GREETING
CARD
2012 was certainly a
good vintage for
HINE and 2013 will
most certainly be a
year full of emotion
and passion when we
celebrate the 250 years
of the House of
HINE.
I wanted to thank you
for the confidence you
have constantly shown
in all our cognacs but
also send you from all

our very best wishes

EDITORIAL
Editorial by François Le Grelle,
HINE’s Managing Director
“In June 2013 Thomas HINE & Co will
be celebrating its 250th Anniversary.
Today the House of HINE is renowned
around the world thanks to its rich history: the arrival of Thomas Hine in 1791,
the creation of exceptional vintage cognacs, the appointment of the Royal
Warrant by Her Majesty Queen
Elizabeth II of England and the untold
recognition of HINE cognac’s quality by
professionals and connoisseurs.
Two hundred and fifty years is for anyone
a major event, so for almost a year now
we have been working on something very
special which will be linked to the 60th
Anniversary of the Coronation of Queen
Elizabeth II.
I can now start to unveil some of the
events planned in 2013.
We have imagined and planned a dedicated edition cognac, limited to just 250,
presented in a cut-crystal decanter which
will not only be beautiful but totally unique and which will reflect the brand’s
DNA. It has been created in France by a
famous designer known throughout the
world... We have a few technical challenges to address, but it will be hand-finished
to the very highest standards, and there
are very few people, who can do this quality of work.
It is clear that for now further details of
this very special edition cognac will remain a closely-guarded secret, but all will
be revealed during a very special dinner
here for a number of our most important
customers with a menu created by a
Michelin starred chef and some special
entertainment.
There will also be an exhibition in Jarnac
showing the heritage of HINE and our
contemporary values.
HINE will also be present at Vinexpo
2013 in Bordeaux, where we will be telling
the world about the limited edition anniversary product and our celebration
events. Immediately after this we will have another event in Jarnac especially for
all the local people who contribute to our
success.
I will keep you informed in 2013 as our
projects for HINE advance: 250 years of
a House which deserves all our efforts to
prolong its great destiny.”
250 YEARS OF CREATION
The House of HINE will be celebrating its
250th anniversary in June 2013 and the
long history of its savoir-faire known
throughout the world.
When Thomas Hine took over running the
company, he expanded what was to become the traditional business of the HINE
company; making bespoke cognacs for
English wine merchants. This bespoke
concept of the business was then adapted
for top restaurants, high class grocers, wine & spirit merchants and luxury hotels.
Thanks to this bespoke concept for
English wine merchants, the House of
PENTAWARDS
2012 A GOLD
AWARD FOR TRIOMPHE
Arthur Cooper, Reading
HINE Triomphe received the Gold
Pentawards 2012 in the Luxury Spirits
category, rewarding the qualities for its
new exceptional packaging designed by
Toscara design agency.
The sixth edition of the Pentawards was
held on October 4th at the Hotel
Intercontinental in Paris, to recompense
the best achievements from 1500 entries
from some 47 countries. HINE is the
only cognac house to have been awarded
with a Gold Pentawards.
François Le Grelle, HINE’s Managing
Director, declared during the awards as
being “delighted that the House of
HINE can contribute in some way to the
recognition of cognac world-wide due to
its stunning creations”.
This cognac expression was created in
1888 by Thomas Edouard Hine, to celebrate the “triumph” over the phylloxera
disease which completely destroyed most
French vineyards. To honour the men
and women that battled to overcome this
disaster, Thomas Edouard blended his
most exquisite eaux-de-vie to create this
exceptional cognac, now presented in a
stunning decanter, which has been the
pride of the House of HINE for more
than 120 years.
Connaught Hotel, London
Nicolas, France
François Le Grelle and Margje Pruim (HINE),
Sébastien Schalchli and Stéphane Aussel (Agence
Toscara)
HINE discovered the British climate’s
benefits for its vintage eaux-de-vie. Indeed the wine merchants were storing the
casks from Jarnac in cellars close to the
Thames, in hydrometric conditions very
different from the Charente, giving the
cognac other exceptional qualities.
For example, Family Reserve was created
in 1936 following a request from Sherry
Lehmann, a New York wine merchant
who is still present on Park Avenue. This
quality, created originally for this wellknown customer more than 70 years ago,
is still one of the most exclusive HINE
cognacs and it is sold in very limited
quantities.
The House of HINE has steadily developed partnerships with some prestigious
establishments, Michelin starred restaurants such as Troisgros or Taillevent,
Nicolas wine shops and more recently the
Hotel de Crillon and the Burgundy in
Paris, Les Crayères in Reims (France) and
the Ritz Carlton in Guangzhou (China)
without forgetting our partnership with
Waitrose (United Kingdom).
Today, HINE is one of the very few
Houses to propose vintages aged in the
United Kingdom, giving the cognac characteristics that make Early Landed so
unique.

Jim was born in River Forest, Illinois:
right outside the city of Chicago in 1976.
He went to college and worked in bars to
help pay for school, but by the time he
was 22, Jim knew he wanted to be in the
bar business for the rest of his life.
Jim moved to New York City in 2002 to
learn more about wine, cocktails, and expand his skills. He honed his wine and
food knowledge in restaurants including
Five Points, Pace and Gramercy Tavern,
before working as a bartender under
Audrey Saunders at the Pegu Club.
In March 2007, Jim helped Crif Dogs
founder Brian Shebairo open PDT in
Manhattan’s East Village. It is attached to
a legendary hot dog stand via a vintage
phone booth, which serves as the front
door. In this short tenure, PDT has had
the good fortune of being recognized as
one of the best cocktail bars in the world.

In November 2011, Jim Meehan released the PDT Cocktail Book, a weighty
tome containing over 300 cocktail recipes bookended with bar operations guidelines and further reference material. As a tribute to his favourite cocktail
books of the early 20th Century, he partnered with illustrator Chris Gall to
bring contemporary cocktail culture to life through his beautiful engravings.
The book features a handful of Jim’s favorite cognac recipes prepared with
HINE cognacs.
HOW DID YOU DISCOVER HINE COGNAC?
I was always aware of HINE, but never worked with it in cocktails until a
friend of mine who worked for HINE at the time commissioned me to create
HINE cocktails for a gallery reception. After mixing with HINE at the event, I
made it my house cognac at PDT many years ago.
HOW DO YOU SELECT THE COGNACS IN YOUR WINES & SPIRITS
LIST?
PDT is tiny, and cocktail focused, so I only stock a few cognacs. Since we’ve
opened, I’ve always carried a workhorse brand such as H by HINE, a reasonably priced X.O. and bottling from a big house. We use H by HINE to prepare
more than 90% of our cognac cocktails.
WHY HAVE YOU SELECTED H BY HINE?
I don’t think you can find a better cognac, for the money, than H by HINE.
Unlike more bulbous bottles, the H bottle fits perfectly in my well, where it is
used to prepare classic cocktails such as the Sidecar, Vieux Carré and East India
Cocktail.
Add the cucumber, mint and simple syrup to a mixing glass and muddle. Add everything else, then shake with ice and strain into a collins
glass filled with ice. Garnish with a mint sprig poking through a cucumber wheel
(Jim Meehan, Fall 2008)
This hybrid of Audrey Saunders Gin Gin Mule substitutes Cognac for gin and adds Falernum and cucumber. Milk & Honey barman Sam Ross has a similar
drink made with Bourbon dubbed the Kentucky Maid: consider this her spicy French sister.

HINE
TASTING COLLECTION
The House of HINE presents a new tasting box, intended to showcase three flagship cognacs.
HINE is the first spirit brand to introduce
the concept of the tasting collection developed by A2C and protected by a worldwide patent; HINE Tasting Collection
features three samples of HINE’s finest
cognacs: HINE Rare VSOP, Homage and
Antique XO Premier Cru.
This presentation box reinvents the tasting
experience: the three ‘mini’ 15ml bottles
provide the ideal opportunity to sample
and appreciate the aromas of these fine
cognacs and to compare the particular
characteristics of each of HINE’s creations.
The packaging’s sleeve of this sophisticated box displays HINE’s messages and
values, has a double security feature (box
and capsule), which guarantee the cognac’s
authenticity.
Easy to use, this packaging is intended to
propose HINE cognacs tasting in bars,
restaurants and wine & spirits shops without forgetting that it can be tasted on
trade or as a giveaway.
During PR events, HINE Tasting Collection can be added to goodie bags or press
kits for the guests. With this new promotional reference, the aim is to introduce
and initiate new consumers to HINE.
FENG HE
EXPORT, CHINA
With the arrival of Feng HE,
HINE is building up the
team to develop sales on the
CHINEse market. Feng will
report to Jacques Ielli, Sales
Director.
He joined HINE with 3
years experience in the commercialisation of wine in
China. Feng has also carried
out some work placements
for Domaine Gayda and
Castel China and also worked for Château Tour
Marcillanet and Vic d’Or.
DOMAINES HINE HARVEST
HINE is privileged to own an exceptional estate of 120 hectares in the heart of
the best cru of cognac: the Grande
Champagne. In the small village of
Bonneuil, Domaines HINE’s rolling hills
overlook the Colinaud Valley. The estate
comprises 70 hectares of vines with an
average age of 25 years; woods lie on the
remaining land. The estate is cultivated
using environmentally friendly techniques.
HINE’s estate enjoys a perfect NorthSouth orientation that ensures long hours
of sunshine and warmth, ideal for grape
maturity. Cognacs from this premier cru
are known for their finesse, floral bouquet, elegance and longevity.
The rainy weather unfortunately enhanced Eutypa Dieback spreading and grass
growth. Flowering took place in a cold
and rainy climate and ended more than
one week late compared to the past decade. Mildew was rifle in
mid-June, the summer rains favoured the growth of young leaves
quickly colonized. From mid-July the weather became dry and
ripening began in mid-August a week later than average the last
ten years and more than three weeks compared to last year.
These conditions were not ideal and resulted in low yields, around 85 hectolitres per
hectare. Grapes, however, were very healthy and overall maturity was good in the
Champagne region. Due to late maturation,
harvest took place from 5th to 12th
October.
The alcoholic strength by volume (% vol)
overall was 9.3 ° in the region, which turns
out to be a good year generally. The
Bonneuil estate got 10° of alcohol by volume, indicating that physiological maturity
was fully reached and will result in high
quality eaux-de-vie.
Eric Forget, Cellar Master, has started the
first tastings and for him this is a good harvest year which should combine finesse and
fruity notes.
We hope for a great vintage. And yet, Eric
Forget and his colleagues looking after the eaux-de-vie, will only
decide on this in another 5 to 10 years after the first effects of
time and ageing have occurred.
