Made just south of Dublin, Wexford Cheddar is a mature, twelve-month cheddar. The
Friesian cows of County Wexford produce some of the creamiest milk found on the Emerald Isle.
This milk is skillfully turned into sharp Irish cheddar as it ages for at least a year. Due to the richness
of the milk, this cheese still keeps a buttery flavor once it comes out of the Wexford aging rooms. Enjoy
Wexford Mature Cheddar with a pint of good Irish ale, or a crisp glass of white wine.

At first glance, this cheese doesn’t look like it has had whiskey poured into it, but take a look at the
pale yellow paste, and you’ll see subtly darker rivulets of whiskey meandering around the curds. You

the medium-sharp cheddar, and gives your stomach a warm feeling on the finish. Like a good whiskey,

Valdeón maintains a rich, complex flavor that owes to the blend of milks. While Valdeón is often
sold as Cabrales in the U.S., it is a famous cheese in its own right, earning the Spanish D.O. name
protection as well as the title of Best Blue Cheese in Spain‘s 2003 national competition. The leafwrap packaging pays homage to the days when the cheese was wrapped in sycamore leaves, which
is now banned by the FDA.
