide.
From the neutral colors set off by wood and
touches of the company’s signature red, the
feel is of distinct luxury with a modern, global
look. As one enters, one may notice the brand’s
symbol—a padlock—which is an iconic image
that stands for Uno de 50’s commitment
to originality and uniqueness. In fact, the
production process still employs the same
handcrafted techniques since its beginnings. The
entire process—from the initial sketch to the
finished ítem, which involves product design,
molding, carving, etching, coating, assembly, and
manual refinement—all take place in Madrid,
where the brand’s headquarters is located.
“In our headquarters we have a team of
designers whose job it is to think about new
pieces, and experts who will assemble all those
pieces,” explained José Luis. Most of the items
are made using a metal alloy that brings the
designs to life, and possesses that special handmade texture. Once crafted, each piece is silverplated, then combined with other materials such
as leather, resin, or glass.
The entire store can have up to 600 different
designs—aside from bestsellers and basic pieces,
at least 30% are new, so that customers get to
see something different whenever they visit. To
continue its promise of exclusivity, Uno de 50
launches limited-edition collections, each with
only 50 units made.
“We have two collections a year—spring/
summer and autumn/winter. And inside every
collection we have several subjects. For example,
for spring/summer we launched Jewels of
the Mediterranean, which is inspired by the
landscapes and colors of the four Balearic islands,
so we have special lines called Ibiza, Mallorca,
Menorca, and Formentera. Each collection has its
own philosophy, colors, and meanings,” said José
Luis.
The Uno de 50 customer is fashionable, but
does not necessarily follow trends, and actually
desires to look different from the rest, especially
when it comes to jewelry and accessories. “I think
the jewelry market has changed. In the past, what
was more valuable was the price or the material
used like gold, but today customers appreciate
the design and the feeling they have when they
wear a piece. I think this is the more attractive
point of our pieces,” said José Luis. With each
one, Uno de 50 tries to offer that experience of
owning something special, something that allows
us to expresses ourselves in a very visual way
with a unique and intriguing necklace, bracelet,
ring, earring, or watch. In this way, Uno de 50
has made choosing jewelry more personal.

International chef Bobby Chinn wants
to convince diners to be conscious
about sustainably sourced seafood

I
nternationally renowned, Vietnam-based
celebrity chef and restaurateur Bobby Chinn
finds it hard to stay still. His enthusiasm
for what he does—whether it’s coming up
with a new dish, or hosting a cooking show, or
putting up a restaurant—and his upbeat and
humorous approach already makes for some fun
entertainment in itself.
I got to witness this live when, in celebration
of the Coral Triangle Day in the Philippines
last June 9, Bobby was flown in for a cooking
demonstration at Pico de Loro Cove, Hamilo
Coast in Nasugbu, Batangas. As an ambassador
of World Wildlife Fund for Nature (WWF) for
their Coral Triangle initiative, Bobby has, for
the past three years, been making a case for the
importance of meeting the world population’s
growing demand for seafood in a sustainable
manner.
Where does the fish on your plate come from?
According to WWF, it is highly likely that it was
sourced from the Coral Triangle, considered the
world’s epicenter of marine life abundance and
diversity. Spanning the waters of the Philippines,
Malaysia, Indonesia, Papua New Guinea, the
Solomon Islands, and Timor-Leste, it covers
some 5.7 million square kilometers and is home
to 76% of the world’s known coral species, 37%

of the world’s coral reef fish species, and species
such as tuna, whales, dolphins, rays, sharks, and
turtles. The Coral Triangle directly sustains the
lives of more than 120 million people.
The Philippines sits at the apex of the Coral
Triangle. Hamilo Coast in particular is located
right at the entry of the Verde Island passage, one
of the most prolific areas of the Coral Triangle. As
such, the seaside leisure development has tied up
with WWF Philippines to implement programs
such as the declaration of marine-protected areas
of selected coves, the deployment of Bantay Dagat
units to protect the area from illegal fishing, and
WWF’s ridge-to-reef management projects.
Now we Filipinos, of all people, need to find
causes such as these all the more imperative.
As the world’s second-largest archipelago,
fish is one of the Filipino’s main sources of
protein. With the Philippines as one of the most
productive marine regions in the world, there
have been rising concerns about overfishing and
illegal fishing that destroy coastal and marine
environments and wipe out large populations
of fish stocks; these practices compromise our
future food security and livelihoods. Public personalities like Bobby have since
used their voices and influence to promote
conservation efforts of the oceans. His is a
call for more consciousness, not only with
dining establishments, but more so among
diners themselves, to start asking where their
seafood came from, and if it was caught using
sustainable fishing methods. His is a call towards
a change in the way we think about food and
our responsibility to the environment where it
comes from. “The diner is essential to the whole
restaurant establishment,” he said. “The diner
has one of the greatest rules ever written: The
diner is always right. I think if you educate the
diner, then all of a sudden the establishment
starts taking the diner more seriously. So I think
you are going to see a change here. You can see a
change already in different leading markets—San
Francisco was one of the first, London has
embraced it—it’s something that’s not going
away. There are a lot of global issues and many
are related to food.”
One example Bobby gave is the high demand
for shark fin soup, a Chinese delicacy that
threatens the survival of a species integral to
maintaining the health and balance of global
marine ecosystems. According to WWF, about 73
million sharks are slaughtered each year for the
lucrative shark fin trade. “I’ll tell you one thing
about shark fin. No taste. No nutritional value. I
don’t understand why people still eat shark fin,”
Bobby lamented. “[Many] just see it as a product,
a commodity. That connection where that fish
comes from is missing. That’s what’s really scary.
People always say, you’ve got to respect the
ingredient—what about the environment where it
comes from?”
“For all the statistics about saving our ocean
floors, consumption and growing demand,
climate change, a lot of people still ask why I got
involved,” he said. “While I was filming World
Café Asia series, I was horrified by markets we
visited. I was in Sri Lanka and they’ve had baby
swordfish—I was like, isn’t that endangered? And
nobody knew. Same thing in Zanzibar where we
went deep-sea fishing and I didn’t catch anything
because it was overfished; when I went to the fish
markets—they had sharks without fins. And it
actually repulsed me.”
During the cooking demo, Bobby then shared
a substitute to shark fin, using seared snapper
head. “I also did it with salmon head and I ate
everything except the really tough stuff. I ate
the cartilage,” he said, in between regaling the
audience with his culinary adventures. He also
made a tuna tartare from local fish that was
caught using hand-line fishing, a more traditional
and sustainable method, which was then served.
The fresh, subtly flavored tuna with a melt-inyour-mouth texture tasted even better without
the guilt.

ast-rising fashion designer Keiko Nishiyama has collaborated with Fiflop for a limited-edition
collection. Nishiyama quickly became a hit in the international fashion scene for her signature
botanical textile designs inspired by English gardens and flower cultivation. This design
philosophy earned her a standing ovation among critics at the 2013 London Fashion Week. The collaboration features two exclusive fantasy floral prints of Nishiyama’s “hybrid” blooms—her
design technique called for hand-drawn new flowers that are combined to create two unique prints,
which are then specially engineered to work on a 3D shoe shape. The designs are reinterpreted in three
styles—the Skinny toe-thong, Bon sandal, and Shuv clog. Apart from the spectacular bed of blooms, all
